Leave Quesada by the Arches, turn right and follow the road to Benijofar. In the centre of Benijofar you will come across a cobbled area where there are traffic lights. Turn right at the traffic lights and head for Rojales, once in the centre of Rojales pick up the River Segura where you can see the large working water wheel just at the main bridge, if you look into the river at this point you will see large fish feeding and turtles swimming around depending on the time of year.
After a refreshing break you can either cycle around the marina and along the sea front to the town (additional 4kms) then double back through the woods to the marina and retrace your route back to Rojales or if you feel you have went far enough just retrace your way back, this time on the opposite side of the river if you want too crossing over the first bridge that you come to, following the track all the way back to Rojales town centre, then follow the road back to Quesada via Benijofar. Summary: Very easy flat route suitable for all ages and abilities.
Once you have enjoyed the town follow the river to the edge of the Town where you will pick up a dirt track, cycle on this track all the way to Guardamar stopping on route to enjoy the breathtaking scenery. At Guardamar the track bends round to the right and you arrive at a bridge, cross the bridge and keep left, staying on the pavement, heading back towards the river and continue to cycle on the wide pavement (as it’s a one way street) until you come to where the road becomes two –way (about half way along) you will eventually come to the barriers at the marina.

It is always somewhat disappointing to me that despite this area of Spain growing fabulous vegetables and fruit it is often a struggle to buy good produce in the shops. Lemons are particularly disappointing when you drive past so many growing in the fields, yet when

1. Start by cooking penne pasta. I normally use a large handful of dried pasta per person. Boil the penne in seasoned water until the pasta is soft but with a slight firmness. Whilst the pasta is cooking slice half an onion and gently fry until it is starting to soften.

Vegetables that grow above ground should be put into boiling water. For example, to cook broccoli bring seasoned water to boil and immerse the broccoli in the water. If you are going to eat the broccoli straight away allow the water to come back to boil for a couple of minutes drain and serve. If you want to use the broccoli later or even next day plunge the broccoli into ice cold water. This will stop the cooking process and keep the broccoli nice and green.
4. By the time the cream has started to thicken the chicken should be cooked. Take out the largest piece of chicken, a small cut into the centre should show you .The pasta should also be cooked. If the sauce has reduced too much add a little more cream.

A great excuse FOR A DAY OUT
Albacete
By Ralph Jones Recently my wife, Kate, and I visited the city of Albacete which is just two hours from Alicante heading towards Madrid and which is the home of our Spanish friends who were kind enough to take us on a guided tour of this wonderful place. The first thing we noted was the architecture of the area which, it must be said, does not get enough publicity and lives in the tourism shadow of the more popular coastal towns and cities but if you do decide to go and have a look around I can promise that you will not be disappointed. If retail therapy I your thing also then you can take in the two grand arcades, again with amazing architecture and of which only four remain in Spain of this unique style. Ornate shops and retail outlets are the feature to visit and see inside the impressive buildings. Of the city of Albacete itself most interesting places and features are central so travelling around is not a problem at all and thanks to the many restaurants lining the city streets refreshments (in whatever form) are easy to find and will not loosen t
he purse strings too far with most places offering very good value for money. If you enjoy a bit of history the Albacete is a great place for you to go and see. This understated inland city caters for the tourist with drinks I’d never even heard of back on the coast and the people are warm and friendly as were the townsfolk in nearby town Chinchilla where we visited the castle at De Monte Aragon which made a splendid day even better! Not enough has been said or written (as far as I can discover) about either the wonderful, and historic, city of Albacete or its good looking, and very welcoming neighbour Chinchilla. My advice is to jump in the car, or the bus or even the train and make the short trip for a rewarding day out. Directions from Alicante: take the A31 junction off of the AP7 motorway when heading towards Alicante and just keep on that road (which is very good by the way) and you will pass Chinchilla on the way with Albacete just another thirty minutes further on.

Other fiestas Spain hosts during this month include Festimad, Malaga’s Noche en Blanca, Girona Flower Festival, IPA Beer Festival, the Snail Festival, as well as the Andalusian sherry celebration.

