The Royal Bake-Off: Platinum pudding competition launched for Queen’s jubilee The nation’s amateur cooks are being invited to whip up a new dessert fit for a Queen in a new competition for the monarch’s Platinum Jubilee in June.
All entries must meet the criteria of an “original creation” that is both “genuine” and “accurate” – whether baked, steamed, boiled or jellied.
Fortnum and Mason and The Big Jubilee Lunch have invited bakers, aged eight and above, to create a dish that can be replicated across the country to celebrate Queen Elizabeth’s 70-year milestone.
Following royal dishes such as coronation chicken, created at Le Cordon Bleu for the Queen’s coronation luncheon in 1953, and Victoria sponge, the brand-new dish and its creator will be at the centre of celebrations.
Five finalists will have the chance to bake their dishes at Fortnum’s store in Piccadilly to be judged by Dame Mary Berry, palace head chef Mark Flanagan and Masterchef panellist Monica Galetti.
Dame Mary said in an online statement:: “I hope everyone who enters has lots of fun and I wish them the very best of luck.”
Flanagan has offered a three-point plan for entrants, suggesting to “keep it simple” and think “subtle and elegant” rather than “fussy and over complicated”. He added in an online statement: “Most of us think of a pudding or a cake as a treat, so really make the flavours sing.”

The winning recipe will be cemented in the history books and enjoyed at The Big Jubilee Lunch on June 5 as part of the four-day bank holiday weekend. This comes as Jubilee weekend plans emerge including free public access to the monarch’s private estates and a concert outside Buckingham Palace.

Tofu & aubergine stir-fry
INGREDIENTS
METHOD
3 tbsp light soy sauce
To make the sauce, mix all the ingredients together in a bowl with 50ml water, until smooth.
50ml pale cream sherry 3 tbsp oyster sauce 2 tsp Co-op toasted sesame oil 1 tsp cornflour 1 tsp Fairtrade light brown soft cane sugar 1 tsp freshly ground black pepper For the stir-fry 3 tbsp vegetable oil 2 aubergines, cut into batons roughly 2 x 4cm 2 garlic cloves, sliced 4cm ginger, finely grated 1 red chilli, chopped (optional) 200g firm tofu, patted dry and cut into 2cm cubes 250g pack egg noodles 3 spring onions, finely sliced, to garnish 2 tbsp chopped coriander, to garnish 14
For the stir-fry, heat 2 tbsp oil in a wok over a high heat. Add the aubergine and stir-fry for 5-6 mins until browned and softened. Add a few splashes of water to create some steam to help the aubergine cook, and stir-fry for 1-2 mins more. Spoon the aubergine onto a plate. Heat the remaining oil in the pan and stir-fry the garlic, ginger and chilli (if using) for 1-2 mins, until fragrant and starting to colour. Return the aubergine to the pan along with the sauce mixture. Cook for 2-3 mins, until the sauce has thickened and coats the aubergine. Gently stir in the tofu and simmer for minute, until it is heated through — don’t worry if it breaks up slightly. Meanwhile, cook the noodles according to the pack instructions. Transfer the stir-fry and noodles to serving dishes, and garnish with the spring onion and coriander.

1 tbsp vegetable oil 1 red onion, finely chopped 1 celery stick, finely chopped 1 red pepper, finely chopped 1 tbsp smoked paprika 1 tbsp ground cumin 1 tsp ground cinnamon 400g can red kidney beans in water, drained and rinsed 400g can black beans in water, drained and rinsed 400g can Italian chopped tomatoes 400ml vegetable stock, made with 1 gluten-free, vegan stock cube 200g long grain rice Juice of 1 lime, plus lime wedges, to garnish 4 tbsp dairy-free coconut yogurt alternative 2 tbsp chopped coriander 1 red chilli, thinly sliced

Fry the onion, celery and pepper for 5 mins, stirring occasionally, until starting to soften Add the paprika, cumin and cinnamon, cook for 1 minute, then stir in the kidney beans, black beans, tomato and stock Bring to the boil, then reduce to a simmer, cover and cook for 20 mins, stirring occasionally, until the sauce starts to thicken Meanwhile, cook the rice according to the pack instructions Stir in the lime juice, then serve topped with the coconut yogurt, coriander and chilli, with lime wedges and rice on the side

