CHOICE OF RAW MATERIALS We carefully select our raw materials, every day and every season. • Coatings: cocoa comes from the best Criollo plantations in Latin America and West Africa. • Fillings: we only use cocoa butter; no trace of hydrogenated fats, fractioned fats or any other synthetic oil derivatives; • No vegetable fats other than hazelnut, pistachio, cocoa butter, olive oil and almonds. • Real, high quality fruit. Real, high quality yoghurt. • Limited use of animal fats and only high quality milk and milk cream. No dehydrated milk serum or dry butter derivatives. • Hazelnuts are grown solely in Piedmont. • We use only natural vanilla and not the chemical synthesis, vanillin

HIGH LEVEL OF ARTISANAL MANUFACTURE All our gelato is made ON THE SPOT every day, in a process which simply goes through pasteurisation, whipping and, ultimately, cooling. Many of our chocolate products (slabs, pralines, chunks...) are still hand made. Our “primifrutti” are cooked under vacuum, hand-strained into moulds, dusted with dextrose and finally hand cut. The manufacturing process is semi-industrial: the heart of the product and the filling of the chocolates are still prepared traditionally, with no use of techniques which alter in any way the naturalness of the product. The lack of industrialisation in the production process may cause some products not to be perfectly uniform: product batches may vary in taste and shape according to raw material batches and atmospheric conditions.

UNIQUENESS OF RECIPES Our confectionery is based on Italian recipes with the use of hazelnut and almond pastes instead of cream and butter fillings typical of the Swiss/Belgian/French traditions. This is lighter and healthier. This is also true of our gelato. In respect to ice cream, gelato has much less animal fat, the reason why real gelato can only be consumed «fresh», otherwise it starts to collapse. Venchi has deep roots in the Piedmont region and its tradition: products such as gianduja is produced today with the same 100-year-old recipe. Venchi’s product range is very wide. Though as “maitres chocolatiers” the Company specialises in dark chocolate and gianduja, Venchi produces over 350 different products to suit all preferences. As true “gelatieri” we have more than 50 flavours and we update, revist and add recipes continuously.

FRESHNESS Quality and freshness go hand in hand. The gelato, the hot chocolate, the freshly made chocolate spreads, the granitas and the “soffices” that we serve in our stores are produced fresh, every day, at the point of sale. The goods we make in the central factory, are produced in small batches, typically “just in time”, to maximise freshness upon arrival at the point of sale. At the store the goods must be sold on a ”first in first out” basis, and absolute care must be taken to eliminate older items.

The chocogelateria achieves Venchi’s mission of presenting the BEST QUALITY chocolate in all its forms and shapes. • Sober and elegantly designed stores - allowing for maximum product visibility using glass, mirrors and luxury wood fittings and finishes - with the objective of attracting customers with a sense of tradition and continuity. • An easy and inviting layout that is seasonally flexible, as well as easy to adapt and modify to various formats. Store areas vary from a minimum of 12sqm to a maximum of 100sqm. • The layout is structured to allow maximum customer interactivity, with areas dedicated to loose wrapped products and gift boxes - encouraging exploration and self-service - as well as an open display of raw ingredients and materials. The enticing chocolate and gelato counters are manned by knowledgeable staff, who can describe product specifics and company values. An extensive range of chocolate and gelato allows for seasonal and festive flexibility and also for year-round point of sale variety, with continuous flavour, product and packaging innovations. • Cold months: hot chocolate, Venchino (gianduja served hot), pralines and chocolates. • Hot months: Fruit and cream gelati flavours, “The Soffice”, ghiaccioli and granite, and primifrutti. • Festive seasons: A large and unique range of Christmas and Easter chocolates, as well as other gift ideas for the more secular holidays.
Italian Gelato True Italian Gelato is very difficult to produce, beware of the many inferior imitations!! Real Gelato differs from ice-cream mostly, but not solely, because of its very low fat content. The conditions for excellence are: 1.
Guarantee raw materials of a very high quality. Venchi’s gelato is produced using only natural ingredients (milk, cream, fruits, sugars, proteins, fibres) of the highest quality. The nutritional content of our gelato is very high.

