This month’s edition all started with my current wife and partner, Stacey, deciding she wanted us to promote the Healthy Heart Challenge and she definitely wanted a red cover. Then not just the cover, the whole magazine had to be red. Her wish is my command (it has been 24 years after all) so we started with which of our Smile Dental 12 Faces of DUO winners would be on the cover? Where to source the dress? Who to shoot it? Who’d create the hair and make-up? Well, for all those details please check out the (new look) double page spread on pages 10 & 11 that we created for this latest edition. We hope you like it. Now that we had a ‘new look’ red cover and covergirl spread we couldn’t stop there. We’ve re-designed pretty much every page with different typefaces and layouts and would like to get your feedback on what you think of it. The problem we face is what colour do we do next month? A heartfelt ‘thank you’ to Kelli Atlee and Trina Lamrock for sharing your stories with us. The danger of heart disease in women is a very important message to get out and we hope that by you revealing your personal experiences that other women will be motivated to participate in the Challenge. Notice the positive atmosphere around Townsville lately? Signs are appearing that we’re about to see a lift in the real estate market now that the elections are over and our local economy is doing quite nicely. What can you see on the horizon? As Brooke had beautiful skin I only used Youngblood loose mineral foundation in Warm Beige with a small amount of medium rice setting powder dusted all over to take away any shine. I then contoured her face using Sundance bronzer and used creme blush in rose quartz on the apples of her cheeks. To enhance Brooke’s eyes I used Golden Beryl loose eye dust all over and Haze loose dust to contour with, I then used black gel liner in Equinox and applied black mascara. To finish her eyes and give her that old Hollywood look I used a full set of Smiink lashes along the top. For Brooke’s lips which are the feature I used Youngblood Vixen lipstick with Guava gloss on top.

Could Lucy be our next Miss Universe?
Juggling study, friends and the Miss Universe contest is quite a combination of tasks, but it has become a daily routine for 20-year-old Townsville girl, JCU student and future DUO Covergirl, Lucy Tuttiett Down-to-earth JCU student Lucy Tuttiett, who is studying to become a primary school teacher, was one of seven selected from 23 Queensland contestants in the Miss Universe state final held on the Gold Coast on May 1. Ms Tuttiett and the six other girls are now off to Melbourne on June 8 to compete in the national final. Such a competition may seem as simple as models strutting their stuff down a catwalk, but Lucy insists there is much more involved in the process. “To the outsider it may seem there isn’t much that goes into it, but in terms of fitness, the dresses, managing uni work, and the money required to actually be at the event (flights, accommodation, hair and make-up), it is all quite stressful,” she says. In the few weeks leading up to the national final, the ex-St Patrick’s College school vice-captain has increased her exercise to twice daily while maintaining a healthy diet. A mixture of gym and endurance runs along popular locations – Castle Hill and Ross River – has kept her trim and energised, despite indulging in the odd treat. “I try to be healthy, although I could probably be a lot more careful with what I eat. I still eat a necessary amount of chocolate,” Lucy says. Prior to the Miss Universe contest, Lucy took out the Best Model Australia title in July 2011. After winning the national
final on the Gold Coast, she journeyed to Istanbul, Turkey, in December. Out of the 36 girls in the competition, Lucy won the title of ‘Best Physique’. When asked about her predecessor’s success in the Miss Universe contest – Townsville-born Rachael Finch, who took out the title of Miss Universe in 2009 – Tuttiett humbly says: “Rachael Finch is such a great ambassador for both this competition and for Townsville. “I have considered that if I win this, it could change my life like it did hers. But I am not getting too ahead of myself.” As a dedicated student and regular High Distinction achiever, Lucy also insists her degree will always come first. Now in her third year of a Bachelor of Education (Primary) degree, Lucy says she chose this course because she believed she could make a difference in children’s lives. But her immediate plans post-university depend on her success in the Miss Universe competition. “If I win, then who knows where I will be. But if I don’t, then I will probably be in Townsville teaching,” she says. “I love Townsville and it will always be home. When you’re trying to make an important decision, how often has someone told you to ‘listen to your heart’? However, the medical evidence is overwhelming suggesting that we are doing anything but, with many women ignoring the signs of what has been dubbed ‘the silent killer’. “Heart disease is the number one killer of Australian women and risk factors like high blood pressure and high cholesterol significantly increase your chance of developing it,” the Heart Foundation’s national boss Dr Lyn Roberts explains as the organisation launches its six-week-long Healthy Heart Challenge this month. “High blood pressure and cholesterol are often called the silent killers as there are no obvious symptoms – having a heart attack can be the first sign.” Time-star ved off ice manager and mother Trina Lamrock discovered this the hard way when the health-conscious 39-year-old was out for her regular jog. She came over feeling nauseous, sweaty and dizzy and for days later experienced sporadic pains in her chest and got out of breath just climbing her stairs. “I thought it was just indigestion,” she tells, but after the same symptoms persisted she decided to see her doctor. “My GP sent me for further testing and the angiogram found my main front artery was partly blocked. I was shattered and shocked because I’m not overweight and my diet is good – I have the occasional takeaway, but hardly ever. The exact cause of my condition was unknown, but put down to stress. My blood pressure is usually low, but around that time it was really high. I’d spent about 11 years trying to juggle my hectic job with raising a family and day-to-day living, and I think everything just took its toll… it’s just so scary because I didn’t realise how close I was to dying.”
Trina had three stents inserted to openup her artery, and will take blood thinners and cholesterol tablets for the rest of her life. She has since brought her busy life down a notch, accepting less work; does regular (but a lower intensity) exercise, and takes her blood pressure on a regular basis. “All my friends couldn’t believe that something like that would happen to me,” she says. “I knew little about the signs and symptoms of heart attacks or about heart disease in general, but now it’s happened I realise how important it is to make sure I have regular check-ups… I just didn’t expect it so young.” The Heart Foundation is encouraging all women, particularly those over 45 who are at greater risk, to ask their GP for a heart health check this month. “Ninety per cent of Australian women have at least one risk factor of heart disease, but the good news is that simple changes can lower your risk, which is why we’re running our free six-week Healthy Heart Challenge again this year as part of our annual Go Red for Women Campaign,” Dr Roberts says. Participants can register online at goredforwomen.org.au where they can select one of four goals for the month: to be active every day, to improve daily nutrition, to lower blood pressure or to lower cholesterol levels. It starts June 4 and runs till mid July. “Get together with a friend, relative or colleague, sign up for the Healthy Heart Challenge and take the first steps towards better heart health,” Dr Roberts says.

