Forget the food rules. They start in childhood out of necessity, but continue out of habit, and Key West has never been a stickler for rules of any sort. We’ll beg forgiveness, but not permission. We carry cocktails in “go cups,” to bars that are open until 4 a.m. We create tequila cocktails that taste great – frighteningly and dangerously great. We serve breakfast all day and have dessert without dinner. Welcome to Key West, where eating and drinking are more than life-sustaining activities – they’re an adventure.

For the past 10 years, the pair has led their guests on delicious expeditions that come with a commitment from the entire staff to provide an unforgettable night – and to overcome any disappointments their guests endured during dinner elsewhere. “We always recognize that everyone generally has to eat dinner, but no one has to have dessert,” Dani said. “In fact, most people skip dessert, or they’re not into sweet stuff, and we’re constantly battling that.” Better Than Sex is clearly winning those battles with drinks and desserts whose names drip with as much innuendo as liquid chocolate and drizzled caramel.

There’s the Three-Way, described as: “If you’ve never had a Three-Way, now is your chance,” the description state30s. “Our dark chocolate sorbet, vanilla bean ice cream, and raspberry sorbet simultaneously engage in pleasurable activity in the privacy of their own fluffy profiteroles (puff pastry). A dribble of chocolate stout ganache is shared among the group. But don’t miss the Banana Bazooka: Sink your smacker into this layered “crepe-like” tortilla torte. Big bangin’ banana hunks, a tickle of caramel and a tease of cinnamon bumping around with callebaut white chocolate ganache embraced in mildly sweet and sour cream. Topped with a tart, brown sugar icing and Heath Bar crunch.

And that’s just dessert. Expert servers like Sam Molnar walk guests through each iPad page of drinks as well, temptingly describing red wine in glasses rimmed with chocolate and wineinfused vodka cocktails and shots dripping with chocolate or topped with whipped cream. Better Than Sex has a beer-and-wine license, not a full liquor license, although surrounded by such sexy sweetness; no one seems to miss the strong stuff. Standing demurely at the corner of Simonton Street and Truman Avenue, Better Than Sex’s romantically dim interior is divided into several, curtained-off enclaves with tables typically only big enough for two couples. And the dark dining room doesn’t require anyone to pass around “cheaters” or pull out their cellphone flashlights to see the menu. Instead, iPads at each seat turn on automatically to feature perfectly illuminated photos and descriptions of drinks and desserts.

So leave the tortured grimaces and the “lick it, slam it, suck it,” tequila-shot routine to the amateurs still drinking in someone’s basement. You’re an adult now, and you deserve better. “People see ‘tequila bar’ and they either run straight toward us, or they run away,” said Stiffen, while mixing a Paloma de la Fresa using pure strawberry puree. “It’s literally just strawberries that we puree right here in-house,” Stiffen says. “Fresh ingredients make all the difference. People are so used to powders and mixes, and there are none of those in here.” The

Stiffen never tires of watching her customers’ faces relax and eyes widen in delight as they take a sip of the tequila cocktails created by the bar’s designer, Jules Mavromatis. The Caliente Cucumber is an unexpected but exceptional combination of spice and cool refreshment using houseinfused jalapeno tequila, cucumber, agave, lime and jalapeno salt. One has to taste it to believe the possibilities. And for the more timid traditionalist, Agave 308’s Plane Jane margarita has been named the Keys’ best three years in a row. “I’m a tequila pusher,” Stiffen says, laughing when someone orders a vodka cocktail. “I’ll serve you something else, but I’d rather serve you tequila.” Let her, Agave 308 will change your world. Granted, everyone eventually needs a proper, if not predictable meal. B.O.’s Fish Wagon has been serving the unexpected seafood offering of softshell crabs for 23 years, and the staff still explains to the uninitiated that they’ll be eating an entire crab that’s in the process of molting their shell. “When we first started serving it, we had to explain to everyone what it was, but in recent years, we’ve been getting a lot of requests for it, especially from our Asian visitors,” said Holly Owen, whose husband, Buddy, moved his legendary fish wagon to the corner of Caroline and Elizabeth street

23 years ago. “It took me about five years of serving it before I had the nerve to try it,” she said. “But now it’s actually my favorite way to eat crab.” The softshell crab comes on a platter on a sandwich at B.O.’s Fish Wagon, where every meal is a Key West adventure.