Create a unique and well balanced recipe. It takes years to get the recipes right. Venchi acquired extensive know-how in gelato making through the acquisition of a very innovative artisanal company in 2006, and has had, since then, two people fully dedicated to continuously improving the ingredients and their compositions.
All our recipes are secret and most use flavours (chocolates, pistachios, hazelnuts, etc.) based on Venchi’s 130-year confectionery know-how.

Produce the gelato on the spot to offer a fresh product. All our Gelato production is strictly fresh, made on site, in our specially developed laboratories. The onsite flexibility reduces waste of product to almost zero.

Ensure that there are no alterations to these characteristics due to errors in dosage or mistakes in the production process. Venchi’s gelato is based on a very easy production system, with no need for expert personnel, and thus easily replicable on large scale. This has been achieved thanks to: • The creation of a single specific recipe for each flavour • The pre-dosing at factory level for ingredients (powders and pastes) • The creation of an easy and intuitive recipe book and production manual

These are the five fundamental principles of the Venchi project for a new social model of integrated production chain. A project that started with the research of genetic material shielded for centuries in the biodiversity of the Amazonian forest, among its thriving and generous vegetation, rich in a variety of plants, flowers, fruits and perfumes. This is ‘Chakra’, an ancestral planation technique that improves the quality of biological cocoa and the lives of the families. In collaboration with the Kichwa community that shares this project with us, constant research of the best Fine Aromatic cocoa seeds is based on the foundations of this philosophy. As soon as the seeds are extracted from the fruit that holds them, they are fermented according to a method perfected by the experience of our maître chocolatiers. Later, the seeds are selected for quality and variety and are largely destined for toasting and transformation into premium cocoa masses, indispensable ingredients for an optimum blend of chocolate; while some botanic varieties of seeds are taken to the cooperative company’s nursery where they will become tomorrow’s cocoa trees, therefore guaranteeing a future for the children of the Kichwa community. The main objective of the project is to invest and share with the community the production and transformation techniques of the seeds, using local manpower and investing resources on specific projects linked to the development of a supportive and durable collaboration. With the fundamental help of the cultivators’ families we have classified all the plants in their plantations in order to create balanced recipes with limited circulation using only fertilisers and biological techniques that respect the environment and the productive output of the tree. We buy the product directly from the Kichwa community establishing a reasonable and fair trade price, useful in stimulating the research and development of the best extra fine cocoas. We are committed to satisfying the requests and expectations of our gourmet consumers who, in addition to the quality, must share the social, civil and environmental aspects that surround the project.
Questi i cinque principi fondamentali del progetto Venchi per un nuovo modello sociale di filiera integrata. Un progetto che è partito dalla ricerca del materiale genetico custodito da secoli nella biodiversità della foresta amazzonica, tra la sua vegetazione rigogliosa e generosa, ricca di varietà di piante, fiori, frutti e profumi. Questo è il Chakra, una tecnica di coltivazione ancestrale che migliora la qualità del cacao biologico e della vita delle famiglie. Sui fondamenti di questa filosofia si basa la ricerca costante, in collaborazione con la comunità Kichwa che condivide con noi il progetto, dei migliori semi di cacao Fino Aromatico che, appena estratti dalla cabosside che li racchiude, vengono fatti fermentare secondo un metodo perfezionato dall’esperienza dei nostri maestri cioccolatieri. Successivamente i semi vengono selezionati per qualità e varietà e destinati in gran parte alla tostatura e trasformazione in pregiata massa di cacao, ingrediente indispensabile per un ottimo blend di cioccolato, mentre alcune varietà botaniche di semi vengono portati al vivaio della cooperativa dove diventeranno gli alberi di cacao del domani, garantendo così un futuro ai bambini della comunità Kichwa. Investire e condividere con la comunità le tecniche di lavorazione e trasformazione dei semi, utilizzando la loro manodopera locale ed investendo le risorse su progetti specifici legati allo sviluppo di una collaborazione solidale e durevole nel tempo, è l’obiettivo principale del progetto. Con l’aiuto fondamentale delle famiglie di coltivatori, abbiamo classificato tutte le piante nelle loro coltivazioni, per creare delle ricette equilibrate a tiratura limitata utilizzando soltanto i fertilizzanti e le tecniche biologiche nel rispetto dell’ambiente e della resa produttiva dell’albero. Compriamo il prodotto direttamente dalla comunità Kichwa stabilendo un prezzo equo e di fair trade, utile a stimolare la ricerca e lo sviluppo dei migliori cacao extra fini. Ci impegnamo a soddisfare le richieste e le aspettative dei nostri consumatori gourmet che, oltre alla qualità, devono condividere gli aspetti sociali, civili e ambientali che ruotano intorno al prodotto.

