W H E R E A R E YO U F RO M ?
I was born in Tokyo Japan and lived there for thirty-f ive years. H OW D I D YO U G E T I N TO C O O K I N G ?
I originally wanted to be a Bike builder, then around the same time I discovered cooking thanks to some friends and started to really enjoy it. Cooking just became what I really got interested in. W H AT A R E S O M E O F YO U R I N S P I R AT I O N S FOR COOKING?
I simply love cooking because it brings joy to people, thats what inspires me to cook the most. Good food for happy people! ANY HOBBIES OUTSIDE THE KITCHEN?
Riding my bike and spending some time with my daughter. The simple things. W H AT WO U L D YO U C O N S I D E R YO U R SIGNATURE DISH?
My cooking background is Italian cuisine, back in Tokyo I had my own Italian restaurant for ten years and I love to cook pasta. I would say my signature dish would be anything with pasta. I make everything f rom scratch, — sauce, pasta. That’s my thing! FAVO R I T E AU S T R A L I A N D I S H ?
Does Vegemite count? I’m a big fan of the classic meat P ie. W H O I S YO U R FAVO R I T E B I K E B U I L D E R ?
Some f riends f rom back home are some of my personal favorite builders, especially Hide f rom Natural Steel Works Customs. W H AT ’ S YO U R D R E A M B I K E ?
I have my dream bike, my WLA. That’s it! W H AT ’ S T H E S TO RY B E H I N D YO U R HARLEY?
It’s a 1949 Harley WLA. I found it back in Japan on an auction site. It was sitting in a shed for years and I ended up buying it off an old guy — The bike had never even been registered in Japan. I took it apart and built into my dream bike with the help of my f riends. It has traveled with me f rom Tokyo to Sydney , it’s been with me for 10 years now. FAVO R I T E D E U S B I K E ?
I would have to say the big bosses bike, his Triumph. I see it everyday and I just love it!

COFFEE MENU
Pioneers of the great Australian coffee industry. We have remained a family owned business since 1958.
Piccolo
It was in 1947, that Italian brothers Orazio and Carmelo f irst spotted an opportunity to introduce a taste of their Italian heritage to their new home, Australia. Beginning as a small family business importing products including mineral water, parmesan cheese and pasta to their adoptive country, they were longing for the much-loved Italian ritual of a daily espresso.
Flat White Latte Cappuccino Shor t Black Long Black Ristretto
This yearning drove them to develop their own piece of Italy right here in Australia, because they knew that coffee is at its best when it’s fresh. In 1958, the brothers began locally roasting their own premium 100% Arabica beans right here in Australia - long before the market understood this measure of quality. This was the beginning of the iconic Australian coffee industry we know and enjoy today, and in that moment, the pioneers of what has become a globally acclaimed industry found their new home.
Macchiato Mocha Babyccino Cold Brew Iced Latte Iced Coffee
They began supplying small batches of the f inest quality Arabica coffee to Sydney’s f irst Italian cafés and restaurants, with each blend personally created by the family. Today, thanks to owner and entrepreneurial CEO, Les Schirato AM, Vittoria Coffee has grown to become a household name and continues to set the standard for Australia’s iconic café culture and obsession with coffee.
