By Spencer Timkey When you first walk in the door at Katy’s Cafe in Ellicottville, your senses come alive. Smiling faces behind the counter offer you your first (or maybe, like me, third) cup of coffee. The distinct sizzle of bacon can be heard from the kitchen, while your eyes are drawn to the unique look of the tables with tree limbs acting as legs. Vivid paintings and photographs by local artists adorn the walls. But the best part of the morning (or afternoon) … the first bite. The genesis of Katy’s traces its roots back almost three years, when Katy Arena was presented with the opportunity to open her own restaurant. Seeing it as a chance to do something she loved while adding some diversity to the Ellicottville food scene, Arena rolled the dice.

“I was living in Allegany, going to school at JCC,” she told me. “My friend Bethany called and said ‘Do you want to work in Ellicottville?” … Little did she know, she’d start that very night. “She didn’t tell me it was Fall Festival! (laughs) But so it began. I worked at The Depot and Madigan’s for almost 10 years before I bought this place.” As with any small business, the risk oft times outweighs the reward. In a market such as Ellicottville, small businesses need to adapt to the chaos of winter and (generally, but not so much in recent years) slowdown of summer. “I thought about it while I was finishing up my marketing degree,” she said. “I asked myself, ‘Is this really what I want to do?’ and it definitely is. I love it so much.”

Offering a vastly unique menu, Katy is constantly in the kitchen whipping up new concoctions. Her daily specials couple healthy with flair, so it makes breakfast and lunch an easy choice. The regular menu boasts things such as ‘The Good Morning Bagel’ (writer’s note: personal favorite): an Everything bagel with herb cream cheese, bacon and freshly cut cucumbers.

If you’re familiar with the area, you’ll most definitely remember Eddy’s Restaurant, a local favorite that shut its doors a couple of years back. With an excellent location on Route 219 in Great Valley, it’s surprising that no one has attempted to reopen. That is, until now. “John (Northrup) threw around the idea of doing the Eddy’s project last year,” Katy said. “We went and looked at the building, and I was instantly scared because it needed some work. I talked with my husband Vic, John and his partner, and some other family and friends about it. We spent countless hours going back and forth, weighing the pros and cons. Can we handle two restaurants? After much deliberation, we decided that yes, we can!” Starting the project last August, Katy slowly began to realize how much potential was there. But that wouldn’t come without some elbow grease and creative thinking. “What we ultimately decided on is that the place just needed a facelift, a little love,” she said.

The new restaurant, which will be called “Katy’s Fly In,” will offer breakfast, lunch and dinner with a totally different menu. Things like: scratch sausage & gravy biscuits, Americanstyle hand-pounded burgers, different types of fries, meatloaf, fried chicken. But the biggest advantage of the new place? It’s quite simple. Parking.

“Parking is huge! I have tons of friends from school and the area that want to come eat here (Ellicottville) but a lot of times it’s so frustrating because you can’t find a place to park. So having such a big lot at the new restaurant will be so advantageous.” Katy’s Fly In will offer a full range of options while also possessing a beer & wine license. She hopes to have the doors open by mid- to late-June (if all goes according to plan). Looking to Get Down, Dirty and Have a Great Time? We Mean REALLY Dirty ... Down-in-the-dirt-mud-in-your-hair-for-days DIRTY! By Nicole Nyznyk

THE INSIDE SCOOP FROM AN EXPERIENCED MUDSLIDER NICOLE: Tell me about your first experience with the Mudslide at Holiday Valley. SHELLY: I was actually sick with bronchitis, but I was determined to run it. I showed up with my best sneakers, my phone, and my sunglasses. My friend met me at the top of the hill, and ‘politely’ informed me that I should leave my gear with someone else or it would be ruined. I had no idea the amount of mud and water that I would encounter. My typical running essentials were sent down with a Mudrun volunteer … the next year I wore very old sneakers, and no phone. NICOLE: Did you have a teammate? Can people do this solo? SHELLY: The first time I competed solo and did the 3.5-mile run. The next year I ran the longer 5.4-mile course and had a teammate. I was nervous to run alone that first year. However, I had a smile on my face the whole time. I checked the pictures from the race, and in one of them I was standing at one of the obstacles, by myself, with the biggest grin. I believe it was where I had to crawl under logs in water. I’ve run many races, and never have I had such a smile on my face! NICOLE: Sounds like a total muddy blast! Tell me about the costumes … did you have one the past years you participated? Can you let us in on what you plan on dressing up as for this year’s event? SHELLY: Last year when I ran with my good friend Mila Clauss, it was Flag Day, and since we are both teachers, she organized some great costumes for us. Patriotic with stars, stripes ... and mud. It’s always exciting to see what is to come, so you are not as worried about your time or where your friends are. With that said, having a group or buddy to run it with adds an extra element of fun - it’s great to see your friends get muddy and cheer you on. I am still looking for a costume theme this year … I have some ideas. NICOLE: What were some of the most interesting costumes you saw last year? SHELLY: There was a man who ran in jean overalls and had a shot ski with him the whole time. I gave him credit for running in wet jeans, and a ski. To be comfortable is important, but costumes are sometimes a priority … (chuckles).

