View all of our services on our website By Mary Heyl For those who enjoy an invigorating day on the ski slopes, a quiet walk in the woods, or the simple beauty of a winter landscape, Ellicottville’s Gallery 14731 located at 5 East Washington Street has a wonderful treat in store. On the evening of Thursday, December 29 from 5-7pm, Gallery 14731 will be hosting the opening of “Winter in EVL,” Chris Cove’s nature photography exhibit. Cove, an avid skier who lives in Pittsford, New York most of the year, is proud to call Ellicottville home too, as he and his family have owned a home here for the past ten years. The exhibit, which is part winter-themed scenes and part snowy owl photographs, is inspired by Cove’s love of winter and the Ellicottville area, and is sure to inspire visitors looking to enjoy the great outdoors “indoors,” for a change!

Cove has visited the area his whole life; he and his family always enjoy hitting the slopes, especially at HoliMont where he is a member. “I always have my camera with me, whether I’m skiing or out hiking, because you never know when the light is going to be just right to capture the perfect scene,” explained Cove. With the exception of one photograph, every winter scene in Cove’s exhibit was taken during one of his visits to Ellicottville. In “HoliMont Covered,” Cove captures the essence of a crisp, winter day, as the contrast of the snowcovered trees with the brilliant blue sky in the background is every skier’s paradise. “For me, it’s always about finding the right light, like the sun coming over the ridge and illuminating this group of kids riding up the ski lift. It was just the perfect light,” said Cove of another photograph, “Winterblast.”
During the month of December, Snowed-In teamed up with 95.7 The Big Pig in Olean, NY to offer an awesome Elllicottville Getaway Package. Visitors to participating establishments were encouraged to fill out an entry ticket and drop it into the “Celebrate the Holidays in Ellicottville” entry boxes on display.
The other half of Cove’s exhibit expresses his favorite and perhaps most challenging subject to photograph: birds. Cove explained that bird photography involves three crucial steps: finding the bird, getting close enough to the bird, and taking a good shot. “The more you’re around birds, the more fascinating they are. But the more you know about birds, the better photographer you are,” he said. Part of Cove’s love of winter is his appreciation for the snowy owl, as these beautiful white owls are difficult to spot amidst a snowy landscape and it takes a considerable amount of time to find them in their natural habitat. Cove explained that all bird photographers have a “nemesis bird,” that bird that they just can’t ever get close to no matter how hard they try. For Cove, the snowy owl was his nemesis bird, until a trip to Canada changed everything. In 2011, Cove and a friend, who is also a bird photographer, spent a week in northern Ontario tracking snowy owls and taking thousands of photographs. Cove learned that unlike other birds, owls like to hunt solo and stake out their territory, where they wait for moles to scurry across the field. Cove and his friend learned to look for open fields where snowy owls would likely be stalking their prey. However, knowing where to look for snowy owls isn’t enough. “Owls are very sensitive to human presence,” explained Cove, “and you have to be well hidden. Photo blinds are good, but it’s even better to catch the birds while they’re distracted, like while they’re hunting or nesting.” Some owls grow accustomed to the regular activity of the farmers whose fields they’ve “claimed,” and aren’t so easily spooked by humans. Cove explained that regularly visiting the nest is another way to get close to these beautiful birds as they eventually realize the human is not a threat as they fly back and forth from the nest. “It’s not enough to be 100 feet away from these owls,” said Cove. “Ideally, you need to be twenty to thirty feet away to get a really good shot.”

By Caitlin Croft Here in Ellicottville, you always hear about the great skiing and snowboarding, but not often do you hear about the advanced programs offered at our local resorts. I recently had the opportunity to catch up with Ellicottville natives Hayly and Logan Fredrickson (twins), two U16 alpine ski racers out of the Holiday Valley Training Center (HVTC). “Ski racing is a different and exciting sport that not many people do,” Logan told me. The girls have been racing since they were 7 years old. They were introduced to the sport by their father, Kelly, who raced as a kid growing up. “When we were old enough to enter the training center programs, my dad asked us if we wanted to ski race,” said Hayly. “We immediately said yes and haven’t looked back; it’s a thrilling sport and I like to go fast.” Hayly was named the U14 Racer of the Year for the Niagara Frontier Ski Council (NFSC) last year, which earned her a spot on the NFSC Gold Team. The Gold Team completed their yearly camp at Holiday Valley in mid-December. “It is my favorite camp to attend and this was my 3rd year on the team,” said Logan. “It was nice to have my sister there this year, as it was her first time on the team.” As a former ski racer myself, you gain a unique perspective of an individual sport and learn very much about yourself during the process. There are so many components that need to align for a good race: conditions, training, weather, proper equipment, etc. This is what the girls love about it - the variables. Last year in their final season as U14’s, both girls made it to the Eastern Championships at Sunday River, Maine. “It was so much fun to travel up there and get an opportunity to race against the best on the East Coast,” the girls said in agreement.

