By Louisa Benatovich Deep in Antarctica’s frozen wasteland lies the world’s cutest, most playful creatures. These little treasures live out their days fishing, swimming, and exploring. Not a human to be found in the glacial expanse, the black and white, dignified waddlers have grown to dominate the landscape, and, coincidentally, our hearts. Ah, penguins … emperor of the animal kingdom, and icon of February in Ellicottville. There’s a special connection between penguins and Ellicottville. That connection is made through the Lounsbury Adaptive Ski Program at Holiday Valley. The organization, a notfor-profit member of Disabled Sports/USA, teaches individuals with varying disabilities to become skiers. With specialized equipment and trained volunteers, the Lounsbury Ski Program inspires joy on the slopes every winter. In the spirit of the season, the Lounsbury’s annual Penguin Paddle extravaganza is a chance for all - young and old - to become a penguin for a day. By slipping a black plastic garbage bag over your ski suit, Penguin Paddle attendees can slip and slide down the lower part of Holiday Valley’s perfectly groomed Yodeler ski slope, to raise money for the Lounsbury Adaptive Ski Program. Bill Bredenberg, Lounsbury program director, outlines the history of the beloved event. “Back in the day, we didn’t have a lot of expensive equipment, but we did have expenses, outriggers, and harnesses,” says Bredenberg. “A group from Cleveland who were all friends of the program got the idea of sending kids down the hill in black plastic garbage bags to help offset expenses. They looked like penguins coming down, hence the name. It took off from there.” Now one of Ellicottville’s favorite winter events, the Penguin Paddle has become a day of races, auctions, raffles, and fun! All proceeds go to benefit the Lounsbury Ski Program. Thanks to generous donations last year, the program was able to purchase a state-of-the art bi-ski for its participants, but with so many possibilities on the horizon, they must keep looking to the future. The Penguin Paddle is a way to make those dreams come true. “What makes the Paddle different from your typical fundraiser is the involvement of the Holiday Valley community,” says Bredenberg. “The whole staff of Holiday Valley really gets behind us and supports our efforts. A lot of participants and their families help out, and it really turns out to be great, regardless of the weather. I just love all of the people, support, and fun that we have …and watching the kids coming down the hill.” Whether you’re a racer or just there to cheer, the Penguin Paddle is a winter event fit for the whole family. Registration for Penguin Paddle racers takes place the day of the event, Saturday, February 23rd, at Creekside Lodge beginning at 8:30am and at Yodeler Lodge beginning at 9:30am. Register to race and purchase your garbage bag for just $1.00! From 11:30am-2pm, the Silent Auction will be held at the base of Yodeler. This is your chance to snag some cool goodies donated by Ellicottville’s generous local businesses. While browsing all the wonderful prizes up for grabs, take advantage of the delicious catered lunch that will be offered in the Lunch Tent for just a $5 donation. The real fun begins at 1:30pm! It’s the start of the Penguin Races, divided into several age brackets, plus a mixed double division. (Helmets required for all racers.) There’s no shortage of Penguin Paddle fun at Holiday Valley. First rip, then sip! Holiday Valley’s newest seasonal event, Rip N’ Sip, is a chance to get out on the hill with certified instructors and hone your craft before going in for a frosty cocktail. The brainchild of HV Snow sports Director Allie Doro, Rip N’ Sip not only helps you work on your turns, but build relationships with fellow rippers. “We wanted to create an event that would combine awesome activities - skiing/snowboarding and aprés - and create a sense of community,” Doro said. “If your skillset is intermediate to advanced, we want you to come and rip with our certified instructors. Even the most advanced winter sport enthusiasts can benefit from our instructors’ feedback, and there’s always something you can work on.” Once you’ve gotten some pointers and ripped for a while, you’ll head to the Holiday Valley Lodge for a frosty beverage. Rip N’ Sip takes place every other Monday on the following dates: January 28th, February 11th and 25th, and March 11th. Meet at the Clocktower at 5pm sharp! INTENSE MILK RAIL JAM SERIES: JAN. 25 | FEB. 23 | MARCH 16 Have you ever wondered what it’d be like to ride a giant chocolate milk feature in a terrain park? Look no further than the Intense Milk Rail Jam Series at Holiday Valley. Partnering with local milk company Intense Milk, the Holiday Valley Park crew built a feature shaped like a milk bottle and covered it in an Intense Milk label. After last year’s success, the series returns. “It’s a unique situation,” HV Sales Director Niki Klein said. “We’ve got this brand who wants to tap into a youth market, and we’ve got that here. So when the opportunity came up to co-brand an event and build a feature that’s specific to the partner brand, we had to do it.” The spot of the feature will move around for each event (Mardi Gras, Fiddler’s and Yodeler) and so will the setup. Last year’s nights saw a huge turnout and skiers/riders getting really creative. The HV Park Crew sets the feature in a multitude of directions, giving participants the chance to showcase. Did we mention it’s a giant milk bottle feature? There are three dates for the series this year: Friday, January 25th; Saturday, February 23rd and Saturday, March 16th. It’s a free event with tons of prizes and giveaways, including as much milk as you can drink! Helmets and waiver signature are required.
