By Pat Morgan Another ski season is well underway, and per usual, the village and the resorts are chock full of changes that will no doubt positively enhance the experience for all who visit. We’ve seen a lot of relocations, remodeling, rebranding, and more out of the culinary landscape here in Ellicottville. One of these ‘new’ additions will be taking up shop in a familiar location to many, right on Monroe Street. Cadillac Jack’s is proudly opening their doors at the storefront which was once home to Hoagie’s Pizzeria. Snowed-In caught up with owners / operators Tina and Tom Zerbian to find out what we can expect from their exciting re-invented culinary adventure. For those new to the scene around here, Cadillac Jack’s got its start back in 1994 when Tom Zerbian and sister, Janet Tekavec assumed control of a charming building located essentially at the base of Holiday Valley Resort. This spot was frequented by the ski clientele of Ellicottville, as it was known for its ‘après ski’ vibe with an incredible view of the slopes from the bar, an expansive menu, and lively entertainment to cap off a perfect day on the hill. Though happening in-season, the business would shut down for the spring, summer and fall months, leaving only a short time frame for the owners to show what they could do. Fast forward 20 years, and Tom (aka ‘Zerb’) and his wife, Tina now have the ability to put their self described ‘foodie’ skills to work in their new location. Many of you will remember Hoagie’s as a one level pizzeria, with a young staff cranking out some of the best pizza and subs around. What those who enter the new Cadillac Jack’s location can expect however, is a beautifully re-done TWO level bar and restaurant, rich with local flavor and character. Tina describes their decor and mission as “vintage,” with many call-outs to the early 1900’s of Ellicottville. The family has an incredible collection of postcards from the village during that era, which tie in with their brand story throughout the restaurant and their menu. Tina also lightheartedly alluded to their new bar, which she said would be incredibly unique, with nothing else in town comparing to it. To top it all off, they’ve also added an outdoor patio deck, which will be the perfect place to enjoy one of their signature cocktails when summer rolls back around. Part of Cadillac Jack’s re-emergence will also be their drastically changed menu, with the ‘après ski’ fare being a thing of the past. Zerbian revealed many new improvements to the menu, including locally sourced farm-to-table ingredients ranging from herbs, vegetables and meats. Another exciting new feature within the restaurant is a raw bar featuring oysters, clams, and other selections when in season. The talented kitchen staff will bring years of experience and worldly concepts to the table, Tina explained, thus fulfilling their vision of being a dynamic four-season restaurant. Cadillac Jack’s will host several wine and beer pairings throughout the year as well, which will certainly draw attention throughout the community. Cadillac Jack’s is set to open the first week of January, and they truthfully couldn’t be more excited to welcome each and every one of you through their doors. Have a group? Lisa Densmore Returning to Ellicottville to Host Women’s Ski Clinic

Head-to-Head with Lisa SOROKES: What sparked your idea to start the ‘Your Turn’ clinic? DENSMORE: I’ve been hosting WSC since 1991. I started out hosting them as a program with Head Skis - athlete at the time - the idea was to raise money for breast cancer. That’s what got me started. I love teaching women and found there’s a niche there. There’s no one else really doing anything on a grassroots level to specifically address the needs of women on the hill. I came up with the name that it’s “Your Turn” because some gals might put everything into kids and husband, and they might be the last one to get new skis or get out on the hill, so it’s their turn to go have fun. It’s “your turn” to have your own day, improve your skiing, and “your turn” to make a good turn. SOROKES: Who should consider attending the clinic? DENSMORE: Anyone who wants to participate should be at least an intermediate skier or higher. It’s not for the beginner, and the reason is that beginners have a different set of needs than someone who is an intermediate skier or beyond that skill level. So, if you’re a gal that’s intermediate or higher and you join the clinic, we’ll group you based on ability and interests. So if you want to learn moguls, work on running gates or racing, we’ll put you with gals like-minded. It’s about matching up with like-minded people. SOROKES: What do you focus on during the clinics? DENSMORE: On snow, I guess the best way to describe it is to describe the difference between guys and gals on the hill. One of the biggest problems is that women tend to sit back because our center of gravity is different. So, we work a lot on stance and balance, how to steer and control turns. We try to give you more grace and finesse. From there, I look at each person individually - something the clinic does well. You can’t paint one brush stroke for everyone. Everyone has their own needs. I try to customize even though we’re in a group setting. We do other things off-snow. During the evening between the two days of the clinic is a “boot camp” for the gals, where there are ski demos and boot demos. It features myself, a representative from Elan, and a master boot fitter. We answer everything you want to know but were afraid to ask and let you know what you need to be aware of to perform your best. The boots are the interface between you and the snow and connect you to your skis. You need to be comfortable; there should not be pressure and there should be a quick response.