To be found in The Barrio de la Santa Cruz which is reckoned to be the prettiest neighbourhood in town with traditional white houses stacked on top of each other, narrow streets with plenty of steps going up (and down!) and flowers everywhere (at least in Spring). It’s basically the old medieval/Arab town, on the flanks of the Castillo de Santa Barbara and leading down to the Cathedral and the Rambla (one of the main avenues, which used to be a dry riverbed). A small chapel -which legend states is built on the foundations of an old mosque- overlooks the neighbourhood, and one of the most interesting Holy Week Processions starts out from there on the Wednesday before Easter. And from May 1st to 3rd this neighbourhood (as well as many other towns in Spain and Latin America) celebrates the “Cruces de Mayo”. Music, as ever in Spanish festivals, fills the air, as does the noise of firecrackers and children playing and of course people talking. The residents

San Isidro Madrid’s free pass to drink is normally granted in the month of May when the whole city celebrates its patron saint. During the day, the city dwellers are normally engrossed in live music concerts in city squares, which later culminate in drinking frenzies that take up all night. During this period, there is lots of bullfighting going on featuring some of the best bulls in the world. This is one of the few fiestas Spain uses to define her culture. Festimad Also held in Madrid from mid-April to the first week of May, Festimad brings together the entire city of Madrid to celebrate Spain’s alternative rock music diversity. The groups that take the stage during these two weeks of musical frenzy come from all over Spain with certain acts coming from abroad. Noche en Blanca (White Night) Malaga welcomes visitors to its night of cultural festivities. There are over 160 activities ranging from music, visual arts, street arts, and extraordinary visits planned to happen throughout the city. Past events have received as many as 200,000 visitors and it is believed this number can only grow bigger. A visit to the Costa del Sol in May is never complete without indulging in the freebies Malaga has to offer.
Legend has it that this holiday is based on the search for the “True Cross” by the Byzantine Empress Helena after her son Constantine I won a allegedly impossible victory over a superior army when he had a vision of a cross in the sky and heard the words “In hoc signo vincis” (by this sign you shall conquer). After this he became the first Christian Roman emperor and declared religious tolerance (as opposed to persecution of Christians by his predecessors) throughout the Empire.
Girona Flower Festival Girona is a town some two hours from Barcelona that literally blooms come May. This age-old tradition brings large displays of blooming flowers in every space around the streets and buildings in the town’s old section. As far as fiestas Spain go, this is the most spectacular of them all. IPA Beer Festival Spain has imported the art of brewing good quality beer from abroad; this however came with the practices of consumption as well. In mid-May, Madrid as well as other Spanish cities is just about gulping good quality beer. People conversant with the American IPA beer style will find these very familiar. Snail Festival Spain and especially Catalonia consider snails a delicacy. The snail festival is therefore the region’s way of the celebrating the culinary delights buried in mollusks. Indulging in these and then downing several glasses of sherry would be a bright way to embrace fiestas Spain offers in May.

While I want to believe that you have my best interests at heart, I feel that your influence has led to some unwise consequences: 1. Phone calls: While I agree with you that communication is important, I question the suggestion that any conversation of substance or necessity takes place after 2 a.m. Why would you make me call those ex-boyfriends/girlfriends when I know for a fact they do not want to hear from me during the day, let alone all hours of the night? 2. Eating: Now, you know I love a good meal, but why do you suggest that I eat a kebab, a butter chicken curry along with a sausage with cheese, onion and mustard (washed down with WINE & topped off with a Kit Kat after a few sweet chilli and sour cream red rock chips)? I’m an eclectic eater, but I think you went too far this time. 3. Clumsiness: Unless you’re subtly trying to tell me that I need to do more yoga to improve my balance, I see NO need to hammer the issue home by causing me to fall down. It’s completely unnecessary, and the black & blue marks that appear on my body mysteriously the next day are beyond me. Similarly, it should never take me more than 45 seconds to get the front door key into the lock. 4. Furthermore: The hangovers have GOT to stop. This is getting ridiculous. I know a little penance for our previous evening’s debauchery may be in order, but the 3pm hangover immobility is completely unacceptable. My entire day is shot. I ask that, if the proper precautions are taken (water, Vitamin B, bread products, aspirin) prior to going to sleep/passing out face down on the kitchen floor with a bag of popcorn, the hangover should be minimal & in no way Interfere with my daily activities. Alcohol, I have enjoyed our friendship for some years now & would like to ensure that we remain on good terms. You’ve been the invoker of great stories, the provocation for much laughter, and the needed companion when I just don’t know what to do with the extra money in my pockets. In order to continue this friendship, I ask that you carefully review my grievances above & address them immediately. I will look for an answer no later than Friday 3pm (prehappy hour) on your possible solutions & hopefully we can continue this fruitful partnership.