It was a normal Sunday night at home for 40-year-old Kelli Attlee in mid November. Like most women around her age, she was gearing-up for another busy week – hopping from work appointments to social engagements to running the kids around, with little time for herself. It was after dinner and she was preparing for bed, when her heart suddenly started racing. At first she assumed it was a panic or anxiety attack, and did what she’d watched friends do – breathe into a bag. But her heart rate didn’t settle.

As I got older, occasionally my left arm would feel heavy and I would have tightness in the chest, but thought nothing of it.” Because of the hole, her condition required surgery, and Kelli admits she couldn’t help the tears running down her face in the specialist’s office while he explained what was ahead. “Even though the risks were comparatively small, it was just the fact that what if I was in that per cent that was unlucky? I certainly didn’t expect to be having heart surgery at 40 and wasn’t prepared for that,” she tells.
Mending a broken heart Her husband Nigel hooked her up to his heart rate monitor and they could see it was pumping out of control at 172bpm. They contemplated calling an ambulance, but Kelli didn’t think it was serious enough – what if it was tied up in a ‘real emergency’? Her heart rate eventually began to return to normal, so she went to bed and dismissed it as a funny turn. She told colleagues about the frightening experience at work the next day and they insisted she go to the doctor to get checked out – luckily because he sent her straight to a cardiologist who found a hole in the gristle surrounding Kelli’s heart. The doctor explained it was Wolff Parkinson White syndrome – an uncommon condition she’d had since birth which results in an extra electrical pathway in the heart. “Looking back, it started to make sense because I used to dance from about six till I was 17 and I’d always be so out
Fortunately, everything went to plan, and Kelli received the all-clear after her check-up at Easter. Since being diagnosed with the condition, she wants to spread the word about the importance of getting checked and calling for help if someone suspects they’re having any sort of heart attack or flutter. “I got in big trouble from family and friends for not calling the ambulance. What if it didn’t stop and everyone had gone to sleep?” She says it was also a big wakeup call for her to learn to slow down and smell the roses, with the condition aggravated by stress. “We tend to say ‘yes’ to everything because we’re scared of letting people down, but we really need to learn to take it easy and sometimes say ‘no’,” she tells. “Now my heart isn’t ‘broken’ anymore I feel amazing. I’ve learned to claim my ‘Kelli time’ and it’s magic.”

YOU AND HUSBAND RICHARD POULSON DON’T HAVE DESIGN BACKGROUNDS, SO WHAT MADE YOU GO IN THAT DIRECTION? It was kind of by accident, because we started the [first] store in Freo about ten years ago. Initially, it was just more giftware, jewellery, girly things, underwear, bags, those sorts of things. Previous to that though, I had a sleepwear label [Max & Morrison], so I had that desire to create. I just said, “I wouldn’t mind doing a pair of pants to sell as part of the mix – just a nice pair of pull-on, easy, summer pants.” So we did that and then what came from that was the development of the brand. We sold about 25,000 pairs of those pants!… It wasn’t something we really set out to do at all.
TELL US ABOUT YOUR LABEL’S NAMESAKE, YOUR LATE KELPIE CROSS. Morri passed away about four years ago, but he was with us every day. We’ve got a new dog, Frankie, and he comes to work with us every day now – he’s an American Staffy and he’s white and caramel. I was determined not to get the same dog, because I didn’t want to be reminded of Morri every two seconds!… [But] our company values [including loyalty and trustworthiness] are based around Morri and what he was like.
WHY HAVE YOU KEPT YOUR BASE IN THE SMALL WA TOWN OF FREMANTLE? Because we like it! It’s just where we started, my kids go to school here [sons Baxter, 7, and Louis, 5], and all the girls [on staff] are from around here… There’s definitely that easy-to-wear, relaxed feel to the brand [because of the location too].
HOW DO YOU HANDLE WORKING AS A HUSBAND AND WIFE DUO? It can be all right sometimes and other times it can be a nightmare! It’s really hard, and you can’t separate [work and home]… It’s been fun, but it’s also been challenging, like any relationship where you’ve got to spend 24 hours day together… He works at the other end of the office, so we don’t actually work side-by-side all the time, which helps!
TELL US ABOUT YOUR WINTER COLLECTION. It’s called L’espoir, which means “hope” [in French]… We just felt that, over the last couple of years, it’s been a quite difficult environment in the world – not just in retail, but in general. So, we thought, okay, let’s do something in line with the things we do every season, [using] a lot of natural colours, but put in some pop colours, which symbolise hope. So we’ve got azure blue. We did a beautiful, little tartan red check – just trying to add a bit of fun into the collection!
WHY DO YOU INSIST ON PRODUCING YOUR GARMENTS IN OZ? Most of them are, but we can’t do our leather and knitwear here for obvious reasons – technology and just the availability of people to do that, as well as the cost. [But] everything else is made here, which presents itself with huge challenges. [Still] that was part of our DNA
to start with; that’s what we were really passionate about. Increasingly over the years, it’s become more difficult, because it’s kind of a dying trade here, but we’re persisting, and it’s nice. We have a great relationship with our makers who we’ve had right from the start.
CAREER HIGHLIGHTS? Probably doing my [first] show at [Australian Fashion Week] last year. It was really good, but we were very nervous – it was lots of hard work. [Also] we’re stocked at Myer now and that has been really great for us. They’re great to work with!
HOW DO YOU THINK THE FUTURE LOOKS FOR THE FASHION INDUSTRY? I wish I knew – if someone could tell me so I could relax at night! It certainly has been hard. I think the biggest thing for us is that [the tough economy] has made us aware that you really need to keep up with the trends and what’s going on. So if online shopping’s becoming big, then you need to be part of it, which we are. Also you need to work harder at being the best at what you do. So the stores have to look beautiful, the customer service has to be outstanding – you just need to raise the bar a bit. You have to be really, really good at what you do or you’re not going to survive.
FAVE TRAVEL SPOTS? I’ve been to Paris a few times through the industry, but always Tassie, because I’m a Tassie girl! I’m going to be doing the Bay of Fires Walk with my dad at the end of the year and I’m really looking forward to that. It’s a four-day walk, but you stay in already-established tents and this beautiful homestead. So it’s not like a tough bushwalk – you get good food and drink beautiful wine!