Both Hayly and Logan aim to ski race in college; Hayly wants to be a large animal veterinarian and Logan wants to become an anesthesiologist. “Our goals for this season are to make U16 Easterns,” said Logan. This will be a large feat for the girls as they are now competing against girls older than them. “We have been cross training since the spring to attain our goal - playing soccer, running track and training with Doug Schindler of Peak Performance.” I asked the girls what their favorite part of ski racing was and what they would say to someone that is thinking about racing. Logan told me, “You get to make friends from all over the state who share the same love of skiing and competition that you do.” For Hayly, it is “because you get to travel all over the state and East Coast seeing new places.” Just a few years ago, the Ellicottville High School formed a varsity ski team. (It only makes sense to have a ski team at a school that’s located in a ski town.) It is evidently a growing trend here in Western New York, as Williamsville just added a team for this season. Hayley and Logan’s father, Kelly, coaches the Ellicottville team. Both girls advanced to the New York State High School Championship last season, finishing in the top 20. ELLICOTTVILLE, NY - Snow may be on the top of everyone’s minds as winter grips our region, but the Ellicottville Chamber of Commerce would like to jump ahead just a bit, to Independence Day Weekend, when the slopes transform not only to golf course fairways but also to one of the best outdoor concert venues in the region. Since that first visit in 2011, Cove has made a few more trips to Canada and has found that it becomes easier and easier to find these magnificent birds, as evidenced by Cove’s stunning work. “The Bank,” “The Grab,” and “Touchdown” portray the snowy owl in flight, swooping down on its prey before disappearing against the snowy sky. Cove has exhibited his snowy owl photography in other shows, and is excited to be sharing his works in Ellicottville for the first time this winter! Cove, who is a cardiologist by trade, has had a passion for photography since he was a child. “For me, it was black and white prints that got me started with photography. I was totally fascinated by them even at a young age,” explained Cove. “My grandfather was an avid photographer and took tons of slides that we went over to his house to look at. I was always so curious to watch his excitement about them.” Cove began taking his own photographs and developed the film in his dark room, a process that he remembers fondly, especially in today’s digital world. “Digital technology really changed things,” said Cove. “But in the world of digital, the print is the end point. It’s one thing to look at a photo on a computer screen, but another thing entirely to see the print in person.” Indeed, Cove is particularly intrigued by the material aspect of photography, as he does all his own printing in his basement. He is very specific about his process and materials; for Cove, the physical quality of his photography is every bit as important as the images he captures. Both are critical to the art of photography, something that can’t be conveyed on a computer screen alone.

HoilMont is excited to announce the expansion of their winter fun activities with the first ever Snowshoe Social to be held on January 21st. The brave group of snow shoers will meet at Canfield lot at 6pm and head out on roughly a 3-½ mile hike. The hike will take about 45 minutes to get to the new Lean-To. Once arrived, a giant fire will already have been started where the group of hikers can enjoy a snack, warm up and enjoy refreshments they have brought.

THERE’S A NEW SHOW IN TOWN: CO LD S O U P By Dash Hegeman
Story telling is human nature. Factual, Fictional, or a combination of both; almost everyone loves telling a good story. It started with drawings on cave walls, evolved to oral traditions that were passed down from generation to generation, and eventually those narratives got written down. Today, between all the different social media platforms and digital means of communication, story telling is more abundant than ever. During the winter months, Ellicottville is not exactly lacking in the entertainment department. Between the slopes of Holiday Valley and HoliMont and the nightlife of the village, plenty of stories are made between the months of December and April. There’s a good chance that if you’re reading this, you’ve got an Ellicottville story or two yourself. And if you’ve ever been to The Boardroom, or The Boardroom on Main, and had the opportunity to talk with any of the staff then you know they have stories for days! Whether it’s shop talk about the newest and hottest products on the market, the latest scoop on what’s happening at the resorts in town, or just shop beagle tales (pun intended), The Boardroom crew never disappoints. It’s pretty safe to say though, that the topic they enjoy the most is snowboarding. So when Spencer Timkey (@spence_timkey on Insta) and Tyler Burns (@tylerxburns) were trying to figure out a new way to connect with people who share their passion for shredding, they settled on the podcast format. And just like that, Cold Soup, a weekly podcast for the shred enthusiast, was born.