THE MORNING AFTER THE ADVENTURE Island adventures begin or end with a bloody Mary, and at The Saint Hotel, it’s been elevated – literally – to an entire meal. Bar manager Paul Murphy doesn’t make a Bloody Mary; he builds it. Although Key West named him King of Fantasy Fest in 2017 (his crown sits on a shelf above the bar), Murphy’s customers use a different title when summoning him to their rescue in the morning with a desperate, “Oh. Murphy answers to both, and gets to work on the Bloody Mary he’s dubbed The Almighty. “And I thought things were bigger in Texas,” Greg Thener said on a Saturday morning while sitting at The Saint Hotel’s Burgundy Bar after delaying his departure twice. His eyes widened with each layer Murphy added to the morning-after drink. “This takes the cake.” Murphy’s award-winning concoction includes the requisite celery stalk and olives, but then goes on to include a gravity-defying skewer lined with a folded pocket of roast beef folded around a dollop of homemade horseradish cream, a heavy cube of pepper jack cheese, a slice of peppered bacon and topped – finally – with Yorkshire pudding. “You Americans call it a popover, but it’s Yorkshire pudding in London, where I’m from,’ Murphy explains.

AMY SLATE disco v ere d div ing

was one of her passions at an early age, and she has been able to build a successful business around it. Describing her passions as family, diving and Italy, Slate is able to make time for all three, and then some, as she has trusted employees and the energy to dive at least twice a week and travel in her spare time. Slate’s business, Amoray Dive Resort in Key Largo, has enabled more than 50,000 people to earn their scuba diving certification over the past 30 years. Slate established Amoray in 1993 after disentangling herself from a marriage and joint business ventures. In 1978, she and her then-husband started a dive business named Atlantic Dive Center in Key Largo. Slate’s passion for the ocean began around the age of six when her parents took her to swim with the dolphins in Key West at the Flipper Sea School. She realized then she wanted to live in the Keys. Born in New Jersey, her family moved to Miami when she was one. She later attended the University of Florida and her first job was teaching in Jacksonville, Fla. while also teaching diving classes at the local YMCA. Slate continues to use her educator skills as a dive instructor.

Being a Gator makes Slate happy as well. She enjoys being involved with the Keys Gator Club, which regularly watches Florida games at the Big Chill restaurant in Key Largo. She donates prizes such as snorkeling trips for the game-watching festivities. Slate has served the community in numerous ways from serving on the boards of the Reef Environmental Education Foundation and

Coral Reef Restoration Foundation (each for 10 years) and the county’s Tourist Development Council. These associations benefitted her resort customers in that she had resources to share fish identification and coral restoration programs, as well as coral spawning trips in conjunction with the Florida Keys National Marine Sanctuary (FKNMS). In fact, Amoray Dive Resort became the Sanctuary’s first Blue Star Operator, for routinely sharing environmental information and conservation messages. Billy Causey, the FKNMS manager, and renowned marine biologist, Dr. Sylvia Earle, often boarded Amoray boats for dive trips. About 40 years ago, when performing an underwater wedding, a service which Slate still offers, a photo shoot for People magazine showed the amorous couple with the Christ of the Abyss statue at John Pennekamp Coral Reef State Park in Key Largo. The magazine also showed Slate hugging a moray eel, and proclaimed, “That’s a moray!” Which is how the name of Slate’s dive resort came to be. Additionally, Slate’s grandparents immigrated to the United States from Italy and her maiden name is Minichino, so several puzzle pieces came together. Slate’s friend Judy Halas designed Amoray’s logo with a moray in the shape of a heart. The dive boats incorporate the “Amore” theme (“love” in Italian) by playing the catchy song,

