ch a r i t y event

SAT., FEBRUARY 28, 2015 @ HOLIDAY VALLEY 9:00-3:00 By Spencer Timkey In years past, Holiday Valley and The Boardroom Snowboard Shop have teamed up to bring you a collaborative fundraising effort with B4BC (Boarding 4 Breast Cancer.) This year, however, they’re changing gears and teaming up with other local shops to bring you ‘Play it Forward.’ Play it Forward will involve Holiday Valley, The Boardroom, The City Garage, Mud, Sweat ‘n Gears and Dekdebruns Ski & Snowboard. Instead of just one charity being the main benefactor, this event will distribute the money raised evenly across: Camp Good Days, Almost Home Animal Shelter (of Little Valley), the Ellicottville Food Pantry, the Ellicottville/Great Valley Ambulance Service and the Lounsbury and Phoenix Adaptive Snowsports programs.

New Location! In the Kwik Fill Plaza

“We wanted to switch things up for this year,” said Jane Eshbaugh, Marketing Director at Holiday Valley. “This is going to be such a cool event because we have so many more partners involved, as well as the way people are going to be fundraising.”

STOREFRONT PARKING

Instead of breaking certain groups of snowboarders and skiers into different events (clinics, park competitions, etc.) everyone will be able to get involved in one singular event. (Writer’s side note: how many vertical feet ridden is possible at HV in a 4-hour span? 10K? 15? 25?) “We wanted to keep it pretty simple this year,” Eshbaugh said. “There won’t be a multitude of individual events like there were last season. Just one thing that’s easy for people to follow and participate in. In previous years, we feel as if the name B4BC - with Boarding in it alienated some people from not wanting to participate because they weren’t a snowboarder. This year, we want everyone to get involved.” Participants are encouraged to register at Holiday Valley’s website, where they’ll be directed to Kindful (the fundraising website of choice) to set up a team and begin sharing to start their fundraising quest. Also, in the weeks leading up to the event, every store participating will be accepting canned food and clothing for donation.

It’s 2015 - let’s utilize technology! The concept behind Play it Forward’s fundraising is quite simple: whichever team skis the most vertical feet wins! The event committee will monitor this by participants downloading and using the Alpine Replay app on their smartphones.

The day of, a Tribute Ride will take place around 10:45am (the Tribute Ride was something done in previous years, and an activity the committee just couldn’t take out.) “There will also be auctions with tons of great prizes from a bunch of our sponsor companies,” Eshbaugh said. “Our winners will be selected based on who raised the most money and who skied the most vertical feet.” Play it Forward is the brainchild of the ski and snowboard shops of Ellicottville as well as the generous and enthusiastic involvement of Holiday Valley. Volunteers are wanted! Contact Holiday Valley for more information or how you can get involved. “We’re really looking forward to this event,” Eshbaugh said. “It’s great because we know where the money is going, and we know that all of them are unbelievably good causes. We can’t wait to see everyone the day of the event!” For more on Play it Forward, head to www.holidayvalley.com or stop by a local shop.

HIT THE SLOPES ‘PENGUIN STYLE’: SATURDAY, FEB. 21 A Fundraiser for the Lounsbury Adaptive Ski Program

photo/William Bacon

TELESTOCK: FRIDAY, FEB. 27 Let the Crew at The City Garage Show You a Good Time! Another excuse “to be weird” Everyone fits in at Telestock ... see you on the snow!

By Megan E. Sorokes

By Pat Morgan

Why do you need snowy hills, black plastic bags and a penguin-style slide for the slopes this February? To participate in Holiday Valley’s annual Penguin Paddle, set for Saturday, Feb. 21 from 8:30am-4pm!

If you live in or frequently visit Ellicottville and its ski areas, you’re well aware by now of how many activities there are to do on any given weekday or weekend throughout the winter. Whether it’s simply a mellow day on the slopes skiing or snowboarding, or attending one of the many high-character signature events on-hill, in the lodges or downtown, there truly is something for everyone.

Started by three avid skiers back in the late ‘80s, the Penguin Paddle is now among one of Holiday Valley’s largest fundraising events with more than 500 participants each year. But, what is the Penguin Paddle?

What if we told you there was one event, however, that you may not have checked out or heard of yet?

“When it started, the group of skiers would cookout, bring chili and end the afternoon by sliding down Yodeler slope in garbage bags,” explained Mary Ellen Racich, Director of the Lounsbury Adaptive Ski Program at Holiday Valley. She credits Emily Eckley, a native of Cleveland, Ohio, with the idea of passing around coffee cans to collect money for the Lounsbury program.

Welcome to Telestock, proudly put on by the crew from The City Garage, this year taking place Friday, Feb. 27 on the Champagne Sundeck adjacent to the Yodeler Lodge at Holiday Valley Resort. Never heard of it, or simply want to know more? Read on for all the details of one of the most fun events you’ll attend all season.