MOUNTAIN SKI FEST: FRIDAY, FEB. 8 A day of skiing, snowboarding, food, beer and camaraderie. Sounds pretty great, right? The Holiday Valley Mountain Ski Fest on Friday, February 8th will provide all of the above. Hosted by Holiday Valley Snowsports Director Allie Doro and Race Director Miguel Azcarate, Mountain Ski Fest takes the best things about Holiday Valley and packs them into one day. “There’s such a strong sense of community here,” Doro said. “We want to strengthen that. There’s going to be a ton of events during the day. We’ve got a recreational race planned. Instruction from our certified instructors. The City Garage, Mud, Sweat N’ Gears and The Boardroom will be on-hand to demo product. We’re working on something else really fun - it will be a vertical challenge, but not in the way that you think. Instead of which team can get the most vertical feet skied or ridden, we’re doing a challenge on who can hit a certain number of lifts in the allotted time. We’ll have “goodie” stations so you can refuel.” Ellicottville Brewing Company, Southern Tier Brewing and The Ellicottville Distillery will be offering beer, wine and liquor tastings. The day includes breakfast and lunch, as well as some other goodies along the way. Cost is $80 for passholders and $115 for non-passholders. Bring a friend and they’ll get a free lesson, rental and beginner lift ticket! Better yet, bring a friend AND make a weekend of it! Ask about special lodging packages. BOARDROOM BANKED SLALOM: SUNDAY, MARCH 3 There aren’t a ton of snowboard-only events anymore. But all that changed after last year’s Boardroom Banked. Over 100 riders of all ages came to compete in a hand-built course that ripped down Independence before finishing at the bottom of Champagne. The 2nd Annual Boardroom Banked returns Sunday, March 3rd. “We wanted an event that was dedicated to snowboarding,” said The Boardroom’s Spencer Timkey. “At first, we weren’t really sure what the level of support would be. There’s a core group here (shoutout to our customers and The Van Boiz) that we knew would run it, but beyond that, it was dark territory. But then 101 riders came to rip, and it was an overwhelming success. Banked Slaloms are huge at other resorts, and we wanted to bring an event like that to Ellicottville. We’re so excited for this year!” The course this year, which will start at the top of Independence before hitting Champagne, will be hand dug after the initial work is done with the cat. Riders get two runs through the course, and the fastest time is taken. There are four divisions - men’s, women’s, OG (over 35) and Grom (under 12). Registration is now open, and The Boardroom is capping it at 125 this year. Prizes and awards go down on the Champagne Sundeck after the race with music by DJ Tyler Swift and reps on-hand from Burton, Lib Tech, Salomon, Giro and Oakley. There will be a pre-party at The Depot (Saturday night) for registration and packet pickup. Much like the ski and snowboard industry’s constantly changing camber and shape variations, mountain biking has undergone a similar shift. Fat bikes, with monster tires good for ripping through more aggressive terrain, are becoming more commonplace. Ellicottville and western New York have a pretty strong mountain bike community fueled by passion, people and associations like WNYMBA (Western New York Mountain Bike Association).
Imagine 500-pound machines flying through the air, racing at top speeds around tight turns and dips with other machines just a fraction of an inch away. Now, consider those machines are snowmobiles, roaring their way around a technically designed manmade track as part of a professional race circuit.
On Saturday, February 23rd, HoliMont will host FrostyCX - a fat bike race. “Fat bikes are becoming super popular,” said Greg Culver, HoliMont’s Marketing Director. “There are a huge amount of people from Pennsylvania to Dunkirk/Sherman to Buffalo that really have a passion for mountain biking and fat bike riding, so this event aims to bring all of that together.” HoliMont’s new General Manager, Ed Youmans, has a vision to expand on the private resort’s four season draw. With the success of the Mont’s previous cyclocross races, creating one for the winter seemed like a no-brainer. “No one does a fat bike race like this,” Culver said. “Typically, a mountain bike race is a 3 to 5-mile loop. People can see riders at the start/finish and cheer them on, but once they disappear into the trail, they can’t watch anymore. The cyclocross is unique because you’re doing multiple laps on a shorter race loop and you can see most of it.”