The current mayoral system puts too much power into the hands of one person, who can ignore votes in council and routinely dodges scrutiny and accountability. Under the current occupant, the budget for the Mayor’s Office has become increasingly bloated and poor decision-making such as the Bristol Arena debacle, Bristol Energy and Brislington Meadows has cost us all dearly. It’s a system we can no longer afford. Both your Brislington West councillors spoke in support of the motion at Full Council last month, which went on to win by 41 votes to 24. As a result, we will be having a legally binding referendum on the future of governance in Bristol on Thursday 5 May, 2022, a date for your diaries!

Protect and Vaccinate: We are pleased that following the awarding of a central government grant, a small group of vulnerable adults with a history of rough sleeping during the winter will be offered a place to stay at a local hotel in Brislington West until the end of March. We are hopeful that this scheme will lead to an uptake in the COVID-19 vaccine, which is currently low in this group.
We also discussed the idea of a bog garden in the old pond and outdoor gym equipment, although both these projects would be more expensive. We’ll keep you posted. Turnberry Walk resurfacing: Following a discussion with the council’s Estate Management, Residents of Turnberry Walk off West Town Lane will be pleased to hear their badly potholed car parks will hopefully be resurfaced for the first time since the estate was built around 40 years ago. Parking spaces and disabled bays will also be repainted. Highway Code changes: Please be aware of the updated road hierarchy coming into force at the end of this month. These changes aim to improve road safety for more vulnerable road users such as cyclists and pedestrians, who are most likely to get injured in an accident.
We are also hopeful that the experience will have a positive impact on these guests and help them to get the long-term help and support they need. The council took the decision to apply for a Banning Order following this case because of the seriousness of those offences and the potential harm to tenants. It is also hoped it will deter other rogue landlords and agents from operating in a criminal way.