“She and a few other folks got together and started getting food donated for the cookout, then safety patrol and others became involved and it just grew and grew,” she said. Jane Eshbaugh, Director of Marketing at Holiday Valley Resort, said the event features “a huge cookout, an auction, and of course, the Penguin Slide down the bottom part of Yodeler slope. “Participants put on a garbage bag, which is purchased for $1, and slide down the hill on their bellies - ‘penguin style’,” she said. “It’s good fun, good people and for a great cause. Everyone is welcome, and I love watching the faces of people as they slide down the hill. Adults seem to have the most fun because they tend to forget how to play, and this is an event where they’re encouraged to be a kid again.” “It’s a great event to raise awareness and funds for the Lounsbury Adaptive Ski Program at Holiday Valley,” Eshbaugh continued, noting that the Lounsbury program is for mentally and physically challenged individuals, and teaches them how to become skiers by concentrating on their abilities rather than disabilities. “The only means of financial support for the program is through private donations, ski clubs, businesses … and the annual Penguin Paddle,” Eshbaugh added. “Money raised by the Penguin Paddle helps to fund specialized adaptive equipment for sit-down and standup skiers, training and certification for Lounsbury’s volunteer instructors, insurance and equipment repairs.” Businesses throughout the community are encouraged to participate in the Penguin Paddle by donating food and items for the auction. Some items already up for grabs include a Holiday Valley season pass for next season, a pair of skis, and an airline voucher. “If I had to guess, I’d say close to 90 percent of restaurants and shop owners in Ellicottville participate by making some sort of donation,” Racich noted. “We are grateful to the community for its support.” “The Penguin Paddle is such a successful event because I have so many wonderful volunteers that care about disabled children and adults,” she added. “It’s also successful because Holiday Valley Resort cares, as does the entire community of Ellicottville.” Need more info? Call 716-699-2345 or click over to www.holidayvalley.com.

‘Telestock’ as it has come to be named, took root over ten years ago as a way to showcase an alternative snowsport - telemark skiing - to the ski community here in Ellicottville. Trey Clauss of The City Garage fondly remembers its beginnings as yet another excuse “to be weird” as he puts it, and show people an all new way to enjoy the slopes. Telemark skiing is different you see, in that your heel is not fixed to the ski, similar to the way a cross-country ski binding functions. Through the process of turning, the skier’s legs are flexed and extended, creating a fluid motion that allows one to traverse the slopes in a non-traditional alpine fashion. Trey went on to say that part of the focus of Telestock is to convert people who are merely intrigued by telemark skiing, into “registered sickos,” who take on the mountain in a new way. If you’ve never been to Telestock, here’s what you can expect: Arrive in the A.M., and the CG crew will be on the Champagne Sundeck with a wide assortment of telemark gear, including skis from K2, boots from Scarpa, and Black Diamond, as well as 22 Designs bindings. Once you’re set up, it’s time to hit the slopes. You’ll notice upon arriving there are a whole slew of enthusiasts (and dare we say, they are quite the cast of characters) all who can’t wait to show you this exciting, alternative way to enjoy the mountain. Adding to the character of the event is the crew’s creative ability to come up with a different theme each year. In the past, it’s been everything from tie-dye, local celebrities, ‘free your heel, free your mind,’ and last year’s theme of Carhart cowboys. This year they’re taking it back to the event’s roots, with the return of tie-die. Not to worry if you don’t come prepared, these guys are more concerned with fostering the stoke of all things weird and free heeled. An added bonus: they’re also avid grill masters, serving up sausages galore, washed down with ice cold freedom sodas (Pabst Blue Ribbon). For more information on Telestock, give the gang at The City Garage a call at 716-6992054, or better yet, stop in at 5 Monroe Street and check out the wide array of telemark equipment they have in stock. Having carried the equipment since day one, they’re not only passionate about the product, but also about the lifestyle surrounding it. You can also follow them on Instagram @thecitygarage, or ‘Like’ them on Facebook to see photos from this year’s edition of Telestock.

No Boxes. No Rails. Just All Natural Snow Features. Saturday, Feb. 21 @ Holiday Valley By Spencer Timkey Red Bull never ceases to bring creativity to its events, and the newest one coming to Holiday Valley on Feb. 21 excels in that department. All Snow will challenge snowboarders and skiers to bring their best on nothing but all-natural snow features - hips, quarterpipes, etc. In years past, Red Bull has consistently brought awesome events to the slopes of HV, whether it was Rhythm Section or Buttercup. Getting kids to participate has never been an issue, as Red Bull is a global name with an unbelievable marketing team (not to mention some pretty excellent product). All Snow, which is set to take place at the base of Mardi Gras (in the rail park), will make participants get technical - tweaks, butters, spins, and handplants are just some of the things you should expect to see. “We’re going to make it unique from the other resorts participating,” said Mike Nenno, Holiday Valley’s Terrain Parks/Events Manager. “Red Bull sent us a general layout that we’re going to follow, but there will be some features that we’ll incorporate as signature features.” The placement at the bottom of Mardi Gras makes a ton of sense. It’s the one place where there’s easy, accessible exposure to the Main Lodge and people walking from Tamarack or The Inn. Also, it’s an easy run to hike - All Snow will be a jam format (kids will take as many runs as they’d like within the allotted time frame). There are four stops to the All Snow Tour: Mountain Creek, NJ (pictured above, held Jan. 17); Holiday Valley (Feb. 21); Mount Snow, VT (Mar. 7); and Loon Mountain, NH (Apr. 4). “Registration will take place the day of the event,” Nenno said. “Helmets will be required, and we’re looking for 150 participants - 75 skiers, 75 snowboarders. We’ll pick some local riders to be the judges.” For more information on Red Bull All Snow, head to www.redbull.com/allsnow or check out @RedBullUNY on Instagram/Twitter, @holidayvalley or www.holidayvalley.com.

Page 08 ... SNOWED-IN ~ FEBRUARY 2015

During the month of January, HoliMont was able to put together perhaps the best consecutive two straight weeks of snowmaking that we’ve ever had. For 15 straight days and nights our snow guns were running, allowing us to place some massive piles of snow on the slopes, which have now been groomed out and made into the base that will keep us on snow into April (as long as Mother Nature cooperates). Even though it is already February, there is still plenty of excellent skiing and riding to be done so hopefully you used January to get your legs in tip-top shape and will be able to spend the next 2+ months out on the slopes enjoying the best of what our Western New York winter has to offer.