DH: How did the idea for the podcast come about? ST: We were looking for an additional avenue to connect with people that love snowboarding. You’ve got your traditional social channels, but nobody wants to read longform on a Facebook post. When Tyler and I can sit around my kitchen table and actually carry a conversation, it’s a little more engaging. The podcast allows us to kind of go beneath the surface of a particular topic we’re talking about. If you’re in the car with your fam or your homies on the way to the hill, we want Cold Soup on those speakers, getting you amped to ride with some laughs along the way. DH: What made you decide on Cold Soup as a name? Who came up with that? TB: Sometimes you just say something and you know. Spencer and I seem to go off on random tangents from time-to-time, and somehow we got way off track talking about our favorite crockpot means, a recurring topic on Cold Soup. Gazpacho, a traditional Mexican dish that’s basically cold tomato soup came up, and I said I think we should call it ‘Cold Soup.’ Listen to Episode 1 and you can hear the whole thing unfold. DH: Ultimately, what is the goal of Cold Soup? ST & TB: Baseline, it’s to get people stoked on snowboarding and winter sports in general. We do a segment called “This Week in Snowboarding,” where we cover some banger edits snowboarders are putting out … check Bode Merrill’s part in ‘Reckless Abandon’. Woo boy! We want to get our listeners to engage with us online … but more so come into our storefronts and meet us in person, tell us what they thought of the episodes and maybe some different things they want to hear about. DH: What has been your favorite episode that you’ve recorded? Why? ST: We’ve had really good ones so far. Pat Hammer (WGRZ meteorologist, Ep. 4), Joe Grasso (of Burton Snowboards, Ep. 5) and Dan Aldrich (HV snowmaker, Ep. 7) were all so good, but I think my favorite so far is Episode 9 with legendary snowboard photographer Tim Zimmerman. Tim has been all over the world snapping pics of dudes who are ridiculously good at snowboarding, and he’s so grounded. Millions of people have seen those photos and he’s just a regular dude. TB: That’s such a tough one, because we’ve had really great guests. But I’ve got to agree with ST and say Ep. 7 with Dan. Snowmaking is so important, especially in a year like last when natural snow rarely, if ever, came along. It was really cool to see an inside look at the actual process of snowmaking. DH: What should/can people look forward to in coming episodes? ST & TB: We plan on having Pat Morgan (head of Big Boulder Park), Adam Sauerwein (of ‘The Pursuit’ fame), Pat Meehan (of Pret Helmets) and other industry people on. I’d really love to get HV General Manager Dennis Eshbaugh to come on … so stay tuned.
DH: Cold Soup has a planned weekly airing, correct? TB: We try to go for every Tuesday night around 8pm, but sometimes we drop at random times depending on our schedule. The goal is to get one a week, but there will be some weeks, like Christmas week, where we won’t have the time. But we really shoot for one a week. DH: If you could have a guest interview of anyone for Cold Soup, who would it be and why? ST: Oh man … besides the caliber of a pro rider like Travis (Rice), I’d have to say a Godfather - Jake Carpenter (of Burton) or Mike Olson (of Mervin Manufacturing). Those two have been with snowboarding since its infancy. Jake is the businessman, the powerhouse guy who saw a global vision for snowboarding. Olson is more of the mad scientist, cooking up new shapes and tech in his lab, like Magne Traction, utilizing rocker and blended camber more. DH: Any plans for Iron Mike to be on an episode? ST: We’re going to try. He’s got an unbelievable wealth of knowledge on both the industry and snowboarding, seeing as he’s been in it for so long. But if you really want the OG to drop some knowledge, you’ll just have to come to the Flagship. DH: Aside from Cold Soup, what podcasts are you guys listening to these days? ST: My main listen is Pardon My Take, the one the Barstool Guys, PFT and Big Cat, do. They’re awesome, not just because the content is hilarious, but they crank out 3 podcasts a week with some pretty heavy guests. That’s dedication. TB: I like “The Not Snowboarding Podcast.” We kind of follow a slightly similar format. And Comedy Bang! Bang. It’s just a randomly funny podcast. DH: What are you both most excited about for the upcoming snowboard season? TB: Sweet Lady Lake Effect! I feel like we are going to get Hammered this winter, and I’m so stoked! DH: Finally, where can people find the episodes at? TB: Two ways: On the website (www.boardsandpowder.com) or on iTunes! Go to Podcasts and search Cold Soup. Getting the show from hosted just on our website to a legit platform was huge - it gives people the opportunity to download it without blowing through all of their data. THERE’S A DIFFERENCE BETWEEN OWNING A RESTAURANT AND OPERATING ONE ... AND THERE’S A REASON THE SILVER FOX HAS REMAINED A CONSTANT FOR SO MANY YEARS By Spencer Timkey Speak candidly with any