The United Way of Cattaraugus County will host its annual Swine, Wine & Music Festival on Saturday, Sept. 6 from 11am-6pm. With the help of Five Star Bank as an annual sponsor, and the festival’s new rib sponsor, Terrance Grant, the non-profit organization is gearing up for another successful event. Approximately 20 teams are expected to compete in the barbeque rib cook-off for the title of “Best Ribs” and “People’s Choice.”

“It’s a pay-as-you-play event, per se,” said Gail Vida Smith, Manager of Administration and Finance at the United Way of Cattaraugus County, Inc. “Rib samples for ‘People’s Choice’ will be $5 for 4 ribs, and each $5 purchase comes with a token. The token is the vote, which is placed in the jug of the rib team the purchaser likes best. The rib team with the most tokens wins the ‘People’s Choice’ award. Alternatively, the ‘Best Ribs’ award is determined by a scoring panel with blind samples being judged every five minutes.” All proceeds from the ribs will directly benefit the United Way. “Funds raised will be added to our total campaign fund for allocation to agencies in our next funding cycle,” explained Smith. “We pride ourselves in supporting our United Way through our own payroll deductions and special event proceeds.” Not a fan of ribs? Not to worry. The United Way has invited the Town of Olean Volunteer Fire Department to offer up its famous chicken barbeque at the festival. Proceeds from the chicken barbeque will benefit the department’s equipment needs, which range from vehicles to gear and tools. Tom Jaskolka, President of the Town of Olean Volunteer Fire Department, said the department is looking forward to participating. “We’re honored the United Way asked us to help out. We’re all about anything to help support the community.” This year, anyone attending the festival will enjoy a new beat to his or her tasting tour. The United Way has decided to exchange the craft aspect of the festival for a “Battle of the Bands” competition. “The crafts were wonderful, but the lack of commerce to the booths led us to reconsider this facet,” Smith said. “Battle of the Bands will be our live entertainment for the festival, and we’ll have an array of musical genres. The competition will be decided by a money vote with large drums placed in front of a stage with each band’s name on a barrel. We’re excited to see how Battle of the Bands will increase our attendance and proceeds.”

CONGRATULATIONS! During the month of July, The Summer Local teamed up with 95.7 The Big Pig in Olean, NY to offer an awesome Family Summertime Giveaway. Visitors to our participating establishments were encouraged to fill out an entry ticket and drop it into the “Discover Ellicottville in the Summer” entry boxes on display.

Returning to this year’s Swine Festival is the variety of home brewers that will sample out their wines and beers. As Smith explained, “They each bring a bottle of their favorite wine or beer, and the judges score each variety using a standard score sheet.” Also attending this year’s festival is Millie’s Dawgs, a mobile food cart serving up more tasty alternatives to ribs, and Sanzo Beverage will offer an assortment of non-alcoholic beverages. Face painting and kid crafts will be available throughout the day, which combines perfectly with War Vets Park’s playground area to make this festival a true family-friendly event. With approximately 500 rib fans in attendance at last year’s festival, Smith is grateful for the “platoon of volunteers” that come out each year to help with the event. “We use between 50-100 folks in preparation and execution of this event,” she said, “from board members and United Way funded personnel to friends, family and donors. We are truly blessed to work and play here in Cattaraugus County. We may be a rural area, but our people are tight!” For more information about this year’s Swine, Wine & Music Festival, or to donate to the United Way Campaign, visit www.uwcattco.org or call 716-372-3620.

Around the Block: Providing For Our Youth

Ellicottville Memorial Library and Rotary Club’s Foundation for Youth Put the Needs of Children First By Dash Hegeman As the saying goes, “reading is fundamental,” and this summer (as it does all year round), the Ellicottville Memorial Library is doing its part to enhance the lives of children through the written word. So is the Rotary Club of Ellicottville, which also plays a big role in youth programming on a local level through its Foundation For Youth program. This month, we’re traveling “Around the Block” to see what our local youth have been up to during their summer break … let’s go!

FIZZ, BOOM, READ! Activities at the Ellicottville Memorial Library

“UNDER A TUSCAN MOON” In Memory of Michael Kerns Saturday, August 23 • John Harvard’s Cabana Bar @ Holiday Valley

The theme for this year’s Summer Reading Program at the Ellicottville Memorial Library has been ‘Fizz, Boom, READ!’ ... and as Laura Flanagan, the Director and Head Librarian at the Ellicottville Memorial Library says, “Our summer programming not only helps motivate children to read, but it also develops positive attitudes about reading and books. Additionally, it helps children maintain their reading skills over summer vacation and encourages regular use of the library.”

Involvement is a key component to any successful and thriving community. The Rotary Club of Ellicottville loves to get involved and help out those in need. Over the years, the Rotary has donated to causes both big and small. Naturally, one of the primary endeavors of Rotary is to help local children … and that’s where the Foundation for Youth program comes into play.

Over 80 children signed up for this year’s program, which is nearing completion for the summer. Each week participants were exposed to a new reading theme - from “Robots Rule” to “Under a Microscope,” to “Construction Zone” and more. Based on the amount of reading the children did, they would be given a certain amount of coupons each week that they could then place in containers for a drawing to win some amazing prizes that were donated by local businesses. However, if you missed out on the Summer Reading Program, do not despair, the library still has plenty to offer. “Story Time is held every Wednesday throughout the year,” said Flanagan. “Story time is run by Sis Signore, a retired Kindergarten teacher from ECS. Each week Sis reads two or three short stories followed by a craft project.” During the school year (from September to May), Story Time time follows the “Growing with Music” class taught by Terri Steinbar. By combining Story Time with Growing with Music, the library has showcased its ability to be creative when it comes to expanding the horizons of children. Another unique example of this creativity comes in the form of man’s best friend. Meet Dooley the Dog. Dooley is a registered therapy animal. His handler, Martha Brown, had Dooley trained under the R.E.A.D. Program (Reading Education Assistance Dogs). The goal of the program is to help children improve their reading and communication skills by reading to - you guessed it - a dog! “Studies show that children are much more relaxed when reading to an animal companion because dogs do not judge or criticize, which allows the children to proceed at their own pace,” said Flanagan. “I’ve noticed with Dooley at the library, a child’s dread is replaced with anticipation.” If your child is interested in reading to Dooley, please call the library at 716-699-2842. The library isn’t just all about books (although let’s face it, books are the key component as well they should be). On Aug. 14 there will be a showing of the Disney movie “Bears” at 6:30pm. Not only is the movie free but moviegoers will also get free to enjoy free popcorn and a drink. “Bears” is rated G and showcases a year in the life of a bear family as two impressionable young cubs are taught life’s most important lessons. Clearly the Ellicottville Memorial Library has plenty to offer the community. Many of these amenities are made possible through donations. Over the years the Rotary Club of Ellicottville Foundation for Youth has provided generous gifts to the library in efforts to boost technological offerings. They recently donated $4,000 to purchase a variety of computers and tablets. Many of the library’s 30,000 visitors each year are utilizing some form of computer/digital device, and thanks in part to the Rotary Foundation for Youth and to all the other donors, the library is able to provide access to important digital information.