If the title above sounds like an ideal way to spend a sunny summer day, then no doubt the Holiday Valley Mudslide Obstacle Trail Run is your main event! Holiday Valley will host the 4th annual race on Saturday, June 20 with two distance options: a 3.5-mile course starting at the top of Spruce Lake (chairlift rides are available to spectators for $5; race registered participants ride for free!) and a 5.4-mile course for those feeling extra tough, with the same start location. Both courses offer no escape from various obstacles, including rope climbs, log barricades and a final obstacle that has you sliding down a giant mudslide! Did I mention that you are going to get muddy? … VERY VERY MUDDY! Jane Eshbaugh, Marketing Director of Holiday Valley Resort, shared some insight on what makes this event such a great success and keeps bringing people back: “Our event is relatively gentle compared to a Tough Mudder or Spartan Race. So it is attractive to first-timers, families, and the vast majority of runners who just want to have fun and not get tortured!” With that said, parents are encouraged to bring their young ones along for the Kids Mini Mudslide, a half-mile-long course with two obstacles and all the mud and fun experienced in the main event! Bonus fun: costumes are encouraged! Prizes will be given out for the most creative get-ups on the course. Need some ideas? “Lots of bridal parties compete with brides dresses and bridesmaids gowns,” Eshbaugh said, when asked about some of the most interesting costumes she’s seen in the past. “Richard Simmons (and he had the moves down perfectly), Snow White (with a beard) and the Seven Dwarfs” were some of her top picks. Come dressed to impress and you will be rewarded! Once you’ve crossed the finish line, stick around for the after-party. Bring your friends and family for post-race fun on the Champagne Sundeck (located outside the Yodeler Lodge) for plenty of refreshments, music, games and good conversation. There will also be a Vendor Village set up with representation from The City Garage, Do-Op Gear, Power Bar, Red Bull and more. The Summer Local flagged down past participant Shelly Nagel to get her insight on the Mudslide. She certainly had some interesting and fun stories to share with us ...

NICOLE: What is your favorite part of the race? SHELLY: My favorite part … the families and friends that are involved. You’ll see a large group of girls/guys having a blast or an entire family that participates in the adult and kid run. And then when everyone gathers afterwards to relax and watch the kids go down the slide and into the mud - that’s the best part of the day. AND … the slide at the end. Adults and kids all race for the same slide. It’s worth it! NICOLE: What is something about the race that caught you by surprise? SHELLY: The actual amount of mud ... You have the potential, very early in the race, to be extremely wet and muddy, which is the fun of the race. NICOLE: Can you give any future participants any advice? What about those who might be hesitant to sign up? SHELLY: You get to run some amazing trails at Holiday Valley. You’ll be surprised and challenged by the obstacles, however, it is so much fun to have something new around each corner, which makes the race fly by. The longer race demands more upper body, but either race is absolutely fun and you will feel great when it is over. My advice: wear old shoes and clothes or costumes that can get muddy. And don’t be afraid to have fun! If you plan on staying for the after-party, you should bring a change of clothes and check the weather. The Mud Run is a blast. The staff and volunteers are amazing. It’s an experience you will not regret. You can be an avid runner, or just want to meet with friends for a good time. Either way it will not disappoint. If you want more of a challenge, then the 5.4mile run will test your overall endurance. If you are a beginner, I would recommend starting with the shorter distance. The obstacles are fun and everyone has a great time.

SO WHAT ARE YOU WAITING FOR? The Holiday Valley Mudslide certainly is a fun-filled day of muddy activities! Preregistration is $60 by June 1, or $80 after. All participants will receive a goody bag, a finisher’s medal, hot dog, and two beers (or beverages). Keep in mind, day-of registration is NOT available so be sure to register ahead of time! If you are interested in making the Mudslide an action packed weekend in Ellicottville, Holiday Valley is offering special lodging packages for two at The Tamarack Club and The Inn at Holiday Valley, complete with Mudslide entry, overnight accommodations, indoor/outdoor heated pool and hot tub, and a complimentary continental breakfast. PET PARADE 11:00 AM Washington Street One of the most entertaining (and crowd pleasing) events of the weekend is the annual Pet Parade, which will march down Ellicottville’s main drag to the gazebo where awards will be given in many different and fun categories. If you’ve never seen this, you’re missing out! Pets range from the typical dogs to the more unusual marchers - baby calves, ferrets, hermit crabs … everyone’s invited to join in!

A Conversation with Bo Bice and Dylan Elise HULICK: We’re excited to hear you guys are heading this way to play the Summer Music Fest! BO BICE: We’re gonna have a lot of fun. The catalog of music we get to play from with this band is incredible. For me it’s great because I grew up listening to their music and then I sang one of their songs on American Idol, and now I get to step on the stage and reunite some of the fans with their childhood like me. Then you add in that the Buffalo and Western New York area is practically considered the “hometown” for this band, who were originally from Canada; it’s always a great crowd. We’re looking forward to getting there and jamming with you guys. HULICK: You had tremendous success as a solo artist since your Idol days, releasing four albums and now you are the front man for an iconic group, which is a completely different world. Was that something you had thought about along the way? BICE: It wasn’t something that was in the forefront of what I wanted to do, but when the opportunity presented itself I saw they were bringing new aspects of writing new music, putting out a new record, which is their first in over four decades … I really felt like being a part of that. This is one of the biggest bands in history so who wouldn’t want to be a part of this alumni. HULICK: You mentioned the band is working on a new album. Are you writing songs for it? BICE: We’re all writing. One of the best parts of this album is that we didn’t set any kind of false deadlines … we have been out honing the songs and honing some of the new musicians that are in the band. It’s always about making it sound one hundred and fifty percent. HULICK: How has your experience been so far playing with the band on the road? BICE: Terrific! There was this large group of young people at a show recently and they were singing the words to these songs, which means their parents grew up just like I did singing this music … and I feel like it’s my duty to make sure that the people of my generation know this music.

HULICK: What are your thoughts on Dylan? BICE: Dylan is a phenomenal drummer. He’s only 25 years old and he’s put a lot into this. He’s paid his dues. He’s got a great work ethic and he’s a wonderful person with a great personality. One of the things that impress me about him is the fact that he continues to learn every day because he wants to be better and he strives to do just that. He’s sitting here with me right now and making me look good … it’s all about making me look better, so I am going to turn it over to him right now and thank him in advance for all the great things he’s gonna say about me. He’s gonna say how humble I am, how good looking I am and I am one of the kindest, most strong … you know I don’t want to keep going on about myself because it just makes me look bad … I’m gonna let Dylan go on about me. HULICK: (laughs) Well … OK. You don’t want to talk anymore? BICE: No, it’s not that … I love you very much and I want to talk to you … I just want to let this cat get some time too. Anyways I’m surprised you can even understand my redneck dialect. HULICK: (laughs) I interviewed Larry the Cable Guy so I got you Bo. BICE: (laughs) You got me covered then! (laughs)

Ellicottville and Holiday Valley will be rockin’ with Blood, Sweat & Tears as they join in the fun of the annual Summer Music Festival held over the Fourth of July weekend. Playing a show on the foothill of the ski slopes on Sunday, July 5 just may turn into a family affair. The band was originally formed in Canada which makes this area practically home.