CHAIRLIFT SAFETY January was the NSAA (National Ski Area Association) Safety Month, and one of the key components that was stressed was Chairlift Safety. Obviously, chairlifts are a necessary component in the snowsports industry and as a result, they are by-and-large very safe modes of transportation. However, no ski area can totally prevent incidents from occurring on a chairlift. Ultimately it is your responsibility to know how to use and ride a lift safely. In a 2012 study that reviewed more than ten years of falls from lifts, more than 90 percent of all falls from chairlifts were the result of human error or medical conditions; only 2 percent of falls were related to operator error. Your personal behavior, therefore, is critical for overall chairlift safety. For an excellent resource on lift safety, check out www.kidsonlifts.org. There you will find fantastic information about what to do and what not to do while loading, riding, and unloading a lift. Naturally this site is perfect if you have young children who are new to snowsports, but it does a nice job of serving up some solid tips on things you should be mindful of while riding a lift. Here at HoliMont you can rest assured that our lift operators have been thoroughly trained with your well-being in mind. But once you are loaded in that chair, the actions you take and the way you conduct yourself drastically affect your safety as well as the safety of those around you. Utilize the safety bar, don’t lean down to adjust your boots, make sure small children are seated all the way back and don’t take part in any horseplay on the lifts. Respect the rules of the lift and you’ll ensure yourself an even safer day on the slopes.

ATHLETES AT HOLIMONT One of the many reasons that families decide to become Members at HoliMont is because of its long history of molding young snowsports athletes. The training and supervision that these athletes receive from their dedicated HoliMont coaches are some of the best in the area. The HoliMont Racing program is a fun, challenging, and competitive curriculum designed to help improve personal skiing and racing skills. It offers children of all ages the opportunity to meet and ski with others while learning about what competitive racing is all about. An emphasis is placed on individual skill development, movement patterns, energy management, and racing tactics to generate improved ski performance. The FLITE Team is for advanced skiers with an interest in Freestyle skiing. With an emphasis on safety and fun, our FLITE Team coaches will demonstrate and coach you in skiing the bumps, and basic acrobatic skills on jumps and in the park. Staffed by Corey Hacker and Kelly Hilliman-Hacker – world-ranked U.S. Ski team athletes and top-ranked certified coaches – team members will have the option of competing at local and nationally sanctioned events. If you have questions about the HoliMont Racing Program, call 716-699-5306. For Snowsports Programs call 716-699-8159.

SNOWED-IN ~ FEBRUARY 2015 ... Page 09

PARKS The HoliMont Park Crew has been diligently working to get the entire park open and now that it is, we have to say it has never looked better. The top jump line was finalized in mid-January and is now a super smooth transition from small to medium to bigger jump. The guys have done a great job so grab your helmet and head over to the park to check it out!

ACROBAG The Acrobag Tour is returning to HoliMont March 25-29 for another session of big air, spins, thrills, and maybe a few spills (into the cushy landing of the Acrobag of course). Once again the Acrobag crew will be setting up two bags; one for skiers and snowboarders and one for tubing, which was a HoliMont fan favorite last season. Stay tuned to www.holimont.com for more details on times and cost.

SKI DAY FOR UNITED WAY TELEFEST

Free your mind and free your heel at HoliMont’s annual Telefest celebration on Friday, March 6. If you have yet to check out the art form that is telemark skiing, this is an excellent opportunity to get out on the slopes with people who are passionate about the sport and more than willing to share their knowledge. Call 716-699-8159 for more information.

Make your plans now to hit the slopes at HoliMont on Thursday, March 5 to benefit a great organization. The United Way of Cattaraugus County is coming back to HoliMont for another day of fun out on the snow. A special price of $60 gets you a lift ticket, event t-shirt, breakfast and lunch, and the knowledge that you’re helping to support a worthwhile cause. The day will also feature a poker run, raffles, and good company with like-minded skiers and snowboarders! Register by going to www.uwcattco.org or calling 716-372-3620. We hope to see you here!

For over 50 years, families and snowsports enthusiasts from miles around have converged on HoliMont, North America’s largest private ski area devoted to family skiing adventures. Generations of members have been drawn in by the amazing skiing, only to fall in love with the warm, community atmosphere that makes HoliMont the kind of place you never want to leave. During the week, HoliMont is happy to welcome the public and groups. Our eight lifts service over 50 slopes and trails. Head to www.holimont.com or call 716-699-2320

NICOLE: What made you want to get involved? ANNETTE: I really had no idea what I was getting myself into. My husband Ken and son

HoliMont Ellicottville, NY

Tyler opened Dom’s Butcher Block in Oct. 2010. As soon as the snow fell, we started seeing repeat weekend customers. There was a gentleman and his daughter that I had seen in the store previously and struck up a conversation with them. I complimented his daughter’s orange ski jacket, as orange is my favorite color. He shared with me that her jacket was worn by all the students in the Phoenix Program. Being that I was not familiar with the program, he invited me to visit the Phoenix Room at HoliMont and meet Chuck Richardson, their director. I’ll never forget the energy level of excitement from the families and friends in this room. The camaraderie amongst staff and volunteers gave me a sense of, “I HAVE TO BECOME A PART OF THIS!” Who wouldn’t want to be involved?

NICOLE: Tell me a little about the picture of the boy in the snow cat; not many get to experience such a cool ride! ANNETTE: I skied with Wil Searby one afternoon with his mom, Connie Searby, and since this was Wil’s last day, I managed to ask permission from one of the guys operating a snow cat if he would let Wil get up close to see it. The cat operator was eager to make Wil’s last day a memorable one!

NICOLE: What makes this program so different and dynamic? ANNETTE: Adaptive ski teaching focuses on skill development, regardless of where the

movement originates. This takes creativity, skill and experience. Each student typically has at least one lead instructor and one volunteer. In some instances there will be multiple instructors and volunteers. Chuck assigns the instructors and volunteers based on the staff on-hand for the day and the needs of each particular student. Phoenix participant, Wil Searby, had an amazing last day in his program during the 2013-’14 season. He is pictured here with adaptive volunteer Annette Auteri and one of HoliMont’s snow cat operators.

