FROM THE DESK OF THE PRESIDENT

Springtime at Divi Resorts marks a season of renewal, and we’ve got an array of exciting new developments across our properties, from new employees to room renovations, brand-new restaurants, and more. I am pleased to share the latest updates from our tropical paradise.

First and foremost, it’s great to welcome our new team members who have recently joined the Divi family. In our Employee Spotlight on page 5, you’ll have the pleasure of meeting these remarkable individuals, each bringing their unique talents and enthusiasm to enhance your experience with us.

Our extensive renovations at Divi Aruba Phoenix, where our beachfront tower suites are currently getting a complete makeover from the inside out, are well underway, and this spring and summer, we will start upgrades to the Villa pool and Villa (Phase 1) suites. We’re also opening the Wave Shack restaurant and bar just steps from the beach and the Villa pool.

Over at Divi Flamingo on Bonaire, we’ve been busy enhancing your vacation experience; our newly renovated oceanfront hotel rooms are sporting a chic Caribbean interior, and the studio pool has been completely remodeled with a new deck, jacuzzies, a BBQ, and ample seating and shade for relaxation. We also hope our main pier will be ready to open in late spring and we’re excited to start upgrading our pool-view hotel rooms this summer.

At Divi Village Golf, we’ve finished upgrading our putting greens and golf practice cages, and renovations have been completed at Mulligan’s Golf Café, Bar & Restaurant.

We’re celebrating a special birthday in June as Gizmo, our Divi Diva at Divi Little Bay turns 30 years old, and you’re invited to join the celebration on page 9.

I am blessed with exceptional staff and we’re lucky to have so many dedicated employees. Truly inspiring is a special group of Divi Southwind’s staff who recently celebrated their 30- and 40-year work anniversaries.

Raul Urbina has a profound cultural connection to the Caribbean, having grown up near Honduras and the Bay Island regions. Merging cultural insight with over 15 years of success in hotel operations, he possesses a unique perspective on travelers’ needs and desires when planning tropical vacations. Mr. Urbina’s passion lies in spearheading complex Food and Beverage operations, with a background that includes working with high-volume luxury beach resorts in Florida and California. Divi Carina Bay’s executive chef, Norman McPherson is a whiz in the kitchen and earned first place in the appetizers section of Taste of St. Croix 2023!

Taste of St. Croix is the largest annual culinary event on St. Croix, where restaurants, chefs, cooks, caterers and farmers from around the island come together to show off their skills and to celebrate all things food. Proceeds of the event support local causes.

In 2023, Divi Carina Bay Beach Resort & Casino was the proud host of this event, making Chef McPherson’s win all the more special. The winning dish in question? McPherson calls it the “East Meets West,” a pan-seared, five-spiced tuna filet served with fresh tomatoes and tangy mango salsa made with locally-sourced fruit.

Coffee-Rubbed Beef & Artichoke Burger

Burgers have long been a comfort food staple, but why settle for ordinary when you can experience the extraordinary? This creation by Divi Flamingo’s executive chef, Raymond Jansen, is a symphony of earthy, warm, sweet, and savory flavors. With tender Angus beef, warm and crispy fried artichoke hearts, and silky smooth black truffle mousse, this dish is sure to impress.

Ingredients

8 oz. Angus beef patty

Coffee rub

Deep fried artichoke

Sun-dried tomato relish

Black Truffle mousse

Brioche bun, toasted

Arugula

Coffee Rub:

1 tbsp coffee beans (ground into powder)

1 tbsp brown sugar

1 tsp smoked paprika

1/2 tsp chili powder

1/2 tsp garlic powder

1/4 tsp kosher salt

1/4 tsp freshly ground black pepper

Deep Fried Artichokes:

1 can artichoke hearts

2 qts vegetable oil for frying

1 cup all-purpose flour

1/2 cup cornstarch

1/2 tsp salt

1/2 tsp onion powder

1/2 tsp black pepper

1/4 tsp garlic powder

1/4 tsp smoked paprika

1 can sparkling water

Sun-dried Tomato Relish:

1 cup (150g) sun-dried tomatoes

2 tbsp extra-virgin olive oil

1/4 cup red onion, finely chopped

1 clove garlic, minced

1 tbsp fresh basil leaves, chopped

1/2 tsp ground cumin

2 tbsp red wine vinegar

1/4 cup toasted pine nuts

Salt and freshly ground black pepper, to taste

Black Truffle Spread:

4 oz cream cheese, softened

1 tbsp heavy cream

1 tbsp chopped black truffle

Salt and pepper, to taste

For the Toppings:

Make black truffle mousse by whisking cream cheese until light and fluffy, gradually adding in heavy cream as you mix. Stir in chopped black truffle and season to taste.

Make sundried tomato relish by soaking sundried tomatoes in water for 5-10 minutes. Drain and mix with other ingredients. Let sit at room temp for 15-30 minutes before using.

For the Beef Patty:

Mix all ingredients for coffee rub and use to season the beef patty generously.

Cook the beef patty to your desired level of doneness.

For the Artichokes:

While the beef patty is cooking, heat vegetable oil in a frying pan.

Dredge the artichoke hearts in the prepared batter.

Carefully submerge the artichoke hearts in the oil and fry until golden brown and crispy all around.

Assemble Your Burger:

Toast the brioche bun until golden brown and fragrant.

Spread black truffle mousse on the bottom and top bun.

Place arugula on the bottom bun and add beef patty.

Spoon sun-dried tomato relish over the patty.

Place fried artichoke hearts on top of the relish.

Close the burger with the top bun, and dig in!

“We tried other resorts on the island, but when we discovered Divi, we fell in love and bought on the same day,” says Teddy. Little did they know, this decision would mark the beginning of a joy-inspiring annual tradition. 12 years and more than 17 trips to the island later, the couple is thrilled with their recent decision to upgrade their membership to President’s Elite.

“From the moment we check in, the staff treats us like family,” says Ashia of Divi Aruba Phoenix, where the couple typically stays in the beach tower (“Best views on the island”). “When we check in, they always have refreshments in the room for us, they make sure we get in quickly, and they’re so accommodating with our particular needs, whether it’s cleaning the room on certain days or making sure our family and friends get to book the rooms next to us. They really make sure our stay is enjoyable.”

The couple decided to upgrade to President’s Elite in 2021, as Teddy planned a major birthday bash a year in advance for his wife. “I knew what I wanted to do the year before. So, we made our upgrade and used our extra Points to host more than 80 people at the resort for Ashia’s 40th.” The crew hiked a nearby mountain, rented out restaurants, and even flew their own DJ down to celebrate. Ashia laughs as they reminisce, “It was a 40th to remember.” The group had such a good time that some of their friends even decided to become Divi Vacation Club members on-site.

Since then, it’s been tradition to travel with friends and family. “We go for three weeks every year. Sometimes more than once a year — we just get that itch and want to go. The first week, we always bring our friends and family.” Their big group vacations always include trips to Baby Beach, excursions like ATV tours, and their beloved welcome grilling parties by the pool — “Because the pool is the first place all the kids want to be!”

Divi Flamingo Beach Resort welcomed teachers from SGB Bonaire MBO, a secondary vocational school, for “SniffAround Day,” where they showcased the various internship opportunities available to students. Departments like purchasing, kitchen, dive operations, front desk, and accounting proudly demonstrated the internship experiences offered at the resort, contributing to the educational system on Bonaire.

RED CROSS DONATIONS FROM DIVI

Divi Flamingo Beach Resort extended support to Foundation Kunuku Sur and the Red Cross Bonaire by donating towels, pillows, blankets, and other essentials. These contributions aid Foundation Kunuku Sur in providing day care activities for elderly individuals and assist the Red Cross Bonaire in their humanitarian efforts.