Check for oral cancer – before it’s too late
Early detection, diagnosis and treatment of oral cancer can increase the survival rate of those with the disease.
IF ORAL CANCER SCREENING IS A MAJOR PART OF A ROUTINE ORAL EXAMINATION, EARLY DETECTION COULD WELL SAVE YOUR LIFE.
Oral cancer is a potentially fatal disease, which affects thousands of people each year internationally. The World Health Organisation (WHO) has stated it is the eleventh most prevalent cancer in the world. A dental health professional is your first line of defence in the early detection and monitoring of the disease. An important aspect is the ability to identify the risk factors. These include tobacco smoking, excessive consumption of alcohol, sunlight exposure (for lip cancers), viral infections like human papillomavirus, and genetic predisposition. An oral cancer screening can be carried out at your first visit. Early detection of abnormal, soft tissues is vital. Oral cancer checks should also be done as part of an active maintenance program. A comprehensive oral examination includes an extraoral examination, peri-oral and intra-oral soft tissue examination, and visual examination of the lips, labial mucosa (the tissue lining beneath the lip within the oral cavity), the inner lining of the cheeks and lips, the gum, tongue, floor of the mouth, and palate. An intra-oral camera can help a dentist to document dental conditions, and can aid in diagnosis and dental education. Intra-oral photographs will also allow them to show you on the television screen what is being discussed. Digital radiographs can also be necessary on your first

visit. This is usually referred to as a “bitewing” radiograph. These radiographs allow your dentist to check between your teeth and under existing restorations/and or crowns to detect any signs of active decay. A digital system can be used, which reduces radiation exposure by up to 80 per cent compared to traditional radiographs. The radiograph has the ability to be magnified and digitally enhanced to show otherwise hidden problems. An OPG (orthopantogram) machine, on the other hand, can also provide a panoramic view of the total upper and lower jaws, from just below the eyes to the bottom of the jaw and from ear-to-ear. This will reveal not only pathology associated with the teeth, but also the surrounding structures. Additionally, a CT machine offers advanced technology, which generates a cross-sectional scan of your upper and lower jaw. The image it creates will allow your dentist to select the best location for dental implants and plan any surgery with pinpoint accuracy. Oral cancer is of increasing concern as little progress has been made in reducing the incidence and number of deaths associated with the disease. Many oral cancer lesions are not diagnosed until they are in the advanced stages, where the mortality rate increases significantly. If oral cancer screening is a major part of a routine oral examination, early detection could well save your life.

How we found the answers that stopped our child’s thumbsucking

ARMED WITH VERY LITTLE KNOWLEDGE BUT A MOTHER’S DETERMINATION AND MY HUSBAND BY MY SIDE, I WAS ADAMANT I WOULD MAKE AMAYA STOP SUCKING HER THUMB.
My eldest daughter, Amaya, had always sucked her thumb. It began when she was about six months old, and like many parents, it didn’t concern me too much. As a dental professional, I thought that I would have all the answers when the time came and anyway, don’t kids give up after a while themselves? As she got older, I began to notice that when Amaya closed on her back teeth, her front teeth didn’t meet. When speaking she would thrust her tongue into the open gap to pronounce the “s” sound instead of placing it on the proper spot on the roof of her mouth. Her upper jaw was protruding and when she wasn’t sucking, her mouth was often open at rest. Armed with very little knowledge but a mother’s determination and my husband by my side, I was adamant I would make Amaya stop sucking her thumb. I tried all sorts of things. I used putrid nail polish but that didn’t bother her, she’d suck it all off. Over the years, I purchased, not one, but two expensive plastic passive devices that trap the thumb to prevent sucking. But my kid was like Houdini! She could whip her thumb out of that thing in two seconds flat, have a few precious sucks and pop her thumb back in before, she thought, we’d noticed. It was plain to see we weren’t on the same side here. We would remind, remind, remind. But that only served to make her feel shameful and she’d suck
anyway, avoiding eye contact. All of our frustrations were building. All I could think was, as a mum AND a dental hygienist, I was helpless. What possible hope do other parents have? My research finally led me to a specific field called Orofacial Myology and I found a treatment for thumbsucking that actually worked. Research has found that when a child sucks their thumb or fingers, there are particular neurotransmissions that take place. Hormones like dopamine are released and the child feels a real sense of comfort and relaxation. Amaya wasn’t really misbehaving or disobeying me by sucking her thumb. There was a pay-off every time she did it that outweighed the negative reactions she got. I discovered that triggers such as blankets, toys and hair pulling also contribute to the sucking in many cases so until the trigger is removed, it’s very difficult for the child to stop their sucking. We thought the program was worth a shot. Amaya stopped sucking on the first day of treatment just after her fifth birthday. My husband and I were thrilled. The program was positive and exciting for her and, although she had one or two setbacks, not once did she give up. Her bite has gradually come together, her lips are now mostly closed at rest, and she is developing an attractive healthy face. Two years on, she is a bright happy child. What more could a parent want?

OBVIOUSLY, THERE ARE SOME PEOPLE OUT THERE WHO NEED HELP WITH ANGER MANAGEMENT.
I have to go to a ball. I have a dinner suit. For the past 12 months I have been getting away with a plain white business shirt and a long black neck tie. I reckon it passes but Linda thinks I have absolutely no idea. My younger daughter Abbie (just got home after having to walk back from Brisbane because she did not give me her iPod Touch after I bought her a new iPhone!!) agrees with Linda. My eldest daughter Emma has moved to Brisbane for Uni (or to see as many bands as you can possibly fit in a 12-month period) and demands to be left out of it. My son Andrew thinks it is all stupid unless it has to do with him getting a seat at the Cowboys Ball at the end of the year. So, I folded like a bad hand and I purchased a dress shirt with a butterfly collar. The decision now confronting me is which kind of bow tie to wear with the shirt. Do I do the bow tie which goes around the neck but is still essentially a clip on? Or do I go for the traditional bow tie and learn to do a proper bow tie knot? I spoke to Linda about it. I mean, I am an independent man and I am the man of the house. What I say goes, honest. But I
am a consensus builder. I like everyone to agree with me and I am prepared to argue non-stop until they do agree with me. I was hoping for the casual open neck butterfly collar and draped, untied and hanging around my neck and chiselled jaw line. I am still waiting on a response as Linda is trying to get me to develop my definition of “chiselled”. I think I will end up with a traditional bow tie, which I will learn to tie. I have been on the internet and it looks so simple, until you check out the comments. Obviously, there are some people out there who need help with anger management. But if I can teach myself a half Windsor, I can do the bow tie thing. I am not going to get into colours or cuff links. I am a traditionalist. Give me the ebony and gold shirt studs and cuff links any day. Put that with the black bow tie and black dinner suit with satin stripe down the leg of the pants and I am set like a dog’s foot in a rice pudding. I don’t hold with the country style string bow ties or outlandish colours either. I will also not stand for the piece of ribbon masquerading as a bow tie. I am hard but I am fair. See you at the ball!!