During a recent phone interview, Densmore expressed her excitement about skiing, instructing, and returning to the slopes of Western New York. Her advice for helping skiers improve their runs ... “Keep it fun! It’s supposed to be fun. Don’t get hung up on micromanaging everything going on on the hill. Go up there with a smile and have fun.”

SOROKES: How many clinics do you offer a year? DENSMORE: This year, I have 13 clinics spread out around the country. More information is available at lisadensmore.com. SOROKES: What do you look forward to about Ellicottville/Holiday Valley? DENSMORE: I had such a warm welcome the last few years there. I love the town - it’s a really cute resort town, very easy to get around. On the mountain, it’s very classy. I ski at a lot of places around the country, and I find Holiday Valley takes very good care of their slopes, the ski school is professional, and it’s a great place to teach clinics because there’s a variety of terrain. That’s what makes the ski resort worthwhile. SOROKES: What do you enjoy most about your clinics? DENSMORE: For me, personally, I love to see people have a breakthrough - whether it’s technique or confidence. There’s psychological and physical. Sometimes they are tied together. It’s about having fun – and that AHA moment. SOROKES: What has changed about the sport since you started? DENSMORE: I’ve been skiing since I could walk. So much has changed. When I started, I used wooden skis with lace-up boots. By the time I was in grade school, everyone used metal skis. It’s changed technique-wise because gear has changed. I’ve seen a lot of changes in the ski world and have been a part of those changes. I helped design women skis for several years and helped test technologies. Technology drives technique on the hill, and much of the technology has been geared towards recreational now. I think that’s positive for people that want to get out and ski a wide variety of terrain and conditions. SOROKES: If someone has never skied before, what would you say to encourage them to start? DENSMORE: Take a lesson! I see so many people that start because their significant other took them to the ski area, put them on gear and took them to the top of the mountain and left because they couldn’t keep up. Go get a lesson, find the right gear, get boots that fit, skis that fit and you’ll be happier. You’ll be skiing intermediate in no time – sometimes within a half day. SOROKES: What setup are you rocking on the slopes? DENSMORE: From the top down: I wear Skea clothing ‘cause it’s a women, elegant line. It’s nice to look like a girl! I use Leki poles and gloves - it’s a pole/ glove system. The gals at the clinic can demo the poles. DalBello ski boots and Elan skis and bindings. I also use Transpack bags for skis and boots - I’ll be giving one away at the event!

December has come and gone and as of Dec. 21 we are officially into the winter season. Just about all of Ellicottville is no doubt hoping that January brings with it some more winter-like weather so that the snow enthusiasts can take to the slopes and enjoy the season. And while December didn’t present us with the most ideal weather, when you are in the ski industry you always have to be looking at the positive side of things - in this case a warmer December means that the lake didn’t freeze over and so with some meteorological luck we will hopefully get ample amounts of lake effect snow! After all, who doesn’t love a good pow day? We hope to see you and your friends/family here throughout the season. Please be safe out on the slopes.