The Foundation for Youth program raises funds throughout the year that go towards enhancing various programs for young people in the Ellicottville area. One of the program’s biggest fundraisers is coming up on Aug. 23 at 6pm at John Harvard’s Cabana Bar and Pool Complex at Holiday Valley. The event: Under a Tuscan Moon - A Tribute to Michael Kerns. This special annual event will feature a fantastic collection of silent and live auction items that will be on display just inside the entrance of the Cabana Bar and Pool area. The event kicks off at 6pm, with the live auction beginning at 8pm and the silent auction ending at 9pm. The auction will feature items such as Cutco Knives, Buffalo Sabres tickets, fine wines, and much more. “This is the 5th year for this event,” stated Greg Cappelli of the Rotary Club of Ellicottville. “It has been called ‘Another Day in Paradise’ and ‘Voodoo Moon’ each of which ran two years, which replaced the ‘Stars for Youth’ event that ran five years prior. For anyone who knew Michael Kerns, you know this is a party he would’ve loved.” While Rotary is looking to raise money with Under a Tuscan Moon, the second most important objective is to have fun! Part of that fun is the food. Participants will be greeted with a selection of great hors d’oeuvres from John Harvard’s and served by students from Ellicottville Central School. Individual food stations will be set up for dinner at 6:30pm; everyone is encouraged to try a little bit of everything before going back and filling up on their favorite choices. Make sure you leave room for some tasty treats after dinner. Watson’s Chocolates will have a dessert table set up, and guests can indulge in special cookies, cakes and tarts created by chef Tom Kneeland, which Cappelli says is the “highlight” of the night. Why so much student participation? Cappelli explained that one of the reasons for the involvement of ECS students is that it allows the students to see what the Foundation for Youth is all about, while also learning about community service. He went on to say that many of the students end up getting various job offers as a result of their service work. Throughout the evening, The Strangers will play sets of their classic rock-n-roll for the entertainment of everyone at the event. Twice voted Western New York’s Top Classic Rock Band, The Strangers features one of the widest varieties of music in the WNY area in their repertoire. If you are interested in attending, tickets for Under a Tuscan Moon event are $65 and can be purchased by calling 716-699-8758.

2 14 WORLD CHAMPIONSHIP

THE SUMMER LOCAL ~ AUGUST 2014 ... Page 07

RINEHART / I.B.O.

By Nicole Nyznyk

For the fifth time since 2008, Holiday Valley Resort and Ellicottville, NY will play host to the International Bowhunting Organization (IBO) World Championship August 7-10, 2014. This event is expected to attract upwards of 1,800 qualifying shooters and their families from over twenty countries to participate and contend for title of IBO World Champion and their share of over $100,000 in cash and prizes. Quick IBO Refresher: The IBO was established in 1984 by a group of avid bowhunters who collectively shared the passions and principles of bowhunting and wildlife conservation. They wanted these passions and principals to be enjoyed and passed on to future generations, and so they created the International Bowhunting Organization. The IBO World Championship first came to Holiday Valley in 2008 after representatives from the Ellicottville Chamber of Commerce and Holiday Valley attended IBO events at other locations. They were certain that they could make Ellicottville a key venue, and their efforts ultimately created a dynamic partnership. IBO organizers liked the layout of Holiday Valley Resort so much that they decided to return the following three years (2009 through 2011), and now again in 2014. The organization found the nearby lodging attractive, as well as the proximity of the village and the array of amenities that this area has to offer. IBO President Bryan Marcum is very excited to bring the IBO tournament back to Holiday Valley. “The town and resort has a great atmosphere and a beautiful setting for our competitors and their families. Our members really enjoyed being there!” Although the IBO World Championship in Ellicottville is advertised for Aug. 7-10, the archers and their families will actually make their entry into town on Aug. 4. “The Spruce Lake chairlift will start running Monday to transport participants to the Defense (practice) range that is set up around the lake,” said Jane Eshbaugh, Marketing Director at Holiday Valley. “Starting Friday, it will also transport competitors to several of the courses. Spectators are welcome to ride the lift for $5.00 to observe the competitors and to access the lake.” Brian McFadden, Executive Director of the Ellicottville Chamber of Commerce who is also managing the Vendor Market for the tournament, noted that a Bowhunters Marketplace featuring over sixty vendors will be set up in the parking lot of Yodeler Lodge. “Bowhunters and event-goers will find a variety of related supplies from our participating vendors, including 3-D targets, bows, arrows, specialty equipment and clothing.” And for those needing a cooldown from the hot sun, you’ll find ice cream at the marketplace too! To familiarize the non-professional bowhunter with this world class championship, one must compete in qualifying shoots throughout the year and place in the top 20 scores in their class to secure a spot in the championship. There are over 7,000 members of this philanthropic organization from countries such as Australia, South Africa, Germany, Canada, and Spain - only the best of the best have made their way to the top to represent their country in this final competition. In describing how the tournament works, Jane Eshbaugh summed it up modestly, even though this competition is anything but simple. She said, “The wooded area between the ski trails is used for competition. There are paths that lead to a shooting stake, which competitors must touch while firing at a 3-D target that is strategically placed in the woods or over a rise that in some way challenges the shooter’s skills. The bowhunter then tries to place their arrow within their kill zone of the target. There are targets of all kinds out there, including bears, deer, big horn sheep, mountain goats, mountain lions and even alligators!” She added, “Watching the shoots is a lot like watching a golf tournament - silence is definitely appreciated.” Those of you who are not professional bowhunters can still claim a little piece of the action! The IBO World Championship offers amateur bowhunt events, providing a unique opportunity for non-qualified shooters to compete on the very same course as the world qualifiers. “There are pros, amateurs, men, women, children and a handicapped division,” explained Eshbaugh, “and there are separate classes depending on the type of bow. There is something for everybody during this tournament!” As August approaches, clear some space from your calendar so that you and your family can attend and enjoy the 2014 IBO World Championship at Holiday Valley Aug. 7-10. Come experience the passions of bowhunting and take in a remarkable family atmosphere during this ever-impressive world class event. “We love the IBO!” concludes Eshbaugh. “The competitors and their families are genuinely nice people. It’s great to have them here in our town.” For additional information about this year’s IBO World Championship, including a detailed description on the course layout and for registration information, click over to www. holidayvalley.com or www.ibo.net, or call Holiday Valley at 716-699-2345 or the Ellicottville Chamber of Commerce at 800-349-9099.

THE SUMMER LOCAL ~ AUGUST 2014 ... Page 09

DINING IN THE BEER GARDEN WITH EBC CHEF JOSHUA McDOWELL

Grill ‘em . . . Grill ‘em All! Chicken, Ribs, Clams . . . Even Pizza. But Fruit on the Grill? By Joshua McDowell

Ok Summer Local readers! We are officially well into the summer months. We’ve got our tans working in our favor and our A/C units blasting in overdrive. One of the staple highlights of the summer season is the (over) use of our barbeque grills. People will cook anything and everything on the grill - from clams to pizza to corn and even fruit … (Watermelon? You bet!) Here at EBC, we sometimes run a lunch special in the warmer months which features grilled peaches.