Snow guns have been pushing out the white stuff on the grounds of Seneca Allegany Resort and Casino in Salamanca since early January, and crews have been working on-site for weeks to build and shape a professionally mastered snowmobile race track in anticipation of the return of the AMSOIL Championship Snocross Series, which is set to wow crowds in February. Yes, you’ll see some amateur racers out there for the fun of it, but you’ll also see some seasoned veterans racing for a paycheck. Plan your calendar now to catch some of the world’s premier snocross racers, who are striving to earn points and find their way at the top of the leaderboard as part of this 8-stop series. Closing in on a decade of experience on the track, 15-year old Taven Woodie is a permanent fixture on the Women’s Pro Circuit. She’s been racing since the age of five, and said she has no intention of slowing down. “I want to do this for as long as possible,” the Alpine, WY native said. For some, the idea of a five-year-old out on a sled, pushing it across a track may seem a bit out of the ordinary. Taven said it was a family thing. Growing up in the sport, she sees the time and effort that goes into it. “My dad bought my brother and I sleds when I was 5 and we both wanted to race so he let us,” she said. “[The racing tour] takes a lot of time out of your schedule. You’re constantly back and forth from home to hotel rooms.”
The race will take place on HoliMont’s Sunset slope, an ideal location because of the vast sightlines. Culver and the HoliMont mountain crew are planning on blowing snow and building banks to add some technicality to the race - rollers, berms and tight turns.
While Taven is working to catch the Women’s Pro points lead, her counterparts over in the men’s divisions see the race life in similar ways. Pro-Lite points leader, Francis Pelletier, said it all started for him about four years ago when he and a friend bought used sleds and began racing them around their native Quebec. The 22-year old has found some success but has a challenger right on his heels, looking to make the weekend in Salamanca more difficult.
“You go for as many laps as possible in the time allotted,” Culver said. “Each lap is under a mile and a half. Riders will head out onto the cross country trail for a bit. We’re excited because this is an event that’s kind of a first for the area.”
Twenty-year old Hunter Patenaude has been riding for 12 years. His road to the track was a family one as well. “My dad brought my brother and I to a local race,” Patenaude said. “We had an old sled that my brother raced. He raced for one full season before I started. I was 8 years old at my first race.”
FrostyCX has three categories: open men’s, open women’s, and open kids. It’s a race, but it’s really a chance to come together with other fat bike enthusiasts.
Having to race eight different tracks presents an interesting challenge for the riders. Each track is different - track layout and snow conditions play a role in adjusting riders at each stop through the series. Drivers all approach the situation in their own way, but they all take the challenge as professionals.
“Dee (Dibble, owner of Loud Performance) will be on-hand, and there will be fat bike demos,” Culver said. “And Marshall from East Aurora’s 42 North Brewery will be handing out beer samples. We’re still putting together a vendor list, and it’s going to be a great day.” Registration is now live at BikeReg.com (just search for Frosty Cross). The site has a built-in waiver which you can e-sign before paying for the race. It’s not a sanctioned race, but it’s an affordable way to get out on your bike and have some fun. “If the weather holds, it’s going to be an awesome event,” Culver said. “Just the fact that it’s winter and we’re doing a fat bike race alone makes it great, but the people will take it to the next level. There’s been a ton of support on this from local riders and especially WNYMBA. We’re really excited to see the turnout and hopefully grow it into something much larger.” FrostyCX takes place at HoliMont on Saturday, February 23rd. For more information, head to www.holimont.com.
“We walk around,” Pelletier said. “We [watch the] other heats before [us] and check where we think it will be fast and what lane to use to pass people.” Patenaude uses his heat runs to get progressively better. “Depending on snow conditions and how warm or cold the weather is, we will adjust the suspension and clutching as the track changes,” he said. The series will be hitting Salamanca, the sixth of eight stops, after a weekend in Mt. Pleasant, MI and will leave Western New York for Dubuque, IA. The Salamanca stop is one that Taven said she is looking forward to. “The fans at Salamanca can expect some super fun, kick-butt racing,” she said. Patenaude, looking to catch Pelletier in that Pro-Lite division, says he is ready as well. “Salamanca is always an awesome venue and [race fans] can expect a lot of exciting racing,” he said. This month John Harvard’s is featuring braised short ribs with house made demi-glace, one of their newest menu items. The most important part of this dish is creating the demi-glace, which is used in reference to a sauce meaning “icing” or “glaze”. The next time you’re feeling adventurous - or hungry - grab a friend and visit one of these delicious restaurants By Mary Heyl As any seasoned traveler or tour guide will advise, one of the best ways to explore a new place (or even re-discover a familiar one) is to dine at a local restaurant instead of a chain. For those looking to enjoy a day trip or a weekend getaway, there are several destinations within an hour of Ellicottville that offer some of the best meals that can’t be found anywhere else. From restaurants that have served communities for multiple generations to an up-and-coming pizzeria in Salamanca, there are plenty of opportunities to satisfy your appetite just a short drive away.