HULICK: No pressure on you right now Dylan, right? DYLAN ELISE: (laughs) That was awkward sitting here listening to Bo go on and on about me.

The band was formed in 1967 and has been making incredible music ever since. Faces over the course of four decades have changed … in fact the faces have changed 175 times, but yet the music remains a staple on classic rock stations all over the country.

HULICK: How did you get connected to BS&T? ELISE: Bobby Colomby, the original drummer and founder of the band was searching YouTube and he came across one of the videos on me and he checked out a few more and called our manger, Larry Dorr, to contact me and Bobby contacted me as well and they flew me to LA to meet Bobby and they asked me to play a little bit with the band and it went really, really well. Then I was in Hawaii doing a show and they called and asked if I would do a few more shows with the band. Then on my way from Hawaii the guy who was the drummer at the time put his back out. I landed on a Thursday and was told about the other drummer and that the next show was on that Saturday. So I had to learn the whole gig in a day. It was quite intense, but when I played the first show I didn’t make any mistakes and everyone was really happy and I eventually was asked to stay and I am very appreciative of the opportunity.

This latest version of the band has some fresh new talent that probably is the best that has ever been assembled. “This newest version of BS&T is man for man, pound for pound, better than the original BS&T,” said Bobby Colomby (the original drummer and founding member of the band. “Without a doubt, they’re a ridiculously talented bunch,” he added. You may remember Bo Bice from 2005’s American Idol, where he became the runner-up, second to Carrie Underwood. This remarkably talented singer/songwriter now fronts the band as the lead singer, and a YouTube sensation from New Zealand, with over 22 million hits and counting named Dylan Elise, takes on the drums. I had the chance to catch up with the two recently to talk about their careers, BS&T and the Summer Fest and share a few laughs, as you will read.

HULICK: Well now you get to tell me about him. ELISE: It’s funny … in New Zealand, where I’m from, we watched American Idol with Bo on it and that’s who we were rooting for. It’s crazy that I got asked to become part of the band and he’s the lead singer.

HULICK: What age did you start drumming? ELISE: When I was six years old my dad said, “Good news and bad news … the bad news is you have to learn an instrument, but the good news is you get to pick which one.” So I said I pick the drum and he said he couldn’t wait to hear me learn the piano anyway. (laughs) Then along the way I found I had a passion for it … you know how little boys like to hit stuff. HULICK: You are being called probably the best drummer in the world. How does that feel? ELISE: It’s cool to have people say things like that, but there are probably a thousand drummers in the world that do exactly what I do and another thousand that can do a lot more than I can do. Everyone plays a little differently. I just push myself to learn more and exceed expectations.

HULICK: Do you want to talk about Bo now? ELISE: (laughs) He’s a professional on and off the stage. You can joke around with him and that’s really cool. He’s an awesome dude. He knows I’m from New Zealand and he always hints on things that are Australian, which is our biggest rival and he knows that too. He’ll say, “Hey, you got all those kangaroos down there…”, because we don’t have kangaroos. Kiwi is our outback iconic animal. Then he calls me Crocodile Dundee and he knows we don’t have crocodiles there. He’s a character both on and off the stage. We clicked real early on.

For those unfamiliar with Pasta Primavera, it is a dish consisting of pasta and fresh vegetables. And since primavera means “spring,” the vegetables of choice should be fresh, crisp offerings of springtime. A meat such as chicken or shrimp can be added, but the focus of primavera is the vegetables themselves.

THE SUMMER LOCAL’S Menu Pick of the Month

It is sometimes called “Au Premier” - meaning first new vegetables of spring. And although you can prepare this dish with just about any vegetable you desire, here at John Harvard’s we’ll be serving it up with yellow squash, zucchini, broccoli, cherry tomatoes, and artichoke hearts. Pasta Primavera first appeared in the United States in the 1970’s at the Le Cirque Restaurant in New York City. It wasn’t formally listed on the Le Cirque menu, but rather was a recurring house special. Its popularity caught on quickly, becoming a widely recognized signature development of American cuisine. Some accounts say that the chef of Le Cirque at the time, Jean Vergnes, refused the dish in his kitchen. The many requests for it had to be satisfied via a pot set up in the hallway and preparation done in a gloomy back corner of the kitchen. This story and the dish’s fame were featured in a 1977 New York Times article written by Craig Claborne and Pierre Franey based on the unlisted special at the Le Cirque. The article even included a recipe for the dish.

LET’S PREPARE THE DISH: PASTA PRIMAVERA Preparation of Pasta Primavera starts with your favorite pasta and veggies. (Any pasta will work for this recipe and almost any combination of vegetables can be used, be creative!) In a hot sauté pan add oil and the desired vegetables, let cook 5-7 minutes. Be sure to keep your pan moving so none of the vegetables stick. Add in fresh chopped garlic and let cook until the garlic is tender. Deglaze with white wine (make sure there is enough wine left to make your sauce). Remove your vegetables to make the sauce creation easier. Add butter and turn off the heat; keep the sauté pan moving until all the butter has melted and formed your white wine garlic butter sauce. Add back your vegetables and pasta and toss them all together in your pan. You can finish your dish with fresh basil and parmesan cheese if desired.