business owner in Ellicottville, and you’ll hear a common theme. Running a success story in a resort town requires finding the delicate balance between staying true to your mission statement and keeping pace with the always-shifting demands of the consumer. Some businesses in Ellicottville never achieved this balance - that’s why they’re not in business anymore. Others, like The Silver Fox, have done what is needed to not only keep the lights on, but remain a rock-solid constant of the Ellicottville scene. There’s a stark difference between owning a restaurant and operating a restaurant. Michael Nickolson, owner of ‘The Fox,’ falls into the latter. We walked in and immersed ourselves into Ellicottville’s only true steakhouse. Graciously inviting us for dinner and drinks, Mike sat down between courses to expound on the restaurant’s beginnings, navigating a restaurant through good times and bad, and some of the things The Fox offers. My mom and several members of my family got their first paychecks working for Mike and his father Jerry - so it was only fitting that I take her along as my date for the evening. A Manhattan made with Buffalo Trace bourbon for myself and a glass of crisp sauvignon blanc for mom started our evening. We sat in a nestled corner with low, warm lighting that produced an atmosphere perfect for a quiet night out with friends, family or date. Mike sat down and opened the history book. “My father cooked and bartended when he got out of the Service, and his uncle owned a restaurant in Buffalo. Some time after we opened, he was interested in me taking it over. At that time, we were the 5th sit-down restaurant in Ellicottville,” he said before rattling off the other originals, like the Ellicottville Inn and The Birdwalk. As Mike spoke, Angela (our friendly, engaging server) brought out an appetizer dish of fried Dorade, served with remoulade in an Asian style. A white fish that’s sweet to the taste, the dish was enhanced with two sauces that catered to both sweet and spicy. “In the 70s and 80s, it was steak and potatoes. The whole family would order cuts of meat, and that’s just the way it was. Obviously, things are a little bit different now. As eating habits change, you need to change with it. We still serve a great cut of meat. But now we’re offering more seafood, pork, and white meat. Things that can appeal to every member of a group.” Nickolson explained that in prior years when a table of 6 came in, you prepared yourself for six cuts of red meat. In 2016, that’s not the case - or if it is, it’s rare. But constantly bringing in new, fresh items - like the Dorade appetizer - keeps the menu fresh. “The Halibut, for instance, is fresh from Ocean Beauty (out of Seattle),” he said. “We bring the whole fish in and break it down ourselves. That’s part of the process for us, ensuring the dish is prepared front to back exactly the way we want it.” Unique because of its location and diversity of people that it brings in, Ellicottville is a rare breed that allows for multiple restaurants to coexist without entirely overlapping on a particular customer. Nickolson knows that’s what makes both The Fox and the overall vibe of the town successful. Filling one of those niches is a steakhouse that provides a superior cut, which Angela brought out next.

A fillet dish called Love Me Tender Love Me Blue - served with mashed potatoes for me and surf & turf for mom. I’ve got a big appetite, and I couldn’t finish it all. It was superb. One of the constants you can expect from The Fox is how excellent the main dish is. That constant traces back to the owner/operator idea - Mike is an operator. “I think one of the biggest reasons we’ve maintained our level of success is that I’m still on the grill. I’ve been doing it since we opened - grilling, directing, being an integral part of the kitchen. I’m involved in everything from the choosing of the wines to the meat to the sauces we use. It’s a very hands-on approach.” As we finished our entrees, Mike gave us insight on some of the things The Fox does to differentiate itself. A VIP membership allows you to call in for a table (The Fox doesn’t take reservations) up to an hour and a half in advance. That gets you discounts on wine and appetizers as well. But the one ongoing special The Fox does that piqued my interest the most was Date Night. “Date night started around 5-6 years ago. The concept is quite simple - to get couples to have a date night. A lot of couples, in their older age, start taking the marriage for granted. We want you to come and enjoy the company of each other, and I think that’s done because all of the dishes are shared. Enjoy the ambience, enjoy the food, but most importantly - enjoy the company.” We finished the evening with sea salt dark chocolate from Watson’s coupled with a dessert wine - Late Harvest Zinfandel from Bella Winery. Mike added that the winter menu fires up on Dec. 21st, and winter Date Night will start after the 1st of the year on Wednesdays. Often, people think yoga is simply stretching. However, those who come to the practice