At its roots, snowboarding is not a competitive sport. More of a high five-laden activity you do with your friends than an ultra-competitive one, the feeling of hot laps with a good group is unlike any other. But as the sport has evolved, there’s no way a semblance of competitiveness wasn’t going to bust the door down. But it’s not like that level of compete is bad for the sport. Far from it! If Travis Rice didn’t have his drive, we wouldn’t be blessed with the unspeakable things he does on his snowboard (see: Flight, The Art of). Competitiveness pushes friends to be better, which in turn helps the sport, which in turn gets more people on snowboards. Everybody wins. USASA - the United States of America Snowboarding Association - rolled the dice on competitive snowboarding in the 1980s and hasn’t looked back since. The genesis of its vision came about when Chuck Allen wanted an all-encompassing competitive circuit for snowboarding. Now, more than 25 years later, USASA continues to be the dominant competitive organization for amateur snowboarders across the country. Ellicottville is blessed to be able to support and maintain two awesome resorts. HoliMont, which owns bragging rights as the largest private ski club in North America, is home to a cornucopia of young snowboarding talent. Snowboard team coach Chris Naugle, who competed in USASA himself back in the day, couples commitment with fun to create an environment that breeds success. “It’s simple: snowboarding is about having fun,” Naugle said. “Our focus is getting the kids to have fun. We want to push them to be better snowboarders, obviously. But if they’re not having fun doing it, then what’s the point?” One of Naugle’s team riders, Magnus Hambleton, rides both hardboot (carving boards) and freestyle. A native of Oakville, Ontario, Magnus got his start racing skis - until his parents enticed him to try snowboarding. Magnus is a full time snowboarder now. “I started doing Christmas camps (on a snowboard) when I was 10,” Magnus said. “Then the next year, I went full snowboarding. It’s the greatest thing ever. Learning multiple disciplines in any sport is difficult, but it especially rings true for snowboarding. On a freestyle board, you’re wearing typical snowboarding boots - with your feet 20-25 inches apart and each foot at an angle of 15º or less (all of these numbers vary by individual rider). On an alpine board, you’re wearing hardboots (like ski boots) with your

feet at crazy forward angles to allow you to lay turns down without toe/heel drag. HoliMont’s coaches have adapted to teaching both disciplines, which is beneficial for a rider like Magnus. He can maintain what he’s doing on his alpine board, all the while getting better on freestyle-driven terrain. (*Writer’s note: Magnus tried out for his high school snowboard team, and had the best time on his Alpine board. Nice job, Magnus!) USASA will make stops at Holiday Valley, HoliMont and Peek’n Peak Resort this winter for multiple events in the WNY Series. Added to the Holiday Valley stop this year is a Banked Slalom (if you don’t know what this is, Google the Legendary Banked Slalom). HV terrain park manager Mike Nenno is looking forward to dialing in the competition circuit. “We love playing host to the USASA events,” Nenno said. “It’s great to see so many kids out competing in an effort to better themselves and make it to Nationals.” Holiday Valley will open up the Series on Jan. 10 with 2 parallel slaloms. Competitors will shift over to HoliMont the following day for giant slaloms; every competitor’s goal: to place on top at each event, garnering points which will ultimately earn them a spot to compete at Nationals. Nationals, held at Copper Mountain in Colorado, allows qualifying youngsters to compete against the rest of the country’s USASA competitors. It’s awesome to see so much local talent represented. “We’ve had numerous athletes make it to Nationals,” Naugle said. “I think it’s a testament to how awesome our kids are and how much compete they have in them. They come to the hill every weekend and they want to progress, they want to get better. Nationals is a crazy time - lots of kids, lots of scheduling - but when it’s all said and done, the kids are happy because they won and had a blast … it’s all worth it.” “I actually got sick my first time out at Nationals,” Magnus said, referring to altitude sickness. “But last year was awesome. It’s so much fun. You’re meeting new people, the courses are bigger and faster, and it didn’t hurt that it snowed a ton when we were out there (pow day!).” Competitive snowboarding is stronger now than ever. With riders like Magnus, who are mastering both disciplines, snowboarders will only get better. And with coaches like Naugle, progression will never end. It’s the endless cycle that keeps our sport fresh.

By Nicole Nyznyk Working at a ski resort isn’t all fun and games; there is a lot of behind-the-scenes action involved. From snowmaking to grooming to lift maintenance, a ski resort is constantly buzzing with people whom we depend on to make it an amazing place. This month I took some time to interview Bill Stockwell, a seasoned lift attendant at HoliMont. When Bill is not slinging chairs, you just might find this winter enthusiast cruising on his snowmobile or spending quality time with his family … NICOLE: Bill, lift attendants seem to come and go season after season. How long have you been at HoliMont? BILL: I started working here four seasons ago. NICOLE: Working outdoors in the winter is hard, but speaking from experience, being a lift attendant can be trying at times. I was a lift attendant for two seasons and that was enough for me! What brings you back to HoliMont for your fourth season? BILL: I enjoy seeing the members and their families having fun and enjoying the slopes, and watching the families grow.