We all strive for more energy, improved sleep, better overall health, prevention of disease, balanced emotional and mental states and answers for existing conditions. Our focus is developing wise choices and habits with our nutrition, dietary supplementation, medical services, practitioners and lifestyle modifications in order to reach these goals. The selection of the following three supplements, as part of that focus, was chosen for improved cellular energy production, blood sugar levels and healthy cholesterol levels. Ultimately, this provides supplementation for the protection of your heart and blood vessel function.

Cellular Energy Production CoQ10

Coenzyme Q10 (also called Ubiquinone and Ubiquinol - both are found and used in the body) is an oil soluble, vitaminlike substance found in the mitochondria of cells. Mitochondria are organelles of the cells often called “the powerhouses” because they produce most of the body’s ATP or chemical energy. CoQ10 helps to generate ATP. The organs requiring the most energy (or ATP), and therefore having the highest concentrations of CoQ10, are the heart, liver and kidneys. CoQ10 also acts as a powerful antioxidant throughout the body especially in preventing oxidation of LDLs and is a crucial component of metabolic processes. CoQ10 has become deficient in humans for three main reasons. The body makes CoQ10 and requires more than 12 genes for this process. Often mutations in any of the genes will cause a decreased production of CoQ10. In addition, CoQ10 demands in the body are increased due to stress, illness and toxicity. Finally, statin medications and Red Yeast Rice both deplete CoQ10 levels. (CoQ10 should always be added to ANYONE taking statin medications.) CoQ10 levels also decrease with age. CoQ10 100 mg is in a soft gel capsule with extra virgin olive oil, beeswax and sunflower lecithin. Non-GMO. This product is in the form of Ubiquinone, needed for the body’s functions and able to be converted in the body to ubiquinol. The recommended dose is 100 mg with a meal twice per day. More may be needed in certain situations. Studies show that up to 3,600 mg/day did not produce adverse side effects and the observed safe level (OSL) indicated that the evidence of safety is strong at intakes up to 1,200 mg/day.

Blood Sugar Levels Berberine

In order to explain how Berberine helps to regulate blood sugar levels, let’s explain berberine first. Berberine is one of many isoquinoline alkaloids and is found in plants such as Oregon grape, bayberry, tree tumeric, goldenseal and Californian poppy. Alkaloids are produced by bacteria, fungi, plants and animals. Various alkaloids can treat malaria, asthma, blood vessel constriction, arrhythmias, pain, bacterial infections and high blood sugar levels.

Ancient Chinese records as early as 3000 B.C. have documented the use of berberines from plants as overall antimicrobials! Isoquinoline alkaloids in berberine are especially great for fungal infections. Berberine also treats fevers, stimulates the immune system, increases bile secretion, controls blood sugar levels in Type II diabetes, lowers triglycerides and supports healthy gut performance to help combat endotoxins produced by intestinal bacteria. Berberine IR (IR stands for Insulin Resistance) is extracted from Berberis aristata, aka Indian Barberry or Tree Tumeric native to the Himalayans in India and Nepal. Studies have clearly shown that berberine causes a decrease in fasting blood sugar levels, blood sugar levels after eating, HgA1C (a test of blood sugar levels over 4 months), fasting triglycerides, fasting insulin levels, insulin levels after eating, LDLs, total cholesterol and overall insulin resistance. The researchers concluded that “berberine is a POTENT oral hypoglycemic (blood sugar lowering) constituent with modest effect on lipid metabolism.” The results of berberine seen by each participant were decreased body weight and BMI, decreased blood pressure and increased energy. How does berberine work to control blood sugar levels? Berberine activates an enzyme that improves the action of insulin, increasing the cellular absorption of glucose. Most people with blood sugar dysregulations have problems with insulin resistance (aka Metabolic Syndrome X, Type II Diabetes or Hyperinsulinemia), not with the pancreas. Berberine has been shown to improve cellular absorption of glucose and, therefore, decrease destructive blood sugar levels. Berberine also improves the integrity of the gut by inhibiting the ability of endotoxins to bind to the intestinal wall for absorption into the blood. In the blood these endotoxins interfere with proper glucose metabolism. Endotoxins are produced in the intestines

by an overgrowth of “bad” bacteria due to toxicity from poor foods and misuse of various medications that change the healthy microbiome of the intestine. Bacterial overgrowth, increased endotoxins, poor glucose metabolism and overall insulin resistance are overwhelming problems in our culture causing obesity, heart disease, cancer, fatigue and other illnesses. Taking 2 capsules of Berberine IR twice per day with meals has been shown to increase gut integrity, improve blood glucose levels and support the body in healthy weight loss. By improving blood glucose levels, the risk of heart disease is significantly diminished.

Healthy Cholesterol Levels Bergamot Fruit Extract

Many people are asking how to lower triglycerides or LDLs and increase HDLs. The section on berberine is part of a program to help lower triglycerides; consuming more omega three foods and whole food supplements will help to increase HDLs; cleansing the liver, gallbladder and colon will support improvement of all three; while this section will help to improve elevated and oxidized LDLs. In addition to regular blood tests for cholesterol (total, LDL, HDL and TGs) ask your doctor to add oxLDL-c because high levels of oxidized LDLs play a significant role in atherosclerosis. CardioxLDL combines Citrus bergamia Risso extract with apple fruit, turmeric, green tea, grape seed, mangosteen, grape skin, olive leaf, blueberry and capsicum (all excellent antioxidants). This combination has been shown to decrease triglycerides, total cholesterol, LDLs and blood sugar levels and to increase HDLs by blocking an enzyme the liver needs to produce LDL cholesterol. Citrus bergamia Risso grows in The Calabria region of Italy. Citrus bergamot has “statin-like” properties without known statin side effects. It has also been reported “there are no other products that can raise HDLs like citrus bergamot”.

