History of the American Bar
1889 – 1913 Bittersweet Cocktails utilising forgotten flavours On 6th August 1889 the Savoy opened its doors very much as a side business to The Savoy Theatre. Very quickly however, The Savoy sprang from the shadow of its theatre and set global hospitality standards the world now takes for granted. The American bar itself gained its name as early as 1893 and was moved to its current location in 1904.
La Dame de Fer 19.00 Named after the Eiffel Tower, erected in 1889 which was the same year as the grand opening of The Savoy. The tallest structure in Paris and an icon of global culture and architecture was so named after its designer Gustave Eiffel. This Gaelic-influenced sour brings together the lesser-known ingredients of apple brandy from Normandy and the equally obscure ‘Rhum’ from the former French colony of Martinique to create a unique and aromatic sour for the 21st century.

The Phone Box 19.00 On the 1st of April 1891 the first telephone connection was made between London and Paris. To commemorate such a moment our thoughts go to the iconic red London Phone Box. Created by the legendary Sir Giles Gilbert Scott, who was also the brains behind the structure of Waterloo Bridge and the Battersea Power Station, the red telephone box is as iconic to London as the Houses of Parliament and Big Ben. To commemorate the status of these cherry-red British emblems, we’ve created our very own rather British American Bar Tribute Champagne Cocktails affair…

This era for the evolving Savoy was certainly a character defining period as global travel increased and London became once more the playground for the rich and famous after the hardship of World War II. This section pays tribute to a cultural change that occurred in London during this period, which was driven by some great characters, who became synonymous for this era.
Queen’s Coronation 17.00 2nd June 1953 saw Elizabeth II crowned queen at the tender age of 25, over a year after the death of her father King George VI. The tradition of such a festival being executed was delayed as it was deemed inappropriate for a coronation to take place during a mourning period that followed the death of the preceding sovereign. However, it took nothing off one of the most iconic events of the 20th century, and to commemorate this we present to you an elegant and rich gin libation with true British identity.

1940 – 1964 Perfect late night drinking & digestif cocktails. The Roaring 50’s 19.00 From the end of the 1940’s, a new UK was beginning to emerge, due mainly to the introduction of the import-export business and the opening of 20th century trade routes throughout Europe and the rest of the world. Not only was this great for London, but it helped shape the capital city we know and love today and ushered in a prosperous period known as the ‘Roaring 50s’.
Cocchi Sweet Vermouth, Herradura Tequila, Cynar, Grenadine, Absinthe The King of the Whole World 60.00 Taken from the song of the same name by the legendary King of rock’n’roll Elvis Presley. This drink does justice to the legend whose songs are often performed by our live pianist. With blended scotch as a back bone, this not only has the king of spirits in mind, it is most definitely a drink fit for a king too.
Johnnie Walker Blue Label, Ratafia, Oloroso sherry, ‘rock essence’ Set’em up Joe 17.00
Created as a dedication to Frank Sinatra and also our eldest living head bartender Joe Gilmore. Frank Sinatra was a frequent guest of the American Bar, usually sipping Martinis and was only ever served by Joe. He would always order with the phrase ‘set’em up Joe’ and after performing this song on the piano legend formed the actual song was about Joe Gilmore. The cocktail itself takes inspiration from the preparation of a Ramos Gin Fizz and is a long full bodied gin drink.

1965 – 1988 A Selection of fruity and refreshing cocktails
This era for The Savoy can be defined as a period where the inspiration for the modern day bartender formed. This period saw the emergence of former Head Bartender Peter Dorelli, who is now a global bar icon and enjoying his 51st year of working in the hospitality industry. Peter retired from his position at The Savoy in 2003 and now concentrates his energy on passing on many stories and experiences gained from his time at The Savoy
Green Park 17.00
One of the Royal Parks of London, and one that forms an almost unbroken stretch between some of the more famous parts of the capital. This was once a haunt of highwaymen and thieves in the 18th century when its boundary fell outside of London. To celebrate the establishment of Greater London in the 1960s, one of the most important transitions within the capital’s history, this fresh gin cocktail is a here to remind us of the greener and lighter days that can be had in the capital, not unlike the drink itself. This drink is the creation of our Head Bartender Erik Lorincz
Bombay Sapphire, fresh lemon juice, sugar syrup, fresh basil, egg white and celery bitters. Maid in Cuba 15.00
Cuba’s rise to dominance as a culturally defining country not only stems from the limelight they received throughout the 1960s, but also as a world famous destination for some of the most well-known cocktails to ever grace cocktail culture. The Maid in Cuba is the creation of our bartender Tom Walker. Tom took inspiration from a new drink category ‘The Maid’ originating in NYC which has similarities to both the Daiquiri and Mojito. In 2014, this drink was awarded the title of Global Bacardi Legacy Cocktail Competition Winner and is most definitely a contemporary classic in the making.