“That’s Amore,” on their way home from the reef. Slate says the musical version by the Barefoot Band makes for a fun ride back to Key Largo. Since the People magazine story, Slate and her dive business have been featured on the Geraldo Show, The Wedding Show and more. The resort owner adores her two yellow Labradors. Avid swimmers, 13-and-a-half-year-old Mia even dives for balls in five to six feet of water. Tia is Mia’s daughter, and at 11-and-a-half, still acts like a puppy, said Slate. They swim in her pool and play nicely with her family and resort guests. In March 2015, Slate was inducted into the Women Divers Hall of Fame, unanimously selected by the nomination committee for her roles as a scuba instructor, ocean and environmental conservation leader and educational outreach advocate. She attended a blacktie event at the Meadowlands in Secaucus, N.J., at an Our World Underwater event. Now, more than 200 women have been inducted in a 15-year period. “I’m in very good company,” she said.

An avid traveler, Slate recently returned from a dive trip in Cuba that was based on a live-aboard boat. For diving, she has traveled to Fiji and French Polynesia and is planning a trip to Indonesia. Generally, she plans the trips for her and her friends, but will invite resort guests if spots are available. She recently took her niece and nephew diving at Stingray City in Grand Cayman. “I know a lot about dive travel after going to all these places,” she said.

In the next decade, Slate hopes to do more traveling to dive destinations, and to support and promote the Divers Hall of Fame with the goal of getting more women interested in diving. If the past is any indication, she’ll fulfill her goals. KS

HE HAS TO ADMIT HE’S A LOT LIKE “HIS OLD MAN.” Renowned artist Roberto “Pasta” Pantaleo of

Islamorada followed in his father’s footsteps in various ways including being a talented artist and determining his own unique path. Pantaleo describes his dad as a Renaissance man, an inventor and an oil painter. Things were not easy for Pasta, who grew up in Brooklyn, N.Y. His father didn’t speak a word of English. Yet, he did like drawing with his dad. In 1964, his father framed a picture of a duck Pasta had drawn. That’s when the youngster first thought he might have artistic talent. Another of the youngster’s interests was fish. Pasta had fish tanks he cared for throughout his younger years. “When I ran out of paper, friends brought over the cardboard that came in packaged shirts, and I drew on that,” he said. Those early drawings would seem a premonition of what was to come.

All in all, Pasta’s upbringing was tough. He signed up for baseball, but he wasn’t a ball player. He wanted to fit in, but when he saw other dads at the field watching their kids, Pasta’s dad wasn’t there. Pasta’s upbringing mostly was determined by his mother who, upon Pasta’s begging, followed Pasta’s older brother, Nick, to South Florida, where Pasta then attended high school. Pasta learned much of what he loves from Nick: scotch, cigars and motorsports, he said. “Nick had gotten married, and got a job as a mechanic in South Florida. He was chasing better weather,” said Pasta. Even his nickname, Pasta, came from his brother. Due to their thick Italian accents, their New York friends started calling the brothers, Pasta Fazul after the bean soup, because Pantaleo was hard to pronounce or remember. Rather than Roberto, “Pasta” stuck with him. Nick found a new wife in Miami Beach and through her family connections; Pasta visited Islamorada for the first time in 1970. The wife’s family had an old Conch-style home on Jerome Avenue close to the ocean at mile marker 81.5, near where Pasta’s art gallery is on the Old Highway these many years later. In Miami Beach, realizing books and the three “Rs” were not his forte, Pasta’s teachers helped him to get a job in a frame shop named, The Frame Up. Then, came an apprenticeship at a commercial sign shop. The shop owner helped the young man to see there was art and design in the composition of signs. It felt natural to go into the sign business so he started his own shop, Pantaleo said. He painted signs on police cars, plumbing trucks and the like. This evolved into other artistic pursuits such as airbrushing vans in Coconut Grove for those who were enjoying the Miami Vice lifestyle. He painted one with scenes from The Hobbit. Then came big deals with Joe Robbie’s and Pro Players stadiums. He said he landed a lot of great accounts through his gift of gab.

Pantaleo operated his sign business for 24 years but decided to sell it and live his dream by moving to the Florida Keys. He heard a commercial on the radio for a business broker, called the number and sold his business to the second person who looked at it.