.................................. About the Program | International Race By Nicole M. Nyznyk The HoliMont Snowsports Phoenix Program is celebrating its 19th year! With over 40 dedicated volunteers, 25 PSIA certified instructors and many devoted parents, this program has persevered though nearly two decades. If you aren’t already familiar with this phenomenal program, it teaches skiing and snowboarding to adults, youth and children with various disabilities. It offers more than the opportunity to ski or ride, however. It opens up the world of snowsports and the opportunity to experience passion for POW! Multiple options are available for adaptive skiers and riders. A “Drop-In” program is accessible for guests of HoliMont members, which runs alongside the regular adaptive program. Another option available is the Outreach Program, which is especially designed for the local community for a limited number of area students that have special needs. The Phoenix Program not only offers the opportunity to ski and ride in a family atmosphere, it also offers the steadfast support of the many dedicated program volunteers! On Saturday, Feb. 7, over 80 adaptive racers from Western New York, Pennsylvania, Ohio and Southern Ontario will travel to HoliMont to participate in the Phoenix Program’s annual International Adaptive Race. This event brings out the best qualities for all who organize, volunteer, coach, chaperone and compete. During a recent interview with one of the many Phoenix Program volunteers, Annette Auteri expressed her passion and excitement for this program. “I had no idea what I was getting myself into,” she told SNOWED-IN, “but to make a long story short, immersing myself in this program has proven to be one of the single best decisions I have ever made!”

NICOLE: Tell me about the International Race on Feb. 7 and how much is involved when

it comes to preparing for it? ANNETTE: It’s a fun, unique event the students and staff look forward to every year. Everyone is a winner! It takes an army of people to pull this off. We’ll practice gates with students prior to race day and ski the actual hill that the race will be held on. There will be volunteers available to pull kids up the hill in sleds to get to their starting point. And more volunteers will be on-hand to help with warm drinks and snacks, etc.

NICOLE: What goals do you set each year when you volunteer? ANNETTE: When an instructor has a volunteer, this enables the instructor to focus solely

on the student and their progression. When I volunteered I would either be in front of the student demonstrating or behind the student providing feedback to the instructor. There are several different situations. If I’m skiing with a student in a slider, I might be singing silly songs at the top of my lungs to keep the lesson fun and engaging. Behavior is contagious!

NICOLE: How has the program grown since your time with it? ANNETTE: The number of students that have joined the program has grown! Volunteers almost always become certified instructors. When this happens, we like to see ourselves replaced with another volunteer. I passed my exam last year and invited MJ Brown (local owner of Tangled Twigs) to begin volunteering this year.

NICOLE: How do you get participants of the program to overcome the obstacles that they might face, fears, or intimidations? ANNETTE: All of our students have challenges - or they wouldn’t be in the program. We have to earn their trust by ensuring they’re safe and show them that we would never put them on terrain that they weren’t ready for. Example: I’ve been working with a student who is fully capable of learning to parallel turn. There are sections of Sunset that are a little steeper than others. I noticed he was sitting on the back of his skis when he would accelerate faster than he was comfortable with. When fear takes over, it can be challenging to teach a student NOT to sit on the back of his skis. They’re resistant to leaning forward and pressing their shins into the front of their boots. They want to “put their brakes on” and sit back. At the end of the lesson, I went to Watson’s Chocolates on a mission looking for something with a dual purpose for my lesson the next day. I found gummy lobsters and gummy penguins! These were put in small clear plastic bags so I could place them in the front of my student’s ski boots directly in front of his shins! He had to flatten the gummy lobsters and gummy penguins during his lesson all the way down the hill.

NICOLE: What makes it worth coming back year after year? ANNETTE: I hate to see the season end. It goes by so quickly! We’re like one big family. You look forward to seeing the students and their families year after year. It’s rainbows and butterflies in our world; who wouldn’t want to return!