YOU HAVE YOUR FATHER’S EYES... Comparing offspring with each parent can be challenging if couples split.
EACH CHILD IS ALSO PSYCHOLOGICALLY HALF THEIR MOTHER AND HALF THEIR FATHER.
How often do you hear children being discussed in terms of likeness to their parents? For example, “you look just like your mother” or “you have your father’s dark hair”. From a newborn to a toddler to a school-aged child to a teen, we’ve all heard endless comparisons with various family members. Not always are the traits physical, as in looks, but they can relate to personality as well. You might hear: “You are just like your mother!” Or: “You are anxious like Grandma Burke.” We always look for comparisons and wrap a child’s identity up with their likeness to their parents. Each child is biologically half their mother and half their father. Each child is also psychologically half their mother and half their father. We tell them this, we talk about it, and so naturally, your child builds up a picture of themselves based on all these comments. So what then
happens when parents divorce? When one person is no longer desired/wanted/liked/spoken about. How does a child interpret this rejection of their biological and psychological halves? What was once oohed and aahed over, now becomes not wanted, and yes, children do see this reflected in their own selves. So this is where we as parents need to be careful. The damage that this can do to your child is quite a long list. Just to point out a few, we know it will impact on their future relationships (friends and intimate), how they manage conflict in the future, and how they solve problems. Damage to a child’s sense of self is not going to be fixed by a step-father or step-mother, should the future bring this. A father or mother cannot be replaced by an exchange model. Even if the new partner is a great person and step-parent, a child will never find the missing half of their identity in the new man or woman.

What’s In A Name? Well, if it’s baby names we’re talking about, there’s a whole lot more involved than you might think. Today, baby names are not only more varied and more creative, but they communicate more meaning too. By Rachel Licciardello Naming a baby is a no doubt a very personal experience; for many parents it’s a way of bonding with their child, of connecting their child to the world and a hope of instilling some of the characteristics they wish their child to have. (Sweet and beautiful? Isabella is perfect. Strong and determined? William is ideal. Wild and independent? Have you considered Ranger?) With our world being so interconnected through immigration, internet and media, it’s no wonder our naming choices have become more varied. Today, parents are faced with an ever-growing collection of socially acceptable names for their unborn child, with inspirations from colours, feelings, attitudes, adjectives, cities and countries, foreign cultures, fruits and even common nouns (think Pirate, Pixie and Brick). It seems the one constant though, through this increasing name diversity, is the desire for parents to choose a name with a personal significance. While that may mean parents take the more traditional path naming little Ethel after her great grandmother as a gesture towards family values, or get more creative naming him Cowboy because he did fantastic bull riding impersonations in mum’s belly during pregnancy, either way the focus is on the significance behind the name. For many of us, names were something we shared at school. There may have been three Jessica’s, perhaps four Michaels, a few Johns and a couple Rebecca’s in our classes. However, we’re more likely to find the current generation of babies will grow up to share their graduating class with a couple of Coopers, a couple Sophie’s and perhaps a William, a Ziggy and a Tatum. Not surprising, this reflects our changing society, which continues shifting its focus from fitting in to standing out, from being uniform to being unique. Like most parents-to-be, local couple Simon and Amanda Flay spent the

nine months leading up to the births of each of their five children searching for the perfect name. “Simon and I knew we didn’t want to give names that were too popular,” explains Amanda, who is mum to Harper-Leigh (9), Ava-Grace (7), Ashton (5), Noah (2) and Lawson (2 months). “At the same time though, we didn’t want names that were too out there, like Apple or something. We just wanted names that were special to our children. “When I told people the names I was considering leading up to Harper’s arrival, they responded, ‘Oh no! You can’t name her that!’” recalls Amanda. “That actually may have made me like the name even more,” she laughs. “I do think I’m drawn to names that are slightly more unusual.” According to Queensland Government’s Department of Births, Deaths and Marriages, the most popular baby name for girls across our state in 2011 was Sophie (only just topping Ruby in the last days of December),

In fact, not one of 2011’s top 25 girl names appeared in 1930’s top 100. Yet seven of Queensland’s 25 most popular baby boy names for 2011 showed up in the 1930 list – William (number two on records), Jack, Thomas, Alexander, Max (or Maxwell in 1930), James and Charlie (or Charles in 1930) – proving that boys’ names stand the test of time more than girls’ names do. Over the years, Amanda has recognised the shift in baby naming trends; “I think it’s much more common today to give names that are less common. After Harper was born, I was often asked how to spell her name but I don’t really get that anymore.” While the name Harper has experienced a boost in popularity thanks to celebrity babies Harper Seven (born in
2011 to Victoria and David Beckham) and Harper Rain Sinclair (born in 2010 to Natalie Bassingthwaite and Cam McGlinchey), and the names Ava and Noah have made Queensland’s most popular list in recent years, Ashton is the only Flay child to have shared a class with another child of the same name. While it is hard to keep track of all the baby name ‘trends’ that come and go, according to numerous baby naming websites, the next ‘new’ trend to take off in 2012 is a salute to the American western, with names like Bandit, Wyatt, Carson, Cody, Boone, Weston, Colton, Chase, Maverick, Colt and Gauge. As well as ‘fierce’ names like Bear, Fox, Wolf, Hawk and Wilder. (And no, these aren’t all little boys’ names.) But whether parents buck the trends and name their baby John, or stay on trend and name him Buck, the one expectation of today’s new parents is that they will give their child the gift of a story to go with their name. Which, surely, is priceless.

Sometimes assistance is needed from a veterinarian to save a pet from suffering. Often an elderly or ill pet may pass away peacefully at home. With your capacity to love, there is also the capacity to grieve.
A PET’S DEATH IS SIGNIFICANT Some may say “it’s just a dog or cat”. Your pets are family members so it’s important to show your grief and express your feelings. Memories are the best legacies after the death of a pet so talk about them and embrace them because your pet entertained, comforted, and always loved you. If your memories bring laughter, smile. If they bring sadness, it’s okay to cry. Each family member probably had a unique relationship with the pet. Allow for different emotional responses. Encourage children to express their sadness and create a memory book or painting.
SHOULD YOU CHOOSE EUTHANASIA? This question is a very difficult one. Yet, this is often the right decision, particularly if your pet is in agonising pain or their quality of life has deteriorated. Sometimes the cost of treatment may become prohibitive. Talk to your veterinarian. Humane procedures can end needless suffering for both you and your pet. The intravenous drug used for euthanasia does not cause pain. After you talk with your vet, make your decision on your own good judgment, based on the reality of the situation. Some owners want to be present when their pets are euthanised. Others do not. Do what is right for you and your family. Spend some special time saying goodbye to your pet. Hold him, talk to him, and tell him you love him and will miss him.
RITUALS CAN BE HELPFUL Encourage your family to have a “memory” ceremony. Design a ritual that creates a focus for each member to contribute to the occasion. You need time to grieve and heal when your pet dies.