will quickly learn that it incorporates much more than just a physical body practice. Yoga certainly allows for the student to stretch one’s body, but it also allows one to transform on a mental and spiritual front. While the student is moving through a series of postures linked with corresponding breathwork, they are receiving corresponding benefits to the nervous system. These subtle benefits include relaxation, mindfulness, heightened concentration, stress reduction, a reduction in reactivity, and an overall sense of calm. When I was a young girl I recall seeing my Dad in a headstand on his orange wool rug (his version of a yoga mat). Many years later I came across his books with pictures of men in various yoga postures. I quickly grew to cherish these books as my own. They were what helped me heal from his passing. It was as though he knew I would need the tools that a Yoga practice gives to its students. Like many students who begin on the yogic path, I signed up for yoga classes believing that my stressed body and depressed mind would benefit from some gentle stretching. I certainly did find a great deal of relief from the stretching postures, but I found an even deeper release of the mental build-up that grew with his absence. I found myself going to more classes, craving this simultaneous relief of body and mind. I realized, through the tears that certain postures triggered, that my body and mind had become very disconnected to protect my broken heart. With continued practice, growing physical strength, and a more concentrated mind - due to the breathing and meditative practices I was incorporating - I began to understand that yoga is so much more than stretching the body. It clearly had the capacity to help mend a deep hole from the void I was left with. Eventually, I felt a sense of wholeness again. So, I arrived at yoga practice via my Dad, but I began to teach yoga on my own accord. I developed a strong desire to give others a similar feeling of release and relief that the regular practice of yoga provides. Yoga reminds us of that tool that we all have within us - our breath. It is through the collaboration of the physical practice of postures and the concentrated focus of breathwork that one arrives at the awareness we all have the present moment anchor of breath within us, always. This may seem very simple, yet is very profound when we allow the trust in our breath to calm us in situations of fight or flight, fear, sadness, anger, etc. I currently teach in my downtown Ellicottville boutique studio. I teach all-level classes that are available to most students with room for layering more difficult options as the body grows stronger. I incorporate relaxation, breathwork, balancing, as well as vigorous warming of the body movement in my classes. Everyday our body is continually being exposed to positive ions from cell phones, microwaves, computers, tv’s, the air we breathe, and the water we drink. He wanted to provide Olean with something no one else had. After brewing his own beer for over 10 years, Gregg Piechota - an Allegany native - bounced an idea off of his friend Jaye Beattie about opening a craft beer bar. After some consideration, they conceded that Olean was in desperate need of something new, something fresh. Four Mile Brewery was born.
It’s so much more than a gun show. When the Olean Sports Show opened its doors to the public eight years ago, it was easy to assume that this would be another run-of-the-mill sportsmen show, complete with guns, knives, ammo and all of the appropriate hunting accessories. But as society’s propensity for spending more time outdoors has grown, so has the Sports Show.
“I just started thinking, if no one else is going to do it, maybe I can be the one, Piechota told me. “Myself, Jaye, and Nick - our 3rd investor - all had kind of a similar vision for what we wanted it to be, and we all brought different things to the table. It was a perfect fit.”
Going down at Good Times of Olean on Jan. 21-22, the Sports Show has transformed itself into a full-blown dream for outdoor enthusiasts. Adding vendors that cater to kayakers, snowshoers and mountain bikers, it has diversified itself into an appealing exhibition for all ages and interests.
Four Mile’s history goes back to a time when (gasp!) the government didn’t want us to drink. No, they refused to let us drink. In 1907, the Olean Brewing Company opened at the same brick & mortar where Four Mile resides (until Prohibition forced it to close.) Now, 202 E. Greene Street is alive and well again, providing the masses with magical mixtures of hops.
“We try to say it’s not just blood and guts,” laughed Meme Yanetsko of the Greater Olean Area Chamber of Commerce. “There is still plenty of that, so hunters need not worry. But we have made a dedicated effort to make this show more appealing to a broader range of people. When we first started, we thought it was a great idea because of the success of the Home Show. Then, we were pulling in just local vendors. Now, we’re getting people from two, three, four hours away.”