THE BEST OF BOTH WORLDS IS AT DEKDEBRUNS By Pat Morgan When traveling into Ellicottville, everyone has their ‘go to’ shop for specialty products or for their ski and snowboard needs. Visitors easily gravitate towards one of the many great family owned and operated shops here in the village. This month, SNOWED-IN made a visit to Dekdebruns Ski & Snowboard, located right on the main drag in the heart of EVL (or 18 Washington Street for your GPS). Like many shops, they are chock full of some of the best brands with service to match, so read on to find out more of what’s new and exciting with them this season. First, let’s drop in on what’s new and exciting on the snowboard side of the sales floor at Dekdebruns. Often known as home base for many of the competitive riders in the area, the shop boasts an array of brands, including outerwear from O’Neill, Billabong, Picture Clothing, and 686. They also feature an array of hardgoods (boards, boots, bindings) from Capita, Flow, Ride, Now Bindings, and Jones Snowboards. One of the most exciting new additions to their stable this year is a long-time heavy hitter in the snowboard realm - none other than Rome Snowboards. Rome Snowboards (often referred to as Rome SDS - Snowboard Design Syndicate) was formed in late 2001 by two former Burton employees, Josh Reid and Paul Maravetz. Troubled by where they felt snowboarding was headed in terms of product offerings and marketing, they decided to take matters into their own hands. Through the years, Rome has maintained their brand image of being ‘counter culture’ while holding strong in the upper tier of market share in terms of hardwoods sales. Jay Mowrey, long-time manager of Dekdebruns, was ecstatic to add the brand to their line-up in order to provide a missing piece to the puzzle in terms of brands offered here in Ellicottville. With reputable models like the Anthem, Agent and Graft, there was no shortage of heavy hitting items for Mowrey to bring in. Among his favorites this year is the Rome Mountain Division, which features ‘Bambooster’ (a strip of bamboo applied to the construction process which enhances pop). Rome also has a great boot program, with Mowrey picking the Folsom boot as the leading favorite; it features a dual focus BOA (retractable cable lacing), as well as an all new liner dubbed ‘elite fit’. Rome also offers a wide array of accessories, boots, outerwear and bags, all of which you can browse on the retail floor at Dekdebruns. On the ski side of the fence, Dekdebruns truly offers one of the most unique items in snowsports, not just in Ellicottville, but in the industry as a whole. If you’ve never heard of them before, you need to do yourself a favor and check out the Apex Boot system. Formed by Denny Hanson (a la Hanson Industries of the 70’s for you ski historians out there), the Apex Boot system was forged from a focus on innovative design, comfort, and production efficiency. Launched in 2008, the Apex boot intrigued many by offering skiers the best of both the performance in the alpine ski world, and the comfort and warmth found in the snowboard realm. Confused? Read on … Apex is the first ski boot designed and built to take advantage of the modern shaped ski, developed through Hanson’s experience with snowboard boots and other technical footwear. Through the course of development, he applied an array of new technology and ideas to ski boots, like high-modulus, lightweight carbon fiber, separate cuff controls, and unique A-Flex suspension into a component system boot. In laymen terms - think of a snowboard boot, with a rigid exoskeleton, or chassis, which includes adjustable buckles that you’re used to seeing on a ski boot. You see? The best of both worlds. The staff picks at Dekdebruns (as well as their best sellers) are that of the MC-2 for men, and the ML-2 for ladies, which won a SKI Magazine Gold Medal in 2014 for its performance. Both of these boots feature an EVA heat moldable liner, BOA Focus closure system with dual zone adjustments, as well as ‘Open Chassis’ design, which can handle even the most aggressive skier. You’ll want to check these boots out, they just may make you rethink your boot choice the next time you’re up on ski footwear. As you can see, there is plenty to be excited about product-wise at Dekdebruns. You work hard all week, so when the weekend comes and it’s time to head out on the snow, make sure you have the best of the best for your on-hill experience. To schedule your next boot fitting, inquire about tuning services, or to just check in and see ‘what’s up’ at Dekdebruns, give them a call, or give them a ‘Like’ on Facebook to see day-to-day product features and promotions at the shop! DEKDEBRUNS SKI & SNOWBOARD: 18 Washington St., Ellicottville, NY 716-699-2754 • www.dekdebruns.com • Open 7 days a week! Winter hours: Mon-Thurs 9am-6pm • Fri 9am-8pm • Sat 8am-8pm • Sun 8am-6pm

The winter snowsports market is a tricky one to figure out. Shops around Ellicottville are in the midst of their buying cycles … for next season. Buyers need to figure out what to bring in and all of the accoutrements of said product - colors, sizing and quantities. It can be a gut wrenching experience.

Ellicottville Oasis Spa

23 Jefferson St., Route 219, Ellicottville, NY 14731

Forecasting for the future requires a lot of shops to roll the dice. If you’re having a good winter, you want to order more for next year. However, you have to take into account the uncertainty of the weather. (In 2010-‘11, Ellicottville had a record amount of snow. In 2011-‘12, it was the worst winter in recent memory.)

www.ellicottvilleoasis.com

Massage Therapy

This season (which has been hit-or-miss so far) will make buying especially difficult. Planning for the future is never easy when you’re sitting on a bunch of inventory, but fortune favors the bold. The buying process is quite simple once it’s broken down. Shop buyers head to regional shows (such as the recent one in Atlantic City, NJ) or the national SIA (Ski and Snowboard Industry of America) show in Denver. They call their reps for each company, set up an appointment time and view next year’s line. Appointment times are typically around an hour, with most companies having multiple reps showing the line at once. Flipping through the catalogues, buyers jot down notes colors they like, particular features about the product, etc. Regional shows, such as the one in Atlantic City, give shop buyers who are unable to make the trip to Denver a chance to see lineups a little earlier. It’s a hectic couple of days where there’s little sleep, tons of handshaking/high-fiving and sensory overload. “The AC show is great, because I can see my regional buyers that won’t make it to Denver,” said J Nuzzo, who reps for Mervin Manufacturing (Lib Tech, GNU and Roxy). “I bring the line, meet one dealer at a time, go over key points/models in-depth and move on. It’s a crazy three days, but very well worth it.” Some brands, like Salomon and Burton, set up bigger booths (they have a more expansive product line and see many more dealers) while other brands take smaller spaces for a more one-on-one feel. Or some rep agencies, such as Spraying Gravy and Sandbox Metropolis, carry multiple brands and show them at the same time. There are other ways besides buying shows to pick up the vibe on a product. There are two on-snow demos that local shops trek to. One of them, the regional, is in Stratton. The other, the national, is in Colorado after the Denver SIA show. This gives hardgoods buyers a chance to actually ride the product they’re going to buy in quantity. So have no fear, consumer! Local shop buyers know what you’re into, and will buy accordingly. The SIA shows are when we dial in, get stoked on next season and pick the absolute best stuff.