” l a c o L r e h t m n m o u M S The “ u Pick of the Men

What am I getting at here? There aren’t many foods that can’t or haven’t been on the grill! In a world where we all seem to be a little more food savvy than in years past, it shouldn’t be too much of a shock to see that people are experimenting in the culinary field more than ever. The grill is a great place to test out some of your ideas. One of my favorites that we grill here: lightly char-grill whole heads of Romaine lettuce, then chop them up for a unique twist to your salad.

BEER PAIRING: EBC’s MOW MASTER ULTRA PALE ALE 5.0 ABV

The dish we are introducing this month is a really fun item from our new summer menu. Consider it a summertime mélange with a very interesting presentation. It is not only easy to accomplish, but sure to satisfy. One thing to keep in mind when grilling fruits: the water and sugar content will change the way you cook them. For instance, when grilling watermelon, you want a very hot grill that will sear the fruit before it starts to cook through, because if the melon is on the grill too long it will start to cook and the texture quality will significantly diminish. Also keep in mind that fruits which are very sugary will have a tendency to stick to your grill grates.

ABOUT THE CHEF

GRILLED WATERMELON WITH CRAB SALAD STUFFED AVOCADO HALVES

Chef Joshua McDowell is a graduate of the Pennsylvania Institute of Culinary Arts of Pittsburgh, PA. He carries a Bachelor’s degree in Culinary Arts and offers over 17 years of experience in the food service industry. He has spent the last 11 years honing his skills in and around the Ellicottville, NY area, and last year was introduced as Executive Chef at the Ellicottville Brewing Company, 28 Monroe Street, downtown Ellicottville, 716-699-2537, www.ellicottvillebrewing.com.

INGREDIENTS: 1 lb. canned crabmeat (super lump) ¼c mayonnaise ¼c sour cream 1oz red bell pepper 1oz red onion 1oz celery 1oz whole butter ½oz chili sauce 1T Old Bay seasoning PREPARATION: Sauté all vegetables in butter; allow to cool. Then mix all ingredients together, being careful not to break up the crabmeat too much.

OTHER INGREDIENTS: Watermelon Slices (cut 2-3 inches thick) Fresh (ripe) Avocado Arugula Goat Cheese Balsamic Vinegar Extra Virgin Olive Oil As I mentioned previously, you’re going to want a very hot grill. Put a little oil on your watermelon slices so they don’t stick. The melon should only be on the grill for less than a minute on each side, so they just get some marks and a little grill flavor but they don’t actually cook inside. After the melon is cooled down, cut it into triangles. From here, all that’s left is assembly. If you aren’t sure how to remove avocado meat from the skin, just stop in to see me at the restaurant and I will give you a little demo. Place some crab salad in each avocado half, stack up the watermelon with the arugula and goat cheese, then drizzle it all with the balsamic and olive oil.

BEER PAIRING Pair this salad with our most delicious and bodacious EBC MOW MASTER ULTRA PALE ALE, which utilizes Belgian Cara malts and an array of aromatic American Hops (including Citra Hops) in our “Hop Bombing” process to create a citrusy Summer Pale Ale. Mow Master is light in body and bitterness, but big on flavor and aroma - a perfect brew for those long summer days. Keep the grill burning, the sunscreen close, and enjoy the summer. Before you know it, the weather will change and Old Man Winter will be just around the corner.

natural foods market & holistic wellness center

Fixing Your Body WILL Fix Your Brain - Part I BROKEN BRAIN . . .

By Dr. Kristina Barlow, N.D., C.S.T.

Another great word coined by Dr. Mark Hyman in his book, The UltraMind Solution.* One out of three Americans suffer from a broken brain. What is a broken brain? Broken brains lead to symptoms categorized into psychiatric or neurological disorders. Depression. Anxiety. Insomnia. Behavioral Problems. Lack of Focus and Attention. Dementia. Alzheimers. Brain Fog. ADD. ADHD. Autism. Learning Disabilities. Addictions. Cognitive Impairment. Parkinsons … If you are one of the 125 million Americans who suffer from a broken brain - whether mild to severe - then focusing on the totality of solutions will yield more results than focusing on the diagnosis whose main treatment protocol is the management of medications. Medications have their place and time, but the overuse, misuse and multiple drug interactions have often amplified the problems of broken brains. The totality of solutions led Dr. Hyman to create The Seven Keys to UltraWellness, discussed below. One question to ask if you suffer with symptoms of a broken brain is: “What is the cause or causes of my dysfunction?” For example, each person suffering from depression may have various root causes. Understanding these causes and fixing them is imperative. Causes include toxicity, nutrient deficiencies or depletions, blood sugar dysfunctions, chronic stress, microbial infections, hormonal and neurotransmitter imbalances, digestive problems, inflammation and metabolism. My articles have stated over and over again to take out the trash, give the body what it needs and stimulate the vital force. These Seven Keys effectively address that philosophy. *The ideas in this article combine my knowledge from naturopathic medical school and my clinical experience with Dr. Hyman’s excellent and concise book. The UltraMind Solution provides a simple plan to defeat depression, overcome anxiety and sharpen your mind.

STOP INSULTING YOUR BRAIN! Before looking at the first Key to fixing your broken brain by fixing your body, let’s first look at removing the following six insults. (The other six keys will be revealed in the September edition of The Summer Local.) Remove High Fructose Corn Syrup, 1. Any form of Sugar and Refined Carbohydrates completely from your diet, as they are more addictive than cocaine and detrimental to your health by affecting all the tissues of your body, especially your brain. The average person consumes 66 pounds of HFCS and 175 pounds of sugar per year. Sugar consumption will lead to dementia later in life. Remove Trans or Hydrogenated Fats found in processed foods, baked goods, fried foods, margarine and almost any “food” that comes from a factory. These fats interrupt normal brain function in everyone.

2.

Any brain trauma (even mild concussions) should be taken seriously (prevention: helmets and precautions in contact sports) and treated immediately. Seek proper medical attention and follow up with homeopathy, craniosacral therapy, acupuncture, chiropractic care and brain food/supplements.

3.

Sleep Deprivation can increase stress hormones such as cortisol, which kills brain cells in the hippocampus (an area of the brain that affects memory and mood). Eight to nine hours of good sleep is a must for good brain health.

4.

Lack of exercise decreases the brain’s hormones (IGF-1 and BDNF) that help the brain to make new brain cells and improve connections between brain cells. Exercise has been proven over and over again to improve cognition, memory, depression and dementia. It also increases dopamine (focus) and serotonin (mood) in the brain.

5.

Chronic Stress causes cortisol, norepinephrine (noreadrenaline) and epinephrine (adrenaline) to be secreted by the adrenal glands for our fight or flight reactions to stress or perceived stress. Cortisol significantly damages the brain. RELAX! Breathe. Meditate. Yoga. Hypnosis. Laugh. Exercise. Sleep.

6.

