Don Dokken DOKKEN ROKKEN RAGU SAUCE SERVES 4
1 pound 80/20 ground beef 1 yellow onion, chopped 2 cloves garlic 2 spicy Italian sausages, sliced 4 cups marinara sauce 4 tablespoons tomato paste 1 teaspoon sugar 1 teaspoon red pepper flakes 2 dried bay leaves 1 package pasta of your choice (Don recommends angel hair)
1 Over medium heat, brown ground beef in a large pan until partially cooked, about 3-4 minutes. 2 In a separate pan over low heat, sauté chopped onions and garlic. 3 Add sausages to garlic and onions and cook 8-10 minutes. 4 Add sausage mixture, marinara, and tomato paste to large pan with ground beef, still over medium heat, stirring frequently. 5 When sauce thickens, add sugar, red pepper flakes, and bay leaves. 6 Reduce heat to a simmer and cover. Cook for 30 minutes. 7 Prepare pasta according to instructions. 8 Place individual servings of pasta in bowls, top with sauce. 9 Add toppings of choice, such as grated Parmesan cheese, basil,or black pepper.
As founder and lead singer of Dokken, Don Dokken made a name for himself in the 1980s with his captivating stage presence and unmistakable voice. Dokken had numerous charting singles during the decade, including Alone Again, In My Dreams, and Burning Like a Flame. The band frequently toured through Europe, and, in addition to performing, enjoyed some delicious meals. This recipe is Don’s goto red sauce, a traditional Sicilian-style sauce that’s an ode to the old world.
