We’ve risked diabetes, cholesterol, weight gain and our taste buds to bring you this issue of Destination. Our food issue is the crown jewel of this magazine, and we hope this one doesn’t disappoint. For this issue, we’ve brought you a complete rounded experience to guide you through everything; starting in your supermarket isles, to your dining room table and ending in other continents. There’s an underlying theme of movement throughout the magazine. It’s a culinary journey, if you will, and we’re going to be your guides. JEDDAH GHAIR RETURNS The Jeddah Summer Festival “Jeddah Ghair” is back as Sayf Jeddah and it’s about “Fun, Prizes and Shopping.” Under the organization of the JCCI, fireworks, raffles and performances are a part of the planned entertainment options along with educational activities and an exhibit of the Saudi tradition. Malls, parks, and beaches are the places it will be held.

MCI The Ministry of Commerce and Industry launched a mobile application through which you report the commercial violation and upload photos as evidence on the app. This will help facilitate and develop the ministry’s services to strengthen the national economy and in serving the customers in a better way.


MALLS TO CLOSE AT 9 P.M.?

There is a stir going on about the closing of malls at 9 p.m., which is supported by the Social Development and the Ministry of Labor. According to the ministry, this would encourage more Saudis to work at these malls. This decision at the moment is still under scrutiny and several workshops are being done with private sectors to check the feasibility of the proposed idea.

Ministry of Health’s Donation Campaign

The Ministry of Health did a massive donation campaign that involved different aspects ranging from blood donation, stem cell donation, organ donation and also taking care of your dental hygiene. This project was driven by student volunteers and doctors from 9:30 p.m. to 1:30 a.m. at the Friday Market in Old Jeddah. The concept of the initiative was to take care of their heath because it might hold value for an unknown in the future.

ATHR X DESIGN PRESENTS PROJECT 141

Project 141 is a non-profit initiative, taken by ATHR X, that works towards upcycling of disregarded wood. The project is funded by the purchases that are made by ATHR X’s clients, and the purchase of a stool guarantees the plantation of one tree. Yara Othman, a Jeddahwi by birth, had her life turn around when she moved to Sweden. Having been there for less than a year, Othman’s stay has been full of interesting and difficult experiences like being attacked with racist comments. Therefore, she decided to go out to the streets of Stockholm and tackle this ordeal. CHALLENGES YOU’VE FACED IN SUCCESSFULLY IMPLEMENTING CSR INITIATIVES? Unfortunately, not many people know what CSR and sustainability are and the difference between it and philanthropy. It’s about trying to instill responsibility in the organization as a whole even if it’s IT or HR, so the biggest challenge is to get everybody in the organization on board. Another challenge is trying to make sure they adopt the things they learn in CSR activities into everyday habits, which requires a lot of education and follow up to make sure they stay involved.

2. HOW HAVE YOU

ELEVATED THE ROLE OF CSR IN YOUR COMPANY?

We have a program called “Volunteer Your Skills” where we help employees find initiatives like visiting the poor and cleaning beaches. On average, each employee has to do 25 hours, so multiplying this with the number of employees

means you’re doing a lot more as an organization. They also volunteer their skills in specific functions like helping a non-profit organization with their marketing plan. The key is to utilize their volunteer time effectively by having the maximum impact with optimum efficiency. Lastly, we have tried to replace older DESTINATIONKSA.COM 33


4. WHAT UPCOMING CSR PROJECTS IS SEDCO HOLDING WORKING ON? One of our flagship programs is the Riyali where we focus on helping people manage their finances through volunteer trainers. There’s segment of college students and another for fourth to sixth graders. With both, we’ve trained tens of thousands of students in this area, reaching a total of 100,000. We’re also working to enhance these programs with online resources, interactive videos and mobile apps in order to reach many more students with greater quality and efficiency. We’re going to add a segment of entrepreneurs in line with vision of 2030 and the diversified economy.

5. WHAT IS THE PROCESS

OF INCORPORATING VOLUNTEERS?