DINING IN STYLE WITH EBC CHEF JOSHUA McDOWELL A Match Made in Manhattan: Serving Up EBC’s Manhattan Strip Steak and its Undisputed Imperial Partner, Chocolate Cherry Bomb

S ’ N I D E W O N S L f EV o k c i P u n e M h t n o M the

By Chef Joshua McDowell In our 20-year existence of food and beverage in Ellicottville, EBC has seen a lot of food and beer styles come and go. Our newest menu is infused with a wide array of influences from around the world. With that said, let’s change course from our regular recipe spotlight, and instead get into a little explanation / biography of one of our most prestigious menu items: the Manhattan Strip Steak, and its undisputed Imperial partner, the Chocolate Cherry Bomb. The Manhattan Steak is a special cut from the Strip Loin that may not be the most noticeable to the untrained eye. It’s an incredibly tender cut with an almost arrogant and robust look to it. It is a great choice when you are looking for a steak you can dig into with gusto. EBC only brings in Manhattan steaks that have been graded Prime or better, garnering a remarkably juicy experience for the diner who obviously has a great reputation for good taste. With an already wonderful piece of American beef, it doesn’t take much effort to round out this dish … the steak is Paramount. We add a nice cilantro/pecan pesto to accentuate the steak, and we plate it with a unique vegetable offering of fresh ripe sliced avocado. Ahem … back to the steak. We utilize a 14-ounce certified Black Angus Prime steak, trimmed and measured perfectly. Then comes the “big meat seasoning method.” Let me explain. Whenever you have any kind of meat that is bigger than 10 ounces, you will want to season it so much that it almost feels as if you are overdoing it; you want to physically see the seasoning on all sides of the steak. Cooking this monster is an endeavor in itself. It isn’t a 2-minute-on-each-side kind of protein. We are talking full blown heat sources from every direction to get it cooked to a perfect medium in just under 25 minutes. The process is beautiful; the end product is a masterpiece. (There are certain things that we do as chefs where our skills and passion collide into an artistic and wonderful creation that needs to be shared … the Manhattan steak is one of those things.)

LET’S WASH IT DOWN WITH BEER Wash down this beast of a feast with our newly released Chocolate Cherry Bomb. One of my all-time favorite creations from EBC Beer Meister Dan Minner, this concoction almost personifies the feelings of late December and the beginning months of the year. Boasting an ABV of 8.2% is fun and delightful, but just one or two of these bad boys of the Imperial beer world is surely enough. Arriving right in time for Valentine’s Day, this robust and malty Imperial Stout demonstrates a refined and balanced flavor. Chocolate Cherry Bomb pours dark and yields a thick, creamy, tan head. Brewed with chocolate malt, sumptuous dark Oregon sweet cherries, and love, this beer is a fantastic accompaniment to our steak. Stop on down to EBC after a long day on the ski trails and indulge in our newest steak creation and our finest quality seasonal stout. Until next time folks, have fun and be safe when out and about in Ellicottville. Chef Joshua McDowell is a graduate of the Pennsylvania Institute of Culinary Arts of Pittsburgh, PA. He carries a Bachelor’s degree in Culinary Arts and offers 18 years of experience in the food service industry; 12 of those years in the Ellicottville, NY area. Joshua currently holds the title as Executive Chef at the Ellicottville Brewing Company, 28 Monroe Street, downtown Ellicottville, 716-699-2537, www.ellicottvillebrewing.com.

SLEEP TO REMEMBER

B D .K B BUT REMEMBER TO SLEEP ... and other remedies for your MEMORY y

r

ristina

arlow

Losing your mind does not have to be a process with no solutions or irreversibility, and is not just a process of aging that we must succumb to because “I am in my 70s”! Nor are brain dysfunctions (especially memory) limited to the aging process. Dr. Mark Hyman wrote an amazing book on broken brains called The UltraMind Solution. Whether we call it anxiety, depression, insomnia, bipolar disorder, oppositional defiant disorder, Alzheimer’s, schizophrenia or Parkinson’s, the body can slow down and reverse the disease process. Just ask a functional MD, alternative practitioner or a naturopath how they have seen broken brains improve with detoxification, nutrient repletion, proper nutrition, homeopathy and botanical medicine. It is a miracle to watch because no one wants to face the fear of losing his or her mind and memory!

SLEEP REM sleep, usually occurring at the end of an 8-hour sleep cycle, enhances memory by securing many of the synapses you create during the day. Interrupted sleep will diminish memory and cognitive function. Each of the five stages of sleep is about 90 minutes long, equaling the need for 7-½ to 8 hours of sleep. Twenty-five percent of Americans suffer from chronic insomnia. Although every person needs an individualized program

FOODS Alzheimer’s Disease is a form of dementia, and according to Yale University researchers is caused by a neuron-specific enzyme called STEP (striatal-enriched protein tyrosine phosphatase). High levels of STEP prevent the brain from turning shortterm memories into long-term memories and affects proper cognitive function, leading to Alzheimer’s disease, Parkinson’s disease, schizophrenia and other neurodegenerative disorders. A medication is being developed to decrease high levels of STEP, but according to The Memory Healer Program, the following combinations of foods may accomplish similar results. Foods rich in carboxylic acids, amine hydrochlorides, benzyl alcohols and iron nitrates have been clinically shown to decrease elevated levels of STEP, resulting in improved memory and cognitive functions. THE GOAL:

Combine at least 2 oz. of foods or 8 oz. of liquids from Group 1; at least 4 oz. of foods or a pint of tea from Group 2; at least 1 oz. of foods or 8 oz. liquids from Group 3a, 3b and 3c; and at least 1 oz. of foods or 8 oz. juice from Group 4. Eat each chosen ingredient from each category as a combination meal between 6-8pm.

to overcome sleep disturbances, here are some helpful sleep aids that will also improve memory and brain function: • Add a 30-minute nap into your day (but no more!) • Avoid alcohol (interferes with REM), caffeine, sugar, processed foods and low calorie/protein/good fats diets. • Cleanse the Liver. Liver Balance TCM. • Treat the adrenal glands … adrenal dysregulation will disrupt sleep. Adaptamax, Adrenal Support or Nervous Fatigue Formula. • Replenish potential deficiencies with B3 (niacinamide), B1, B12, Chromium

GROUP 1 Pickles, grapes, apples, blueberries, cherries, cranberries, strawberries, pineapple, lemons, oranges, limes, lime juice, apple cider, apple juice, green tea, chocolate, chickpeas, red beans, black eyed peas, lentils, barley, squash, rhubarb, cinnamon, thyme, cloves, vanilla, lettuce, artichokes, tomatoes.