Reposado Tequila is generally a little smoother than blanco tequila, and is rested in wood barrels for minimum of two months, but less than a year. After ageing, the spirit generally has a good balance between fresh agave and wood. Herradura 9.80 Ocho 9.80 Don Julio 12.50 Anejo
The Anejo Tequila is aged for at least one but no longer than three years in wooden barrels, with the most common being American or French oak. These Tequilas are more complex and rich in flavour. Tapatio 11.00 Extra Anejo

Named after the successful moon exploration in 1969, the drink was the first thing to pass the lips of the Apollo 11 crew once they had landed safely and exited the shuttle. Neil Armstrong sent a personal letter to Joe thanking him for the gesture.

The Restoration and 125th Anniversary/celebration styled cocktails. One more to Go 19.00 A drink that was created exactly one year before the 125th anniversary that marked the countdown. This drink is the epitomy of a modern day celebratory cocktail. Served in a large wine cobbler over crushed ice, this drink can be described as a Vodka and Champagne Cobbler.
Beluga Vodka, Maraschino Liqueur, fresh lemon juice, pineapple and passion fruit syrup, fresh mint and champagne. Malecon 15.00
The Malecon was the cocktail that Head bartender Erik Lorincz, new to the Savoy in 2010, brought with him from his previous role at the Connaught. It was originally created for the Bacardi Legacy cocktail competition by and takes inspiration from the essence of what it means to be Cuban: To accept the inevitabilities of human existence, that we are born and must die, and to make the very best of life and have as good a time as possible.
Bacardi Superior, Ruby port, Oloroso sherry, peychauds bitters, caster sugar and fresh lime juice Cinqo De Mayo Cocktail 17.00 5th of May has now become a signature London celebration marking the multicultural growth The Savoy has witnessed over the last 125 years. Owing its roots to Mexico, this celebration has become very much a day where Latin cultures unite and find reason for cheer. This long and fresh cocktail shows Tequila in a very desirable form indeed.

Vintage cocktails
What you will find below are a selection of classic drinks, made with rare, bespoke and hardto-find liquids, procured from all over the world. Choose from libations made with post-World War II orange liqueurs, pre-19th Century cognacs and vintage gins from the 1950s. Whatever it may be, we hope that you will find our selection of 'Vintage Cocktails' as fascinating as the liquids that go into them.
Negroni ~ £150.00
Originally known as the Camparinette and the Campari Cardinal in French and Spanish cocktail books respectively, this bitter-sweet aperitif combines Gordon’s Gin and Martini Rosso - both from 1950 - with the deepercoloured Campari from the 1960’s.
White Lady~ £120.00
If cocktails were residents, this one would have a room named after her. As it stands, the drink is a venerable favorite of both drinkers and bartenders alike. A fresh and crisp concoction made with freshly pressed lemon juice, a dash of egg white, old-school 1960’s Cointreau and Gordon's Gin from 1950.
Sidecar ~ £130.00
An evolution of the Brandy Crusta, this cognac sour also closely resembles the White Lady. The version served at The Savoy comes straight up with a sugar rim and contains a balanced and well-iced mixture of freshly-pressed lemon juice, Remy Martini VSOP from the 1960s and 1940s Triple Sec. Dry, stiff and complex.
Original Sazerac ~ £5000.00
The more sophisticated and richer-tasting older brother to the Old Fashioned, with roots in history that stretch back to the early and mid 19th century. This version served at The Savoy is about as close as we will get to the real McCoy; made using the Sazerac de Forge from 1858, which was the original brandy used at the time, which is enhanced by 1950s Pernod Absinthe from Tarragona and Peychaud's Bitters from the
Temperance
. (Non-Alcoholic cocktails)
Non-alcoholic cocktails have a long association with the American Bar with many recipes having appeared in Harry Craddock’s first addition of The Savoy Cocktail book. Historically the most famous recipe is the Shirley Temple cocktail so named after the childhood star who rose to fame in the 1930s. Ms Temple herself was a regular guest of The Savoy from her early life as a Hollywood star to her later life which became more involved in international politics
Savoy Iced Tea 11.50
A very refreshing alcohol free long drink, based on ice cold Earl Grey tea, shaken with fresh lemon juice, agave nectar and topped up with bitter lemon. A classic aperitif-style drink, that does not need the alcoholic kick to be truly delicious. The origins of iced tea actually date back to the early 1800s making this a great starting point
The Cucumberland 11.50
A refreshing non-alcoholic long drink, combining cucumber, fresh ginger, mint and coriander, all balanced with a touch of sweet agave nectar.
Cilantro Sling 11.50
The key component is coriander, first brought to the British colonies in North America in 1670 making it one of the first spices to be cultivated. This dominant flavor is then mixed with fresh avocado, agave nectar, fresh lemon juice, apple juice and soda water in a cool and savory offering.
The Blue Orpheans 11.50
The name of this drink is in homage to the Savoy Orpheans who were a dance band in residence at the hotel between 1923 and 1927. This is a very fruity cocktail dominated by dark berries, lemon juice and cloudy apple juice.
Commerson Spritz 11.50
So named and inspired after the European botanist who discovered Lemon Verbena in Argentina, which as an ingredient, is used frequently in the culinary world. An in-house Lemon Verbana soda water is the charge added to citrus juices, yoghurt, and orange blossom water making for a very refreshing drink.
