Barbecued Shrimp Serves 4 to 6
Garlic Barbecue Sauce 6 tablespoons unsalted butter, divided 1 teaspoon chopped garlic 1 cup mild barbecue sauce 2 tablespoons Virgil’s Dry Rub (see below) Shrimp 8 6-inch bamboo skewers 2 pounds fresh jumbo shrimp 1/2 cup olive oil 4 tablespoons Virgil’s Dry Rub (see below) 2 lemons, cut into wedges

1. In a small pot over medium-high heat, combine 1 tablespoon of butter and the garlic for the garlic sauce. Sauté the garlic for 1 minute, add the mild barbecue sauce and Virgil’s Dry Rub, and heat to a boil. Remove from the heat, whisk in the remaining butter, and set aside to use as needed. 2. Soak the skewers in water overnight. 3. Peel and devein the shrimp, leaving the tails on. Lay 4 shrimp out on a flat surface. Align them so that they are coiled with the tails on the same side, facing in the same direction. 4. Slide a skewer through the shrimp. Run another skewer through the shrimp, parallel to the first and about 1/2 inch apart. (This will prevent the shrimp from spinning on a skewer.) Repeat this process until all of the shrimp are skewered. 5. Brush one side of the shrimp on the skewers with olive oil, then dust with the dry rub. Flip the skewers over the repeat the process.
Virgil’s Dry Rub Makes 5 to 51/2 cups 2 1/2 cups sweet paprika 1 cup granulated sugar 1/2 cup Texas-style chili powder 1/2 cup minced onion 1/2 cup granulated garlic 1/4 cup dried parsley flakes 6 tablespoons kosher salt 14 •
Combine all of the ingredients in a medium bowl and whisk together until completely incorporated. Transfer to a covered bowl with a tightfitting lid. Store in a cool, dry place.

8. Reduce to medium heat and position the skewers over direct heat. Grill for 2 minutes, then flip and grill for 1 to 2 minutes more. 9. rillmasters know that grilling for friends and family is about more than just burgers and hot dogs. For those who want to add some more flavorful fare to their backyard barbecues, the following recipe for “Smoke-Roasted Bell Peppers Stuffed With Green Garden Vegetables” from Andrew Schloss and David Joachim’s “Mastering the Grill” is sure to please guests and grillmasters alike.

2 medium red bell peppers 3 medium mixed bell peppers (yellow, orange, green) 3/4 teaspoon kosher salt 1/2 teaspoon ground black pepper 3 tablespoons butter 1 onion, finely chopped 2 cloves garlic, minced 1 medium zucchini, cut into 1/4-inch dice 1 medium yellow squash, cut into 1/4-inch dice 2 cups fresh or frozen corn kernels 1 medium tomato, seeded and cut into 1/4-inch dice 2 tablespoons chopped fresh herbs (such as parsley, oregano, basil, or a mix) 1/4 cup plain dried bread crumbs Oil for coating grill 2 tablespoons grated Parmesan cheese (optional)

1. Heat the grill as directed. Soak the wood chips or chunks for 1 hour. 2. Seed, core and cut one of the red bell peppers into 1/4-inch dice. Cut the remaining bell peppers in half lengthwise right through the stem, leaving a bit of stem attached to each half. Cut out the cores, seeds and ribs from the interiors of the peppers, leaving the stem intact. Sprinkle the insides of the peppers with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. 3. Melt the butter in a large skillet over medium heat. Add the onion and saute until almost tender, about 4 minutes. Add the garlic, chopped bell pepper, zucchini, and yellow squash. Saute the vegetables until crisp-tender, about 4 minutes. Stir in the corn and tomato and cook until heated through, 1 to 2 minutes. Stir in herbs, bread crumbs and the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook and stir until the bread crumbs soak up most of the liquid in the pan. Remove from the heat and spoon the filling equally into the pepper cavities. 4. When the grill is hot, put the soaked wood chips or chunks over the coals on both sides of the grill. Is using gas, put the wood chips in a smoker box or in a perforated foil packet directly over one of the heated burners. 5. Brush the grill grate and coat it with oil. Put the stuffed peppers over the unheated part of the grill, cover, and cook until just tender, 20 to 30 minutes. If your grill has a temperature gauge, it should stay at around 350 F. 6. Remove the peppers to a large serving platter. Sprinkle with the Parmesan (if using) and serve.

T
he sounds of rushing water can be heard before even turning the corner of the paver walkway that leads to the backyard of Connie Hoffman’s Mankato home.

