SHRIMP SALAD WITH CHAMPAGNE VINEGAR DRESSING FOR CHAMPAGNE VINEGAR BEURRE BLANC • 1/2 cup heavy cream • 2 shallots, minced • 4 oz. butter, cut in cubes • 2/3 cup champagne • pinch cayenne pepper vinegar • 1/2 tsp. salt In a sauce pot combine vinegar, shallots and salt and reduce until dry. Add cream and reduce to syrup, then whisk in butter piece by piece (warm gently as necessary). Whisk in a pinch of cayenne and hold in a warm water bath until used. FOR TRUFFLE SOY VINAIGRETTE • 1/4 cup soy sauce • 1/4 cup truffle juice • 2 Tbs. fresh lemon juice

• 1/3 cup olive oil • salt and pepper to taste

Mix all ingredients except oil in a bowl then slowly drizzle oil in while whisking. TO SERVE • 20 shrimp, peeled and cut down the middle with head and tail still attached • 1 lb. mixed greens • 1 avocado, cut into quarters then thinly sliced with stem side still connected to make a fan

• 1 pack enoki mushrooms, stems cut off • 1 tomato, scored and blanched to peel, then seeded and cut into a medium dice • 2 Tbs. chives, minced • dusting of cayenne pepper • coarse salt to taste • black pepper to taste

Season shrimp with salt and cayenne. Put on a buttered sheet tray and cook under broiler in oven until just cooked through. Make a bed of mixed greens on four cooled plates. Scatter enoki mushrooms over the top, then season the avocado fans with salt and pepper and place in the center of each salad. Top with a spoonful of diced tomato and minced chives. Dress each salad with truffle soy vinaigrette then place five shrimp on each salad so heads are facing avocado. Top each shrimp with warm champagne beurre blanc and serve. Serves four.