NICOLE: Do you and your family ski/snowboard? BILL: No, I do not, but I’m looking to learn this season. NICOLE: Excellent! Well you work at the right place to learn! HoliMont has some phenomenal resources for you to utilize. What do you absolutely love about the winter? BILL: I just enjoy it. I like being able to get out and snowmobile. I’d rather have it cold outside than hot. NICOLE: Are there any specific events that you look forward to as a lift attendant? What do you enjoy most? BILL: I enjoy the themed weekends we have … seeing people all dressed up. Pond Skimming at the end of the year is a blast to watch too, and I get to work with a really cool group of people. NICOLE: How do you keep your job safe for the members and customers at HoliMont? BILL: I make sure people are paying attention so they don’t get hit by a chair. Also, know your limits. If you’re a beginner skier, stay on the beginner terrain for awhile.

THE RED DOOR: FASHIONABLE | FUNCTIONAL | FOR KIDS TOO! By Mary Heyl With the fresh snow of the New Year, skiers and snowboarders may find themselves taking an inventory of all their cold-weather apparel needed to embrace a full day on the slopes. Families with young children, in particular, may find that last winter’s jackets and snow pants no longer adequately cover the longer limbs of their young wearers. While the lure of online shopping may seem a viable option for children’s outerwear, the incredible variety and personable customer service of The Red Door, located at 11 Washington Street in downtown Ellicottville, makes it a one-stop destination for winter outerwear for the entire family. (See their ad, page 3.) Step through The Red Door and take in the beautiful variety of ski wear and winter street wear for the recreational and fashionable shopper alike. Women’s and men’s ski jackets made by The North Face, Spyder, Killtec and Columbia come in all colors and levels of warmth. Durable and stylish boots from Sorel, Ugg, and Columbia are also available for men and women in various colors, sizes and styles. The Red Door also has a host of cozy clothing perfect for warming up inside after a long day on the slopes: choose from a variety of men’s and women’s layering pieces by Underarmour and knitted Scandinavian sweaters that are as warm as they are handsome. Just a few steps beyond the two rooms of men’s and women’s apparel lies the children’s room, a floor-to-ceiling variety of outerwear, accessories, footwear, and so much more. In the words of Liz Boberg, manager of The Red Door, “We have the largest children’s room in the area with sizes available from 2T to 18.” Indeed, children of all ages can be outfitted from head to toe in the finest quality outerwear by such companies as Columbia, The Northface, Spyder, Obermeyer and Killtec. “What’s truly remarkable,” explained Boberg, “is that you can buy your child a jacket that is every bit as well-made and durable as your ski jacket. These companies don’t skimp on quality when it comes to their children’s outerwear lines.” A prime example of this quality can be observed in the boys’ Killtec ski jacket, which has all of the same features of the adult jacket including an inner pocket for electronics, a removable snow cuff, a heat transfer reflective lining, wrist pockets, and the ever-popular thumb-hole cuff band. Even better, explained Boberg, is that many companies feature “grow-cuffs” in their jackets and pants, which lengthen these crucial areas in children’s apparel so that the wearer can get another season of use out of them. Boberg pointed out the value in investing in this high-quality outerwear for one’s children, as the durable construction of each piece means that it can be passed on with confidence to the next child when it is outgrown. Grow cuffs are available in junior jacket sizes 2-10 and junior pants up to size 18. The Red Door’s girls’ outerwear, a veritable rainbow of pastels peppered with bright pinks and purples, is both playful and functional. The Mossbud Swirl Reversible Jacket made by The Northface has a pink fuzzy texture on one side with a weatherproof purple lining that can be worn on the outside for a day of robust outdoor activities. This attractive jacket is available in other color combinations such as teal green and gray, and purple and white. Interestingly, many of the companies’ furry fabrics are actually made from recycled plastic bottles, according to Boberg. Hot Chillys’ Pepper Fleece, a popular line of base wear, is available in a range of sizes for children and adults. Besides Spyder’s outerwear collection for children, The Red Door carries Spyder’s Core Series, a line of clothing that is specially made for warmth and fashion. Indeed, the girls’ Mid Mountain Core Sweater with its knitted snowflake pattern and plush lining makes it the perfect garment for the slopes or school. The Red Door’s larger “parent store,” located on Transit Road in Williamsville, NY has been locally owned and operated for over fifty years. Boberg visits this store about once a week to replenish her stock so that the Ellicottville location has a fresh inventory to keep up with the demand of this busy time of year. Interestingly, the history of the Ellicottville location of The Red Door is just as unique and special as its inventory. “This building has been a clothing store of some kind since the late 1800s,” explained Boberg. JOHN HARVARD’S SIGNATURE SHEPARD’S PIE : SERVES 4 - 6