A large goldfish pond sits at the base of a dual waterfall lined with stones and plants. The water feature sits off to the side of a large paver patio sheltered by a pergola, with a stone seat wall to the rear and a 4-foot by 5-foot gas fire pit in the center of the space. Up two steps near the house, an outdoor dining set sits next to a builtin grill unit. Add in the solar lighting touches, music from a Bluetooth speaker and wall art hung on the house and fence, and you’ve got one heck of an outdoor living space that reflects many of the trends emerging in southern Minnesota backyards. “We’re out here every day, depending on the weather,” said Hoffman, who owns and operates Broad Street Brick and Patio with her son, Chad Hoffman. Hoffman upgraded her patio space several years ago both for her family’s enjoyment and to showcase what her company can do for clients. Having gone through the renovation herself, she can also provide clients with her own experiences in construction logistics and functionality. “Many people can’t see beyond what they already have,” she said. “If their patio is in one spot (for example), they sometimes don’t know it doesn’t have to stay there. I help them see the potential.” Now, more than ever, people are focusing on bringing the indoors out, creating cozy and inviting patio, deck and yard spaces that are comfortable enough to spend time in. Area contractors, landscapers and even design experts are spending more time on projects such as outdoor kitchens and lounges.
Outdoor Cooking Rich Froman does a lot of cooking and grilling. It’s a passion of his, so naturally he needed the space to match his talents. The DeGrood’s Homestore sales manager decked out his own outdoor space with a number of different grills, both gas and charcoal. “I spend quite a bit of time on the patio,” he said. But as the demand of the past several years has proven, grills are just the starting point these days Home Magazine • The Free Press • JUNE 2017 •

in what Froman has been selling customers for their patios and decks in southern Minnesota. One trend has been to include a small tuck-under refrigerator in a built-in grill unit, as well as a plumbed sink with running water. The refrigerators are UL rated (national safety organization) for being “outdoor living capable” to ensure they withstand cold Minnesota winters. “I don’t think it’s a ‘trend’ in that it’s here today and gone tomorrow, but it is more popular now,” Froman said. “A great way to pitch it to customers is to say (an outdoor kitchen) is only about 2 percent of a landscaping budget for a new home when you think of the cost of sod, shrubbery, rock.” Wood-fire pizza ovens are even becoming more popular. “We designed one for a client last year that went right into an outdoor fireplace,” said Ryan Schmitz, owner of Aquatic Gardens & Landscaping Inc. The outdoor season for Minnesota is notoriously short, which is why Froman says more people are adding patio heaters to prolong the outdoor cooking and lounging season. But there’s perhaps no bigger trend in outdoor heating than the booming gas fireplace trend, including ones that look like a table topped with colored glass where the flames emerge. “We took those on four or five years ago. Those are a booming commodity,” Froman said. “You can have an LP tank tucked underneath, push a button and you’ve got a flame.” Froman said people love that they can come inside and not smell like smoke, as they do with traditional fire pits using burning wood. They also like having the clean burn and not having to douse out the flames. “And it’s the ambience,” he said. Hoffman’s stone fire pit topped with blue glass adds a great deal of ambience to her space, she said. Due to the high cost of running a gas line underground to the fire pit, she hides an LP tank behind the seating wall. So, she said, clients have options that range a great deal in cost. “The flames come up and light it beautifully, and it does give off heat,” she said. 18 •

It’s all well and good to have functional appliances in your outdoor space, but you have to want to spend time in a place that you are investing hard-earned money into. That’s why more people are realizing the importance of not scrimping on atmosphere and finishes, Froman said. “Some of the patio furniture I’ve seen is actually nicer than some of the living room furniture I’ve had,” he said with a laugh. “It’s fully customizable. You can design your own look, your own feel. We sell truckloads of it every year.” Margot Weyhe, owner and designer at The Design Element, said outdoor furniture is one area where you get what you pay for. “The lesser-priced pieces are not heavy. They might easily blow over or blow away. The nicer pieces are a heavier aluminum,” Weyhe said. “They’re constructed better. They’re made to last for a long time.” They’re also customizable so Weyhe can work with her clients to design a specific look for their outdoor spaces. Even the finish on the aluminum frame can be chosen by the clients. Outdoor textiles and cushions also have come a long way, she said, meaning there are more options than ever before. “There are a lot more fabric options than there used to be,” she said. “If it’s quality constructed patio furniture, it is likely that the cushions (as well as the fabric) will be waterproof. They are built to work in the outdoors. If they get wet, they will dry out with no problems.”

