The European cuisine is all about family traditions and ancient “earth” tastes. Recipes are handed down from mother to daughters. Fresh produce from local farms are a must with the local extra-virgin olive oil and wild herbs that give each dish a unique Mediterranean flavour.

ARROSTO BELLAVISTA (Roast Veal ‘’Bellavista’’)
It’s a typical meal main course throughout Europe; you can change the vegetables based on the local products available in each country. It’s nice to serve for a special dinner.

Ingredients
spring onion carrots big celery stick pounds veal blade roast liters of water tablespoon extra virgin olive oil pinch of salt 1 2 1 1-1/5 ½ 3 1
Preparation
Chop all the vegetables and keep aside. Place the veal in a casserole and fry gently in oil for a few minutes so it turns brown on all sides. Add some water and when it evaporates, cover the meat with all the chopped vegetables and the rest of the water and a sprinkle of salt. Cook very slowly for about 1 hour, covered by a lid. When ready, remove the meat from the casserole and put the vegetables in a blender to make a sauce. Slice the veal in fine slices and cover with the sauce.
Tips
You can prepare it in advance but make sure to heat the sauce very well before serving. You can use ½ liter of chicken or beef stock instead of water.
BACI DI ZIA MARIA (Almond Kisses)
A very easy recipe of cocoa flavored almond sweets flavoured. Typical from the traditional Mediterranean cuisine in the south of Europe.

Ingredients
1 cup peeled almonds 1 cup sugar + for decoration 3 tablespoons cocoa powder 2 tablespoons of water
Preparation
Place all together in a mixer the sugar, almonds and cocoa all together in a mixer. Add the water. Work the dough and prepare small sized balls Roll the balls in an upside down cone shape. Roll in sugar before serving.
Tips
You can change the shape and you can add other flavors.