First, it is necessary to pour yourself a pint of Guinness Stout. Now, let’s begin … INGREDIENTS: 5 lbs. Ground lamb (you can substitute beef or venison if desired) ½ lb. celery ½ lb. carrots ½ lb. white onion 1 cup Tomato paste 2 sprigs Fresh rosemary 2 sprigs Fresh thyme 1 cup red wine 3 qts. Demi-glaze (you can substitute with gravy if desired) 4-6 white potatoes

TOPPING: Wash and peel potatoes, then cut into medium sized pieces. Place potatoes into cold, salted (dash of salt) water. Boil until tender. Mash the potatoes, cover, and set aside. FILLING: In a large skillet, brown the lamb with rosemary and thyme. Remove and strain, set aside. In the same pan, place diced onions, carrots and celery. Heat at medium temperature until soft. Add lamb and tomato paste. Continue to cook on medium heat for 5 minutes. Add red wine to the pan and cook for an additional 3 to 4 minutes. Add the demi-glaze and bring to a boil. Once boiling, reduce heat to a simmer for 5 minutes.

NOW LET’S PUT IT ALL TOGETHER!

Place filling in a casserole dish and top with mashed potatoes. Bake at 400 degrees until potatoes are golden brown. Serve and enjoy!

Or take part in the Southern Tier Curling Tournament at Good Times of Olean on Jan. 31. Last year over 60 teams participated! 3. Save Money! CHAMPIONSHIP SNOCROSS By Pat Morgan

One of the most visible and exciting (and did we mention loud?) events around makes its anticipated return to the Southern Tier this February, as the Seneca Allegany Resort & Casino welcomes back the AMSOIL ISOC U.S. Air Force National Snocross race, Feb. 6-7, 2015. The Salamanca venue has quickly become a favorite of fans and riders participating in the 8-stop national circuit, attracting competitors and spectators from all over North America. For those of you not familiar with this sport, the concept is pretty easy to grasp. Fields of riders on high powered snowmobiles navigate a technical course filled with jumps, bumps, berms and turns, all the while holding on for dear life to these impressive, highend performing machines. Their weekend begins Friday bright and early with rider meetings, qualifying heats and practices beginning as early as 7:15am. While practice is accessible to watch, the real show begins at 6pm on Friday, as the four pro classes battle it out in 20-minute heats to crown the overall champion for this stop of the series. The schedule repeats itself again on Saturday, however the fan experience is enhanced with autograph signings by the majority of the athletes inside the casino. Speaking of the fan experience, SNOWED-IN spoke with Carl Schubitzke, President of the ISOC, who was nothing but complimentary about the Salamanca venue. Schubitzke revealed that the ISOC always challenges themselves to improve year to year, with one of the changes they are looking into this year being some heated, indoor viewing areas for the track. If any of you were in attendance last year, you may remember just how