“I’m a big IPA guy,” Piechota said. “My main brewer Craig (Clark) is as well. We centered our flagship brew - the Allegheny IPA - around that love. It’s a recipe derived from 20 years of Craig trying to find that perfect blend (editor’s note: Craig nailed it. The beer is really good!) and we took it from there. After we attempted - successfully to brew it in our large system, we knew we had a winner. That’s by far our best seller.” Four Mile’s rapid ascension within the ranks of western New York’s craft beer scene is a testament to the dedication Gregg and co. have in brewing a great beer. Initially on board with Sanzo Distribution, they soon found that the Buffalo market was thirsty for some fresh blood (breweries). Now with Certo Distribution, there are 65 Four Mile taps in the Buffalo area, with many more on the way. “We’re constantly growing, constantly expanding,” he said. “We recently signed on with TJ Sheehan Distribution, which has a heavy presence in the Rochester/Syracuse markets - our first kegs shipped to Rochester last week.” But to fully experience the Four Mile brand, you need to head over to Olean and see it for yourself. By utilizing the old building, Four Mile has been able to recapture that pre-Prohibition vibe … all the while, bringing a new-age touch to it. “The 2nd floor is now good to go for private parties,” Piechota said. “We’ve got Coach Schmidt’s (St. Bona Men’s Basketball Coach) radio show broadcasting live every week, and we do gameday specials whenever there’s a Bona game. During the summertime, our biergarten comes alive with live music and people hanging outside by the firepits. We’ve created a really great scene that people have been loving.” When you go over, don’t think that beer is the only purpose of your trip. Four Mile’s kitchen is constantly cooking up fresh dishes to complement the hops, and Piechota said their winter menu is darn near as good - or better - as the summer one. Now that New York State has lightened up and lets bars serve alcohol before noon on Sundays, brunch has become a weekly lightning rod. (Now, if we could only get Uber!) And if you’re just in the mood for some beer and tacos, then Taco Tuesday should do just the trick. “The reception we’ve gotten from both the people of Olean and the local craft beer scene has been just tremendous,” Piechota said. “What’s really great is that a lot of our brewery peers in the Buffalo area consider us a ‘local’ brew. If you can find something that no one else does, why don’t you do it?” Four Mile Brewery is located at 202 E. Green St. in Olean, NY. One such vendor is Jim Beverly of Oakfield, NY. Missing all but one year, Beverly specializes in training Golden Retrievers to track prey while hunting. If you’ve got a dog and you’re interested in teaching him how to do more than sit at your feet while you’re eating, you can bring them along to the Sports Show. “WPIG and The Mix come and play MC for us to kind of direct traffic inside the show,” Yanetsko said. “We don’t want people missing out on all of the great seminars and activities that we have planned. In doing so, they’re able to do some live broadcasts directly from Good Times.” Some vendors even bring ATVs, side-by-sides and snowmobiles right to the show, where you can hop on and take them for a test drive. Although kayak vendors will be there as well, you might not be able test them out … seeing as the pond will be frozen. “Country Squirrel of Ridgeway, PA will bring a selection of the snowshoes they sell,” continued Yanetsko, “so you’ll be able to get onto those and cruise around. We’ll also offer more seminars geared towards women and the outdoors - how to shoot recreationally, take care of yourself outside, hiking, kayaking, and outfitting the entire family. A Conversation with Bo Bice HULICK: It’s great to talk to you again Bo! BICE: Yes! We talked when we were going to play Ellicottville in the summer of 2015. This is wonderful to have a repeat chat. HULICK: How did your Summer Fest performance go on the slopes? BICE: It was a great time! We have a great time anywhere we go, but that area is almost like coming home for us … being that the band originated in Canada. HULICK: This time around, you will be playing at Seneca Allegany Casino in February 11 … BICE: Yes, we are excited to have that date on our calendar for 2017. It’s been a very busy year for us in 2016 and we are looking forward to 2017. Hey, I celebrated my third year with the band this year. HULICK: Wow! I wouldn’t have thought it has been three years already! BICE: Yes, three years. I’ve been all over the world, literally with this band. For 2017 we already have Jakarta, Indonesia on our schedule and we’ll be heading to Australia again. So it’s shaping up to be another great year. HULICK: You’re going to hit the ground running in the New Year … BICE: You got it! We just got back from Mexico. It was an incredible crowd at the Jazz Festival there. You know how I told you before that most people up north don’t understand what I’m saying with my southern accent when we talked last?