KEY #1: OPTIMIZE NUTRITION

Fats: Checkmark your symptoms on this list to see if you may have a mild, moderate or severe fatty-acid deficiency. Soft, cracked or brittle nails. Dry, itchy, scaling or flaking skin. Hard earwax. Tiny bumps on the backs of arms or on the trunk. Dandruff. Aching or stiffness in joints. Thirsty often. Constipated (less than two bowel movements per day). Light-colored, hard or foul-smelling stools. Depression, ADHD or memory loss. High blood pressure. Fibrocystic breasts. PMS. *All products and services listed here are High LDL, low HDL and high TGs. Irish, Scottish, Welsh, Scandinavian or coastal available at Nature’s Remedy in Ellicottville. Native American descent. RESULTS: 0-4 is mild, 5-7 is moderate and 8 or more is severe. Consider this: some indigenous people eat 15-19 grams of good fat per day from ocean animals. Most Americans consume less than 1 gram of Omega 3s per day. Sources of Omega 3s are wild fish (small fish), wild game, seaweed (Algin), algae (Spirulina, Super Algae) and eggs laid from chickens fed only flaxseeds and fishmeal. Omega 3s are important for their EPA and DHA forms. 60% of your brain is made up of DHA so it is VERY important to have adequate amounts in our diet, especially for children. The “essential” in essential fatty acids means that it has to come from our diet and cannot be synthesized in our bodies. The other problem with Omega 3s today is their ratio to Omega 6s. The ratio should be 4:1, yet today it can be 1:20 or even 1:40! Omega 6s are pro-inflammatory and come from refined oils including corn, soy and safflower. Low levels of Omega 3s and high levels of Omega 6s are linked to all psychiatric and neurological disorders. Not only are Omega 3s anti-inflammatory and great for all broken brain disorders, but they are also great for heart health, obesity and diabetes. Omega 3s along with cholesterol (eggs, shrimp and poultry), phosphatidylcholine (PC) and phosphatidylserine (PS) are great for building all cell membranes to promote cell-to-cell communication and proper binding of a substrate to the receptor on the cell wall. PC is found in lecithin supplement, egg yolks, soybeans (organic), sardines, nuts, peanuts, lentils, sesame seeds and flaxseeds. PS is found safely only in supplements. A minimum of Omega 3 fatty acid is 4 grams per day. Protein (Amino Acids): Proteins from fish, chicken, beans, nuts and seeds are broken down into amino acids used to build all kinds of things in the body including enzymes, muscle, neurotransmitter and cell receptors. Deficiencies in amino acids will create imbalances in the body - especially with neurotransmitters, causing lack of or miscommunication in the brain with regards to mood, cognitive function, memory and concentration. It has been very effective in my practice to test the peripheral neurotransmitters via the urine to correlate any reported imbalances to dysfunction in the brain. Let’s take at look at three different neurotransmitters and their potential deficiencies: Low dopamine levels would look like depression, low energy mentally and physically, low motivation or desire, won’t exercise, difficulty concentrating or focusing, sleeping a lot or difficulty waking up in the morning and the need for stimulates to “wake up.” Dopamine is responsible for pleasure, reward, attention and focus. It motivates and stimulates us. Phenylalanine makes tyrosine that makes dopamine. Beans, nuts, seeds, lean poultry, fish and eggs will give you phenylalanine and tyrosine. If you are an addict, have a low-energy depression or ADHD, then you most likely have low dopamine levels. Parkinsons patients have low dopamine. Stimulants (cocaine, speed, coffee, pornography and gambling) deplete your body’s own productions of dopamine. Tyrosine, Super Omega, Brain Protex and NutriCalm for B-vitamins may support dopamine levels. Low serotonin levels looks like automatic negative thoughts, pessimistic, low self-esteem and confidence, obsessive thoughts/ behaviors, S.A.D., irritability, easily angered, impatient, shy, fears, anxiety, panic attacks, PMS, sleeping problems, cravings for sweets, starchy carbs, muscle aches, fibromyalgia and TMJ. Make sure your diet has enough protein - aim for 100 grams per day looking like 1 cup of turkey, 1 cup of chicken and two scoops of Love and Peas protein powder. Decrease stress or your body’s response to stress because cortisol and other inflammatory messengers inhibit tryptophan from making serotonin. Eliminate sugar, processed foods and refined carbs. Add B Complex with extra B6 and Magnesium Complex. Eliminate food sensitivities/intolerences. 5-HTP Power. Low GABA levels look like difficulty to relax, easily stressed out, easily overwhelmed, feeling overworked or pressured, stiff, uptight, weak, shaky, bothered by loud noises, lights and too much activity, worse if meals are skipped and replaced with the use of sugar, alcohol and marijuana. If you have anxiety, panic attacks, insomnia, seizures and schizophrenia, then low levels of GABA are probable. GABA Plus contains taurine to produce GABA. Anxiousless contains theanine to help boost GABA. NutriCalm or B-Complex. Magnesium Complex. And nervine herbs such as kava kava, valerian, hops and passionflower. Carbohydrates: Complex carbohydrates in the form of whole, unprocessed plant foods such as vegetables, fruits, beans, whole grains, nuts, seeds, herbs and spices are most important for long-term health and brain function. These foods contain vitamins, minerals, phytonutrients and fiber. I love to add the following five products to my diet for power packed nutrition. Love and Peas, Nature’s Harvest, Ionic Minerals, Ultimate GreenZone and LOCLO fiber. I do this almost daily because I know that our current food supply is deficient in the proper nutrients because of soil depletions and our bodies need extra in order to combat chronic stress and toxicity. Vitamins & Minerals: For the reasons just stated, it is also very important to supplement with the following: B-Vitamins or NutriCalm, Magnesium Complex, Ionic Minerals or Herbal Trace Minerals or Chinese Chi Tonic, Zinc and Vitamin D3. Please go to ultramind.com/guide for questionnaires on deficiencies of these nutrients.

THE SUMMER LOCAL ~ AUGUST 2014 ... Page 15

The Enchanted Mountains

. . . Naturally Yours

Beat the Heat with a Trip to These Hidden Gems The beautiful hills and valleys of Cattaraugus County are home to a plethora of activities that invite you to enjoy a summer’s day (or two) with your friends and family. The Enchanted Mountains boast plenty of trails for hiking, mountain biking, horseback riding, shopping along the Amish Trail, motorcycling, and exploring local heritage.

One of the area’s most favored outdoor playgrounds is Griffis Sculpture Park in Ashford Hollow, NY. Voted as the No. #1 Hidden Gem in Western New York by AAA, Griffis Sculpture Park encourages visitors to explore its 400 acres - climb on, meander around, hang from, crawl in, lay across, sit next to or just stare in awe at the larger-than-life sculptures scattered throughout the park. Plan to spend the whole day exploring both areas of the park: the Mill Valley area will lead from the parking lot, through a trail in the woods, which eventually opens up to a field full of gigantic sculptures. Pass by the ladies of the lake, follow the spiral staircase to the top of the castle, or climb in the submarine. You can then continue on hiking the trails through the upper sections of the woods to view even more sculptures, or drive up to Rohr Hill area. Here you will be greeted by giant Kings and Queens, as well as large animals in the forest. Feel what it’s like to place your head in the giant turtle’s mouth or jump on the back of the snake. Join in for Slyfest 9, a 3-day camping extravaganza featuring live music, art installations, workshops, YOGA, swimming and even a hot air balloon. Slyfest 9 will take place at Griffis Sculpture Park Aug. 8-10 and is an inspiring celebration of music, dance and art! Phone 716-667-2808, www.griffispark.org.