Summer vacation is the time for fun, trying new things and growing, and the Cattaraugus County Arts Council (CCAC) offers the perfect way for youngsters ages 4-14 to get the best out of their summer. CCAC art instructors have developed an exciting series of 5-day art camps that give kids the opportunity to indulge their creativity in fun projects while they explore new mediums and art forms. Kids ages 6-12 can create their own 4 ft. x 4 ft. mixed media masterpiece in the large scale painting class (June 29 - July 3) taught by CCAC Programs & Grants Manager, Courtney Mealy. Instructor Heather Kuntz will be teaching several clay classes, each tailored to a specific age group. ClayVenture (ages 4-7, and 7-11, July 20-24) explores working in clay to create both sculptural and functional pieces. Older kids, ages 11-14, will learn the proper use of a pottery wheel and learn the process of creating a wheel thrown piece of pottery (July 27-31). Two other classes for older kids (ages 10-14) are Comics Camp (August 1014), taught by Amanda Burdick, and Zoo-tastic Masks, (August 17-21) taught by Ardyth VanScoy. Kids will develop their own storyline in Comics Camp, and learn traditional comic techniques as they create their own stories and characters. VanScoy is an experienced costume artist, and will guide the zoo-tastic kids in making the mask of an animal of their choice over the course of the 5-day camp, using fabric, paint, feathers and other materials.

The chill of winter has subsided and in its place color has returned to the fields and hills of this beautiful area. And accompanying all of that color is the multitude of crops and agriculture that springs to life in Western New York this time of year. A fun way to broaden your horticulture horizons is to take advantage of the numerous farmers’ markets that take place throughout Cattaraugus County in the summertime. Never been to a farmers’ market? Picture numerous booths or tables in an outdoor venue where local farmers sell their crops. Fruits, vegetables, meat … all this and more can be found at your local farmers’ market. The concept behind the modern farmers’ market stems from the demand from consumers who want fresher, more organic foods that haven’t spent a long time in transit to get to the final destination. That, along with the drive to shop local and support your local merchants, has helped fuel a newfound popularity of shopping at the farmers’ market.

Printz, who has a spot on the REAP Board of Directors, also pointed out that “people want to know where their food is coming from and how it is being grown. With us (local farmers) people can trace back the origins of the food.”

Given its rural landscape, it’s no surprise that Cattaraugus County has a nice variety of market options for you to choose from and in many cases there is probably a farmers’ market located closer to you than you think.

Through the efforts of the Local Foods Program, distributors are now making connections that they might not necessarily have in the past and creating their own distribution pipeline. “If someone has extra sweet corn in Chautauqua County and we know that someone is at a farmers’ market in Allegany County and they are short of it (sweet corn) they are starting to make those relationships themselves,” said LaMendola. Those relationships are allowing farmers to move produce throughout the three counties (Allegany, Cattaraugus, and Chautauqua) more efficiently, which benefits both the individual farmer as well as the overall farmers’ market scene.

Saturday, May 16 marked the first REAP Farmers’ Market gathering of the season. This longstanding market has been running in Olean for approximately 30 years and the turnout on the 16th was a testament to the following that the market has built over the years. Despite the threat of rain, there were about 15 vendors on-site and a steady flow of customers. Geoff Buckner has been involved with REAP for about fifteen years and is now the market manager for the group. He says that with the new broad based marketing approach that REAP has taken (newspapers, radio, online and on Facebook) there has been an uptick in the consumer age demographics; especially when it comes to younger people. Historically, the farmers’ market has been a place where local merchants can make some extra money and showcase their wares to people who might otherwise not be aware of the merchant or what they have to offer. As of late, however, the farmers’ market has become an almost, dare I say, trendy way to shop. Between the push to “shop local” and a generally more informed consumer, it’s no stretch of the imagination to say that the popularity of the local farmers’ market has never been higher. According to Mark Printz with Canticle Farm out of Allegany, NY, “The big thing about the farmers’ market is that you can come and meet the producer. You get to meet the people that bake the bread or raise the pig. It gives you that connection.” This accessibility is a factor that consumers are starting to demand more and more of when making purchasing decisions - especially when it comes to food.

Kimberly LaMendola, an artisan who crafts and sells organic soaps through her Kumbha Moon Soap Company, is deeply involved with the promotion and growth of the local farmers’ market scene through her full-time job at Southern Tier West (www. southerntierwest.org). The regional planning and development agency is home to the Local Foods Program that LaMendola oversees, where the focus is to enhance local food efforts across the southern tier. The Local Food Guide that Southern Tier West has online at southerntierwest.org/htm/food.html is probably the most comprehensive local food resource available for this area. The guide covers everything from what produce is fresh at any given point in the year, to information on the farmers’ markets, to data on where you can find certain produce.

According to LaMendola, the promotion of the farmers’ markets location and diversity of vendors has been key in terms of drawing in new customers, but at the same time Southern Tier West is doing a lot of behind-the-scenes work with the various market managers and vendors to make their whole experience better because at the end of the day, not only are the vendors a business but the market itself is a business. As with any other business, trends matter! And right now farmers’ markets are trending upward. “Consumers are driving the demand everywhere, nationwide, for local food,” said LaMendola. “Whether it’s because we’ve had some foodborne illnesses in our national food supply, whether it’s because we’re becoming more aware of how food is made, consumers are informed and they are actually driving the demand. The farmers’ market trend is being driven by consumer demand for local food and consumers want to make relationships with people growing their food.” The local farmers’ market season is just getting started so you have plenty of time to visit some different markets and check out the variety of vendors and what they have to offer. Your taste buds will thank you!