There is a mix of people from within the company and a big chunk of people from outside. When we go into a new city or university, we call upon volunteers, through advertisement. Those who are interested respond. They then attend a full one-day training course to become certified trainers. There are three levels of volunteers including the Riyali ambassador, based on the number of hours that they actually train. They get benefits based on their level such as recognition and certification. If they reach 100 hours, they become a Riyali Star, which then has more benefits. This brings a competitive edge to the whole process, 34 DESTINATION JEDDAH AUGUST 2016

keeping them motivated, and incentivized. We’ve also made sure the program is adaptable to the volunteers’ comfort zone.

6. WHAT ARE SOME

IMPROVEMENTS NEEDED WITH CSR IN THE KINGDOM?

We just need a little more organization amongst CSR committees and entities with a government body that brings us all together. Working on some sort of common goal, theme and area would improve the overall environment of CSR rather than everybody duplicating some of the efforts. Web: sedco.com

Oodles of Doodles With THE URBAN GYPSEA Danya Bayomi, aka The Urban Gypsea, gives us a peek into her world of doodling. By Sahrish Ali

Egyptian born, Saudi raised, 20 year-old interior design graduate, Bayomi now works as an interior designer at IKEA as part of their expansion team. When did you start doodling?Has it always been a part of your life? Doodling hasn’t always been a part of my life. I never considered myself an artist especially since I was never good at it in school or university. I went to Jeddah Prep and Grammar School. My doodling kind of just started when I was bored in class. It wasn’t something I was consciously doing as art.

I started experimenting with different shapes and designs; things I could doodle. It takes time to develop your own specific style. I have a few styles but I am still sort of developing them. There is still quite a bit to explore within these styles. 42 DESTINATION JEDDAH AUGUST 2016

How would you define your style?


The Urban Gypsea’s doodles develop organically in either progressive floral or geometric styles. They have been seen as bookmarks, notebooks and most notably, covering a wall at our favorite specialty coffee house, Medd Café. One of the more geometric designs was done for Doodle For A Cause. Most of her doodles are Zen tangles and such.

Where do you plan to take your art further? “I want to experiment with more designs so that anyone who sees my doodles would see their style in them as well.” She plans on branching out to creating more products with her doodles such as notebooks and more elaborate designs. Some of her recent designs can be seen on her Instagram account where she doodles on photos and other objects.

The Urban Gypsea continues to experiment with different mediums and spaces for her creations.

How does doodling help you? It takes my mind off of things. It gives me a break from thinking too much. Medd is my favorite piece I’ve done. It was my first large-scale piece that took three days to complete. urbangypsea

Bringing back the '90s grunge rock sound. By Aabiya Baqai

How and when did Talsam come about? Talsam was formed in September 2015 when Abdullah Al Zaher, Shaher Karkashan and Ayman Shawly wanted to recreate that '90s grunge rock sound. It wasn’t too long before Abdullah found the perfect vocalist via Facebook for that role, Moe Dahmous, and that was the beginning of Talsam.

You say you’re bringing back the flavor of the ‘90s rock music, so why specifically the ‘90s? It is the music that all the Talsam members love and have in common. Some of us grew up listening to it during that era and for others the '90s music just grew on.We think rock in the '90s was at its best.

What have been some of your favorite performances so far? When we played Otherside by Red Hot Chili Peppers and people started singing along, it was the best feeling; seeing people interact with our performance and us. We also 44 DESTINATION JEDDAH AUGUST 2016

Any upcoming projects? Performance-wise, we are appearing at the 2016 Rock Fest this summer and then doing our own show here, as well as working on more original songs. Unfortunately, Ayman is leaving us, but Emad got on board as our drummer.

Music is a universal language and you can find it anywhere you go. There are definitely so many great talents in Jeddah and a lot of people who enjoy good music. We just need more support and the right platform so these talents can be heard.

What piece of advice would you give to other upcoming bands and aspiring musicians? First, find the right sound that defines you. Make sure the chemistry between the band members is great with good communication, but most importantly, have fun doing what you do. talsamband talsamband itstalsam

Set the Table but Break the Rules A good table setting to set you apart from everyone. By Dania Shams

We are long past the age of formal table settings and the rules of tabletop perfection. To impress your guests these days, you must show them something new; remember everyone eats with their eyes first. The new rule to follow is to break all the rules! Use mismatched tableware, and in this case, more is more. Items I will always have on my table are low vases filled with seasonal flowers, fruits and vegetables. Avoid synthetic flowers at a dining table; natural will allow you and your guests to feel connected to the table you are about to eat at. important to have more than one drinking glass for each diner. Even go as far as three drinking glasses per person. The reason behind this is that you can never predict what each person will want to drink, and one might like to change beverages with each dish. Give your guests the freedom to choose.