many days it took for feeling to return in your toes due to the polar vortex endured at the Saturday night event. Schubitzke is working diligently to make the heated, indoor viewing areas happen, and is optimistic that they will become a reality. He also went on to reveal that spectators would see a larger track this year, due to some changes in the layout of access roads at Seneca Allegany, which also allow for spectators to sit even closer to the track to feel the excitement even more. Schubitzke concluded by marveling at how well-run this event is, with the Casino being an incredible partner to work with in the few years they’ve played host to ISOC. SNOWED-IN was also excited to connect with one of the stars of ISOC Racing, Tucker Hibbert, who pilots the #68 Monster Energy Arctic Cat sled and who also swept the Salamanca event last season en route to his 2014 season championship. Hibbert has also won the first two events of this season thus far in Duluth and Fargo, and revealed, “The New York race is one of the most high-energy and exciting events of the season. The fans are always fired-up and cheering us on the whole weekend. Since it’s the only national snocross event east of Michigan, we always get a huge turnout. Snowmobilers from the Northeast are passionate people and they show it!” Without a doubt, all eyes will be on Hibbert as he returns to action in Salamanca this February. Calling all outdoorsmen, women, and children! The Greater Olean Area Chamber of Commerce (GOACC) is hosting the 6th Annual Greater Olean Area Outdoor Sports & Rec Show at the Good Times of Olean Events Center on Saturday, Jan. 17 from 10am5pm and Sunday, Jan. 18 from 10am-4pm. This exciting weekend features vendors and exhibits specializing in a wide range of outdoor activities including all-terrain vehicles, bird watching, camping, cycling, fishing, hiking, hunting, paddle sports, skiing, snowmobiling, water-skiing, and so much more. Good Times of Olean, located at 1 Leisure Lane, is hosting the Sports & Rec Show for the second year in a row. According to Meme Yanetsko, Chief Operating Officer of the GOACC, “The show was originally held in September at the William O. Smith Rec Center, however, most sports vendors were still in ‘work’ mode. Moving the show to January brought in many more sports vendors that worked the show into their down time schedule. When Good Times opened, the show moved there - the Good Times space is one space with all vendors visible to show goers.” Indeed, almost forty vendors have signed up for the Sports & Rec Show including Adventure Calls Outfitters, Cast Away Fish Charter, County Squirrel Outfitters, Leisure Time Powersports (the show’s official snowmobile sponsor), Pacific Mountain Farms, and Ron’s Gun Shop. Especially exciting is the Sports & Rec Show’s featured entertainment: The Call Outdoors. Known for their series of hunting DVDs, this team of outdoorsmen from Spring City, Pennsylvania includes Dave Stallard (founder), Phil Stallard, Curtis Kenyon, and Jeff Murphy. The Call Outdoors tours the Northeast teaching hunting seminars while sharing their faith and their passion for the great outdoors. At the Sports & Rec Show, the team will share stories of their greatest victories and biggest mistakes in the woods, as well as advice for how to avoid those mishaps! Tips from scouting to harvesting, as well as the ever-challenging calling aspect of hunting wild turkey will also be a part of The Call Outdoors’ presentation. The Call Outdoors will be speaking and demonstrating on both Saturday and Sunday, and visitors are encouraged to meet the team at their booth throughout the weekend. For the 5th year in a row, Ron’s Gun Shop of Richburg, NY will be participating in the Sports & Rec Show. In addition to displaying their various product lines of guns, rifles and accessories, Ron’s Gun Shop is also contributing prizes to the show’s raffle, which is not to be missed! According to Yanetsko, the raffle includes a chance to win one of several great prizes: the grand prize provided by Ron’s Gun Shop is a Savage M-11 7mm-08 Trophy-XP with Nikon 3-9X40 Scope (retail value of $595). The second prize is an Emotion Glide Recreational Kayak; the orange featherweight polyethylene hull construction kayak is the winner of the 2010 Outside Magazine “Gear of the Year” award, with a retail value of $569.99. Additional prizes include the KA-BAR Zombie Swabbie, the KA-BAR Becker Crewman, the KA-BAR USMC Utility Knife, and the Gut Hook Hunting Knife. Raffle tickets are currently available at the Greater Olean Area Chamber of Commerce, located at 120 North Union Street, for $5 each or five tickets for $20 (limit of 500 tickets per entrant). Tickets will also be on sale all weekend during the show, with the drawing taking place on Sunday, the 18th. With all the activities taking place at the Sports & Rec Show throughout the weekend, visitors are bound to spend all day perusing the various exhibits and demonstrations. According to Yanetsko, concessions will be sold at the show so visitors can continue to enjoy the exhibits while they eat; additionally, the full menus of The Point and The Hammerback, Good Times’ own restaurants, will also be available. Admission to the Sports & Rec Show is $3 for adults and $2 for students and seniors. Children under the age of 12 who are accompanied by an adult may attend the show free of charge. 2014 brought us a very diverse list of artists that preformed at the Seneca Allegany Casino in Salamanca, NY … from the pop/rock stylings of Grand Funk Railroad and Melissa Etheridge to the disco beat of KC & The Sunshine Band, the all-encompassing musical flair of the legendary Osmond Brothers and the country sounds of Gary Allan and the great Lorrie Morgan, which played multiple Christmas shows sprinkled with some of her biggest country hits.

