GREEN CHILI MACARONI
NOVEMBER 2006 Every season brings us its own culinary delights. With the arrival of fall come those rich and hearty foods that seem to impress our dinner guests the most. With butternut squash bisque simmering on the stove, baconwrapped pork tenderloin roasting in the oven and a gooey caramel pecan pie tempting your dinner guests, you’ll want your dinner table to celebrate the spirit of fall as much as your menu does. Luis Corona, principal and interior designer of Casa del Encanto in Scottsdale, shares the following tips and guidelines to creating a gorgeous dinner table design. In choosing your centerpiece or focal point- be creative! Some of the most stunning elements that guests will find unforgettable are random pieces gathered from around your home. Just go searching inside and outside of your home and use your imagination. Find objects that no one else would think to use. Dead branches from your yard, for instance, can be integrated into your tabletop theme. Or collect mossy rocks from a desert trail and pile them in the center of the table. Tuck in stunningly simple bromeliad flowers and several votive candles among the rocks. Finish the arrangement with layers of moss and sand. Its beauty is in its unexpectedness. Fall table design should be natural and organic. Create a centerpiece of fall fruits and vegetables. Hollow out mini pumpkins and fill with fall colored flowers. Use squashes and gourds in abundance. Purple and yellow yams make a beautiful combination. Fruits and vegetables can be cut open and placed strategically among the centerpiece. The seeds and fleshy meat of the cut food offers another layer of texture and delivers an aromatic element as well. Collect or purchase fall leaves such as oak, aspen and maple and lay them about the table. Fall is an excellent time to use dried flowers or dried herbs. Try tying them in bundles with raffia. No tablecloth is necessary, even for formal events. Luis believes in letting the beauty of the table shine through- lustrous wooden tables lend themselves especially well to fall themes. Clever napkin rings can be made by wrapping the long stems of fresh maple leaves around the napkins, leaving the striking leaf as the focal point. Or, use natural colored raffia to tie a grouping of red, yellow and orange chili peppers into a ring. Again, it’s unexpected. For place card holders, tie three or four cinnamon sticks together at the ends and lay horizontally with the card inserted between the sticks. Or, delicately score a line in a pecan and place the card in there. With all of Luis’ design expertise, he still sums up a successful dinner party in this way: “No matter how fabulous your table design is, the delicious food should be the number one attraction. If your dinner party is truly a success, guests shouldn’t even notice the table!”
1 tablespoon corn oil 1/4 cup diced red bell pepper 1/4 cup diced red onion 1 tablespoon minced garlic 1/2 cup sweet corn kernels 2 cups macaroni, cooked
1/2 cup poblano chili, roasted, peeled, seeded and pureed 1/2 cup pepper jack cheese grated 1/2 cup heavy cream kosher salt and cracked black pepper
Heat oil in a heavy pan over moderately high heat. Saute bell pepper, onion, garlic and corn until tender. Add macaroni, poblano puree, cheese and cream. Stir frequently until combined thoroughly. Season to taste with salt and pepper. Makes 2 servings.
Your homebuilder said you have 4500 square feet, county tax records say 4200 square feet and the appraiser says it’s actually 4700. What’s going on here? Many people are surprised to know that calculating square footage is more of an opinion than an exact science. That’s why different sources might come up with differing amounts. The concept seems simple enough. How can you go wrong with a measuring tape and a calculator? The answer is that there is not a consistent practice of measuring. Here’s the scoop: Most real estate appraisers measure the exterior of the home to calculate the gross living area. However, since they are measuring from the exterior, the calculation includes the space taken up by the exterior walls, stucco and or stone. For instance, a space of 20 ft x 50 ft would be 1000 sf. But if the walls are five inches thick, that’s actually only 942 sf of livable space. And that gross footage also includes closets, interior walls, and stairwells.
To complicate the matter further, a twostory home has an entire second floor of exterior walls that are considered part of its square footage. A square footage calculation might be made from another source based on interior dimensions. Room dimensions are measured from wall to wall. Others measure not just room dimensions but the actual floor space. Further, if there are extensive built-in bookshelves or cabinets, that can make a notable difference. What about that large kitchen island? It’s not walkable floor space but rather like a piece of furniture. Does that square footage count? In 1996, the American Standards Institute approved a voluntary standard for calculating the square footage of a home. Not everyone uses these standards but before they were drafted there was a higher incidence of

different computing methods. Some counted vaulted ceilings as living space, some doubled the downstairs area for two-story homes. Others included balconies, porches and fireplaces as living space. This is one of the reasons that county tax records can be so different. Even more so in older homes where improvements and additions might have been made over the years and not recorded. So how do you know what your home’s square footage really is? Or that of a home that you would
like to buy? There are some professional firms that you can hire to verify a home’s square footage. That’s a good option if you see several conflicting reports on the same home. As far as buying a home, it’s generally advised that you don’t get too caught up in the square footage number. Sometimes a 4500 square foot home flows better and appears bigger than a 5000 square foot home. Purchase a property because you love it and it feels like home - no matter if the numbers might be “off”.