To add shade and an interesting architectural element, pergolas have become trendy in southern Minnesota
“Pergolas are a neat architectural accent,” Weyhe said. “We have them outside of our building to add some interest. They don’t really provide much for shelter. It gives the feeling of being in a room versus actually having a roof. It cozies it up.” Hoffman said knowing when a family will spend the most time in the yard can help them decide how to construct the pergola, using the positioning of the sun as the guide. The slats of Hoffman’s pergola provide shade when the sun is west, which is when she and others spend the most time there.
Water and Fire One of the nicest elements a person can incorporate into the landscape surrounding an outdoor patio space is a water feature, Weyhe said. The sounds of moving water are relaxing, and they add beauty and interest to any yard. “People are trying to get away from the actual ponds, so they’re doing pondless stuff,” Schmitz said. “They’ll have a stream or a waterfall but not have standing water.” Without standing water, no chemicals are needed to keep the water from turning green, Schmitz said. They also don’t have to worry about mosquitos laying eggs in stagnant water.
Hoffman said she doesn’t have problems with mosquitos in her pond. But she said people are moving away from putting them in. “People want to come and see it, but they think it’s too much work,” said Hoffman, who said maintenance is actually pretty minimal. “For me, I have more work with my perennials.” Mini waterfalls, with water pouring into a decorative gravel or river rock, are popular features nowadays. Schmitz also likes the more subtle water features that dot some landscapes: bubbling rocks. A rock or boulder is plumbed through the center so water can spurt through the hole and bubble down the sides. “Most of them are stand-alone and sit next to a patio or deck for the noise and movement,” Schmitz said. The same idea works well with fire, he said. Fire boulders give the illusion of fire coming from the top of a large rock through the use of gas. All of these elements together are part of the overall trend of simply spending more time in the outdoors, albeit in complete and total comfort. “People seem to be doing more of expanding their homes into an outdoor living space, even to the point of doing outdoor theater spaces and outdoor televisions,” Froman said. “They’re looking to do more outdoor living.” Hoffman said her patio upgrade certainly created an inviting space that she and her family spend much more time in. And having a place her friends and family enjoy is the most important part. “It’s a gathering place,” she said.

e honest. Sometimes design decisions are made because they’re easy and don’t require too much time or brain power. Good design takes time and thought. A lot of time and thought. Designing a home that welcomes you every time you step inside the door is a process. One that takes some dedication. Taking time to mix materials, go on the hunt, and discover art you love are ways to begin the journey of a meaningful and collected home. Using multiple metallic finishes adds depth and dimension to your interiors. Door hardware, cabinet hardware, plumbing fixtures, and lighting all matching – those days are gone! Using only one metal finish leaves a space feeling flat. Don’t shy away from mixing metals. Any room can handle 2 -3 different finishes. It takes some thought and planning but the end results are worth it. Choose one metal finish that will dominate and spread that throughout the room. Pick one or two other metals to use as accents. Warm and cool tones such as stainless steel and brass play beautifully off each other. In a kitchen, the lighting and cabinet hardware may be brass while the plumbing fixtures and appliances are stainless steel. Don’t