If you’re looking to enhance your grin, start by taking a look at what you eat and drink. Basically, anything that will stain your clothing will stain your teeth. Follow these tips for a whiter smile: • Minimise tea, coffee, cola drinks and red wine. • If possible, drink through a straw to bypass your teeth. • D rink lots of water and vigorously swish a few mouthfuls after eating or drinking. • Brush and floss as soon as possible after eating – especially after dark foods like beetroot, blueberries and raspberries. • Avoid snacking between meals. • Avoid prolonged sipping, unless it’s water. • Eat lots of raw veggies like carrots, cucumber and celery. Now, I love having a white smile and I love this diet, but I also love coffee and the odd glass of red. Tending to your oral hygiene while in a restaurant can be a little inconvenient and indecorous. And, honey, there’s no way you’re going to get me to sip my espresso or Shiraz through a straw! So, the other day, when my dental hygienist was polishing my precious porcelain veneer pearly whites, I asked her how to avoid the mid-dinner purple smile, purple lips and – worst of all – the evil Dali-esque purple whiskers. Here are some White Smile Diet tips for the rest of us: • Oral-B Brush Ups are textured teeth wipes. The slim pack fits easily in your handbag or man bag, purse or wallet. Just rip one out, pop it on your finger, and you can give your teeth a quick brush and polish. Follow up with a good rinse of water. Brush Ups are also excellent for giving the lips and wine whiskers a quick buff! Girls, you can then touch up your concealer and lippy, as required. Boys, you may like to touch up your lip balm afterwards. You’ll find Brush Ups in your supermarket or pharmacy. • Carry a travel toothbrush, toothpaste, floss and compact mirror in case of food debris/staining emergencies. It’ll take less space than your mobile phone and beats buffing your teeth and lips with a serviette or flossing with a bank note. • Follow the French and Italian tradition and eat salad AFTER your main meal. It’s a great, healthy way to prevent staining. Just watch out for the “greens in-betweens”. • Drinking milk before a meal can provide a protective coating for the teeth, preventing acid damage and staining – and a milk moustache is much better than Dali whiskers. SERVES 15 15 small artichokes 500ml vegetable oil 1 bay leaf 2 fillets Salted Sardines (good-quality tinned sardines can also be used) 200g breadcrumbs 5 tbsp chopped flat-leaf parsley 1 tsp dried oregano pinch of chilli powder 2 garlic cloves, chopped
Filled artichokes ‘in umido’
Clean the outer leaves of the artichokes and remove the cores. Put the oil, bay leaf and sardines in a pot with the artichokes and 1 litre of water. Simmer for about 1 hour over low heat, or until the artichokes are tender. Set aside in the liquid until cold and then drain the artichokes. Reserve the cooking liquid. Preheat the oven to 180ºC.

Place the breadcrumbs, parsley, oregano, chilli powder and garlic in a bowl. Mix well. Stuff the artichokes with the crumb mixture and put them in a deep baking tray with 300ml of the cooking liquid. Bake for 10–15 minutes, or until the breadcrumbs are golden brown.
recipes SERVES 7 250g chestnut flour 250g ‘00’ flour 5 eggs ½ tbsp olive oil 1.5kg oxtail, cut up sea salt and freshly ground white pepper 2½ tbsp olive oil 5 small shallots, diced 1 large carrot, diced 3 celery stalks, diced 2 garlic cloves, diced 5 bay leaves 100g Pancetta diced 250ml white wine (chardonnay if possible) 2.5 litres chicken stock 150g parmesan, grated 50g chopped flat-leaf parsley

Mix the 2 flours together on a work surface and make a well in the centre. Break the eggs into a bowl, add the oil and whisk. Pour the egg mix into the well in the flour and combine. Knead the dough for about 5 minutes, wrap it in plastic wrap and leave for 20 minutes. Preheat the oven to 180ºC. Add the oxtail pieces to a large baking tray and season with salt and pepper. Bake for about 45 minutes, or until golden brown (most of the fat will melt off). In a large pot, add the oil, shallots, carrot, celery, garlic, bay leaves and pancetta, and cook over medium heat for about 8 minutes, or until the vegetables start to caramelise.
Add the oxtail and cook for another 2 minutes, then deglaze with the wine. Cook until the wine has almost evaporated, then add the chicken stock and simmer for about 3 hours with a lid on. Once the oxtail falls off the bone, set it aside to cool down. Remove all the meat and discard any excess fat, putting all the meat back into the sauce. Set aside. Roll the chestnut pasta into thin sheets on a pasta machine between settings number 5 and 6. Then cut into pappardelle (flat wide strips) about 2cm thick. Cook the pasta in boiling salted water over high heat for 3–4 minutes, or until al dente, then strain. Add the oxtail ragu and mix well. Sprinkle with the parmesan and parsley, and serve immediately. NEW RESTAURANT FOR JUPITERS Customers walking into Jupiters’ hotel lobby will notice a new black wall. Behind that, a major transformation will soon take place as construction begins on a steakhouse restaurant which will feature one of the finest cuts of beef in the world on its menu. The restaurant, costing more than $2.5 million, will be named Kobe (pronounced Ko-bay) after the Japanese region which raises the most sought-after class of Wagyu cattle in the world.

BUSINESS PARK REVITALISED A $2 million makeover has begun as more than 50 local contractors revitalise the newly-named 547 Industry Park at 547 Woolcock Street (formerly Insight Commercial Park). New owners, the Melbourne-based Gibb Group, have injected more than $500,000 into local businesses with the bulk of work – including a $1 million access road from the Bruce Highway – still to be carried out. National telecommunications firm VisionStream and printing, coding and tagging company Dymark have been secured.
REEF HQ RENOVATIONS The iconic viewing tunnel at Reef HQ Aquarium is undergoing major renovations. One of the acrylic sections on the tunnel is being replaced in a complex operation that’s been two years in planning and involves products and expertise from around the globe. Because it’s not possible to drain the entire 2.5 million litres of water in the Coral Reef Exhibit, a large cofferdam is being constructed to hold it back. Visitors can still view the exhibit from six large viewing windows.
LOCAL CREDIT UNION INVESTS Vacant land at the corner of Nathan Street and Ross River Road will be transformed into a major facility for Townsville when Queensland Country sets up its state-of-the-art head office. Queensland Country Credit Union CEO Aileen Cull says site development is expected to start late this year. Early-stage plans for the land involve a multi-million dollar complex with 4000sqm of office space to accommodate more than 100 Queensland Country staff while improving the visual appeal of the area.
NEW PREMISES FOR CENTACARE Centacare, the Catholic Diocese of Townsville’s community services agency, has expanded and renovated its premises at 410 Ross River Road, Cranbrook. The building now has a larger suite of counselling and meeting rooms, CC’s Café
– a coffee shop that’s open to the public, and a friendly, welcoming reception area. Centacare assists individuals, families and communities with relationship counselling and education, parenting programs, gambling counselling and community education, and much more.

