The Megillah (scroll) of Esther sets forth the classic struggle between good and evil. It is also a paradigmatic story of Jewish
persecution. Against all odds, a Jewish girl named Esther (her Hebrew name was Hadassah) became queen of the vast Persian
Empire. King Achashverosh’s right-hand man Haman, angry with Esther’s cousin Mordecai for not bowing down, tells the king that
the Jews pose a political threat to the empire. Haman decides to have all the Jews killed and casts a lottery (pur) to determine the

date for the massacre. Queen Esther intervenes and saves her people from destruction.
To remember this triumph, Jews were instructed to observe the fourteenth of the month of Adar “as the day on which the
Jews had rest from their enemies, and the month which was turned from sorrow to gladness, and from mourning into festival, that
they should make them days of feasting and gladness, and of sending delicacies to one another, and gifts to the poor” (Esther 9:22).
We celebrate in the synagogue with the public reading of Megilat Esther, making loud sounds with groggers whenever the
name of Haman is read. Children's masquerades and Purim carnivals add to the joyous spirit. Purim is considered a minor holiday,
but it is a time of great joy for the Jewish people.

CHOCOLATE MINT HAMANTASHEN

Prep Time: 45 Min Cook Time: 10 Min Servings: Approximately 60 Mini Hamantashen Dairy
Ingredients:
1/4 cup vegan butter and 1/4 cup grapeseed oil
1/2 cup sugar
1/4 cup brown sugar
3 eggs
1/2 teaspoon vanilla extract
21/2 cups flour
3 tablespoons cocoa powder
1/2 teaspoon salt
1 box of junior mints
Preparation:
1. Preheat oven to 350 degrees F.
2. In the bowl of an electric stand mixer fitted with the

paddle attachment, beat butter, oil and sugars until light
and fluffy. Add in eggs and vanilla and mix until combined.
3. Add in flour, cocoa, and salt, and mix on low speed until
the dough comes together.
4. Taking about 1/4th of the dough at a time, roll the dough
out on parchment paper until about 1/8th” thick. Using a
round cookie cutter or glass that is about 2 inches in di
ameter, cut out circles and move to parchment lined bak
ing sheet. Place one Junior mint inside each circle, fold the
edges around the filling to form a triangle. Continue with

the rest of the dough.
5. Bake at 350 degrees F for 8-10 minutes, enjoy warm.