In addition, his name will now be added to the government’s Rogue Landlord database. Councillor Tom Renhard, Cabinet Member for Housing Delivery and Homes, said: “Rogue landlords and agents have no place in Bristol and the council will use all its powers available to stop these criminals from operating in Bristol and the rest of the country. “This was a particularly shocking case, where the landlord showed a blatant disregard for the safety of his tenants. That is why we took the decision to apply for a Banning Order following the successful conviction earlier this year. “I would like to thank all the officers in Private Housing and Legal Services for their hard work to bring this absentee landlord to account.” Mr Habane has still not co-operated with the council and has refused to confirm if he is involved in the letting or management of any other rented properties. Seven top tips for staying well this winter As the Met Office has issued a level 2 cold weather alert for severe cold weather in the coming days, healthcare leaders in Bristol, North Somerset and South Gloucestershire are urging residents to take precautions. As well as getting vaccinated against Covid-19 and flu, stocking up on medication and keeping warm and active, residents are also being advised to look after their own physical and mental health and look out for each other. Dr Jonathan Hayes, chair of Bristol, North Somerset and South Gloucestershire Clinical Commissioning Group (CCG) said: “Exposure to cold weather can adversely affect a person’s immune response, making it harder for the body to fight off infections, so it is especially important for vulnerable people to keep warm. “During our national lockdowns, we saw incredible stories of people pulling together and looking out for each other. This winter we need residents to pull together again. We need everyone to check in on older neighbours, friends and family who may need a bit of extra help this winter. Taking a few minutes to ask if they need any shopping or medicines and making sure they are warm and comfortable can make all the difference “As we face our second winter with coronavirus in circulation, we urge everyone to make sure they not only have their Covid-19 vaccinations and boosters, but also the flu vaccine.” 28
Bristol, North Somerset and South Gloucestershire CCG has published seven tips for keeping well in cold weather: • Protect yourself by getting vaccinated against Covid-19 and flu and follow the national Covid-19 guidance. You can find local vaccination details at grabajab.net • Keep warm. Heating your home to at least 18°C, and wearing layers when outside will help prevent colds, flu and other more serious health problems • Get help with heating costs. You may be able to claim financial help with heating your home. See the Winter Fuel Payment and Cold Weather Payment • Keep active. Any exercise can bring health benefits, both physical and mental. • Plan ahead. Make sure you have sufficient food and repeat medication so that you can cope if you’re unable to leave the house for a period of time. • Get advice if you feel unwell. If you start to feel unwell, get help from your pharmacist or GP. If you have an urgent medical problem and you’re not sure what to do, go to 111.nhs. uk or call 111. • Look out for others. Check in on vulnerable neighbours, friends and family. Make sure they’re well, warm and have sufficient stocks of food and medicine so they don’t need to go out during very cold weather.
Sara Blackmore, South Gloucestershire Director of Public Health, said: “This year, it is more important than ever that we keep well by helping each other during periods of cold weather and protecting ourselves from Covid-19 and flu. “As well as checking whether family members and neighbours need help to access shopping and medicines, it is also vitally important that we think about each other’s mental health and wellbeing. This time of year can be difficult, particularly for those who are vulnerable and isolated, so reaching out to a family member or neighbour can have a huge impact on their mental wellbeing, whilst of course remaining mindful of Covid-19 guidance.” Residents who are worried about a relative or elderly neighbour, can contact their local council or call the Age UK helpline on 0800 678 1602 (8am to 7pm every day). How To Increase Your PC Performance 1. Delete Old Programs If you have an older computer, you might be surprised at the old, unused programs that are hiding on your hard drive. Visit your “Programs and Features” menu to see a full list and uninstall anything you don’t use regularly. 2. Limit Programs That Startup Automatically Programs like Spotify or Skype will automatically start whenever you turn on your computer. You can change the default settings so that these programs won’t take up valuable RAM on startup. 3. Clean & Delete Old Files Are you still storing old pictures from your high school prom or camping trip from 15 years ago? If there are old documents or files you don’t need, simply delete them. WHAT THE DEATH OF BLACKBERRY CAN The news of the death of the Blackberry last week, saddened us. It felt a lot like the end of an era and, in that respect, quite nostalgic. It also felt a little “unjust” that a pioneering company, who were once at the forefront of an innovative product, lost out to competition.
This inevitably gets them into hot water. The phrase “accidental landlord” does not imply that carelessness is “ok”, it really isn’t! At a time when, regulations and compliance get heavier and more numerous, seemingly daily, in the private rental sector, it is now, more than ever, crucial to educate and professionalise as a landlord, keep up to date on changing legislation and, ensure that those you partner with are up to date too – because it’s your name on the title deeds and the buck stops with you! Remember who your customers are

BlackBerry devices and their physical keyboards were once the go-to mobile device for professionals keeping up with emails and younger people messaging on its proprietary platform (BBM). This is the same in any business, not just property, but it is surprising how many business owners make this fundamental error. In the Private Rental Sector, if you are a Landlord, then your customers are tenants. During lockdown, we were shocked (and we don’t use that word lightly) at the, often, huge divide between landlords and tenants.
Sometimes that divide was more of a chasm! As letting agents, we regularly found ourselves in the middle of disputes, facilitating communication between two sides who could no longer rationally and reasonably communicate with each other. Know your clients, and in property, each tenant type represents a different client; know your competition and understand what your clients want, don’t want, how your competition are providing this and what you can do to be one step ahead. GREEN LIVING IMPORTANT FOR RETIREES
A new report has revealed that green credentials are important for more than 80 per cent of those interested in living in a retirement development. National law firm Clarke Willmott LLP’s Retirement Living Survey 2021 reveals ‘it is not all about gyms, socialising and a party retirement, the future of the planet also matters.’ Dale Edwards, a green energy specialist at Clarke Willmott, said: “Over the last 18 months there has been a significant shift in people appreciating and valuing the importance of environmental matters, which is reflected by government objectives to make the places we live in more sustainable and energy efficient. “More developers are becoming more socially responsible in their approach incorporating new green technologies for new properties and re-furbishing existing stock. “Today’s baby boomer retirees are savvy when it comes to the need to make the planet greener, but we were surprised with the percentage of survey respondents who said sustainability was quite important (54.69%) or very important (28.65%). “We will be using this information and other data gathered by the survey to help advise our clients in the months to come.” 34
Clarke Willmott commissioned the survey after seeing an uptick in demand for residential developments designed for retirees and older clientele. More than 12 million over 65s live in the UK, a figure expected to increase by 41 per cent by 2040. The survey was completed by more than 300 private individuals from across the UK. Simone Protheroe, an associate in the construction team at the firm, looks at what this means for developers. She said: “Developers in the sector will want to consider the green credentials of the building contractors and consultants appointed with particular sharp focus on the designs and specification document being forward-thinking in terms of sustainability requirements. “From a contractual point of view, due thought should be given to ensuring there is express obligation to comply with any relevant sustainability standards or performance thresholds and to refer to the relevant operating procedures.” Clarke Willmott has extensive expertise in the later living sector acting for developers, including Retirement Villages, Blue Cedar Homes and LifeStory Group, and advising a range of later living care providers.