Capital Gains Tax (CGT) in respect of real estate transactions.
IF A DWELLING CEASES TO BE YOUR MAIN RESIDENCE YOU MAY CHOOSE TO CONTINUE TO TREAT IT AS YOUR MAIN RESIDENCE, PROVIDED THAT NO OTHER DWELLING IS TREATED AS YOUR MAIN RESIDENCE.
There are many factors to be taken into account in determining whether any CGT is owing in respect of real property. Our first point of call is to always refer clients to their Accountant for professional advice in respect of the CGT owing, if any, the type of transactional records required, the type of asset being sold, the length of time the property was owned, and funds spent on the property. Our clients are generally concerned about the issue of possible Capital Gains Tax (CGT) in respect of real estate transactions, however CGT should be considered when selling any form of asset. We won’t go through the specifications of a Capital Gains Tax (CGT) events here but will deal generally with real estate transactions as a rule. The CGT system taxes receipts of the individual or entity that have accrued from increases in the value of the asset being disposed of. Individuals or entities that are selling any property they own including their home should turn their attention to possible CGT implications. There are specific CGT provisions that apply to a dwelling that is an individual’s main residence. Pursuant to section 118 -110 of the Income Tax Assessment Act 1997 a capital gain or loss could be fully disregarded where a dwelling (as defined in the Act): 1. Was owned by an individual; 2. Was the person’s main residence throughout their ownership of it; and 3. The person did not acquire title to it as a beneficiary under a deceased estate or the interest did not pass to the person as trustee of a deceased estate (other exemption
may apply in this case). Should the above be satisfied the Australian Taxation Office (ATO) take the view that the main residence exemption is mandatory. If a dwelling ceases to be your main residence you may choose to continue to treat it as your main residence, provided that no other dwelling is treated as your main residence. If the previous home is rented out, the maximum period that the dwelling may remain a main residence is 6 years. Example, Michael lives in a house for 3 years and is then posted to Malta for a period of less than 6 years. On his return he moves back into the house for one year at the end of which he sells the home. As Michael has not treated any other dwelling as his main residence he may choose to treat this house as his main residence during his absence. If the dwelling is not rented out it can be treated as a main residence indefinitely. Michael may also be entitled to a partial exemption from CGT if the residence is used as a rental property. If Michael changes his main residence he may still be able to treat both the new and his former dwelling as his main residence for a maximum of 6 months after the change or until an earlier sale or disposal provided he satisfies the relevant conditions. CGT can be a complex area and each person’s circumstances may vary, we strongly recommend that you consult your Solicitor and Accountant regarding the best way to dispose of a capital gains taxable asset. I love Townsville. I moved here in 1994, having never before been north of Rockhampton. I had a 12-month-old daughter and we were expecting our second child. You see people you know when you go shopping. You can make friends quickly because most of us are all originally from somewhere else. We are a highly mobile population and as such, friends move away and come back. The thing I like most about Townsville is that it is a family town. When we arrived we did not know a soul. Through work, play groups, and service and sporting clubs, we quickly established a group of family friends with whom I am still close today. Like our lifestyle, this city is open, comfortable and casual. It is a place where you can spend your entire life or just a few years. It is a place of great schools and the home to the only university in Australia which was founded on life and education in a tropical world. It is a place of high commerce as well as shorts and thongs. Townsville is what you want it to be. I urge you to make the most of it.

For the 144,000 of us who were living in Townsville in 2001, do you remember receiving compliments from visitors about how great our city had become? Football and basketball fans visiting Townsville to support their teams, international tourists enjoying the Chamber Music Festival or even the mate from Cairns secretly checking if a job was available here, made observations to us that woke us up to how great our City was. That reflection of a City worth being a part of is also apparent in our property market. More than 20% of all sales of residential property in Townsville, since June 2010, have involved purchasers who live outside the Northern region. When these sales are broken into sectors, it becomes evident that more than 30% of all unit sales involved purchasers from outside North Queensland. The percentages are higher for newly created properties with the statistics for vacant residential land sales indicating that out of region purchasers were responsible for 37% of newly developed lot sales. Anecdotally, more than 40% of new unit contracts involve
purchasers who live outside North Queensland. Like most other Australian cities, our annual residential sales volumes are weak in comparison with the annual volumes achieved since 2001. Local purchasers may perceive good value in established properties and distressed stock, rather than new product. We are nearing the end of the supply of distressed stock, including units, so the options for local buyers are likely to be different by the end of 2012. Presently, some developers are using investment marketing groups to sell new stock, so the investor influence is quite high. It is encouraging though that the investment marketers have developers from across Australia pursuing them and many of the investors they market to have the choice of product from Capital Cities to apparent ‘boom’ towns. Yet many choose Townsville. Our median house price is $370,000 with a median 3 bedroom house rent of $350 per week and low vacancies. This compares with Cairns at a $355,000 median house value and $320 per week rent with slightly higher vacancies, and Mackay with a median house price of $425,000 and median 3 bedroom house rents of $460 per week. While North Queensland based buyers may be concentrating on affordable, established product, the non local purchasers are supporting our new product and we are relying on their positive perception of our City to keep progressing development. It is nice they feel that way about us.