Rock City Park in Olean, NY has been amazing visitors since 1890! Another one of Cattaraugus County’s “gems,” this prehistoric ocean floor is the world’s largest exposure of quartz conglomerate. The park offers plenty to do as you hike the trails, climb on the rocks, pose by the Balancing Rock, smell the Mountain Laurel, look for Big Foot, and squeeze through the crevices. ZZ TOP & JEFF BECK Two True Originals Come Together for One Big Night at Seneca Allegany Casino

A Conversation with Billy Gibbons HULICK: The all new DVD, “The Very Baddest - Live at Montreux 2013,” is

your newest release to add to your incredible discography. Any plans on a new upcoming album? GIBBONS: Yes, in a general and ongoing way. There are quite a few songs, chords, riffs and titles rattling around in the band’s collective head, propelled by the upcoming tour dates with our friend Jeff Beck. Good reason to compose some more good stuff. HULICK: You are the longest running band with the same members, since its start, well over 40 years ago. With as much touring and studio work that you do, what’s different with you guys that you don’t come unglued because of egos, creative differences or just the usual in fighting that bands typically fall victim to? GIBBONS: First and foremost, we have a real fine time getting to do what we do, so really, ain’t any reason to do otherwise. The fact that we’re an odd (some say “very odd”) number makes tie-breakers impossible. Here’s the thing with ZZ … we see no reason to mess up what’s taken so long to build up. This band likes getting down with it and gettin’ it on …!

HULICK: There are many “theories” of how the name of the band came about,

including everything from barn doors, cigarettes, bra sizes, record placement (always at the end), a neon pizza sign with missing lighted letters and even a play on words simulated from a slang term for marijuana read back-to-front (POT ZZ). Can you tell our readers the real story of how the name came to be? GIBBONS: OK, here’s the straight dope. We thought about calling ourselves AA Bottom but it just didn’t feel right so we did the total opposite and we realized, “that’s us!”

.............................. FRIDAY | August 29, 2014 By Melanie Hulick Iconic band ZZ Top and legendary rock guitarist Jeff Beck are ready to party in the great outdoors at Seneca Allegany Casino in Salamanca, NY on Friday, August 29 for what is sure to be one of the highlights of the summer concert season. When you hear the name ZZ Top, your mind automatically conjures up two things: their trademark beards and some of the best rock, blues and boogie music of the past 40 years. Known as “That Little Ol’ Band from Texas,” ZZ Top has held the title of the longest running major rock band with the original members of Billy F. Gibbons, Dusty Hill and Frank Beard - who ironically is the only member without a beard. The band have stayed true to their Texas roots and genuinely love to be out there performing for their fans and just playing their music and making every show a grass roots party. When I caught up with guitarist Billy Gibbons recently, we talked about future projects, the band’s secret of maintaining a respectful and likeable relationship for over 40 years, the truth about how they came up with the name for the band, and of course, those beards. With iconic hits like “Sharp Dressed Man,” “Legs” and “Gimme All Your Lovin’,” the band reached the pinnacle of any music artist’s career when they were inducted into the Rock and Roll Hall of Fame, which added fuel to the fire for ZZ Top, whose internal mantra is … Tone, Taste and Tenacity. There is yet another generation of music lovers joining the die-hard fans for some rockin’ good music and good times, which is evident at any show they do. Speaking of fans, read on for a personal message from Gibbons to all those fans that are planning on coming out to see the band on Aug. 29.

..................................

Tickets to the performances by ZZ Top and Jeff Beck at Seneca Allegany Casino in Salamanca start at $25 and can be purchased through www.senecacasinos.com (click on Seneca Allegany) or any Ticketmaster outlet.

HULICK: I’ve interviewed many bands and one question I ask seems to get either a pro or con answer, no in between. When you reach a certain status of your staying power, tribute bands start popping up, and of course you have several that are on the current scene. What are your thoughts on these cover bands, and have you heard and/or seen any of them? GIBBONS: We love ‘em. We’ve seen a few who do a great job musically and a few who do a great job visually, but when you get the two together it’s a wonder to behold. Wait! That’s us! Little known fact: Billy Bob Thornton, a dear friend of ours, was the drummer in Fandango!, a ZZ Top tribute band and he’s done pretty well for himself. We think getting out there and covering “Tush” and “Just Got Paid” is a sure path to stardom. It certainly was for us. HULICK: In that same vein … it seems there is a hunger, if you will, to produce Broadway shows on the music and careers of some of our most iconic artists and bands, such as Billy Joel, Frank Valli and the Four Seasons, The Million Dollar Quartet (Elvis, Jerry Lee Lewis, Johnny Cash & Carl Perkins), Mama Mia’ (ABBA), Motown the Musical (Barry Gordy) and more recently Beautiful: The Carole King Musical. Would this be something you guys think of or would like to be part of? GIBBONS: This idea is quite enticing since we’re constantly running casting possibilities. Maybe Matt Damon could play Frank, Liev Schreiber could play Dusty. Can’t figure out who’d be “The BFG” yet … maybe Kiefer Sutherland would take a shot. It’s all about who’d survive an 80 city tour. Then again ... HULICK: You will be doing an outdoor show at Seneca Allegany Casino with Jeff Beck on Aug. 29. Do you have a connection to the Western New York area like Buffalo, Niagara Falls, Ellicottville or Salamanca, where you will be doing your show? GIBBONS: Of course, we’ve played the region many times over the course of four plus decades. We’re fixated by the falls, yet we’ve yet to convince Dusty to go over in a barrel. The whole region is very scenic, to be sure, and we certainly enjoy it, especially at this time of year. HULICK: You know I have to bring up the beards. There is such a stigma attached to these chest long locks of hair, and I read a couple quotes that you made about them along the way that really cracked me up. One being, “We’re too ugly without ‘em,” and the other in response to why you declined to shave them off, even when Gillette offered you and Dusty Hill one million dollars each to do so, which was …”Seeing oneself in the mirror clean-shaven is too close to a Vincent Price film.” You do know that is dating you and me both because I got the Vincent Price film comparison, right? GIBBONS: Right but we’re cool about it. Old movies are a staple of our viewing when aboard our motor coaches. The buses go forward and the time rolls backwards. It’s how we maintain equilibrium in the time/space continuum. HULICK: Do you have a message to your fans that will be coming out Aug. 29? GIBBONS: Get on out to our show and bring the party because we’re ready to turn it way up!

THE ROARS OF SUMMER

RALLY IN THE VALLEY Six Days of Motorcycle Fun | Aug. 19-24 | Olean, NY

SOUTHERN TIER MINI TRACTOR PULLERS Lawn Tractor Racing Making its Mark Across Cattaraugus County

What started as a two-day fundraiser has now revved up to a full, six-days worth of motorcycle fun! This year’s Rally in the Valley, featuring an extra day of fun, kicks off Tuesday, Aug. 19 with the Rally Warm Up event in the CUTCO/KA-bar’s parking lot. The two-hour gathering includes music, food, raffle prizes and the Commemorative CUTCO Rally knife.

Ah, summer in the Southern Tier. The breeze is warm, the sun is shining … the season is in full swing. The hustle and bustle of our vibrant downtown areas, as well as the smells of barbeques and fresh cut grass all remind us why we live in this amazing corner of the world. But there’s one sound that you either find it oddly soothing or insanely invasive during those normally relaxing Sunday evenings … it is the roar of a lawnmower, the summer anthem of communities everywhere!