New campaign harnesses "people power" to fuel growth of green energy in the South West Bristol Energy Cooperative (BEC) has launched a new share offer campaign to help tackle the climate emergency. The not-forprofit aims to raise £1million in just 12 weeks, to develop more green, clean energy projects across the region, at speed. "The imperfect outcome from COP26 makes bottom-up action on the climate emergency even more vital" comments Andy O'Brien, co-founder and director at Bristol Energy Cooperative. "By using people power, we can raise money quickly, install more low carbon technologies, and drive a green recovery for the region where locals feel the benefits." The money raised will go towards a range of renewable projects in Bristol and the South West. This includes a rooftop solar array on the renowned Bristol Beacon music venue, which is currently under major refurbishment. Re-opening in 2023, Bristol Beacon aims to be the UK's first carbon neutral concert hall, providing Bristol and the South West with one of the best performance and music learning spaces in Europe. The share offer will also help fund a microgrid scheme at an affordable community housing development in Bridport, Dorset. The largest of its kind in the UK, this co-housing project will use best-in-class practices for energy efficiency and renewable energy. This avoids the need for gas boilers or fossil fuels. BEC's business model of raising funds has proved successful so far. Set up in 2011, the co-op has raised over £14 million, and developed over 9MWp of solar and battery assets, enough to power roughly 3000 homes. The organisation is an important contributor of renewable energy in the South West, generating roughly the equivalent of 30% of Bristol's solar energy. Katharine Wilkinson, Finance Director at BEC, said: “Our mission is to invest in renewables, and cut carbon, whilst putting ownership into the hands of locals so they can feel the benefits." It's not only BEC’s members that gain from a return on investment. Over the past 10 years, the cooperative has channelled over £300,000 of community benefit payments into local sustainability initiatives, such as community gardens, education and biodiversity programmes. Also, community spaces such as Easton Community Centre and Knowle West Media Centre have benefitted from cheaper energy rates thanks to the solar installations by BEC, meaning they have more funds to spend on their vital services. How to make your home more valuable and sell faster Preparing your home for viewers is important. It will not only ensure your property sells faster, and for a higher sale price; can potentially adding thousands of pounds to its value.
1. Declutter – but don’t depersonalise Get rid of excess stuff that has accumulated in every nook and cranny. Put it in storage, sell it, give it away or bin it. Consider removing any bulky furniture that makes the room feel small and replacing it with smaller furniture. People need to be able to envisage what the property would look like if they were living there. People often find this difficult, so make it easy for them to see all the fantastic living space you’re offering them. Don’t make it look like a generic hotel; leave some personality. Apart from anything else it gives unimaginative buyers suggestions as to what they might do. People are often buying into a lifestyle as much as a property. Show them the attractive side of your lifestyle.
2. A fresh lick of paint
Giving your walls a fresh lick of neutral paint will make your home seem lighter and bigger. It will enable the viewers to more easily imagine how they would adapt the rooms to their needs. It will be easier for the buyers to move in and use the rooms immediately than if the walls were still bright purple or lime green.
3. Maximise kerb appeal
Kerb appeal creates a lasting first impression – most buyers make up their minds in the first few minutes of arriving at a property.
4. Fix and clean Make any minor repairs necessary – holes in walls, broken door knobs, cracked tiles, torn or threadbare carpets. Many buyers want to move in without making changes, so allow for this. 38
Clean everything until it sparkles. Get rid of limescale, clean and repair tile grout, wax wooden floors, get rid of all odours, hang up fresh towels. This will make the place more appealing and allow viewers to imagine living there. Tidy up the garden: cut bushes back, clean the patio and furniture of lichen and dirt, and cut the grass. 5. Update the kitchen The kitchen is the most valuable room in a house. It is worth the most per square foot and can make the difference when buyers are unsure. Consider refacing your kitchen cabinetry. This is much cheaper than installing new cabinetry and often as effective. Upgrading kitchen counter tops is expensive, but can add serious value. Declutter the surfaces and just leave a bowl of fruit out. Take out any bulky appliances.
Consider upgrading the plumbing fixtures and white goods, but keep in mind that while that could make your property sell faster, you will be unlikely to recoup their full value.
6. Light and airy Wall mirrors make a room look much bigger and lighter. Consider putting some up, especially in smaller rooms or hallways. Clean windows inside and out, and replace any broken light bulbs. Making the place feel light and airy makes rooms feel bigger and the property more attractive. Ensure that you have lamps on in any dark corners.
7. Light a fire If it’s a cold evening, or even chilly day, light your fire. This will make your home feel warm and inviting. If you don’t have a fire then ensure the fireplace is clean.
8. Make it look pretty
Make sure the windows are properly dressed with blinds or curtains as naked windows make a place feel impersonal and run down. Buy some cheap ones if necessary.
Plants and flowers bring colour, life and light to a room and also smell wonderful. So does that fruit bowl on your kitchen counter.
9. Get the right smells
Bad smells are the single biggest turn off for prospective buyers. Don’t just cover them up, fix the source of the smell. Clear drains, wash bins, open windows, air the kitchen from old cooking smells, get rid of furniture that is embedded with cigarette smoke, and wash any grimy bed sheets. If you are a smoker, place bowls of vinegar around the house and leave out for three days. Though the vinegar will smell when you open the windows it will disappear quickly taking most of the stale cigarette smell out with it. Conversely, good smells can make a property feel like an alluring home. While it might be impractical to bake fresh bread, cakes or brownies for every viewer that visits your home, you could perhaps brew some fresh coffee.
10. Showing the property Choose a good estate agent and let them conduct viewings. It’s their job to know what things to say, what to highlight and what to downplay. 39