To buy an investment you will most often need to access equity within another home. There are two ways of doing this – ‘cross-securitisation’ and ‘separately securitised’ – but only one puts the power in your favour. Correct loan structuring is paramount. Your initial structure can have a huge bearing, not only on the stability of your portfolio but also the flexibility of your overall financial circumstance. There are also tax implications and benefits to a correctly established loan portfolio. This can be done in conjunction with your accountant and set up with their instruction in mind. More on the two modes of loan structuring… CROSS-SECURITISATION A common structuring issue is the ‘crosssecuritisation’ of the property being purchased with one which is already owned. Almost routinely a bank’s investment structuring instruction is to ‘bundle’ or ‘cross-securitise’ your houses together to help simplify the loan process – and help protect the bank’s position. This will mean you have two loans each secured by two houses. The potential problem with this structure going forward is, if you plan to sell one of the homes the bank can – and will most likely – dictate terms on where any proceeds of your sale may be placed. For example, they may be used to lower your other loan rather than go towards your trip to Rio. SEPARATELY SECURITISED If, however, your loans are ‘separately securitised’ each loan is secured by just the home that was purchased and the
difference or deposit is simply a loan written as an equity draw from the first home (also tax-deductible if buying an investment). This means, upon sale, once you clear the loan/s secured by that home, your obligation is done with the bank – and off to Rio you go! There are very few circumstances where ‘cross-securitisation’ is the only option contrary to what the bank may tell you. In both cases the loan amount you need would be the same and in some cases lower with ‘separately securitised’. However, only the ‘separately securitised’ option puts the power and flexibility back in your favour rather than the bank’s. The investment loan process itself can be daunting, from the range of products on offer to the different policies, the hassle of meeting with banks and, ultimately, deciding which loan will best suit your needs. THERE IS A GREAT DIVIDE BETWEEN INVESTORS WHO FAVOUR PROPERTY AND THOSE WHO FAVOUR SHARES. In reality, however, there are pros and cons to both asset classes. Both certainly have a good track record in terms of returns, with shares and property beating more conservative asset classes such as cash or fixed income for the past 10, 20 and 25 year periods, according to research by global financial services firm Russell Investments. Russell Investments’ research highlights that in the longer term, shares and property deliver similar returns and chosen well, both can provide very lucrative returns at that. That said, fundamental differences between the two asset classes can have a major impact on their overall investment potential. One major difference to keep in mind is the opportunity for leverage. Generally, loan to valuation ratios (LVRs) for property are much higher than those for shares. For property, you can borrow as much as 100 per cent of the property’s purchase price while for shares it is much harder to borrow at a high LVR.
For some blue chip shares, investors can borrow up to 75 per cent LVR, but for many shares the opportunities for leverage will be significantly lower or nonexistent. In other words, the power of leverage is much greater with property, which means you can maximise your dollar further. For example, with $30,000 and a 95 per cent LVR loan, you could potentially purchase a property worth $600,000. Without the opportunity for leverage your purchase potential for shares could be limited to just $30,000. Another significant difference is the high transaction costs associated with property, which makes it a much less flexible asset than shares. A share transaction can cost less than $20 a pop and can be executed in a matter of minutes. Shares might therefore be a better choice for investors who want or need access to their cash at a moment’s notice.
But while property may have limitations due to its transactional requirements, it does offer greater freedom and control in terms of being able to add value. The value of a share is at the mercy of a company’s performance and the market’s response, but savvy investors can use renovation to add value to an investment property. Moreover, property’s high transaction costs make it less subject to volatility. In just one day, a share portfolio can shrink dramatically. Because shares are so easy to buy and sell, investors are often quick to offload them during times of uncertainty. At the end of the day, your own individual goals and timeframes should influence your asset selection, as will your comfort and familiarity with each asset class and your motivation and ability to learn more about both. Irrespective of your preference, you’ve got to select well. This means due diligence to ensure you get the best possible return, taking into account your risk profile, financial position, timeframe and personal goals.

INVESTOR’S GUIDE TO TOWNSVILLE What’s the most effective way to start your property portfolio? Purchasing a home via private treaty or trying to snag a bargain at auction. This old debate continues to divide investment experts. In fact, both options have their benefits and their drawbacks, so it pays to understand how they both work and what you need to consider when purchasing your investment. While sometimes you may have a choice about which path to take, quite often you will have very little pulling power or none at all regarding how a property is sold. So it’s essential you know what’s what.
PRIVATE TREATY – WHAT YOU NEED TO KNOW ‘Private treaty’ simply refers to the process in which the home buyer and vendor meet on an agreed price and is the most common property transaction process used in Australia. Once the home buyer and vendor have agreed on a price, a Contract of Sale will be exchanged. This contract will outline the terms and conditions for the sale and will detail any special sale conditions, required deposit fee and length of the settlement period. It is important to have the Contract of Sale reviewed by your legal representation to ensure from the outset that there are no elements that may work against you – or even that might be illegal. From this point, your solicitor should be involved at every stage of the purchase process. After both parties have agreed on the terms and conditions detailed and the contracts have been exchanged, a settlement period of four to five weeks will follow.
The length of this period can be negotiated by the parties. It is important to examine and assess the property with a real estate agent or legal adviser just prior to settlement to ensure all details of the property are accurate, no fixtures and fittings included in the contract have been left out, and that there are no other nasty surprises.
AUCTION – WHAT YOU NEED TO KNOW Unlike purchasing a property via private treaty, an auction is a public event at which multiple home buyers bid against each other to secure the best price for the property. An auctioneer will oversee the bidding until the amount offered by the highest bidder is acceptable to the vendor. If the highest possible bid is deemed insufficient by the vendor, the property will be ‘passed in’ and the property will remain on the market. An auction is a fast paced and exciting way to purchase a home, but there are several issues of which you need to be aware. It may be difficult not to get caught up in the heat of the moment, but when attending an auction it is vital that you know your limits and do not over commit on price. Remaining clear headed and in control is essential. If you have made a bid which has been accepted by the vendor, contracts will be exchanged immediately and you will be required to pay a deposit. There is no ‘cooling off’ period when purchasing a property via auction, so be sure to assess the property, including having building and pest inspections done, prior to attending.

Buying into a multi-dwelling environment is very different from buying a house and it’s important to consider this before signing on the dotted line. A strata scheme allows individual ownership of one part of a property, i.e. an apartment, combined with shared ownership of the rest of the property. The shared ownership is in the form of a legal entity known as the body corporate or owners’ corporation (or occasionally some other title), depending on where you live and the type of scheme adopted by the owners. While there are also some multi-dwelling properties with company titles, where individual owners have shares in a company which owns the building, strata schemes have become the most common form of multi-dwelling property ownership. Buying into a strata scheme typically means you will own the internal walls, fixtures of your apartment and the air space within your walls, but everything else – windows, external walls, foyer, gardens and so on – is owned collectively. Your interest and rights in those collective aspects of the property will usually depend on your proportion of ownership within the building. While it might sound complicated, don’t let the idea of a strata scheme scare you. So long as you make yourself aware of your rights and responsibilities as being part of the strata and conduct a thorough inspection of the property’s strata standing, a unit or apartment can be a great investment.

amie Whincup is clearly a man-on-amission. He’s secured either the number one or two podium positions for the V8 Supercar Championship five years in a row and he’s the only modern driver to win the series in both a Ford and Holden. A firm Holden man now, he has this year’s crown in his sights, sitting on top of the ladder (at the time of going to print). But how does he maintain his fine form in a climate of constant mental and physical pressure? “The greatest pressure is actually what I put on myself,” the 29-year old openly reveals. “I have very high expectations of myself to do well and push myself hard, plus there are those outside pressures of wanting to do the best by my team (Team Vodafone has about 45 people), our sponsors and our fan base who are always cheering us on.” Jamie has a self-confessed fetish for anything with an engine – the faster the better. Off the track, besides kickingback “doing nothing” and spending time with his girlfriend Courtney (who he’d prefer not to talk about, but says they enjoy the fact that they both have their own lives and careers); he loves his

