Season roast. Place, fat side up, on rack in shallow roasting pan (no water is necessary). Insert oven safe meat thermometer into centre of the roast, avoiding fat or bone. *Oven-sear by placing uncovered roast in preheated 450ºF (230ºC) oven for 10 minutes.

Reduce heat to 275ºF (140ºC). Cook to desired doneness, removing from oven when 5ºF (3ºC) below finished temperature. (Bone-in roast can take 30 to 45 minutes longer. Tenderloin can take 30 to 40 minutes less.) Cover with foil and let stand for at least 15 minutes. Roasts can stand 20 to 30 minutes before carving into thin slices.

Directions Preheat oven to 350°F. Season the roast with salt and pepper. Place the diced potatoes and onions in the roasting pan and lay the meat on top. Mix the rest of the ingredients for the marinade and pour evenly over the meat and vegetables. Sprinkle rosemary leaves on top of the roast. Bake 35 to 40 minutes or until meat is tender, juicy and cooked to taste. Spoon remaining pan juices over beef before serving.

Directions
Remove skin and fat from breasts and set aside for cooking. Season the skinless breasts with sea salt and green peppercorns. In a preheated frying pan, render the skin and fat from one breast; place the skinless breasts in the pan and sear for approximately 1 ½ minutes on each side. Remove the breasts from heat and let rest for at least 5 minutes on a paper towel to absorb juices. Preheat the oven to 400°F, divide the puff pastry dough into four equal parts and roll to obtain 4 rectangles of 6” x 8”. (Tip: the puff pastry must be very thin since the cooking time will be short.) Place the puff pastry on a cooking sheet and place one breast on each pastry, brush Dijon mustard on each breast and cover with Griottines Cherries. Divide the smoked duck breast slices amongst each Wellington and place on top of cherries. Wet the borders of the pastry with water and fold around the breast forming little packages, making sure that the borders are well sealed. Place in oven and cook for 15 minutes; finish under the broiler for 4 minutes until pastry is golden brown. Remove from oven and let rest 10 minutes. Cut each pastry in two and serve. Serves 4
