tasting 101
Tasting involves three basic steps:
SEE
Notice the colour, intensity and shape of the dry leaves, steeped tea leaves (infusion) and steeped tea (liquor).
SNIFF
Inhale the vibrant aromas of the tea leaves, infusions and liquor.
SIP
If you want to do it like the pros, take a loud sip of tea, swirl it in your mouth then swallow. Notice the taste, flavours and feeling in your mouth.
step by step
Tasting is a very subjective experience, so draw from your memories and focus on what comes to your mind when describing the tea.
Look at the dry tea leaves. What colours are they? Are they shiny or matte? Are they rolled, flat or twisted? What do you smell?
Time’s up! Remove the steeped tea leaves and check ‘em out. Have they unfurled? Does the colour vary from the dry leaf? What about the smell?
Prepare your tea according to its steeping instructions.
Have a sip and savour the tea. What does the taste and flavour remind you of? Is it sweet, salty, sour, or umami? Does it feel light or heavy on your tongue? Is the sensation smooth or astringent?
Assess the tea. What colour is the liquor? Is it clear or cloudy? What does it smell like?
As you continue to develop your palate, it will become easier to identify which flavours you perceive.

This carefully crafted blend features honey-sweet organic black tea from Sri Lanka and rich tea from Assam, India. Members of our team actually flew to Sri Lanka to visit the gardens where we source the Sri Lankan (formerly known as Ceylon) portion of this blend.

This one-of-a-kind tea is grown on Satemwa, a third generation, familyowned garden in the Shire Highlands that specializes in processing teas… by hand! Hand-plucked and rolled by a team of 15 local tea-crafting women, these exceptional little pearls are a true labour of love. Satemwa is a Fair Trade Certified™ garden with a strong emphasis on sustainability and the wellbeing of their workers. They’ve built their own primary school to educate the younger generation, clinics to care for their community and nurseries for working moms.
TEA EXPERT TIP
If you want to bring out the toasted rice notes, try steeping at a higher temperature for a shorter amount of time. To highlight those greener notes, steep at a lower temperature for a longer steeping time.

BEHIND THE TEA
Our smooth, premium blend of sencha green tea has very humble beginnings. Did you know Genmaicha translates to “brown rice tea”? Many believe rice was added to green tea to increase the household supply after the last harvest in the fall, resulting in a deliciously smooth cup that was enjoyed throughout the cold winter months. This comforting blend became extremely popular in its native Japan. The fresh vegetal flavour is balanced by the warm character of the toasted rice that brings in a nutty sweetness to the cup.

This tea comes from the renowned Jun Chiyabari tea garden, an organic, familyowned garden located in the Highlands of Nepal. The garden was founded by two brothers who were inspired by their nostalgic childhood memories of their school in Darjeeling, India. After scouring the east hills of Nepal, they finally found a home reminiscent of those fond childhood memories. They set out to create an innovative tea garden and, like us, they weren’t afraid to break the rules! Did you know? This tea gives back 1% of proceeds to our Nepal Clean Water Project!