The artist moved to Key Largo, and lived in a tiny trailer. “It was a dismal scene,” he said. But, momentum was moving in the right direction. He opened his first gallery called Keys to Life on Windley Key, which he ran for five years. Nine years ago, he met his wife, Angela, and five years ago, they married. Leaving the fashion retail business, Angela has learned the art business including the art of making fine prints called giclees.

Seeing a way for the Sportfishing capital of the World to also be known for art led Pasta to become the “founding father of the arts district” at Morada Way in Islamorada. Several art galleries and a brewery are centered there now and the Third Thursday Art Walks are enjoyed by visitors and locals alike. Currently, Pasta is enjoying his life as a “shopkeeper” with his marine art gallery fronting the Old Highway in the Morada Way Arts District, and playing music for fun with a band that features him as a drummer. He also makes time for hobbies such as fishing and is content with his life and excited about what may come next. In the coming years, he foresees a coffee table book with snippets of his outlook and his beautiful art entitled Paint Brushes and Fishing. But for now, he says, “From where I came, this is all I need. It’s all I want -- this Caribbean lifestyle in a small fishing village that reminds me of where my family comes from.” KS

the Village People were at the top of the charts, and MASH was must -see television, but it was also the year of the Iran-Iraq war, which created the decade’s second serious gas shortage. Even though gas was only around 80 cents a gallon, the lack of availability kept tourists close to home and even farther away from Key West at the end of the island chain. Where desperation and ingenuity meet, inspiration is born -- in this case, in the form of Fantasy Fest. Four merchants in town are credited with creating the festival – Joe Liszka, Frank Romano, Bill Conkle and Tony Falcone- to entice visitors in what was usually a slow month in October before the winter season usually began. With the help of the Tourist Development Council, the event was a smash hit from the beginning, with thousands in attendance from the very first year. Stories in the Key West Citizen at the time described the inaugural festival, which was a long weekend, as full of costumed revelers, elaborate floats, and a few celebrants covered in “little more than body paint.” At the time, there were few who might have predicted that the event would become an annual jewel and one of the city’s most celebrated festivals. Today, the event continues to attract thousands, but has become a 10- day celebration with nightly events, costume parties, and of course, the traditional Saturday night parade. Fantasy Fest has also become an important fund raising opportunity for numerous non-profit organizations, and is a staunch supporter of the local arts community, including through events such as the annual poster competition. Key West locals know Craig Cates as the laid back mayor who’s quick with a handshake and always open for a chat on the street. What they don’t know is that calm demeanor was honed while participating in one of the most dangerous sports in the world, when Cates was the throttle man for a championship offshore power boat racing team. ➤ For five years in the late ‘80’s and early ‘90’s Cates, alongside his brother Scott, competed across the country in power boat races, winning their fair share of contests, including the 1992 American Power Boat Association World Cup held in Fort Myers. ➤

// isle style // Adventure On The High Seas, PART I Battling ocean waves at speeds exceeding 90 miles per hour makes the sport a life and death scenario each time out, with 27 race-related deaths since 1981. As throttle man, it was Cates’ job to defy natural instincts and push the boats to the limit of their speed as his brother navigated the course from the seat next to him. “The throttle man controls the trim and the motors to go as fast as the boat can go,” Cates said. “As fast as the waves allow you.” The position requires quick thinking and faster reflexes, as you can only see between 100 and 200 feet in front of you and the ocean could surprise with a large wave at any moment.

“When it’s calm it’s easy, you just hold it wide open,” he said. “But when it’s rough, sometimes you only average 40 miles per hour.” Speed isn’t the only thing to worry about when encountering waves, as the boats go airborne with the danger of landing upside down or on its side, which results in loss of control and the hope it will straighten out instead of flip over. “You don’t know what it’s exactly going to do,” Cates said of landing. “If it’s on its side you just have to ride and hope it comes down flat. Your adrenaline’s flowing so much because you’re basically out of control every time it’s on its side.

You hope you’re lucky enough to end up flat.” Most of the time they did end up on the right side of the ocean, but in one race the boat in front of them wasn’t so lucky, ending up turned over with both the driver and throttle man unconscious underwater. The Cates brothers immediately stopped and jumped in, holding the men above water until a helicopter arrived at the scene to rescue them.To encourage safety, drivers are required to assist a crashed boat and are awarded whichever place they were in if they manage to get started back up and finish the race. So despite the stop, Conch Attack was able to save lives and take home first place, Cates said.