The Allegheny National Forest, part of the Pennsylvania Wilds, covers more than 513,000 acres and includes hundreds of miles of multi-use trails, scenic drives and overlooks, and the Allegheny Reservoir. Here you can enjoy sleeping peacefully under a starlit sky - stay in a comfy bed & breakfast, rent a cabin or vacation home, or pitch a tent and camp in the great outdoors. The summer season brings a variety of fairs and festivals throughout the region including Art in the Wilds, a multitude of fishing tournaments, the Firefly Festival in Tionesta, and a brand new aviation event - Fly over Bradford. Here you have the choice to take the road less traveled. Rimrock Overlook is a stunning overlook with a 1.3-mile pedestrian trail connecting to the shoreline of the Allegheny Reservoir. Highlights of the overlook include the massive rock formations and scenic vistas of the shoreline. Steps are carved into the ancient rock formations, and a short 1.3-mile trail connects you to the shoreline of the Kinzua Beach Recreation Area. Shaded picnic tables are within an easy walking distance from the parking lot. From Bradford, Pennsylvania, travel west on Rt. 59 to a left-hand turn onto Forest Road 454 and drive 2.7 miles to access Rimrock Parking and Picnic Area. The trail difficulty level is rated easy to moderate, but the trail hike involves rugged terrain with sharp inclines and topographic changes in elevation. SPLISH, SPLASH - SUMMER IS THE TIME TO ENJOY THE WATER A variety of boating, fishing, and swimming opportunities are available in the Allegheny National Forest region. Canoeing and kayaking excursions can be booked with B’s Canoe Service in Bradford by calling 814-598-7347, or Froggy Bottom Allegheny River Outfitters in Port Allegany at 814-642-9200. Boat and kayak rentals are available at Willow Bay, phone 814-368-4158.

KINZUA BEACH BRING THE FAMILY TO ENJOY THE WONDER OF THE FORESTLAND TRAILS ALONG THE MARILLA RESERVOIR.

The Allegheny (Kinzua) Reservoir, a 12,000-acre impoundment on the Allegheny River, is the largest reservoir in the Allegheny National Forest. Species include bass, Muskie, walleye, crappie, catfish and panfish. Covering 12,000 acres, the reservoir offers unlimited motorized and non-motorized boating. Boat access is available at numerous locations. Boats are limited to slow, no wake speed in the following areas: Chapel Bay, Morris Run Bay (from Kiasutha to the headwaters above Red Bridge), Willow Bay and Sugar Bay. A Coast Guard approved personal flotation device needs to be worn at all times when onboard boats less than 16-feet in length or any canoe or kayak. Kinzua Beach is a free access swimming area located along the eastern banks of the Allegheny Reservoir in the Allegheny National Forest. The Kinzua Beach Recreational Area entrance is along Route 59, south of Bradford via Rt. 219 to Rt.770, and then Rt. 59 west. There is a large parking area, a beach house with washrooms, change rooms, water fountains and a seasonal concession stand. Shaded picnic tables, grills and a beach volleyball court are also located here. There are paved pathways leading from the parking area down to the beach, or you can stroll along the grassy hillsides to reach the water. The beach is formed of concrete with fine pea gravel used in place of sand, and it is approximately 450 feet in length and extends into the water to a depth of at least 8 feet. The water is fairly slow moving, with little risk from water currents. The waves will generally be small. A trail leading up to Rimrock Overlook can be accessed from the end of the parking lot. The beach is open daylight hours, May through September. The Kinzua Wolf Run Marina located along Rt. 59, approximately 28 miles from the City of Bradford, is a full service marina offering a boat launch with docking, kayak, canoe, pontoon, and fishing boat rentals and gasoline. Docksider’s Café, a seasonal restaurant with scenic views of the water offers outside seating in season. This restaurant is a convenient stop for dining when fishing the reservoir, or to enjoy the beauty of a sunset along the reservoir. Willow Bay Recreation Area, located along the south shore of Willow Bay in the northeastern section of the Forest, is only a 15-minute drive from the City of Bradford. Cabins at Willow Bay provide access to both stream and reservoir fishing. In addition to the cabins, campsites, tent only sites, boat-to only sites and a courtesy dock is available along with a picnic pavilion that can be reserved for groups. Elijah Run is located on the west bank of the Red Bridge Campground towards the southeastern tip of the Allegheny Reservoir, within the Allegheny National Forest. A fishing pier, courtesy dock, restrooms and a shoreline trail make this a favorite for shoreline fishing and non-motorized boating. The southern tip of the Reservoir around the Red Bridge area is also excellent for kayaking and canoeing. Kiasutha Recreation Area, just north of the village of Kane, PA, is located on the southwestern bank of the Allegheny Reservoir. Along with easy access for fishing, camping is available. NEARBY LAKES AND RESERVOIRS Hamlin Lake, in the Victorian Village of Smethport, is a stocked trout location. Covering 17 acres, the lake offers nonmotorized boat access. An easy accessible bank with a soft slope makes it perfect for the angler looking to practice their fly-fishing casting skills. Here you have an opportunity to fish for stocked trout and water species such as bass and catfish. Boating is electric only with only non-motorized craft permitted. Boat access is car top access as there are no formal boating docks. Covering 25 acres, anglers can easily access the shoreline from the convenient Marilla Bridges Trail.

PA FIREFLY FESTIVAL: JUNE 27-28 The Pennsylvania (PA) Firefly Festival is Mother Nature’s evening showcase of beautiful color against an inky nighttime sky. The nocturnal firefly naturally produces bioluminescent flashing lights, and as a guest at the Firefly Festival you will be able to witness this amazing spectacle. During the day (between noon and sunset) there will be exhibits, arts/crafts, music, food and fun for kids. The firefly spectacle will normally be able to be viewed after 10pm. Please dress appropriately for the weather and bring extra gear for the evening and inclement weather. Are you a lover of the great outdoors, interested in celebrating that passion with finely crafted pottery or woodwork? Or are you simply looking to spend a beautiful day outside with your family? No matter what your interest, plan to attend the 9th annual “Art in the Wilds” Festival, which will be held rain or shine throughout the weekend of June 27-28 from 10am-5pm in beautiful Evergreen Park in Kane, Pennsylvania. Local artisans from all over western New York and northwestern Pennsylvania will be showcasing their work during this two-day juried fine arts show. Featured artists include Donna Little, who creates beautiful one-of-a-kind pieces of jewelry from pewter, copper, and brass. Nature photographer Dewey Fladd is one of several exhibitors who make up the two-dimensional artwork category; his photography, as well as the work of fellow two-dimensional colored pencil artist, Dianna Wallace Soisson, both received Artist Awards at last year’s show. There are also many artists who make up the three dimensional art category, including Dianne Levenson’s metal artistry, Lanny Tewell’s leatherwork, and Roland and Geno’s Boni Pottery. Although several artists have been exhibitors every year, few can share the history and unique experience of this fine arts show like Marilyn Blackmore, Executive Director of Art in the Wilds. In a special interview with The Summer Local, Blackmore shared her involvement with Art in the Wilds, as well as the events and artists visitors can look forward to this year.

