Stefano lets us in on his passion for his style of cuisine: My culinary philosophy centers on pure, clean flavours that are decisive, yet refined. My passion is experienced in soulful dishes, and my cuisine is born from my heritage, sincere humility and curiosity for life. I love to eat, and what I eat determines how I cook. The food just has to be good. Good food only comes from putting your soul and passion in it. Food is for giving, and the act of cooking is a gift from the chef to the diner The act of cooking is the pleasure I feel in sharing with the diner all that is good about the ingredients. Ingredients must have integrity. As long as it is pure, fresh and honest, it can come from any part of the world. If it is worth eating, then it is worth cooking. For me, a successful dish is when no one flavour overwhelms the other, but harmonizes to

create a sensation. There are no rules in food, and you will find Western, Eastern and Mediterranean influences in my dishes. I’m not a fusion chef and find it disrespectful in a sense to combine any of the major cuisines together, just to create a new fashion. I would rather use the classics of each cuisine in their own perfect way. My aim is to have a restaurant where one dish leads to the other, and builds on the taste and structure of the one before. The menu must be structured as a series of tastes to highlight the entirety of the ingredients, their taste, texture, smell and look. My cooking methods change all the time. There is no constant recipe or method, as both ingredients and method can change daily. It is important to me to work on perfecting a recipe and its methods. Although we may cook the same dish year in and year out, it does not mean we have stagnated into a rut, but look at it as perfection in the making. It is my hope that the food I cook satisfies many tastes. In South Africa we often see chefs compromising on quality in favour of big turn over. This practice has harmed our fragile industry, and therefore there should be no compromising on the quality of ingredients and the time it takes to prepare.

W hy Organic? Its simple, buying and using local and organic produce is good for you and the environment. Organic has proven to use less energy (on average, about 30 percent less), is beneficial to soil, water and local habitat, and is safer for the people who harvest our food. If you visit an organic farm you’ll notice something: a buzz of animal, bird and insect activity. These organic oases are thriving, diverse habitats. Plant and animal life return after the first season of organic practices; beneficial insects allow for a greater balance, and indigenous animals find these farms a safe haven. As best said by Aldo Leopold, “A good farm must be one where the native flora and fauna have lost acreage without losing their existence.” An organic farm is the equivalent of reforestation. LA MOTTE This wine forms part of the ultra premium range which is a tribute to South African artist Jacob Hendrik Pierneef (1886 – 1957), famous for his mastership in portraying the unadorned beauty of South African landscape and its architecture. Each new release in the range reflects a different piece of Pierneef art on its label. The wine is 100% Sauvignon Blanc and was made from the sixth production of grapes from one vineyard in the Walker Bat area close to the town Bot River. The wine has a pale straw colour with a light green tint. It shows a rich complexity of tropical fruit flavours such as passion fruit, melon, apples and litchi. There are also flavour hints of “fynbos”, the natural vegetation of the farm. The palate shows lime and gooseberry, backed by a firm structure with refreshing acidity. The finish is persistent, with a mineral presence. A refreshing aperitif and perfect with salads, sea-foods, sea-food pasta and spicy foods such as Chinese and Thai dishes.

THE LADYBIRD Vintage 2008 will be remembered as a challenging one. We had good growing conditions and a good winter, but then we did receive some rain in the last week of January. This affected especially the whites with a little less concentration and intensity. For the reds however we had better results due to the fact that we pick them 3 – 4 weeks later. This wine is organically grown and organically produced as well. We do seem to get more consistent results every year with these blocks and it is always a pleasure getting all the components together for blending before bottling. We are very careful in selecting when to pick. We do not want excessive alcohol in the wine and we want it to be a classy example of our unique Simonsberg – Stellenbosch terroir. We pick everything by hand and it is nothing strange to pick one block 3 – 4 times to get the best grapes in. Everything is hand sorted before crushing with modern vibrating tables and moved to small open top 5 ton fermentation tanks. We use modern “old school” techniques to make this wine. Extracting is done with manual punch downs

and some pumpovers in some years. Skin contact may vary according to year, but in general we leave it 6 – 10 days. Some wild yeast experiments are in progress. The wine is matured in small French oak barrels for 12 months of which 20 % is new. The wine is bottled without filtration and sealed with organic cork. Deep dark color with a lovely refreshing red tint. Sexy and sleek with oodles of pure black fruit. Good dollops of spice well, supported with some lovely soft supple tannins. An explosion of fruit, on a medium bodied palate with good complexity and length. Drinking already nicely now, but with good building components to improve the next 4 – 5 years. RECYCLING MADE EASY

Landfills are one of the biggest carbon emitters and sources of pollution worldwide. By not separating your waste or implementing the three R’s namely reduce, reuse and recycle, you are contributing to global warming, in a serious way. Creating a greener home is very simple and does not have to cost a fortune, especially not the earth.


STEP-ONE 1. Set up a separation station in your home. Purchase separate bins and label them plastic, cans and glass. The only proviso is to rinse the objects before you send them to be recycled.

STEP-TWO 2. Set up a composting station in your garden. Place your fruit and vegetable peelings, egg shells, tea bags and your garden clippings in the composter. You will have your own compost for spring and it will be weed and pesticide free.

STEP-THREE 3.

Opt instead to shower and save the bath for a special occasion.

STEP-FOUR 4. Unplug your electrical appliances and chargers when they are not in use, they use more electricity in standby.

STEP-FIVE 5. Its winter and lets face it, nothing makes you feel warmer than a glorious cup of hot chocolate. Boiling a full kettle however uses a monstrous amount of electricity. Instead boil only the amount that you would need for your cuppa.

STEP-SIX 6. A geyser blanket is an investment and is much cheaper than solar panelling. I attempted to contact a number of solar panelling experts and truthfully the fee to change to solar is so exorbitant and out of reach of the average South African that a geyser blanket would be the most economical. It won’t have the same impact that the solar panels have but it’s a good place to start.

Fresh Recipes GRILLED HALOUMI & AVOCADO WRAP Makes: 1 Wrap

Ingredients: 100g Haloumi Cheese 1 Whole-wheat wrap or roti 60g Hummus 40g Sliced avocado 45g Mixed lettuce shredded 80g Mixed diced tomatoes onion and cucumber 5g Spelt flour 10ml Fresh herb dressing

Method: Roll the Haloumi cheese in spelt flour Grill the Haloumi cheese in lemon oil until brown squeeze a dash of lemon juice over the cheese. Warm up the wrap (optional) Spread the hummus on the open wrap evenly Add salad mix (shredded lettuce, diced cucumber, diced tomato and diced onion) Add avocado slices Add grilled Haloumi cheese Add herb dressing Roll up the wrap


ROAST BUTTERNUT SALAD How to make the roast butternut 1kg Butternut diced into 3cm block 15g Sage 10g Himalayan rock Salt 10g Olive oil

Method for making the butternut Add all ingredients to baking tray mix up and bake. Bake at 160 degrees for Make sure the butternut is still firm but with nice colouring.
