salame morbido spalmabile molto piccante. In the Tropea area, the top product is the IGP

Red Onion, sweet, crunchy and natural red. Usedto flavour first and second courses and finally,'Nduja, it is a very spicy soft, spreadable salami.

Tropea Onion Jam

1000 gr cipolla di tropea, 2 chiodi digarofano, 1 foglio alloro, 1 cucchiaino sale, 300 gr zucchero di canna, 1bicchiere di vino bianco, 3 cucchiai di aceto di mele.

Affettare le cipolle rosse di Tropea e lasciale macerare per 4/5 ore in unaciotola con il resto degli ingredienti. Versare tutto in una pentola, cuocere afuoco moderato per un'ora, mescolando ogni tanto. Travasa la marmellata dicipolle rosse di Tropea in uno o più vasetti in vetro precedentementesterilizzati. Chiudi e lascia riposare la marmellata a testa in giù fino al completo raffreddamento.

1000 gr Tropea onion, 2 nails ofcarnation, 1 bay leaf, 1 teaspoon salt, 300 g brown sugar, 1 glass of whitewine, 3 tablespoons of apple cider vinegar.

Slice the Tropea red onions and leave to soak for 4/5 hours in a bowl withthe rest of the ingredients. Pour everything into a pot, cook over moderateheat for an hour, stirring occasionally. Transfer the Tropea red onion jam toone or more previously sterilised glass jars. Close and leave the jam tostand upside down until completely cooled.

Una volta che un’imbarcazione saracena entrò di notte nel Golfo di Sant’Eufemia e, fermatasi sulla costa, i suoi uomini scesero uno ad uno, attirati dalle luci che brillavano sulla collina.Nel villaggio di Ciaramiti, infatti, si stava celebrando un matrimonio alla luce di tante fiaccole così ardenti da essere visti anche dalla costa.I pirati piombarono inaspettati sulla folla degli invitati, facendoli tutti prigionieri insieme ai giovani sposi.Prima di tornare alla loro imbarcazione col grosso bottino, vollero saccheggiare anche Tropea, sulla strada che li riportava al mare.Poiché era notte profonda, i tropeani non pensavano mai al pericolo che li stava sovrastando, dormivano tutti quando, improvvisamente, le campane della loro chiesa si misero a suonare a tutto spiano.Erano le campane della chiesa di Santa Domenica, una santa calabrese che aveva a cuore la salvezza dei corpi e delle anime dei suoi corregionali.In questo modo i pirati, credendosi scoperti, se la diedero a gambe levate, abbandonando sulla strada anche i prigionieri di Ciaramiti.