MARY: How long have you been involved with Art in the Wilds, and where did the idea come from? MARILYN: Since 2006 when my husband and I, along with some friends, talked about how we could help many local artists find outlets for their fine arts and crafts, how to bring in more artists, and how to provide economic development to the area. We decided that an art show would best accomplish those goals. The Pennsylvania Wilds Initiative was just getting established and I was asked to be part of that group. We wanted to support it and so the name Art in the Wilds was created. A great deal of research, including travel to some of the best shows in the country, ensued and we began planning. One of our friends had a family endowment and committed to a $2,000 fund to help get us started. Our first show took place during Kane High School’s Alumni Weekend, which proved to be a brilliant move as it brought hundreds of alumni to the show. At the same time, a co-op was being formed at the old, restored train depot which gave our artists an outlet for selling art from June through December, giving Kane a reputation for being an art destination. MARY: How has the event grown over the past nine years? MARILYN: The first year we had about 21 artists. That number has now stabilized to around 40. Attendance that first year was 2,181 and it has grown to 5,817 in 2014. Due to our remote area, we are considering that we might be staying around that number, although our marketing budget increases and we find new and exciting ways to let people know about the show. We feel it’s important to keep a strong ratio of patrons to artists so their sales can be strong. Artists have proven to be our best promoters. Many do several shows a year and find other artists who they think will fit well in our show. They encourage them to apply. MARY: How is Art in the Wilds a great opportunity for the artists who showcase their work? MARILYN: Last year, according to our marketing statistics, the artists made over 918 sales totaling over $51,072. Artists can sell their art in a gallery or online, but an art show can bring thousands of patrons in a short period of time and sales can be very brisk. The public is learning to buy art to enjoy and as an investment, and sales have increased steadily every year. Art shows also are a place where the whole family can comfortably view art and children can grow up with art around them, creating the impetus for becoming an artist or a patron of the arts themselves. MARY: What do you think sets Art in the Wilds apart from other festivals/shows like it? MARILYN: I think the main thing is that we are juried and that the artists are creating new and exciting handmade, often one-of-a-kind products. That means that our jurors can choose those artists who are constantly improving their work and those brand new ones who have fresh, new works. MARY: What else goes on at Art in the Wilds, such as live entertainment and dining? MARILYN: Although the main focus is always on the art, food vendors offer sandwiches, handmade chocolate delights and ice cream, funnel cakes and kettle corn. Seating is available throughout the park in two large food tents and on benches. Artists often demonstrate their skills in their booths and welcome questions and comments from the public. On Sunday, there will be special demonstrations in the gazebo by Dan Hayward, a glass artist creating fused and stained glass, and Peggy Houser, a jeweler specializing in beading. Those will take place from 11am-noon. Background music is provided and on Sunday afternoon from 3-5pm, a wonderful music duo of Denise Drummond (one of our very talented two and three dimensional artists) and George Stephens will perform a wide variety of music genres in the gazebo. Guests should be sure to visit the Student Exhibition and Competition that features high school artists from McKean and the four surrounding counties. MARY: Is there anything new/different happening at this year’s event that hasn’t taken place before during Art in the Wilds? MARILYN: In previous years, student art from the Kane Area High School has been showcased in a large tent. This year, that program has been expanded to include high school students in McKean, Elk, Cameron, Potter, Forest and Warren Counties. Students whose art has been accepted will be bringing their pieces on Saturday morning for judging and public viewing through Sunday, when at 4pm award presentations will be made. MARY: Do you find that visitors often return to Art in the Wilds year after year? MARILYN: Oh, yes! Each year we bring back favorite artists who are constantly upgrading and improving their art and also bring new artists who have heard about us and successfully apply. This year, ten artists will be new. We like to have a nice mix of media and also lots of new products from which patrons can choose. Also, admission and parking are free thanks to our loyal sponsors whose names are displayed in the show program and around the gazebo.

By Pat Morgan With cooler temps and activities safely in our rearview mirror, it’s time to shift gears and get back into the swing of things on the golf course. We’re lucky in the Southern Tier to have a plethora of phenomenal courses all within a reasonable drive, and on top of that, some of the best golf shops in the region. We caught up with the staff from Rick’s Golf World in Olean, NY, as well as the award winning Holiday Valley Golf Shop in Ellicottville to check out what’s new and trending in the world of golf. Owner and operator Pete Lisi of Rick’s Golf World - without even hesitating - stated that the new Ping G30 driver is one of the must-haves for your golf bag this season. Not only is it truly impressive looking, it packs a lenient punch, which allows golfers with all types of swings to find the fairway with each and every swing. Sticking with the driver theme, Lisi also touted the new Titleist 915 driver as a close second in his opinion. With a brand slogan of ‘distance without compromise’, the 915 has a unique Active Recoil Channel on the sole of the club, which allows the face of the club to flex upon impact. To keep it simple: more energy transfer, more distance. Easy enough, right? If you’re all set on your trusty driver, keep in mind you still need to fill that bag with some more artillery. Both Lisi and PGA Assistant Golf Professional Kyle Benish of the Holiday Valley Golf Shop raved about the new XR irons made by none other than Callaway Golf. For years, companies have sought to bring the distance from woods and drivers to the iron category. Callaway has finally done just that, offering a forgiving,