SATURDAY | FEBRUARY 11 @ 7pm By Melanie Hulick Grammy award winning band Blood, Sweat & Tears will be returning to the area when they play one show only at Seneca Allegany Resort & Casino in Salamanca. Those very familiar songs and sounds of a band that has stood the test of time will warm up the Events Center on Saturday, Feb. 11 at 7pm. Many of you were probably part of their audience when they played on the slopes of Holiday Valley during Ellicottville’s Summer Music Festival two years ago. For those of you that missed that show, including myself, we are lucky to have a second chance come around so quickly. With hits like “Spinning Wheel” and “You’ve Made Me So Very Happy”, it is no wonder this band has been a fan favorite around the world for five decades now, having been formed in 1967. I was able to talk with lead singer Bo Bice and drummer Dylan Elise for their show at the Summer Fest, and I got the chance to talk with Bo again about the upcoming casino show. Bice liked the idea of having a “repeat chat” and we had a lot of fun catching up. I got an update on where the band will be heading in 2017, as well as that possible new album we talked about last time. I remember thinking when I spoke with him before, how funny he was, and he was no different this time around. Bice was excited about a milestone he celebrated with the band this year, which brought the phrase “the older you get the faster time flies by” to the forefront of my mind; and how they are all looking forward to coming back this way and even mentioned a wardrobe change he is making from what he brought when they played on the foothills of the slope in 2015, which you will read about in the following conversation. HULICK: Yes, and I told you that I had interviewed Larry the Cable Guy and had you covered. BICE: Exactly! Well let me tell you … these people in Mexico didn’t know what in the world I was saying! (laughs) HULICK: So how do you feel, three years later, about taking the job with the band? BICE: I’ve always said - and this goes for my solo career and anything else I have done - that if I quit digging it, I’ll quit doing it, and I dig this more and more every single day. I truly do. I’m not just saying that because I’m in the band and collecting a check … truly. I do a lot of different things … I still do the Bo Bice thing, I’m raising four kids with my wife and I dabble in a few other different businesses, but this gig with BS&T fulfills me musically and I am able to travel around with my brothers and play music that I love. HULICK: We talked the last time about a possible new album in the works. Any updates on that you’d like to share? BICE: I still write as a solo artist for myself all the time, but I have to turn into a different creature if I want to write in the frame of BS&T. A lot of our time has been capitalized in touring. It’s a double edge sword when you wake up in a different city or town and go to sound check and play a show, then repeat it all the next day. It doesn’t leave time for writing. You know what … out of respect for the members of the band, let’s just take my “job” hat off and talk to Bo Bice a minute. As a guy who owns a record label, and has been doing this for a while himself … it’s hard to sell records anymore to be honest with you. I can’t tell you behind the scenes why we haven’t or aren’t rushing to put out an album, but I can tell you that by keeping the music alive, by touring right now, is most important to us as a band. So until we can figure out where is that next hit that you and I used to know that sells records at Sam Goode’s … (laughs) HULICK: (laughs) No kidding! Wow, that’s a blast from the past! BICE: That’s not my little soap-box rant, that’s my overview of the situation. HULICK: Well you’re right. The music industry has changed so much and when a vocalist or group wants to make a new album and start writing, they take time off … like an Adele, Bruno Mars or Bon Jovi. They don’t tour like you guys do, which is all the time. BICE: You’re right. You know before BS&T I used to take January and February off just to do what you’re talking about … write. Then March was pre-production to get the tour ready for April and from then to New Year’s you would tour … and that was my cycle. But listen, I’m not complaining, why sit around and complain about something you’re not going to change … and you’re not going to change the music business. So change what you can, live with the rest, adapt and move forward. Listen, I tell folks this all the time about my career … I’ve worked really hard to get where I am, so if you want my spot you need to get up early … eat your breakfast … get you a good cup of coffee … some fresh squeezed orange juice, not the concentrate, because you are gonna need all the vitamins to keep up with me Jack! HULICK: (laughs) You crack me up! BICE: It’s gonna be hard to steal my position away from me, because you’re gonna have to come in and snatch it from me, or I’m gonna have to get old and wither away … but don’t think you’re just gonna get it! (laughs) HULICK: (laughs) You are too funny! Well this has been fun talking to you again and we can’t wait to see you guys February 11th. It’s going to be quite different, weather wise, than it was when you were here in July. BICE: You know what? I love coming to that area. It’s always beautiful … you’ve got Niagara Falls, the ski areas, etc. Winter is absolutely beautiful there for a few minutes … then you run your butt inside as fast as you can! (laughs) … So I’m gonna bring my nice new winter trench coat with me … I will dress the part. HULICK: (laughs) What? No Speedo this time like you brought to the Summer Fest? BICE: (laughs) No neon green Speedo … I’ll never do that one again, I’ll tell you what! So tell everyone to bundle up and come see us in February.

JAZZ IT UP On Saturday, Jan. 14, 2017 at 7:30pm, the Hot Sardines will perform at the Bromeley Family Theater in Bradford. Their self-titled debut album was named by iTunes as one of the best jazz albums of 2014, and spent more than a year on the Billboard Jazz Chart debuting in the top 10.