forget that black goes with everything. Bring in some black metal with bar stools or other accessories and you’ve got something interesting happening. Another way to keep things interesting is to shop at a variety of places. Hey, I get it. Purchasing the matching sofa and chairs along with the matching coffee and end tables from one place is stress free. You feel like you couldn’t possibly make a mistake. You don’t have to spend hours wandering and searching among the leather ottomans, sisal rugs, and boucle pillows. My advice – don’t do it! Make the extra effort to curate your space. Is it more work? Absolutely! It’s what you need to do if you don’t want a cookie- cutter interior. Along with furniture stores visit vintage and antique shops. Plan a fun afternoon and explore an estate sale or flea market. Shop stores that have repurposed and up-cycled furniture and accessories. Yes, you’ll have to drive around. Yes, you’ll have to find a parking spot more than once. You may even have to wear some comfortable walking shoes. It’s worth it! You’re creating something that can be enjoyed for years to come. Something else that can be enjoyed for years to come. Art. A well-placed piece of art can transform a space. Mix up
your art too. Art doesn’t have to match the space. Yes, I’m saying it again. Things don’t need to match! Buy a piece of art because it speaks to you. Not because it matches the colors in your sofa. A well-selected piece of art should make a statement and stand on its own. Not get lost. Consider an abstract or contemporary piece for a traditional room. Or a traditional piece in a modern space. Mix high and low pieces as well as styles and mediums. An original piece that was an investment can pair interestingly with a framed poster. Salvaged materials and finds from nature become art when hung on the wall. This creates a collected look and tells a story. Your story! Art can reflect your interests and personality. 0Be open to something new. Don’t miss the opportunity to add a little something extra to your life and home. There is nothing quite like seeing art firsthand. Student sales at art schools, auctions, antiques fairs, art fairs and local galleries are all excellent places to start your search. Buy what you love. The art in your home should bring you joy every day. All this collecting, searching, and mixing might make your head spin. I’m a designer. Thoughts of mixing materials, perusing furniture stores, and wandering art fairs is what I enjoy. When I enter a vintage shop full of potential hidden treasures I practically hear the Hallelujah Chorus. My husband, he heads straight for the exit and tells me, “I’ll wait for you outside.” If you’re like my husband and want to make a break for the exit you may need to bring in some reinforcements. A friend that will keep it fun and help you from glazing over. Remember, this isn’t about instant design. A meaningful home evolves and takes time. It doesn’t happen overnight, in a week, or even in a month. Keep at it. You’ll train your eye and refine your personal taste. You’ll find satisfaction in mixing things in unexpected ways. You’ll always remember when you found that perfect chair or painting. The day may even come when you step inside that gem of a shop and hear the angels sing. You just might enjoy the process. The last great find for my home. I didn’t spot it. My husband did. While I was waiting for him outside.

hen you think of wallpaper you are almost invariably brought back to a time when your walls were covered in it. You may think of tacky floral patterns decorating your grandmother’s living room or in my case you think of a dusty looking cowboy scene that plastered my bedroom from floor to ceiling. And if you have ever renovated a house that had wallpaper in it, you know what a pain it is to take down. Peeling it off piece by piece and by no means in large chunks at a time. No, this stuff only came off in small bits no bigger than your hand. It’s no wonder when someone thinks of adding wallpaper to new houses, the only answer they can come up with is a hard and fast “no.”
“I think sometimes people think of flowers and think of their grandmothers,” said Antje Meisner, owner and operator of Antje Meisner Concepts. “People think of entire rooms being wallpapered and everything just being wallpapered. Whereas now there are a lot of textural options like grass clothes and they might have metallic threads put through them. You can do texture or you can do color but I think it’s become popular now because it can really provide you with some individuality.” Today’s wallpaper is a far cry from what it once was and it is by no means used in the same way. In fact it is so far away from its original design that the companies that make it and the interior designers that
suggest it’s use, are calling it wall covering according to Antje. It is more of an accent piece these days. Wall coverings comes in so many shapes, designs and textures that you can scarcely keep up with how many there are, Antje said. There is an endless supply of individuality that brings a unique touch to any space. “People call it wall coverings now, the term ‘wallpaper’ isn’t really used as much,” said Antje. “With today’s technology you can make fabric into wallpaper and when you get into some really high end products they might have glass beads in them or seashells or you will even see wallpapers that are made out of bird feathers. Who knows where it will continue to go? With this technology, people can actually design their own wallpaper and send it to a company to get made. It’s very easy to customize it. You can really make your space unique with it.” Many people who might have just taken down their 15-year-old wallpaper off, are probably going to be very reluctant to put it back up, according to Antje. “I would recommend that you just do a small area. An accent wall is the perfect place to start,” said Antje. “Maybe a place that they feel needs a little pop of color or needs some interest. I always tell people that you should do what you love. If you like it then just go for it and don’t worry about what the trend is and what people say you should have. If you like it then I think you should just go for it and do it.” “The way that we use wallpaper at Salvage Sisters is I like to use it in furniture,” said Heather Fisher, owner of Salvage Sisters. “If you

have a hutch with glass doors, the back panel could use something if you wanted to. I would also use it on dresser drawer fronts or make trays that you could inset the interior of the tray with a fun wallpaper. There is just so much variety and you can do so many things and they are usually very durable. I have also used it instead of artwork. I pick a really bold pattern and frame it. It’s a really simple way to put up something blingy without spending a ton of money.” So if you are hesitant about using wallpaper in your design, remember that today’s wallpaper is not the product of yesterday and that it can really punch up the motif in your home, Heather said. “Wallpaper is a really fun and unexpected way to do something different in your home,” said Heather. “If you select the right wallpaper, and I would highly suggest using an interior designer when it comes to that because it can be spendy and you want to do it right. But if you have somebody help select something for your home you can make a really loud statement with it by just using small amounts.”