Despite his brother’s pleas that the race only had a mile to go and the team was in first place, Cates was done for the day and diagnosed with a separated shoulder when he made it to the hospital. “It’s definitely a tough sport,” he said of the experience. In addition to racing, the Cates team was one of the few outfits to also maintain their craft, working on

it out of Cates shop alongside another brother and cousin Greg Frye. “Most people have a crew team; we repaired the lower units and motor and maintained (the boat),” he said. The family affair was a long time in the making, starting when they would watch their father navigate 10-foot Hydro boats to Garrison Bight as part of the Outboard Racing Club. “Speed and boat racing is a huge part of the history of Key West,” he said The brothers first ventured into car racing before taking to the water, which was a more readily accessible sport back then in Florida.

The Conch team wasn’t always so lucky though, as Cates suffered a separated shoulder in one race when his airborne boat “stuffed,” meaning it came down front first into the water. The impact at around 80 miles per hour pulled Cates from the boat and he immediately knew something was wrong with his shoulder.

Despite what Cates called some “intense moments” when the brothers would argue to the point of pulling out their intercom communication devices, the pair were a natural fit and a national contender on the offshore power boat circuit, and they have the trophies to prove it. “We always loved to go fast,” Cates said. As a teen in New York City, he took a job as a lifeguard at Atlantic Beach, which eventually led him to move to Florida as “nothing appealed” to him after high school. In the meantime, he served in the U.S. Air Force for four years “finding” foreign technology. “It was eye-opening,” he says, of traveling the world, but still can’t reveal exactly what he did, although he does admit a connection to the infamous Project Blue Book – the military’s search for UFO’s. Armed with the GI Bill, he intended to get his dive certification, but instead found himself shark hunting for a living in Ft. Pierce. A visit from a Keys’ businessman led to a relocation to Key West, and finding the supply of sharks far less than expected, ended up being a deck hand and diver for Mel Fisher. “Mel would go around to different bars at night to find people who would work for him,” said Clyne. “He always promised fun, romance and adventure – that’s how he convinced everyone.”

| Beginning as a deck hand, Clyne was soon right in the middle of the diving operations, which lasted for years. The crew stuck with Fisher and believed in his “Today’s the Day!” motto as they found just enough treasure through the years to keep them excited and enticed. Years searching for sunken treasure eventually paid off, and the crew found the Atocha’s sister ship, the Magarita, in the early 1980s, followed by the Atocha, at long last, in 1985. keysnews.com

Clyne remembers vividly wrapping gold chains around his neck that he found on the sea floor, along with pulling up silver bars, emeralds and all manner of treasure.

Now that the search was over, Clyne was left with that old familiar “what now?” thought, but soon found himself in high demand on the lecture circuit. He traveled with Fisher all over the world, giving speeches and being feted at state dinners. He worked with UNESCO on treaties concerning sunken treasure, and his photos have been featured in countless magazines, including National Geographic. After Fisher’s death in 1998, Clyne continued to appear on the lecture circuit, and was involved with a number of other expeditions-- and ended up being invited to join the world renowned Explorer’s Club.

In between, he had a number of other adventures, seeking out thrills in unlikely places, from climbing mountains and ice climbing up waterfalls to finding a downed WWII era B-26 that crashed in 1942.

“I had some of Mel’s ashes sealed in an acrylic canister and placed them in the middle of the bridge,” Clyne explains, adding that much of the bridge was no longer intact.

With a lifetime full of fruitful and fruitless searches behind him, Clyne says the best memory he has is still of his days diving for Fisher. “None of us got rich, but we got to meet people from all walks of life. I got paid to dive in a once-in- a-lifetime opportunity; I’ve met Kings and Queens and Presidents; and I’ve traveled the world.” When asked what advice he might give to those still searching for opportunities and adventure, Clyne says, “The world’s an exciting place, but you have to at least meet it halfway. You can’t wait for it to come to you.” KS