GROUP 2 Beets, carrots, Jasmine Essential Oil, Ylang Ylang Essential Oil, leafy green vegetables, lettuce, raspberries, tea.

GROUP 3a Apple cider vinegar, lemon juice, black olives, celery, spinach, apples.

GROUP 3b Almonds, grapefruit, mushrooms, peaches, bell pepper, radishes, pineapple, cherries, wild rice, apricot, strawberries, bananas, avocados, green tea, lettuce, celery, peas, sweet potatoes, eggplant, green beans, beets, blueberries, pears, grapes, kiwi, melons, tangerines, figs, dates, mangoes, papayas, spinach, broccoli, artichokes, brussels sprouts, cabbage, cauliflower, carrots, cucumbers, lemons, limes, seaweed, asparagus, kale, collard greens.

GTF, Magnesium Complex, Potassium Combination, L-Tryptophan (AKA ZenBev) or 5-HTP Power (increases the time spent in REM sleep), • Assess possible food sensitivities especially wheat, dairy, sugar, corn, soy, eggs and peanuts. • Assess potential hypoglycemia … stop eating sugar and simple carbohydrates and eat protein and fat combinations one hour before bedtime. • Direct Sleep Aids: Herbal Sleep, Kava Kava, Melatonin Extra, Passion Flower, Chamomile, GABA Plus, Anxiousless and many more!

SUPPLEMENTS

Beef, chicken, turkey, duck, mussels, sardines, anchovies, scallops, shrimp, crab, lobster, cauliflower, spinach, green peas, asparagus, eggs, nuts, oats, milk, yogurt.

• DHA or Super Omega-3s (both from fish oil) because 35% of the brain is made up of essential 3 fatty acids. • Super Algae (Spirulina, Chlorella and Lake Algae), Love & Peas and Free Amino Acids. Protein is broken down into amino acids necessary for the production of neurotransmitters, especially dopamine and norepinephrine, resulting in better mood, memory and alertness. Eat 25-30 grams of protein within 1 hour of waking up. • NutriCalm or Solstic Energy for B-Vitamins. • Super ORAC (green tea, mangosteen, turmeric, quercetin, resveratrol, apple fruit, acai berry and selenium) for antioxidants. • Ginkgo/Gotu Kola with Bacopa increases blood flow to the brain. • Brain Protex

GROUP 4

Arugula, rhubarb, cilantro, butter leaf lettuce, basil, beet greens, oak leaf lettuce, Swiss chard, beet juice, spinach, dark chocolate, raspberries, salmon. OTHER CONSIDERATIONS:

• Stress creates a general inability to handle insults by decreasing the body’s healing inflammatory response through the immune system, causing increased risks for brain disorders. • Poor food choices / lack of good foods. • Dehydration (Book: Your Body’s Many Cries for Water). The brain is VERY sensitive to dehydration. Daily measure out ½ of your body weight in ounces of water to one gallon. • Control blood sugar levels, including hypoglycemia. • Balance endocrine and nervous systems. • Add a cleansing program to your life 4-5 times/year. A great one for the brain (and cardiovascular system) is The Mega Chel Program for eliminating excess cholesterol, calcium and toxins from the blood vessels for improved blood flow - especially to the brain.

ASSESSMENTS Tests for possible brain function disorders include: CT Scan, MRI, MTHFR gene mutation testing, genetic testing for apolipoproteinE-e4 (for Alzheimer’s Disease) and SPECT scans. The Annual Art Roscoe Loppet CrossCountry Ski Race, of course! On Sunday, Feb. 15, skiers of all skill levels are invited to participate in an invigorating day on the trails starting and finishing at the Summit Ski Area in Red House at Allegany State Park, located in Salamanca, NY. Whether you have the attitude of an Olympian or have just begun cross-country skiing for fun, the Art Roscoe Loppet Cross-Country Race welcomes all. According to John Snyder, manager of the Red House area of Allegany State Park, cross-country skiers of all ages are welcome to compete, as this competition is not limited to adults. In fact, skiers can choose from three different course options: the 22K begins promptly at 9:30am, the 13K begins at 9:45am, and the 6K begins at 10am. Registration and check-in begin at 8am at the Summit Ski Cabin, but participants are encouraged to pre-register online by Friday, Feb. 13 at https://www.skireg.com/art-roscoe-loppet, as registration rates will be higher on the day of the event. The race concludes with a fun post-race party at the Summit warming hut, complete with toasty beverages, snacks and door prizes. The top male and female finishers in each race will be honored in an awards ceremony, and the top five skiers in each race will receive a commemorative plaque celebrating their achievements. According to Snyder, this annual race has taken place at the Art Roscoe Trails for the past decade, and every year, crosscountry skiers look forward to a beautiful day on the trails. Although competition and the tangible rewards that accompany victory are enticing, a day on the Art Roscoe Cross-Country Ski Trails is a reward in and of itself. Not only is this set of trails regarded as the best cross-country ski area in Western New York due to its higher elevation than surrounding towns, but the history of the Art Roscoe Trails is just as noteworthy as the landscape; the trails have been in existence since the 1930s! Syracuse, NY native, Arthur J. Roscoe graduated from Syracuse University in 1925 and came to work at Allegany State Park that same year in the Syracuse University Forestry Camp. After working in the forestry camp for three months, Roscoe left and pursued work with two different lumber companies, as well as a surveying company over the next three years. In 1928, Roscoe returned to Allegany State Park under the temporary position as forester; when this became his permanent position in 1930, Roscoe undertook the mapping and planning of the park’s ski trails. During the 1930s, Roscoe’s ski tows and ski trails were the first in Western New York, and under Roscoe’s direction, Allegany State Park had the first ski jumps in the area, where many competitive jumpers began competing in 1935. Considered the “forefather of Western New York skiing,” Roscoe was honored at the Art Roscoe Ski-Touring Area dedication in 1978 where he cut the ribbon commemorating the newly-named ski trails. Ever since, the Art Roscoe Cross-Country Ski Trails have been open to skiers of all levels, who can also rent skis, boots and poles, as well as snowshoes at the Summit Mountain Shop just 200 feet from the trails. Through the Art Roscoe Loppet Cross-Country Race, competitors can share in this great history on the most scenic cross-country trails in the area. Visit www.heartrateup.com for more details about the race and registration. For more information about the Art Roscoe trails and to find out the trail conditions on Feb. 15, contact John Snyder at 716-354-9101 ext. 269.