Bandleader Evan Palazzo and lead singer Elizabeth Bougerol met in 2007 and bonded over their love of Fats Waller. With musical influences of such greats as Louis Armstrong and Billie Holiday, they began playing open mic nights and small gigs. By 2011, they headlined Midsummer Night Swing at New York’s Lincoln Center. WARREN COUNTY WINTERFEST Pennsylvania’s Chapman State Park plays host to the annual Warren County Winterfest, to be held the weekend of Jan. 20-22, 2017. A 32-mile sled dog race is held on Friday from 9am-7pm. Events on Saturday (9am-4pm) include the Polar Bear Plunge, sled dog sprints, ski-joring, canine weight pull, ice skating, ice fishing and the family-friendly sled riding hill. CROSS-COUNTRY SKI IN SCENIC FORESTLANDS The Kinzua Valley Trail is a newly expanded 7-mile trail ideal for cross-country skiing or snowshoeing. The linear trail meanders through deep woods and scenic woodlands from the trailhead at Westline to the Red Bridge Campground in the Allegheny National Forest. During the winter, the fresh snowfall glistens on the branches, and tracks from woodland creatures catch your eye, but it is the silence of the Forest surrounding you which brings a sense of amazement. The trail is not groomed, so this is not a trail for the beginner or those suffering from a case of too many cookies over the holidays. Don refers to Max as “the best blue-eyed soul singer on the planet.” Lead guitarist Bruce Kulick is best known for his 12 years with KISS and also has credits with Michael Bolton, Meatloaf and Billy Squier. (KISS members Gene Simmons and Paul Stanley were influenced early on by Grand Funk.) Keyboardist Tim Cashion has a master’s degree in music from the University of Miami. Affectionately called “Dr. Tim,” his credits include stints with Bob Seger and the Silver Bullet Band and English soul man Robert Palmer. Taking to the stage before Grand Funk is a legend of classic rock, Carl Dixon, with Carl Dixon and the Last Buffalo. Born and raised in Sault Ste. Marie, Ontario, Carl Dixon remains one of Canada’s stellar singers and musicians. He’s fronted and played with some of Canada’s most iconic bands including The Guess Who, Coney Hatch and April Wine. Carl scored his first record deal in the 80s, was featured on MTV and went on to tour alongside Iron Maiden, Judas Priest and many more. His music career took him through rock n’ roll highs and lows throughout the 90s and into the new millennium. While lead singer of The Guess Who, Carl was critically injured in a car accident in Australia in 2008, sustaining 52 injuries. His remarkable comeback as a solo artist, then reuniting with Coney Hatch to score a new record deal, has only been topped by his recent return as front man of The Guess Who for two special shows in the USA in January 2016. Carl is a published author of Strange Way to Live - a story of Rock ‘N Roll Resurrection, and he’s a prolific songwriter and inspirational speaker. He now resides in the wilds of Haliburton Ontario. The night before, the Buffalo Philharmonic Orchestra will perform their annual show featuring patriotic fanfare choreographed to fireworks, dance music and some great movie favorites, including Pirates of the Caribbean and Frozen. There’ll be something for the whole family to enjoy. The weekend gets going Friday with the kickoff event for Ellicottville’s “Stroll the Streets.” Entertainment will take place all throughout the village with music at the gazebo and so many other events. Shake off those winter blues and head out for a weekend of great Blues music in Ellicottville! It’s all a part of the Ellicottville Winter Blues Weekend, Jan. 20-22. Some of the region’s best Blues artists will take the stage at various venues around the village and at Holiday Valley to help you break out of those midwinter doldrums. “The holidays are over, winter has you in your nice, warm home but you are starting to go a bit stir crazy - we get that,” says Barb Pump, Ellicottville Chamber of Commerce Events & Membership Manager. “This is one of those weekends where you can just let go of all of those pent-up feelings and get out for some great music, good friends and a drink or two.” That weekend is also the annual “Harley-Day Valley” at Holiday Valley Resort (Saturday, Jan. 21). Head up and enjoy the slopes, but also stop in at the Main Lodge where you can experience all there is in the way of motorcycles and riding … once the weather breaks and the roads are a bit better, of course. Museum bikes will be displayed at the various HV lodges leading up to and on the day of the event, and the Harley-Davidson JUMPSTART™ Rider Experience will be back! The JumpStart combines a Harley-Davidson motorcycle and a specially-designed, stationary support stand. No knowledge or previous motorcycle experience is necessary.