Hoteliers renew calls to extend VAT reduction Hoteliers in Bristol have made a fresh plea to the Government to extend the current reduced rate of VAT for their businesses, which face a bleak start to 2022.
“Right now we have very little revenue, increases in costs and continuing staff difficulties. Not only is recruitment hard – in terms of available recruits and costs – but many businesses are losing people temporarily because they have to isolate.

BHA Chair Raphael Herzog said: “At the end of last year, the Government announced grants of up to £6,000 for hospitality businesses. But that would only cover us for what we lose in one day with a conference booking, as an example.
At present, this rate will run until 31 March, after which VAT is due to rise back to the full rate.
“As it is, there are very few conference at the moment, because people are worried about mixing. Few people are travelling, even fewer are taking leisure trips, so it’s really quiet. “January and February are looking extremely slow for us, on the back of a very disappointing Christmas period. “At the very least, we need the Government to extend the reduced rate of VAT at least until the end of the summer in order to give us some chance of sustaining our businesses. Ideally, the reduced rate should be made permanent.

But hoteliers are calling for the reduced rate to remain if they are to have any realistic chances of recovery, given all the current challenges. Mr Herzog said: “It’s very hard to operate a business in the current climate, with more money going out than coming in, and an extremely challenging first quarter ahead. “We need more support, not only from the Government, but from other companies and customers to help with our long-term recovery from the impact of the pandemic.”