flexing face iron with a deep center of gravity. Just as we mentioned with the 915 driver flexing at impact, this iron does the same, resulting in longer, truer distance, something all players strive for. Keeping within the Callaway brand, Benish also recommends the Chrome Soft golf ball, revealing he believes it is hands-down the best ball on the market currently. Essentially, Callaway constructed a ball with lower compression than balls typically found on the tour, resulting in longer distance with iron play, as well as a consistent feel while chipping and putting. To put it simply: you need a sleeve (or two, if you lose balls as frequently as I do) of these in your bag. Lastly, if you’re all set on hard goods, let’s turn your attention to the soft goods side of the golf shop. In search of that ultimate color coordinated outfit to look timelessly in style ladies? EP Pro and Tuttle & Buck offer some of the best fits and patterns in the fashion game. For men, Nike has some of the best moisture-wicking materials with their Dri-Fit shirts and quarter zips, while Under Armour offers some of the broadest range of colors on the market. Remember, part of golf is looking good, and with so many options waiting for you to browse through, there’s no excuse not to! Of course, we can write product reviews for you all day long, but you need to get into one of these great shops, and see for yourself what the best equipment is for your game. Ellicottville is without a doubt one of the most special places that many of us live in or visit. Rich in character and unspoken tradition, it truly is a community that sticks together to support those who call it home.

You’re on the golf course with your friends. The sun is shining, you’re high-fiving after sinking birdie putts and at that moment, very little matters. Regardless of how you play (this isn’t the Tour, you should be enjoying yourself!), there are few things that beat out a round of golf.

What if we told you, though, that outside of the typical fundraisers and raffles, golf tournaments at nearby Holiday Valley Resort also play an integral role in helping support many of the initiatives in not only the local community, but the region?

That’s the life mantra Ellicottville’s Dan Busekist has adopted. An avid golfer and lover of the game, he recently founded ‘Clubs Fore Veterans,’ a non-profit that donates gently used sets of clubs to our nation’s veterans. “

We caught up with head PGA Master Golf Professional Steve Carney over at Holiday Valley to see just what the resort had in store this year, and without surprise - it’s a full calendar!

“Probably around four months ago, me and Anj (Anjanette Nicolazzo, Busekist’s girlfriend) were talking about things going on around town. I had a bunch of clubs I wasn’t using anymore, and didn’t know what to do with them. We went online searching for organizations I could donate to, and there wasn’t really anything locally.”

“Tournaments are indeed a priority for not only Holiday Valley, but the community” Carney revealed. “Not only do they offer tremendous benefits to various causes, but the local community benefit due to the influx of people, who are either shopping, staying, or dining in town - is truly a win-win for all involved.” Perhaps the largest golf tournament hosted at Holiday Valley is the annual Italian American Charity Golf Tournament (iacharitygolf.com), taking place this year between June 11-13. Tournament board member Pete Scheira filled us in, saying this was now the 45th year of the tournament, which is proud to donate $150,000 every three years to WCA Hospital. This donation goes towards some remarkable cancer treatment machines, which enable WCA to treat some of the most dynamic diseases in the world. This year, 88 teams of two will once again take to the course, to continue the rich tradition of the tournament. (Learn more about the Italian-American association at www.iacharitygolf.com.) Another long-standing tournament within the Ellicottville community is the annual Memorial Library Pro-Am, to be held on June 29 this summer. Now in its 13th year, Library Board Member/Treasurer Rob Lanza explains that this tournament is crucial to the success of the library, as it is listed as a community library, rather than tax funded municipal library. Currently, the library is looking to raise $10,000 via tee, green and major tournament sponsors to enable their continued success. Since the inception of the tournament, cardholders of the library have grown from a mere 375 to over 3,200 due to the services offered. Lastly, one of the newer memorial tournaments at Holiday Valley is none other than the Eddie Szpaicher Golf Classic, taking place July 15. Named after one of the true icons of the village who passed well before his time, this tournament benefits a male and female academic and athletic standout graduating and college bound from Ellicottville Central School. Clubs Fore Veterans was born. Everyone wants to support a veteran - especially Busekist. “I’ve been in the National Guard for the past three years,” he told me. “A lot of my friends are military guys. They’ve all been deployed and have been through some stuff. Friends at bases tell me that the best part of their week is the four hours they spend on the golf course. There are no issues, no distractions. Just golf and friends.” Busekist knew that there are tons of veterans that would love to learn how to play golf, but they don’t have the means or the know-how to get started. “If I can provide them with clubs to play with, that’s half of it,” he said. “Our next goal is reaching out to some courses around the WNY area to see if there’s a night of the week they’d be willing to offer discounted rates to veterans.” Busekist and Nicolazzo, at the onset of founding, figured that acquiring 5-6 sets of clubs would be a good start. Keeping expectations low and being realistic about numbers is a smart move for any new NPO. That is, until Holiday Valley’s PGA Pro Steve Carney got involved. “I collect clubs from people that retire, or trade-ins - many different places,” Carney said. “I give them to kids, service groups, people that can’t afford them. When Dan approached me, I knew this was a great cause.” Carney donated 30 sets of clubs, which for Busekist, was an incredible gesture and huge for the initial setup for the organization. “It’s way beyond what we initially thought we’d have,” Busekist said. “It’s going to enable us to give them away and (hopefully) not say no to anybody. As the word’s gotten out, more and more people have reached out to us.” Busekist gives a lot of credit to Nicolazzo, who’s been his PR whiz so far. She also coined the moniker “Every Club Counts” - which, when you think about it, is absolutely spot on. “We’ll take anything,” Busekist said. “That’s why the slogan works so well. It doesn’t matter if the clubs are 20-years-old … everything matters. It really sums up what we’re trying to do as an organization. Next summer, we’re hoping to do a full-scale event that will include veteran organizations, health counselors, door prizes, etc.”

With all of this info, there’s really only one thing left to do. Get to the range, or hit the course to get practicing for one of these great tournaments.