WESTLINE INN WESTLINE, PA
Become part of a beloved part of local history by enjoying a meal or a good night’s rest at the Westline Inn in the heart of Pennsylvania’s Allegheny National Forest. The beautiful six-room inn has been in the Pomeroy and Frick family since 1975, but its history extends far beyond that. Originally the home of the Day family, Scottish immigrants who were part of the second group of pilgrims who arrived at Plymouth Rock, the Westline Inn (then a private home) was built in the late 1800s. Edmund Day, who owned and operated a chemical company that turned timber into charcoal, wood alcohol and acetic acid, added to the house several times. At one point, the home included his office, safes and even an indoor swimming pool heated by the adjacent factory’s boilers. After Day’s death, Ruth Buffington Enis and her husband acquired the house and decided to turn it into a hotel, which opened in 1948. The Westline Inn became known for Ruth’s delicious cooking - a tradition that was carried on by the Pomeroy and Frick family, who bought the Inn in 1975. “I’ve grown up at the Inn,” said Jennifer Pomeroy, who, along with Chef Ross Howard, now runs the Inn. “My parents (Jonathan and Trudy Pomeroy) have watched our customers’ children grow up over the years, and now I’m watching their children grow up! It’s like a big family.” That family has continued to grow, due in large part to the delicious menu and bar that the Westline Inn has become known for. The restaurant and bar are open daily, with the exception of January through March, when it’s closed on Mondays. Diners can enjoy the pub menu, as well as a full dinner menu and Sunday menu. “We’re known for our steak au poivre and our seafood,” Pomeroy said. “Our shrimp le Jon is wrapped in bacon and stuffed with horseradish - it’s very popular. Our seafood is served fresh daily.” Rack of lamb, bouillabaisse and vegetarian dishes are other savory choices that diners can enjoy. For a day trip or weekend away, the Westline Inn is the perfect destination in any season. Pomeroy explained, “We’re near several snowmobiling trails, and there is plenty of hiking, cross-country skiing and biking available on the Kinzua Trail nearby. There are lots of great fly fishing spots along the Kinzua Creek, too.” Just one hour south of Ellicottville on Route 219 at 1 Westline Road, the Inn is worth the drive. However, Pomeroy noted that it is also worth making a dinner reservation, especially on the weekends. Anyone who has ever visited Allegany State Park and enjoyed a delicious fish fry, beef on weck sandwich or homemade fudge can now enjoy them nearby all year ‘round! John Marino, owner of Allegany State Park’s shops and Park Restaurant, opened Marino’s Pizzeria at 219 Broad Street in Salamanca, and these offerings and of course, pizza - are available seven days a week.
Tucked away in the hamlet of Steamburg is a restaurant that has been a destination in Western New York for over 35 years. The Hide-A-Way Restaurant & Lounge, which has been under the ownership of Amy Sample and Tom Miller for the past six years, is located less than 30 minutes southeast of Ellicottville at 2597 Route 394 in Steamburg.