Finally, condiments and beverages. There is really no need to advertise the brands you are offering at the table, so use container holders or transfer sauces and beverages into your own containers. As for fizzy drinks, how about simply wrapping them with a napkin? Remember it is your table- you dictate what goes on it. Don’t let the brands you use guide the table you set. It started on a Whatsapp group in 2012 with less than 10 people. I had just come back from the UK after studying there and learning how to cook and I needed a circle to share this with. The idea was to chat and discuss recipes, new restaurant openings and make recommendations on where to eat. The Snapchat account came out in March because we wanted to share our experience with the public.

How do you choose your team? I chat and follow each candidate before I recruit him or her. Some approach me, while I approach others. They must have a passion for food, either by cooking, tasting, writing or blogging, or be food business owners (home or retail).

I got to know about them from Ahmed Darwish, whom I've known through family. There had to be certain criteria to be eligible to join, this included owning a food business or being a chef, but generally being zealous about food and directly dealing with it.

Were you always interested in food and different cuisines or has that been a recent development?

I am a young Saudi with a varied background from advertising and marketing, to music and singing. I am currently an entrepreneur in the food business.

I have been interested in food ever since I can remember. When we were kids, my siblings and I used to watch our mother bake cakes. We watched her put the ingredients of her chocolate cake and eagerly waited to lick the remaining batter. She cooked everything herself; we rarely ordered food from outside and that got me attached to food.

I am a different type of critic, as I don't talk to owners or managers directly before I go, but I welcome their comments afterwards. This way I am served as any other customer without any perks. So far, almost every restaurant I’ve reviewed has contacted me and the owners were more than willing to change the highlighted issues.

Were you always interested in food or has that been a recent development? Yes, food has been my passion for the longest time and I enjoy all cuisines from Southeast Asia to Latin America and everything in between. I am an all out foodie.

What do you think completes a dish? Taste, taste and taste. I was born in Taif and have spent the past 10 years traveling and sampling cuisines all over the world. I work as a consultant for an F&B consulting company based out of Washington DC, USA and my primary job is taste profiles and mystery reviews.

What is the most surprising dish you have ordered? Crispy Crazy Maki at Ohayo; it combines crab, avocado, cucumber, crispies and a crazy mix topping. Fantastic creation.

I had been working in corporate finance for 12 years, but then I decided to open my own restaurant, The Green Kitchen, and enter the world of food professionally. I have been interested in different cuisines from an early age. This has developed over years and became a passion.


LOAY ARIF Were you always interested in food and different cuisines or is this a recent development? Ever since I was young, my grandma would always ask for my opinion when she cooks. Out of all her grandchildren, she would choose me because she knew I had a gift when it came to food. As years went by and I headed to university, my friends would always count on me to cook.

I believe food is an adventure. My family had a great experience with restaurants for a long time, so it’s in my genes. Now I have become a marketer, cook, food blogger and vlogger as well as a partner in a Chinese restaurant. My Samurai looks, especially the hair, have earned me the name Samurai blogger.

I am trying to achieve my general goal of upgrading the standard of the food world in Jeddah. My personal aim is to be a reference and consultant in the field of gastronomy; I am trying to achieve that through training courses and professional food coverage via social media. I think my modeling experience has helped me reach a wider audience especially on Snapchat.

Living in a coastal city is scientifically proven to improve your health. Here’s how. the people of the city; how there has always been joy and solitude amongst its residents, a welcoming atmosphere to all visitors and simply a good place to settle down.

Being such an important city, a commercial hub and dramatically growing in a rate that even locals are in awe over, there is one essential tidbit about our beloved Jeddah that many don't recognize; living in a coastal city is scientifically proven to improve your health.