jet-skis (he zoomed over to the island to explore after last year’s race), wakeboarding and waterskiing. “I love racing and I love big, powerful engines,” he tells, “Obviously V8 Supercars have an enormous amount of power under the bonnet and being able to race them and win is definitely a feeling that money can’t buy… you’re on top of the world.” Jamie discovered very early on that roaring machinery was in his blood. Following his parents’ passion into motorsports; the young Whincup grew-up around race tracks, initially getting behind the wheel competitively aged seven when his late father bought him his first go-kart. “I’d be with Mum, Dad and my uncle at race tracks and that’s where I’d spend most, if not all, of my weekends away with the family competing, so it was a very healthy thing, as opposed to school parties and all the other riff raff,” Jamie tells. “I remember pretty much every race meeting we went to – there were plenty of funny events, but also ones that didn’t go that well where Dad and I didn’t speak on the way home, but that’s OK (laughs).”
Winning the 2008, 2009 and 2011 Championship Series (including claiming number one podium positions every year in Townsville); Jamie has come a long way since 2003 when he was dumped from the competition, then given a lifeline in 2005, which he used to secure Bathurst the following year in partnership with Craig Lowndes. He’s a firm believer in hard work and says one of his biggest lessons is to make the most of an opportunity when it comes. “You may think no one is looking at you, but you’d be amazed at how closely the top guys are watching… there’s definitely no substitute for hard work (later adding that ‘superstitions are a weakness’).” But for now, Jamie tries not to get too caught-up on reflecting on his achievements: he says it’s something he’ll fondly look back on at the end of his career; but at the moment it’s more about climbing that ladder. “I can’t look back because I’m still in battle and I’m hoping to add to a few of those records,” he states. Spectators will be in for a treat.

ark Winterbottom the FPR – Ford Performance Racing driver who’s taking this year’s competition by storm – is a man who fears spiders more than travelling at speeds in excess of 300km/h. So what happens if he discovered a spider in the cab while racing? “Well then I guess I’d be in trouble,” he laughs. Out for a bike ride with wife Renee and 14-month-old son Oliver in Melbourne savouring the unseasonably warm weather, he reveals the best part of snatching podium finishes is having his family by his side. “When I hold the trophy up Oliver puts his hands on it and claps when I do well,” Mark beams. “It’s just really good that out of all the results and success, and whatever you’ve had – good and bad memories – the biggest one is actually of having him do that and looking at his Dad in that position.” Like Holden opponent Jamie Whincup, Mark was practically raised track-side, with his father Jim the 1969 and 1974 Australian
Sprintcar Champion. “I started go-karting when I was 10-yearsold so for the past 21 years I’ve been around race tracks whether it’s V8s, go-karts or sprint tracks,” he explains. “When it’s been your whole life it does feel natural and normal and it’s where you’re comfortable, which is sort of good and bad in a way… it does feel like home.” At the time of going to print, ‘Frosty’ was third on the ladder and hoping to replicate his podium finishes in North Queensland (he won in 2010 and was third in 2011). “I’d love to win Townsville again – it’s one of the best marquee events we have. I’ve done it once and I’d love to do it again – you get a bit greedy I guess!” he smiles. “I love the competiveness of motorsport – it’s one of those things where it’s man and machine that you have to get right. Even if you’re the best driver, you don’t always win unless you have the best equipment, so it’s about trying to get the most out
of everything and working together with people to get the best end result. At the end of the day, racing at high speed is pretty much every bloke’s dream – it’s big adrenalin and a lot of fun.” With the obvious goal of taking out this year’s Championship, the seven-year-straight Ford driver has a contract with the manufacturer for another two years, which gives him a welcome degree of security in an industry that’s always on the move. “To live in your own country and race the highest category… people from all around the world are trying to come to this sport now, so it’s definitely something you wouldn’t want to leave in a hurry,” he enthuses. When asked if he had any tips for the young crop of drivers coming through, he pauses and replies: “Be kind to the old guys! Take it easy on us so we can keep our jobs for a little while!”

Same recipe into a new era The winning fundamentals remain in one of Townsville’s favourites. Convincingly established as one of our city’s best eateries; Michel’s Restaurant bid a fond farewell to one of its business partners and the restaurant’s namesake last month. But while head chefs and continuing proprietors Craig Smith and Jason Makara move into a new era, none of the fundamentals will change for the purveyor of award-winning fine dining. “Of course things have shifted slightly seeing as one of our partners has retired, but in terms of the day-to-day running of the restaurant, everything is moving along the same with the same top quality food and dedicated team of familiar faces,” Craig says, who has been involved with the respected Palmer Street establishment for four years, and fellow-chef Jason for 10 years. “We have the same philosophy that we’ve always had – providing the very best food and service; always with a personal touch.”
The restaurant successfully conveys a welcoming and friendly vibe (like you’re part of the family), which also extends to the staff; most of who have also been there for years. Carly Nielsen has been assisting to run the floor for three years where she welcomes long-term diners, and those who are just discovering the magic of Michel’s. “People always tell us they agonise over the menu because it all looks so good,” Carly reveals, highlighting staples like twice-cooked pork belly, duck confit and the seafood bouillabaisse – dishes that helped to secure a Chef Hat from the Australian Good Food Guide this year. “Once people try the food they are hooked… we even have travellers from Brisbane and Sydney coming back here every time they’re in town for a business trip.” Michel’s is similarly appreciated for its carefullyselected wine and beer list; with the venue
attracting wine makers and industry buffs to educate and entertain audiences (Stuart Blackwell from St Hallett wines was signing bottles at Michel’s last month – stay tuned for more wine appreciation events). This tireless pursuit of quality also translates into the catering side of Michel’s’ offering, with the team handling everything from two-person proposal degustation dinners, to weddings, balls, the races and – recently – 1000 people over four days for the Groovin’ the Moo music festival. “It’s all about complementing the restaurant and its style, but delivering exactly what the client needs,” Jason explains, who – prior to joining Michel’s 10 years ago – worked in Europe at fine dining and five-star establishments. “In the end, it really all comes down to attention to detail and consistency – that’s what always has people coming back, and we love to see them.”

Open daily for breakfast and dinner, the Aqua menu has been designed specifically to offer variety without compromising quality, and represents the best of North Queensland’s produce.
The breakfast menu features traditional items such as bacon, sausages, grilled tomatoes, eggs Benedict, pastries, a range of fresh and dried fruits and cereal, while the dinner buffet ensures that guests are spoilt for choice, with options such as fresh succulent prawns, mussels and fish and a wide range of salads and breads. The restaurant also features special dining promotions throughout the year including Father’s Day lunch, Christmas Day breakfast, lunch and dinner and the increasingly popular Seafood Spectacular. In fact, the next Seafood Spectacular date has been announced and will be held on Saturday 30 June. Featuring all the favourite seafood items including prawns, oysters, mussels, smoked salmon and whole fish, the buffet will also include bugs and the mouth-watering, hot from the grill reef and beef feature dish.
