Basilico Genovese D.O.P., 30 g. pinoli, 45-60 g. ParmigianoReggiano,20-40 g. Fiore Sardo grattugiato, 1-2 spicchi d’aglio, salemarino grosso, 60-80 cc. Olio Extra Vergine di Oliva

Nel mortaio di marmo si pesta uno spicchio di aglio insieme ai pinoli.Una volta ridotti in crema, si aggiungono il sale e le foglie di basilico nonpressate. Si pesta il basilico con un dolce movimento rotatorio. Ripeterel’operazione. Quando il Basilico stilla un liquido verde brillante,aggiungere i formaggi, Parmigiano Reggiano e Fiore Sardo. Versare a filo l’Olio Extra Vergine d’Oliva

Genoese Basil D.O.P., 30 g. pine nuts, 45-60 g. Parmesan cheese, 20-40 g. Grated Fiore Sardo cheese, 1-2 cloves of garlic, sea salt, 60-80 cc. Extra virgin olive oil.

In the marble mortar, put a clove of garlic together with the pine nutsand press them. Once reduced to cream, add the salt and theunpressed basil leaves. Crush the basil with a gentle rotatingmovement. Repeat the operation. When the Basil oozes a bright greenliquid, add the cheeses. Pour the extra virgin olive oil flush.

La leggenda della Piazza dell’Amor Perfetto.Bisogna risalire agli inizi del 1500 quandoLuigi XII, sovrano di Francia, visitò lacittà. Il re partecipò a un ballo dove incontròlo sguardo di Tommasina. Il sentimentotra i due rimase immutato sino a quando il renon fece ritorno in Francia. Tommasinarimase dunque tra le mura del suo palazzo,fiduciosa di rivedere presto l’amato, sino aquando non arrivò la notizia della suatragica morte, che poi si sarebbe rilevatafalsa, ma che spezzò il cuore della giovanesino a farla morire. Secondo la leggenda,quando il re ritornò, sapendo della sua mortedecisi di renderle omaggio recandosi nellapiazza dicendo che “avrebbe potuto essereun amore perfetto.”The legend of the Perfect Love Square.
