These items are just suggestions to get your mind working towards the perfect menu for your event. Please let Chef or a member of the team know which items catch your eye and we’ll go off menu to create exactly what you have in mind. We are well versed and very comfortable with all flavors.

PASSED HORS D’ OEUVRES (CHOOSE 3) Shrimp and Grits – A southern classic, crunchy grit cakes with blackened shrimp, creole coulis, and garlic gravy Fried Coconut Shrimp – butterflied Gulf shrimp with golden fried coconut and served with our honey ginger and Sriracha sauce Southern Style Crab Cakes – with a classic remoulade sauce. Skewers - Choose from sweet chili and soy gulf shrimp, chimichurri beef, or chicken satay with peanut sauce Mac and Cheese Balls – maple glazed with bacon marmalade Tomato Bisque and Mini Grilled Cheese Shooters – the name says it all. A perfect combination Fried Green Tomatoes – stuffed with goat cheese and lightly fried in panko breading and finished with red pepper coulis. Perfect as a side item on a southern style buffet as well Brisket Sliders – with brie cheese and spicy peach jam Smoked Chicken Salad – in phyllo shell with strawberry jalapeno jam Mini Quesadillas – black bean and goat cheese, smoked brisket, cheddar, and red onion Filet and Blue Crostini – filet of beef with caramelized onion and house made blue cheese dressing, garnished with blue cheese crumbles Seared Diver Scallop-with garlic, curry, and ginger served on an Asian spoon Arancini Balls-with fresh herbs and mozzarella, fried to a golden brown and served with a zesty marinara sauce

FRESH SALADS (CHOOSE 1) Baby Field Greens – with sunflower seeds, European cucumbers, sliced red grapes tossed in champagne citrus vinaigrette Not So Classic Caesar Salad – with chopped romaine and kale, grape tomatoes, shaved red onion, herbed croutons and shaved parmesan cheese Mixed Greens – with diced peaches, sugar roasted Georgia pecans, sautéed mushrooms, with a brown sugar vinaigrette Spinach Salad – with fresh strawberries, gorgonzola cheese, toasted pecans and bacon Wedge Salad – house-made blue cheese dressing, red onion, roasted tomatoes, bacon and blue cheese crumbles Tomato, Avocado and Arugula Salad – tossed in a light lemon vinaigrette

BUFFET ENTREES (CHOOSE 2) Lemon Thyme Chicken- panko crusted and pan fried with Meyer lemon gravy, heirloom tomatoes and arugula Blackened Apricot Salmon – sockeye salmon served with our signature blackened seasoning and served with Chef Will’s apricot buerre blanc Braised Short Ribs-12 hour slow cooked short ribs braised in our delicious coca cola reduction Mediterranean Grouper-lightly floured and sautéed with diced tomatoes, capers, kalamata olives in a white wine butter sauce (market price) Stuffed Chicken Breast Roulades-with bacon, apples, and ricotta cheese

Chili Rubbed Pork Loin – with peach, red pepper, and pecan relish Herb Roasted Chicken – airline chicken, seared and then roasted in an apricot white wine reduction, with lemon and fresh herbs ____________________________________________________________ ___________ Shrimp and Grits – creamy grits topped with blackened gulf shrimp finished with garlic gravy, bacon, cheese and green onions Petite Filet of Beef medallions – medium rare beef accompanied by creamy horseradish sauce and red wine demi glaze Penne Pasta with Shrimp and Andouille Sausage – hearty penne pasta tossed in a creamy pink vodka sauce with shrimp and andouille sausage Fried Boneless Breast of Chicken – topped with honey pecan drizzle Creole Tilapia – Creole dusted and sautéed with a mustard cream sauce and caramelized onions All buffet entrees include bakery fresh rolls and butter
