Over the weekend of 28th of August D. Deli was present at Bolton Food and Drink Festival 2 0 0 9 . We t h a n k a l l t h e customers and everyone involved for the support provided at the Festival. We have enjoyed providing a delicious ride of Portuguese gastronomic displays. Barry and Caroline Preece from Rochdale were the Lucky Draw Winners of a 15L Keg of Red Wine Touriga Nacional with the Raffle No.29. They bought Raffle No.29 and No.99.

Recipes Portuguese cuisine healthy eating delicious flavours By John Bronco

This month we want to bring to you a delicious, simple to cook and healthy dish “Caldeirada (Mix Stew) de Peixe (Fish)”. Take control of your kitchen and be ready to impress. Preparation: 1) Cut the Garlic into thin slices and chop a hand full of coriander. 2) Cut the Potatoes, Onions, Tomatoes, Green and Red Pepper into thin slices (Ring Shape). 3) Wash the fish and cut them into thick slices/steaks and salt it with sea salt to taste. Execution: 1) In a deep pan/wok place the ingredients in layers within the following order: Onions, Tomato, Green and Red Peppers, Potatoes (add the paprika only to provide a little bit of colour and squirts of tomato paste as you are painting a beautiful dish) and Fish (add the garlic and the Bay leaf and crushed chilli seeds to taste). Repeat until all ingredients are used.

2) Give a very generous drizzle of Lusitanea 100% Extra Virgin Olive Oil. (The use of a good Olive Oil is important if you want to enhance the flavour). 3) Add a small glass of water and the white wine (beer could be a second best wine replacement). Place a lid on the pan/wok and bring to boil. 4) Cook slowly over a low heat for about 15 minutes, when the potatoes are cooked all is done. 5) When all is done, add a handful of chopped coriander. Tips: 1) Remember that the onions will also release water when judging the amount of liquid to add (water/white wine). 2) Do not mix the dish while cooking, as you want to maintain the integ rity of the shapes of the ingredients. 3) Let the dish to rest for a few good minutes before serving to a l l o w f o r a g r e a t e r fl a v o u r concentration. 4) There is no need to add salt after cooking as salt has already been add to the dish. Serving suggestions: Accompany the dish with: 1) A fresh mixed salad with a drizzle of Lusitanea 100% Extra Virgin olive oil

The Roses Miracle The Saint Isabel Queen

Leiria Castle Saint Queen Isabel (1271-1336) was married when she was 12 years old to King Dinis of Portugal , a poet, and known as Rei Lavrador, or the farmer king, because he planted a large pine forest, near Leiria. The wood from these trees would later be used to make the ships during the discoveries. Isabel quietly pursued the regular religious practices of her maidenhood, and was devoted to the poor and sick and she lived in Leiria Castle.

The true ‘miracle of the roses’ legend is well known in the region and one of the most beautiful religious legends. One of the most popular Portuguese Queens was Isabel of Aragon (also known as Saint Queen Isabel), beloved wife of King Dinis. She came to Portugal when she was twelve years old to marry the King. She was of a legendary beauty and serenity and passed most of her time doing good to the people around her. She was also very religious, modest and was always willing to protect everyone from misery by frequently visiting and treating the sick.

Queen Isabel rushed walking back to the castle and was nearly arriving when a cavalier approached. It was King D. Dinis who decided to confront the Queen seeing her lap so voluptuous he thought he had caught her in the act: - What are you holding in your lap, my noble Lady? The Queen hesitated before answering: - These are roses, my Lord, these are roses! Answered the Queen leaving the King angry for her disobedience, it was impossible there is no roses in this season. - Can I see those January roses? asked the King ironically. - If it is only by seeing you believe in my word... and smoothly the Queen Isabel uncovered her lap and everyone saw beautiful roses falling from her lap and this left the King not believing his own eyes and exclaiming: - Miracle! Miracle! In January there is no roses, this can only be a Miracle!