“It’s been great!” said Marino of his first two months in business. “The response has exceeded my expectations. We’ve had lots of repeat business and people enjoying our pizza, wings, salads, subs and tacos. We’re also incorporating a lot of our popular menu items from the Park Restaurant, like the beef on weck and fish fry.” Marino is a familiar face in Ellicottville, where he owns Bear Paw Shoppe at 38 Washington Street (behind Katy’s Cafe). There, he carries many popular gifts, camping-style décor and famous fudge that have been popular in his Allegany State Park businesses. In fact, the fudge, which is available in more than a dozen flavors, is something Marino is looking forward to adding to his pizzeria this spring. “We’ve got a large dining room here, and this spring, I’m planning to add an ice cream cooler with over two dozen flavors for people to choose from, plus soft serve and our fudge,” Marino explained. “In learning that there aren’t a lot of places in Salamanca that serve a fish fry - especially take-out - we learned that there’s a need for ice cream around here, too!” According to Marino, pizza is the most popular menu item, and Salamanca Central School frequently orders for their students and sporting events. Taco pizza is a popular choice, as well as Marino’s gluten-free pizza options. The building was previously a pizza restaurant, Napoli’s, for several years before he opened, and was a restaurant and ice cream shop even before then. “I have customers in their 50s and 60s who remember coming here as a child, getting a candy bar or ice cream,” Marino said. “It’s really great to be a part of that history.” Marino’s Pizzeria offers dine-in, take-out and delivery primarily within the city limits, though Marino is looking to expand this soon. “I’m looking forward to being here for the long term,” he said. “I’m fortunate to have some veteran staff who have joined me from the Allegany State Park businesses. Since 1980, guests have been enjoying the restaurant, which was originally a livery stable and a private residence many years ago. “You can still see the original horse barn out back,” said Sample. “It’s great to be part of the history of this place!” The Hide-A-Way is a popular stop for locals, but it has also become a well-known destination for those who enjoy traveling Cattaraugus County’s snowmobiling trails, exploring the Amish Trail or are heading to Salamanca for a night at the casino. “We’re just off the Steamburg exit (exit 17) off I-86,” Sample pointed out. “We’re really accessible.” The restaurant will be featuring a “sweetheart menu” for Valentine’s Day and regularly features daily specials in addition to their soup of the day. Businesses strive for healthy growth. Whether increasing revenue by a few percentage points every year or expanding regional reach, a growing business means things are good. Since Sean Cornelius took over as president of the Weed Ross Insurance Agency in 2016, a combination of savvy insurance knowledge and a loyal customer base helped to reaffirm Weed Ross as one of Ellicottville’s premier agencies. When the opportunity presented itself to grow, he jumped at it. “I thought there was a better way to do business,” the Ellicottville resident said. “Weed Ross Agency has formed the Weed Ross Group, now with three locations. These other insurance agencies have merged into ours, so we’ve become a stronger organization - better customer service, more insurance options, etc. - and we can service a wider range of people.” In addition to Ellicottville, the Weed Ross Group will have offices in Batavia and Orchard Park. Cornelius will retain the agents and workers from the old regimes, maintaining valuable relationships with current and new clientele. Now with over 10 people under the umbrella, customer service can turn from great to exceptional. “The intra- and inter-office technology is high end, which will allow us to rapidly communicate with anyone at any of the offices,” he said. “If one of our clients needs to file a claim and it’s after work hours, the main number will have an option for them to reach an agent. It’s a strength in numbers type of thing. When there are more workers to help, it makes for a better experience.” Much like how a bank or hotel chain would work, the new technology deployed by Weed Ross will allow any agent to access a particular claim or file. If Sean needs to answer a question about a claim in the Batavia office, he can pull it up from the computer in Ellicottville. All of the integration eliminates miscommunication issues. Cornelius joined Weed Ross in 2014 as an insurance producer before taking over as president in 2016. The following year, he moved the office to their current location at 4 Monroe Street. And as of January 1st, the size of the business more than doubled thanks to the acquisitions. As HoliMont members, he’s built relationships with local and regional families. And while the agency offers most forms of insurance, their speciality is seasonal and secondary homes. “A lot of people don’t know that not every homeowner insurance company will allow you to insure a second home,” he said. “And when you decide to rent that second home, only a few will allow rental. You really want to know what to do when insuring a home, second home or rental property.”

If you are an outsider, or would like to become one, please join in the fun at the Marilla Winter Trek on Sunday, February 10 from noon-4pm at the Marilla Reservoir. The Marilla Reservoir is located along PA Route 346, five miles west of Bradford, Pennsylvania. The Marilla Winter Trek is a family-friendly event suitable for all ages. Get outside to enjoy hiking, snowshoeing, skiing or biking the scenic trails of Marilla Watershed. The hike around the Marilla Bridges Trail is a 1-mile loop trail with forest and water vistas, raised walkways, and a picturesque wooden covered bridge. Cross-country skiing and snowshoeing demonstrations will be offered by Jamestown Cycle Shop. A shuttle will be available to the top of Marilla Springs for those who wish to cross-county ski or hike the 3.6-mile linear trail. An outdoor bonfire and refreshments will be offered at the gazebo along the trail. This free event is sponsored by the Tuna Valley Trail Association, a group of volunteers who have built over 40 miles of trails. They are a non-profit organization with a mission of building and maintaining trails within the Tuna Valley.
