Roasted Winter Root Vegetables

❖ 5 pounds rutabaga, peeled and cut into 2x1/2 inch pieces ❖ 5 pounds parsnips, peeled and cut into 2x1/2 inch pieces ❖ 5 pounds carrots, peeled and cut into 2x1/2 inch pieces ❖ ¾ teaspoon salt ❖ 1 ¼ cups vegetable oil ❖ ¼ cup dried basil salt and ground black pepper to taste ❖ 1 ¼ cups chopped fresh parsley

Directions

Step 1 • Place the rutabaga in a pan and cover with water. Add 1/4 teaspoon of salt. Bring to a boil, reduce heat to medium, cover, and simmer until tender and easily pierced with a fork, about 5 minutes. Drain well, and cool completely. Repeat steps to cook the parsnips and carrots.

Step 2 • Place completely cooled vegetables in resealable freezer bags. Refrigerate for 1 to 2 days, or freeze up to 1 month. To thaw the vegetables, refrigerate overnight and drain.

Step 3 • Preheat oven to 425 degrees F (220 degrees C).

Step 4 • Pour the vegetable oil into a rimmed baking dish. Place the vegetables into a large mixing bowl and toss with the basil, salt, and pepper. Place the pan in preheated oven to heat for 5 minutes. Add the vegetables and toss to coat with the oil.

Step 5 • Roast vegetables in preheated oven, turning every 10 minutes, until tender and golden brown, about 30 minutes. Sprinkle with parsley before serving.

Southern Fried Catfish

½ cup buttermilk ½ cup water salt and pepper, to taste 1 pound catfish fillets, cut in strips 1 ½ cups fine cornmeal ½ cup all-purpose flour 1 teaspoon seafood seasoning, such as Old Bay™ 1 quart vegetable oil for deep frying

Step 1 • In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.

Step 2 • In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.

Step 3 • Heat oil in deep fryer to 365 degrees F (185 degrees C).

Step 4 • Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.