All of the above artists took time out of their hectic schedules to talk with SNOWED-IN and its publication affiliates, The Summer Local and FORE! Golf, which were featured throughout this past year. As we start a brand new year full of hope and promise, we want to share with you the holiday traditions of one legendary performer that played a show back in November, and one of the members of a popular duo/band that will be making a stop at Seneca Allegany on January 23, 2015. From there we will take a look at some up and coming shows for the first couple months of what will be a stellar line-up for the start of the New Year.

ENGELBERT HUMPERDINCK, Singer / Songwriter Favorite Christmas Memory: When I was growing up it was the little gifts I’d get, like a hockey stick, a model airplane … in today’s world it’s all about computers and tech gadgets. Favorite Gift: My first cricket bat. I’m from England, so that was the thing to play. I remember sleeping with it under my pillow for days and days and days. Favorite Song: My most favorite song is “White Christmas” … and “Silent Night” is one of my favorite Christmas carols. Where You Spend the Holidays: I always spend Christmas and New Year’s in England. My home in England is all lit up like a Christmas tree from top to bottom. People drive by every year and say, “Oh … look what Humperdinck’s done this year!” My whole family and my dearest friends have a great time being together.

DEWEY BUNNELL, Singer / Songwriter of the group, America Favorite Present: I do vividly remember when I was in the 6th or 7th grade I got a little tape recorder and I taped myself playing the guitar, and I remember a transistor radio … so there were musical elements to the gifts I recall as a kid. Must-have Holiday Food: Well, my wife and her family traditionally have oyster stew on Christmas Eve. That’s kind of a neat thing. We are pretty standard for the Christmas dinner … turkey, stuffing, gravy (which I don’t touch because it would be lumpy.) My mom was British so brussel sprouts were always something we had, and dad would do the stuffing with chestnuts and whole cranberries in it. We’ve incorporated those things into our dinner. Favorite Christmas song: “Holly Jolly Christmas” is fun. “The Christmas Song” is a favorite of mine … and “Have Yourself A Merry Little Christmas” is a great one too.