THE SUN

Since Jeddah is baked under the sun's heat almost 90 percent of the year, living in the city exposes you to a good amount of vitamin D. All you have to do is spend a few minutes a day exposing yourself to the sun's rays and you're good to go. Why is vitamin D important? It helps boost the immune system, wards off autoimmune conditions, rheumatoid arthritis and other diseases easily decreased in levels of occurrence just by increasing vitamin D levels. Just don't forget the sun protection with an SPF of at least 40-50.

Food, as in seafood. Need I say more? Seafood, mainly known for its richness with omega-3 fatty acids, help maintain cardiovascular health, reduces tissue inflammation and alleviate symptoms of rheumatoid arthritis, helps reduce depression and halts mental decline in older people. How can you resist visiting Bangalah (fish market) and getting fish fresh from the sea? As a Public Health expert, I encourage residents of our beautiful city to spend some time outside, bask under the sun's rays a tad and smell the fresh sea air mixed with the cool breeze that wafts overhead and simply relax.

Coastal air is different than further inland. Scientifically, the air along coastlines are charged with negative ions that allow the human body to absorb oxygen easier and better. The easier flow of oxygen through the body allows a chemical known as serotonin, a neurotransmitter, to level and help decrease stress levels significantly not to mention help relax the body easier. Islam touches every aspect of our lives, helping us live not just an honest life, but also one that is healthy and happy. Some teachings we come across as we grow older and some we are made aware of at a very young age. One of the most common teachings in Islam is food etiquette and practices carried out by the prophet (PBUH). Some of the customs might seem basic or common sense, but they carry a great spiritual value and contribute to our overall wellbeing.

Sometimes we overindulge and overeat, and to this regard the prophet (PBUH) has said, “It is sufficient for the son of Adam to eat enough to keep him alive. But if he must do that, then one-third for his food, one-third for his drink and one-third for his air.” And finally, when we have finished, we remember to thank the one who provided us our food, “Alhamdulllah” (thank you Allah).

Simple teachings and practices as these go along way for our mind, body and soul.

It’s not only a doctor’s recommendation to wash your hands before you eat, but also an Islamic practice for the same reasons: to wash away germs. We strive to remember Allah and thank him throughout the day for his blessings, and this includes the food we are blessed with. Therefore, before we take our first bite, we remember him by saying “Bismillah” (in the name of

Allah), and if we forget we can say, “Bismillaahi awwalahu wa aakhirahu” (in the name of Allah at the beginning and at the end). It is also courteous to eat, especially when sharing food, from what is in front of you. Also, common etiquette includes not critiquing food you might not like in respect to the cook and those around you who might have a taste for the dish.

CREAM OF THE CROP A sweet journey to Singapore, where we discovered the gastronomical beauty of European Cream. By Jou Pabalate

As part of the Cream of Europe campaign initiated by the French Dairy Interbranch Organization and the European Union, nine amazing chefs representing different countries of Asia and Middle East gathered at Singapore for a one of a kind three-day pastry experience this July. 96 DESTINATION JEDDAH AUGUST 2016

The aim of this campaign is to raise awareness of French dairy cream, showing how the selection and use of the finest form of this ingredient can make all the difference in pastry making. Cream of Europe consists of many initiatives, geared towards pastry professionals but also in a way, a form of educating the patron’s palate. As part of the campaign, a La Crème de la Crème annual recipe book is released. And previously, they would


gather famous French chefs to contribute their own recipes. However, for 2016, they have decided to make an edition that pays homage to each country of the campaign. They invited Chef Ambassadors from each of the countries involved in the campaign to Singapore, with a challenge to create a version of a French classic dessert that pays homage and infuses with the culture they’ve come to represent. At the heart of the chefs’ ingenious adventure is the Saint Honore, a Parisian pastry, composed of a puff pastry base, on which is placed a circle of puff pastry, topped by caramel glazed choux pastry. The center of the choux crown is filled with Chiboust or Chantilly cream. Saint Honore is considered to be a pastry masterpiece—requiring a mastery of patisserie fundamentals and techniques. The result was a collection of mind blowing desserts that left both our eyes and bellies satisfied but craving for more. What makes this event a truly unique experience is the collaborative spirit that the chefs brought to the table. Their creativity and passion for the ingredient and the dessert itself was simply inspiring to watch as it beautifully unfolded before us in the kitchen.