“The new day is Wild HOG Wednesday at War Veteran’s Park,” Meme Krahe Yanetsko, Chief Operating Officer for the Greater Olean Area Chamber of Commerce said, noting that Sparky’s Pizza will be catering and the band Steel Region will provide music. “Another day gives us more time to raise funds for the charities benefitting from the Rally. Charities include Home for Hospice, The Genesis House, the Olean Food Pantry, Olean Airport Support, Southern Tier Child Advocacy Center, Southern Tier Advanced Manufacturing Initiative (STAMI) and the Salvation Army. The event is run through the chamber, but we’re thankful for strong backing of the guys that helped start it - Don Benson, Randy Langdon, Dennis Jones and Dan Jordan - as well as the committee and 250 volunteers. It helps the chamber make the Rally a success for the charities.” Returning on Thursday night is Community Bank’s ‘Banking on a Good Time’ street dance, which takes place on Laurens Street between North Union and First Streets. “We have line dancers, bands, bikers and music in the streets,” said Yanetsko. “It’s a great time to show off the bikes, and we also have a car show in the bank’s parking lot.” Friday night features Olean Federal Credit Union’s Kickstart to the Rally, as well as ‘Tough Enough to Wear Pink Friday.’ Everyone is encouraged to wear pink in support of breast cancer awareness, and the chamber will have pink items for sale. The parade is also Friday night, with close to 300 bikers expected to ride as grand marshals for the parade. Everyone at the stadium Friday will enjoy a fun-filled lineup, including motorcycle judging, music, fireworks and the return of the Free Fall Oz parachutists. “Everyone loved them when they came for the 10th anniversary,” Yanetsko said of the Shinglehouse-based team. “They fly from Shinglehouse into Bradner’s around 7pm where we have a landing area with paper plates scattered around the ground - our ‘Drop in on the Plate’ contest. Participants who purchased $5 chances to win in the contest write their name on a plate, which is then placed on the ground. As the parachutists land, they pick up the plate nearest to them. Whatever plate is chosen, the winner receives tickets for a Harley Davidson motorcycle, which is raffled off Sunday.” But don’t forget to join the fun on Saturday, which features a street festival at the stadium with bike contests, bands, food and vendors from 11am-11pm as well as the Street Masters Car Show in War Veteran’s Park. “I really enjoy the games on Saturday,” Yanetsko noted. “The skill the drivers have to have to maintain the lane for their passenger to put a tennis ball on a cone, or jousting, where riders pick up cylinders using a pole … you have to see it to appreciate it. Our music also continues with three different bands on Saturday night. There’s different types of music throughout the Rally for everyone.” Sunday, the last day of the Rally, begins with a dice run at 11am, sponsored by Leisure Time PowerSports, with over $2,000 in cash prizes awarded following the event. Musical guests, The Hootn’ Anges, will play from 2:30-5:30pm, and bikers will depart later in the day. For more information on this year’s Rally in the Valley, call the Greater Olean Chamber of Commerce at 716-372-4433, or email rally@oleanny.com. Additional information can be found on the Chamber’s website at www.oleanny.com.

Fresh off the wildly successful ‘Hillbilly NASCAR’ lawn tractor races hosted by the Rotary Club here in Ellicottville, we here at The Summer Local set out to find out what other forms of lawn tractor entertainment the region has to offer. Alas, we discovered the Southern Tier Mini Tractor Pullers, an exciting club specializing in - you guessed it garden tractor pulling! The STMTP club was started over ten years ago by a group of local lawn tractor enthusiasts who had come from pulling and racing backgrounds. After a neighboring club folded following the death of their founder, the current regime vowed to keep the fun and excitement alive in the form of the STMTP club. The premise was simple: accessible, family fun, based on the idea that we ALL have, at one time or another, wished our lawnmower would go faster, turn sharper, and pull more! So now that we’ve piqued your curiosity, here are the basics behind the STMTP club. First of all, this club is probably one of the only clubs that is literally ALL ages. Riders as young as 4, and as seasoned as 70 climb aboard their machines, across their youth, stock 1, 2 & altered, sportsman, modified and V8 classes. Yes you read that correctly - a V8 powered lawnmower. Essentially, anything goes (less a few safety regulations) provided the engine is under 2300cc’s. Back to the aforementioned 70-year-old … not only does John Willis pull, he plays host at one of the most frequently visited venues, named ‘Jack’s Track’ located across from Route 241 in Randolph on Swamp Road. These riders compete mostly for fun, the occasional trophy, and the hope that more will come from around the area to check out their events, as well as to participate. In speaking to a few members of the club, they want to reassure anyone who is interested that this is all about affordable, country, family fun, with everyone out to help one another enjoy the event. Most events take a few hours to get through the approximately 25 pullers who attend, and all are a reasonably short drive away. With a longstanding tradition, coupled with their closely-knit pulling community, the STMTP club is most certainly something yourself or your family should make an effort to check out one of these weekends. With pulls in Randolph, McKean County, Otto and Ellington, as well as plans to expand to fairs next year such as the Cattaraugus County Fair in Little Valley, it’s as accessible as can be, both as a participant or a spectator. (The STMTP club will host an event at this month’s McKean County Fair!) Each stop has a concession stand, as well as an Amish quilt raffle & 50/50 raffles to help raise funds towards the operation of the club. Simply bring your lawn chair and get ready for some good times. If you’re interested in learning more about the club, being a sponsor, or have a place for the STMTP to put on an exhibition, contact Sara Krotz at 716-244-2149. You can also find them on Facebook under ‘Southern Tier Mini Tractor Pullers’ where a complete schedule, photos, and interactions from club members can be found. Give ‘em a like, and check out all that this great crew has to offer!

COMPTON’S MOM AND POP SHOP One of the fun new shops along Pennsylvania Route 6 is Compton’s Mom and Pop Shop located at 217 W. Main Street in Smethport. Owners Kari and Clint Compton are combining both the new and old at their charming shop full of the sights, sounds and flavors of your youth. Clint wanted to recreate the family fun of shopping at a candy counter and drinking a soda that he remembers as a child at his grandfather’s gas station. This new shop, located in a renovated storefront that features the wooden shelves and display cases original to the store, offers a candy counter where you choose from a wide selection of treats including the old time favorites - wax lips, teaberry gum, whirly pops, Abba-Zabba taffy filled with peanut butter and the “big hunk candy bar.” Bring your kids and let them have fun choosing from the wide selection of treats where prices start at five cents. Belly up to the counter and order yourself an old-fashioned soda or handful of candy.

Hundreds of sodas line the shelves. Here you can order up an old-fashioned soda made with pure cane sugar to drink now, or purchase the soda by the case for later. “Venors is popular,” explained Kari when asked which flavors are the most popular. “One customer ordered three cases for an upcoming party … I think this soda has a cult following. Prickly Pear, another favorite, is a great soda to try on a hot day; it has a mild ginger flavor with what I think is a nutmeg aftertaste.” You will have a hard time choosing which to drink now and what to buy for later. Seating is available to sample flavors and you can call ahead to schedule a “Soda Tasting” for a group or your family. Gift baskets can also be ordered that will be made up specifically to include all your favorite candies and sodas. The shop not only features sodas and candies, it also has a very diverse selection of old-time toys, handcrafted furniture and Amish made items. Some of the toys are manufactured of tin, such as their selection of old-fashioned windup toys. The tin Ferris Wheel would be a great item to purchase as a souvenir of your trip to the local county fair. Other toys available are handcrafted by a local artisan of black walnut and other quality hardwoods. One of the most eye-catching items for sale is a handcrafted table and bench, perfect for

FESTA ITALIANA

Hours of operation are Monday-Friday, 10am-6pm, and Saturday 9am-3pm. Phone 814887-5200 or search them out on Facebook.