The trail loops through the forest, with trail access from multiple locations including Lantz Corners at the intersection of Routes 219 and 6. done much skiing or snowshoeing, or if you’re just starting out, we’ll have some people to give instruction and some equipment for participants to use, explained Gene Cornelius, one of the trail event organizers and volunteers. There will be four-wheel drive trucks, driven by trail volunteers, to transport people to the top of the Marilla Springs Trail for those who want to downhill ski back to the reservoir site. The trail head site for this part of the event starts out in Stickney, past the Willows Restaurant, about four miles and ends up back at the reservoir. At the gazebo area along the Marilla Bridges Trail, there will be snacks, hot cider and hot cocoa. A warming bonfire along the trail will provide a chance to warm up and socialize with other trail enthusiasts. Hot dogs and sticks are provided for roasting marshmallows or hot dogs over the open fire. The event is hosted at Marilla Reservoir, located just five miles to the west of Bradford. Marilla Reservoir is open year-round for public recreation; it offers great ice-fishing opportunities and a variety of trails suited to snowshoeing. Starting by the landmark wooden covered bridge, Marilla Bridges Trail is a 1-mile loop which circles the Reservoir. The White Pine Trail is a 3-mile loop through towering old-growth forest, and Marilla Springs offers a more difficult cross-country, snowshoe experience during the winter. WHAT’S ON THE MENU? There is nothing like the fun of playing outside in the snow all day, then coming inside to a delicious meal served in one of the locally owned restaurants within the Allegheny National Forest region of Pennsylvania. Two local favorites that welcome outdoor recreation enthusiasts are the Willows Restaurant and the Westline Inn, both located near snowmobile and cross-country ski trails. THE WILLOWS RESTAURANT The Willows Restaurant, 2669 West Washington Street, Bradford, PA, has been a fixture of Willow Creek for over 60 years. This restaurant features the area’s only wood-fired grill, which serves up the classic Willows Burger - a half pound wood-fired grilled Angus burger topped with their famous fire-roasted pepper and provolone cheese. Another item to try is the Farmhouse Burger - a half pound fired grilled Angus burger topped with cheddar cheese, bacon and caramelized onions with an optional fried egg topping. Chef Ryan’s seasonal menu selections are all prepared fresh with locally sourced ingredients. Dinner selections can start with an appetizer of The Willows fire-roasted peppers, clams casino, or venison sliders. Follow this up with a wood-fired flank steak salad and the soup du jour. Or for the hearty appetite, order the wood-fired pork tenderloin, the wood-fired grilled chicken breast or a grilled half chicken. Seafood, chicken and veal, and pasta dishes are also available. Winter hours are Thursday 5-9pm, Friday noon-9pm, Saturday and Sunday 11am-9pm with brunch/lunch available on Saturdays and Sunday. For reservations, phone 814-368-7567. THE WESTLINE INN The Westline Inn is located in the heart of the Allegheny National Forest; the drive to the

restaurant takes you along scenic Kinzua Creek. For over thirty years owners Jonathan and Trudy Pomeroy and Julia Frick have welcomed travelers, sportsmen, businessmen and snowmobilers into a friendly atmosphere where nobody leaves with an empty belly, and nobody stays with an empty glass. The Inn was originally the Day home, built in the late 1800’s. The house was added to several times - Edmund Day incorporated his own ideas and eccentricity into the plans. One of the few time-locked safes in the area took up a large portion of the room, and it can still be seen today in the dining room along with the eclectic décor of fine art and taxidermy. This building later became the Enis Hotel, establishing the tradition of hospitality and “good cooking.” The Westline Inn was born in 1975 when the two couples - both formerly of Chester County, PA - purchased the property. They have built upon the traditions of hospitality and good food, and this restaurant is a true dining destination offering a lovely menu of dining selections. Start with an appetizer of portabella mushroom ragu with brie, or Shrimp le Jon -fresh shrimp wrapped in bacon, stuffed with horseradish and broiled. Escargot Bourgnignonne and steamed clams are also available. Dinners include a choice of homemade soup or juice and salad. Their steak selections are both impressive and very delicious. Choose from a 32 oz. Porterhouse steam broiled to your pleasure, a 10 oz. Filet Mignon - a most tender, succulent steak, broiled and served with mushrooms, a 24 oz. T-bone steak, or Steak Au Poive - two 5 oz. portions of tenderloin grilled with fresh peppercorns and covered with a smooth brown sauce. Other dinner menu choices include rack of lamb, Maryland crab cakes, crepes Julia, prime rib of beef, deep fried or broiled shrimp and lobster tail. All desserts are created in-house by Chef Julia; ask the server for the day’s delight. A pub menu only is served on Mondays, bar hours are Monday-Thursday 3pm-close, Friday and Saturday noon-close, and Sunday 3pm-close. WESTLINE CROSS-COUNTRY SKI TRAIL The beautiful, deep woods trail offers challenging cross-country skiing or snowshoeing in the Forest. The Westline Trailhead is located 11 miles south of Bradford, PA via U.S. 219 and State Route 59, approximately an 1/8 mile off of Forest Road 455. This trailhead offers access to the 9.8-mile Westline Cross-Country Ski Area. Facilities at the trailhead include hardened parking and informational signing.