TRACE ADKINS

One of the Biggest Names in Country Music is Heading to Seneca Allegany Casino

A Conversation with Trace

HULICK: Your big break came three years after your move to Nashville. Had it not come along, would you have been satisfied playing Honky Tonks, and how long would you have waited for that break to come? ADKINS: No I wouldn’t have been satisfied with that. I’d have went back to work in the oil field.

HULICK: You started out in a gospel group. Would you consider returning to that type of music? ADKINS: No. I might consider recording a gospel song someday just to get back into my momma’s good graces.

HULICK: Do you have a certain tone in mind when you start working on a

new album, or do you set the tone as you go? ADKINS: Yeah, it just kind of works itself out as I go along. You know I don’t set out to do theme records. The songs dictate where the project ends up. And it’s always a lot of fun you know … because you go into it and you have absolutely no idea how this thing’s gonna turn out, so there’s that unknown that makes it exciting. And when we put the word out on the street that we’re making a new album and those great tunes start flooding in from around town from publishing companies and songwriters from all quarters, it’s a lot of fun.

HULICK: You have performed for the troops on several occasions. ADKINS: Yes, I have a few times and it’s been one of the most rewarding

experiences of my career. That’s the most appreciative audience you’ll ever play for. They just leave you with such an overwhelming sense of pride. I really enjoy doing those shows.

.............................. FRIDAY | APRIL 3, 2015 By Melanie Hulick Country superstar Trace Adkins will be filling the Seneca Allegany Casino’s Event Center with his rowdy take on love and romance songs, his no- holdsbarred smash hits and his down- to-earth standards on Friday, April 3. Adkins returned to the road with his cowboy tough image last summer after stepping out of the spotlight to face the personal loss of his father earlier in the year. Lucky for me, he took some time out of his hectic schedule to talk about his career, the pride he feels when performing for the troops, his very personal reason connecting him to FAAN (Food Allergy & Anaphylaxis Network), and why he is “odd man out” at home. In talking with Adkins, I wondered if he looks at life as one big adventure. “Well it has been so far,” said the singer. “And someday when I’m towards the end of it I’ll look back and probably consider that it was somewhat of an adventure,” he added. Having released 12 albums since his debut album, “Dreamin’ Out Loud” in 1996, he has taken his permanent place in country music history. The just released concert DVD, “Live Country,” is full of his biggest hits and shows the singer interacting with his fans … which at times gets Adkins to show his “I know I got it” grin that sends the female fans screaming.

HULICK: That must be an amazing feeling walking off the stage after

performing for them. ADKINS: It is. And before I went on my first USO trip I had a chance to talk to Wayne Newton about it, who has done many, many tours for the USO. I asked him what I could expect. He said, “I’ll tell you what you can expect … you’re going to come home and you’re going to feel guilty because you’ll feel like they did more for you than you did for them.” Then he said, “Don’t worry about it … you did your job and you entertained them the best you could. You’re just going to come home and your heart is going to be so full, and your chest is going to be puffed up because you’re going to be so proud of them … and it’s going to give you that … I know it sounds trite, but that renewed sense that you’re so proud to be an American.” He was right!

HULICK: You’ve also been involved with FAAN (Food Allergy & Anaphylaxis

Network), and have been the National Spokesman and the Honorary Chair of their Nationwide Fundraiser Walk. We know that’s something different from performing for the troops, but that level of satisfaction must be off the charts when you find you can use your name to better other people’s lives. ADKINS: Yeah it is. And being the Honorary Chair is a very personal thing for me. My daughter Brianna has severe food allergies and not enough people are aware of the severity of that condition. They think you get a hold of something you’re allergic to and you break out in hives. They don’t realize it can be deadly. So I’m proud to be a part of that.

HULICK: Having a wife and five daughters, do the women rule the house? ADKINS: Absolutely! Yeah! I like to think that I have veto power and I think

they let me feel that I do, but I think we’re all aware that it’s not true. (laughs)

HULICK: Trace, was there a moment when you knew, without a doubt, this is it … this is what I’ve been working for, this is me living my dream? ADKINS: Well … Cletus Judd did a parody of one of my songs and I thought … “Well, that’s it!” (laughs)

I covered a lot of ground in my conversation with this Louisiana native and shared a few laughs along the way.

HULICK: (laughs) That meant you arrived? ADKINS: (laughed) Yeah! My father thought I finally made it years ago when

Tickets to Trace Adkins’ performance at Seneca Allegany Casino in Salamanca start at $30 and can be purchased through www.senecacasinos.com (click on Seneca Allegany). For more information on his newest album, visit www.traceadkins.com

HULICK: (laughs) That’s hysterical! ADKINS: Then I did an episode of “Higgley Town Heroes” and I was finally a

they had the NASCAR Busch Series Trace Adkins Chrome 300 at Nashville Super Speedway. I mean, I had platinum records, became a member of the Grand Ole Opry and all that kind of stuff, but not until they named a Busch race after me did my father think I finally made it. (laughs)