The interpretations the pastry chefs came up served as an ode to the respective countries they represented. Our very own Saudi chef Mona Mosly, created a unique Baklava – St. Honore ensemble, which successful melded middle eastern flavors while staying true to the essence of the pastry itself.

Held at the at-Sunrice Academy, the Cream of Europe event was culinary artistry at its best and the collaborative nature of it, a foodie diplomacy exercise. What transpired in Singapore is a memorable exchange among peers, proving that food can truly bring nations together.

Chef Ludovic Audaux, Executive Pasty Chef at the Complex, Dubai, UAE did a take on the pastry that amalgamated his French origin with his Middle Eastern experience. The result was a St. Honore bearing seasonal cherries and a hibiscus insert with a white chocolate and rosewater ganache.

Explore the Top CAVES OF SAUDI ARABIA Have no fear, enter the cave.

Whether it be referred to spelunking or caving, this activity will allow you to witness the world of caves that are shrouded with mystery, darkness and numerous legends. Thanks to some extreme adventure lovers from the 80s, these cave systems were discovered; many unknown even to the early Bedouins. Here are some of these popularly treaded locations.

JABAL QARA

Though it may not fall in the conventional term of caving, this cave system made from sandstone, clay, marl and sedimentary rocks, is by far the most popular in the country. through, making the whole place look like a set of an Indiana Jones movie. Sitting around 20 kms from the city of Hofuf, it is a popular picnic spot amongst locals. Close to the very end of the narrow caverns inside, lies what locals like to call Ali Baba’s den – from the Arabian folktale of Ali Baba and the 40 thieves. What one may find surprising here, is that Jabal Qara is cool inside even when temperatures soar on the outside.

AIN HEET

Near the town of Al Kharj lie several sinkholes called dahls in Arabic, which is why this cave is referred to by locals as Dahl Heet. This particular dahl is the most famous of all dahls in the Kingdom, mostly due to its close proximity to the country’s capital. The specialty of this sinkhole is that it has water at its base, making it ideal for cave diving as well. Some geologists who have followed the waterways have even termed the water inside as the clearest and most transparent they’ve ever seen.


FATHER OF FEAR

Referred to as Abu Al Hol in Arabic, this cave is considered to be one of the deepest known caves in the country today. Sitting close to the small town of Al Majmaah, this cave drops a whopping 230 feet down from ground level. The bottom of the cave opens up to a room that measures around 330 feet in width. The base of the cave has several smaller tunnels that lead to places that remain unchartered to this day, as they are too small for humans.

DHARB AL NAJEM

Some believe that it’s a meteor site that came crashing, causing a crater measuring up to 25 meters in diameter, but some geologists oppose this and call it a natural sinkhole. Lying in the desert, east of Al Majmaah, the hole leads to a cavern around 100 meters in width. Despite being considerably deep, a shaft of light darts through during the day to the bottom chamber, illuminating it beautifully.

UPM CAVES

The cave was named after the King Fahd University of Petroleum and Minerals, as speleologists from the university along with the Austrian Academy of Sciences made the discovery. The caves have a 150 by 250 foot room at its base that contains thousands of animal and human bones. The stalactite formations are the most beguiling feature here and as opposed to other stalacalite formations this one is not fully formed and is still in its growing stages. The caves have easy access thanks to a large entrance and a pathway down that doesn’t require a ladder or rope.

HISTORIC KSA Bir Hima's Art

Bir Hima sits 30 kilometers from Najran and is dotted with ancient wells. Rock art depicting battle scenes, animals, food, human figures and the general lifestyle of the ancient times adorn its walls. Battle scenes at Bir Hima run into the hundreds and mostly depict the cavalry and infantry charging with swords or spears. A few display armored horses, which was uncommon in ancient Arabian battles. Being a source of water, the site was critical for caravans travelling on the ancient Arabian trade route passing from the north to the south of the peninsula and vice versa. As the caravan routes changed, the site was deserted. Bir Hima is also significant due to the ancient writings written in the Musnad script and the remarkable stone structures and tombs that are found in the area.