Gianduja Today, Gianduja is unquestionably the symbol par excellence of the best Piedmontese confectionery tradition and, apart from the success it is encountering at home, the appreciation also being obtained overseas is such that for Venchi it has become one of the flagships of the company’s export strategy. At the moment, Europe is appreciating a style that develops the acidity and flavour of cocoa to leave an aftertaste of tangs that are fruity and acidulous, a preference which places dark chocolate at the top of the index rating. In nonEuropean countries taste changes and the preference seems to go more towards a type of chocolate that stimulates those olfactory senses that offer a sensation of a decidedly strong aftertaste, and no other chocolate responds to these requirements like Gianduja (the “original” Gianduja Editor’s note) produced with top quality cocoa and the hazelnut “Nocciola Piemonte Tonda Gentile IGP”. As well as being highly considered for its organoleptic charact eristics, this type of chocolate remains totally

in line with the fatal attraction throughout the world to Mediterranean flavours. The hazelnut (consequently Gianduja) is to be considered a Mediterranean ingredient such as olive oil, rice, pasta, flour. These products are closely related to the concept of territory, seasonality and preservation. Hazelnuts are no different to this concept and are in every respect included in this high level range. Let’s not forget that it is a product with as high a content of oleic acid as olive oil and with an extremely precarious stability: hazelnuts rapidly go rancid and have a 60% internal fats content. These are all natural characteristics that develop in the interpretation of the filling and of the praline mixture, the same way in which Italian Mediterranean cuisine is interpreted. In order to respect this concept of naturalness, the hazelnut must be treated with due caution, otherwise one of the problems that may arise is that it can be infested by Plodia, the moth which, if not prevented, can be the cause of extreme damage. In this sense Venchi invests a great deal to prevent and avoid any type of contamination without, however, using means that would spoil the quality of its products. Therefore, it is of the utmost importance for us to offer a perfect Gianduja which we are presenting in a range of different recipes. So here is an excursus on our lines of products, a gourmand itinerary along our Gianduja specialities.

The winning solution came from the creativity of some Turinese chocolatiers who came up with the brilliant idea of adding to the little cocoa available an ingredient which Piedmont had a great abundance of: the hazelnut. This turned out to be an extraordinary combination and there began the production of chocolates in the shape of small cylinders, immediately named “givù”, cigarette stub. The shape and the name we know today came afterwards. I’ll tell you a story… Describing the origin of the Gianduja is the ideal opportunity to remember one of the most fascinating of Piedmontese stories, a true story for once, and not one of the many legends involving the world of food.On November 21st 1806 Napoleon decreed the Continental Block: this basically prohibited the mooring of British ships alongside any port of the countries subject to French dominion. The purpose of this evident violation of international rights was to strike the British economy, and, within a short time, colonial goods disappeared from the markets that were subject to the Block; one of these goods was cocoa, which became particularly hard to find, reason for which it became so very expensive.