“Tutti benvenuti,” which means “everyone welcome,” is the spirit of the Festa Italiana, held in Bradford, PA beginning Thursday, Aug. 15 with the opening ceremony at 6pm. This threeday celebration concludes with fireworks Saturday evening, Aug. 17.

“LET’S SWEDE IT UP, YELLOW, BLUE & YOU!”

Bring your appetite, as authentic Italian foods are available all three days at a variety of food booths. Delicious food choices include eggplant sandwiches, Italian meatball sandwiches and pasta fagioli. For dessert, try a popular favorite - anise flavored pizzelles.

Honoring the Swedish heritage of this small village along Route 6, the Mt. Jewett Swedish Festival is scheduled for Aug. 8-10, 2014 in Mt. Jewett, PA. This annual three-day communitywide festival includes a Swedish Smorgasbord, carnival rides, a traditional Maypole Dance, a Scandinavian folk band, Swedish Dancers, car & bike show, parade and fireworks. The Leif Ericson Viking Ship Norseman is open for tours from 4-8pm on Friday, Aug. 8, from 10am-9pm on Saturday, and noon-4pm on Sunday. Friday entertainment includes guitarist Paul Eisert performing at the Heritage Park Gazebo from 6-8pm, the Prince & Princess Contest at 7:30pm at the Center Street Stage, and the band He Said, She Said performing rock and classic songs from 9:30pm-midnight. Saturday, August 9 features the Swedish Meatball Contest from 11am-1pm at the Heritage Park Gazebo, Dewayne Hill will perform a magic act at the Center Street Stage from noon12:30pm, and the Crown Gospel Band will perform from 12:30-1:30pm. Not to be missed is the Swedish Smorgasbord served from noon-3pm at the Lutheran Church, the Maypole Dance at 12:30pm on the lawn of St. Matthews Church, and the traditional Scandinavian Band and Dancers at the Center Street Stage from 1-2:30pm. The traditional parade along Main Street will begin at 5pm Saturday, followed by the Jr. King & Queen Contest at 6pm, and Alberta’s Pie Auction from 6:30-7:30pm. Fireworks will start at 9:30pm. The band Witch Hazel will perform oldies and rock melodies from 8-11pm at the Center Street Stage. The Nebo Chapel, one of the oldest surviving Swedish Evangelical Lutheran Chapels in the nation, will be open for tours on Saturday, Aug. 9 from 11am-1pm. This little white church - built in 1887 in what was once the edge of the Pennsylvania wilderness - is an example of the sturdy construction that characterized rural America in the 19th century. Built of lumber from local mills, the octagonal church is patterned after the beloved Ersta Church in Stockholm, Sweden. The Viking Ship Races get underway at 1pm on Main Street on Sunday, Aug. 10. This hilarious street race starts with the ships racing down Main Street to the first stop where they exhibit their ships and hoist a Swedish Flag. They then race to the next stop to dine at the Swedish Smorgasbord, turn the ship around and race to the finish where they lower the Swedish Flag. All in good fun, may the best Viking or Swede team win! For more information and a full schedule of Swedish Festival events, log into Facebook and search: Mount Jewett Swedish Festival.

Play the Scenic Hills

The Pennhills Club of Bradford is More Than Just a Golf Course Experience the History-Laden, Beautifully Designed Club Nestled in Some of the Nation’s Best Landscape By Spencer Timkey There are golf courses, and then there are golf courses. The Pennhills Club, located just outside of Bradford, PA is one such of the latter. A beautifully designed 6,400-yard Par 70 coupled with a clubhouse reminiscent of that signature, Frank Lloyd Wright-esque early-1900s architecture makes The Pennhills Club one of our area’s diamonds in the rough. There are golf courses. The Pennhills Club is a golf course. In the 1920s, the North Penn Club brought in noted golf course architect/historian/ journalist Walter J. Travis to design an 18-hole course. Travis, renowned for his visionary designs, also laid out the plans (amongst many others) for the Orchard Park and Westchester Country Clubs. When the North Penn Club merged with the Country Club of Bradford in 1937, The Pennhills Club was born. Now armed with a new name, a beautiful course and a significant member base, The Pennhills Club made a power move and commissioned Clifford C. Wendehack to design its clubhouse. Pennhills remains an elite company when it comes to its brethren clubhouses Wendehack designed … have you ever heard of Wingfoot? How about Bethpage? Also, Park Country Club just north in Buffalo. Any successful business will share this mantra with you: change is necessary. You can’t expect to stay complacent and remain at the forefront of the game. Pennhills, now in a dogfight with other clubs in the area for members, realized this. In April 2013, they brought in Jake Northrup - a young, driven and energetic PGA-certified professional. Northrup, a native of Ellicottville, came home after working at the Hempstead Golf & Country Club in Long Island. Hempstead, a high-end club, was vital to Northrup’s experience in running a tight ship. “I’m used to a certain kind of operation because of the time I spent with Metro (metropolitan-based demographic) clubs,” Northrup said. “I know the way those clubs are - first class. That’s kind of how I’ve always worked them. Bringing in fresh insight with some new energy.” Diligently working to bring in larger tournaments, Northrup landed the Blaisdell Pro-Am Invitational, slated for Monday, Aug 18. With a $20,000 purse, the tournament is one of the biggest Pennhills

The Pennhills Club of Bradford, Pennsylvania

With all the excitement and changes at The Pennhills Club in 2014, be sure to stop by, take a tour, enjoy 18-holes, or book a luxury golf outing.

has had - and first pro-am - in over 15 years. “I’m detailed in every aspect of the tournament planning,” Northrup said. “I have to be. You’ve got 300 members at the club, each one turning to me to make sure everything is running smoothly. But that’s part of the entire process - building relationships, building trust, making sure the members know everything is taken care of.” A big factor in building relationships is Northrup providing private lessons. When you can establish a connection with someone, whether it’s on the course or in the pro shop, you’ve already overcome one of society’s biggest social blocks. You can’t expect to immediately have someone trust you - you’ve got to work for it. Northrup, along with his duties as head pro, has been doing just that. One very cool thing Pennhills did was hire Hover Shutter Productions (of Pittsburgh, PA) to come and do an aerial, video tour of the Front 9. Hover Shutter, which uses a remote-control helicopter with an HD camera attached, allows you to view the course from a bird’s eye view before you play. Northrup was adamant that much credit is due to Dennis Platko, the course Super. After the horrendously cold winter we had and how deep the frost penetrated the ground, many area courses weren’t even able to open at all this summer. But thanks to Platko, Pennhills is in superior shape - allowing Northrup to confidently bring in larger tournaments. “We could do everything else right, but if the course isn’t in good shape, then it wouldn’t matter,” Northrup said. “Dennis and his crew have been putting the hours in to ensure the course is in tip-top shape, which is one of the main factors why membership has been growing. We wouldn’t be where we are without their work.” Hosting events such as the wrestling and hockey outings for Bradford High School and the Zippo Open (which benefits the local SPCA) adds a different dynamic to the Club. Jena Mosher, Director of Member Services, said remaining true to the Club’s original mantra is what keeps them successful. “We’ve remained a private course and club,” Mosher said. “We host tournaments, but that allows us to stay private for our members. The Pennhills Club was founded on a set of ideals, and we want to make sure that we stay true to those. Bringing Jake onboard was big for us because he adds a fresh perspective on how a course and club should be run. As a younger guy, he connects with the younger families and younger golfers - which helps foster the growth for the future.” The Pennhills Club is more than just a golf course. It’s a history-laden, beautifully-designed club nestled in some of the nation’s best landscape. It’s a golf course. For more information on The Pennhills Club, head to its website at www.pennhillsclub.com or give them a ring at 814-368-6159.

