Extra Virgin Olive Oil is the major component and actually the essence of Mediterranean Diet. Its health benefits were well known in Ancient Greece. Over the last 50 years, there have been thousands of studies simply certifying this fact. Ancient physician and pharmacologist Dioskorides, and others after him, insisted that the best health effects come from fresh olive oil from unripe olives, or from specific varieties. Recently scientists found a method to document what Disocorides claiming 2300 years ago! They measure key olive compounds oleocanthal and oleacein. Oleocanthal has anti-inflammatory effect similar to Ibuprofen and Oleacein is a powerful antioxidant. The highest concentration was found in Koroneiki Olive Oil. Elaias Topos Early Harvest In Greece we call it “Agourelaio”. Limited production Extra Virgin Olive Oil, which comes from unripe hand-picked, Koroneiki Olives, at the beginning of the harvesting season - usually November. It is very rich in polyphenols and as such the healthiest oil and the best for human body! Do you think pasta is just an Italian tradition? Actually not! In Greece, making pasta is a long tradition. For centuries, pasta was an effective way to preserve eggs and milk for use throughout the year or during religious fasting periods, where consumption of milk and eggs was not allowed. This is actually the difference of Greek traditional pasta to other pastas. It is made by fresh eggs and milk, offering a delicious and all natural, new taste of high nutritional value. Hilopites - Long cut Its length and smooth-waves shape “capture” sauces and grated cheese. Taste them with cherry tomato, tomato sauce and mizithra, pesto, Lobster in red or white sauce, lemon beef or rabbit or as a delicious soufflé in the oven, topped with cheese and cream fresh.

Hilopites - Thick cut Delicious variation of the classic long cut one. With similar length, but yet more wide, is a whole new taste experience. The light texture and the distinctive taste, makes thick cut Hilopites perfect with mincemeat in EVOO red sauce, beef in tomato sauce, shrimps or with any pasta sauce.

Hilopites - Short cut One of the most popular, healthy and authentic Messinian dishes, that Greek kids love to eat! Cook them with lamb or beef in rich tomato sauce, either in the casserole or in the oven, with braised rabbit in lemon sauce. For cold winter days , you may also prepare it as a light soup.

Kritharaki (Orzo) Kritharaki (Manestra) is another typical Greek traditional pasta. This pasta is shaped like a large grain of rise, is also known as Orzo, in foreign markets. Yet, it is a traditional Greek Village pasta. Cooked in the oven with meat and you have one of the most authentic Greek dishes! It’s also great for risotto and as an alternative to rise al dente or creamy.