TEEING OFF FOR WOUNDED WARRIORS August 10 | Concord Crest Golf Course

ONE-ON-ONE WITH THE GOLF COURSE SUPER Bill Burford | Double Black Diamond @ Holiday Valley Resort

By Megan E. Sorokes

By Pat Morgan

This August, United States Army veteran Marty Walter is asking golfers to tee off for a few good men.

As you are most likely well aware, our entire region is dotted with incredible golf courses and practice facilities. From the front line staff of cart attendants and course workers, right up through instructional and staff professionals and superintendents, all of these moving parts help make these courses as great as they are, as well as provide each course with its own unique identity and character. One of these industry professionals we recently caught up with is none other than Bill Burford, Golf Course Superintendent from the Double Black Diamond Golf Course at Holiday Valley. We managed to pry Bill off of his mower long enough to get a few questions asked, so you - the readers - can understand what makes the Holiday Valley course so great: First & foremost - where do you hail from? Originally I’m from good old Erie, PA. Most people think I probably started golfing down there at a young age, but that couldn’t be farther from the truth. I just liked the outdoors, and originally wanted to be a PA State Trooper of all things! Where did you go to school? Originally I was attending Edinboro in their criminal justice program, but a few of my good buddies were in golf management programs down in Maryland. So, they talked me into the switch, and shortly after I was attending the University of Maryland (Go Terps!) where I achieved a degree in Agronomy Golf Course Management. Agronomy is the science and technology of producing and using plants for things like food, fuels, fiber, as well as land reclamation. Specifically, we were focused on turf development and management. Don’t get it confused though - we’re not greens keepers; we’re golf course superintendents! Where else have you worked? After graduating in ‘94, I worked for Billy Casper Golf Course Management where we specialized in consulting golf courses across the country in how to operate successfully. From there, I moved on to White Hawk Crown Point, Indiana for seven years, followed by another 7-year shift as Superintendent at The Course at Aberdeen, one of the best courses in the Chicagoland area, located in Valparaiso, Indiana. Now I’m a few years into my role here at Holiday Valley, and couldn’t be happier. What is something many people wouldn’t realize about HV’s course? There’s not too much behind the scenes, or hidden so to speak about the DBD. One thing I strongly feel, however, is most people who visit have a big sense of false confidence as they navigate the front nine. They probably think they are going to coast through their round until they are greeted by the back … then BAM! Right in the teeth, it gets tough out there, but that’s why we play - for the challenge! Can I say in the teeth? Does that sound too tough, haha … Anything that makes the HV course unique from others? I think the most recent redesign by Albanese & Lutzke leant itself to the interesting layout. There aren’t many courses out there that navigate a ski resort, let alone offer the elevation changes that the DBD has to offer. Certainly none in the Buffalo area at least. I think one thing I want to hammer home with readers, is that each and every day, our entire staff strives to bring you the most upscale, championship worthy course that our resort guests expect and deserve. And we’re proud to do so … hope to see you out there! Measuring 6,500 yards total, the Double Black Diamond Course at Holiday Valley Resort offers golfers an 18-hole, par 70 experience like none other in the region. Stay & play packages are available, so don’t wait - come see what Bill spoke to, and enjoy what this incredible course has to offer: 716-699-2345 or www.holidayvalley.com for more information.

“I served in the United States Army until 1989 and developed a strong feeling for the military and veterans - those who paid a price,” said Mr. Walter, a member of the Knights of Columbus, Msgr. George Callahan Council #5716, of Yorkshire, and organizer of a tournament at Concord Crest Golf Course to benefit the Wounded Warrior Project. As a charitable organization, the Knights of Columbus does work for the Catholic church and the community. I’ve attended some other Wounded Warrior events and made donations, so I thought it was a good idea to try this tournament.” Approximately ten members of the Knights worked together to organize the tournament, which features an 18-hole, 4-man, best-ball scramble. The event is scheduled for 1pm on Saturday, Aug. 16, which puts the registration deadline for golfers at Aug. 10. “We’ll have prizes for first, second and third place, as well as longest drive and closest to the pin,” Mr. Walter said. “There will also be raffles for gifts and gift certificates frrom area businesses, including one for 18 holes of golf and cart for four at Concord Crest. This event is open to anyone that wants to play. I’m really hoping for at least 80 golfers and a sponsor for each of the 18 holes.” “I currently have five sponsors,” Mr. Walter continued, noting his appreciation for the guidance of other councils with organizing this event. “This is the first time I’ve organized a tournament, and I’ve had some help from the Knights in Olean. Our Knights are also helping to volunteer in sending information to golfers and finding sponsors.” Golfers participating in the tournament will enjoy a hot dog and hamburger lunch at the mid-point of the scramble, as well as a dinner and awards presentation following the event. The dinner will be located in the course’s recently improved facilities. Anneliese Ploetz, an assistant at Concord Crest Golf Course said, “We’ve made several improvements to the facilities and the course, including the addition of a banquet facility, 3-hole practice facility and expansion of the clubhouse. The course accommodates various size tournaments almost every weekend throughout the season with a few open weekends remaining this year. We have some smaller tournaments - between 20 and 30 golfers - and others that are a full course of 124 players,” Ms. Ploetz said. “Our golf course supports numerous charitable endeavors and donates over 300 golf passes each year in support of local fundraising events.” Golfers who play the course at Concord Crest enjoy “the rolling hillside and meandering streams,” as well as other natural aspects that make playing there a unique experience. “Mother Nature did a lot of the course layout for us,” Ms. Ploetz said, referring to the descriptions on the website. “It’s the natural lay of the land.” Concord Crest, 9255 Genessee Road, East Concord, NY, is a family-owned and operated course, and Ms. Ploetz said the staff is trained to provide great hospitality “focused on the enjoyment of the game for all ages.” Membership is not required, but season passes are available by visiting the course website at www.concordcrest.com. For more information about the Knights of Columbus’ Wounded Warrior Project tournament, call Mr. Walter at 716-707-2079 or email candmw11@aol.com. “We want to give back to those who paid a price. There’s definitely a need,” Mr. Walter said. “We want as much as we can to donate to the Warriors.”
