brainchild of Alexander Baring, 7th Baron Revelstoke and Cyril Camus. Bonded by a love of nature, entrepreneurship and “l’art de vivre”, they have joined forces to bring something new and unexpected to the world of Irish whiskey. Alex Baring’s ancestral home is the peculiar island paradise of Lambay. Lying just three miles off the coast of Dublin, Ireland, it's also home to a herd of cattle, a circus of puffins and a troupe of wallabies. The entrepreneur Cyril Camus is fifthgeneration Maison Camus, that illustrious French family, famous the world over for their Cognac. Like Alex, Cyril is deeply rooted in his ancestral home, and Lambay Irish Whiskey directly benefits from Maison Camus' wealth of experience.

The Small Batch Blend is matured in Bourbon casks with a pleasant Cognac cask finish. For the Single Malt, Cognac casks are shipped from Maison Camus to the shores of Lambay. Here the Single Malt rests, exposed to the maritime winds and sea spray. Both whiskeys are crafted with Lambay Island Trinity Well Water.

The legendary House of Camus is behind the shaping, polishing and finishing of Lambay Irish Whiskey, with Monsieur Patrick LÊger as our Master Blender. The oak casks are our helpful and patient assistants in our pursuit of the perfect finish. Shipped to the shores of Lambay from the Camus cellars in Cognac, these casks have been carefully selected for their rich aromas by the Master Blender. Other allies in our quest for perfection? In the case of our Single Malt whiskey, the sea and maritime winds of course. The Lambay sea spray possesses notes of iodine, seaweed and salt. We have also learned to understand and assuage these elements to ensure a well-balanced pleasant finish. And for that special flourish, we take Lambay Island Trinity Well Water from Lambay’s own Trinity Well, to carefully craft this remarkable whiskey, perfectly enhancing its smoothness.

ur Single Malt Irish Whiskey is triple distilled and crafted with
Lambay Island Trinity Well water, finished in Cognac casks, and exposed to the bracing Irish sea air. This whiskey is as unique as the island itself.
Lambay Irish Whiskey Single Malt is a deliciously smooth unpeated whiskey. Its unique flavour can be attributed to first fill Bourbon casks. These casks were previously corn dominant and leave a low rye content that lends to its subtle sweet and vanilla flavours. The whiskey is then finished in Cognac casks exposed to the sea air.

sEASPRAY… A sublimely refreshing cocktail combining whiskey, lime juice, ginger syrup and orange blossom water.
MAKES 1 SERVING 1 tablespoon very finely chopped crystallized ginger 1 tablespoon sugar Lime wedge (for glass) 2 ½ oz. Lambay Whiskey (Blend) 1 oz. fresh lime juice ½ oz. ginger syrup ¼ teaspoon orange-flower water
Preparation Combine ginger and sugar on a small plate, rubbing together with your fingers to combine (should be sandy; this will help the ginger stick to rim). Rub the rim of the glass with lime wedge and dip rim into ginger mixture to coat. Combine whiskey, lime juice, ginger syrup and orange blossom water in a cocktail shaker; fill shaker with ice and shake until outside of shaker is frosty, about 30 seconds. Strain into prepared glass.

WHITEHOUSE... A NOD TO THE ISLAND WHITEHOUSE, WHICH STANDS PROUDLY AT THE HARBOUR. Combines whiskey, grapefruit juice, lime juice, agave and bitters with a sprig of sage to finish.
MAKES 1 SERVING 2 oz. Lambay Whiskey (Single Malt) 1 oz. fresh red or pink grapefruit juice ½ oz. fresh lime juice ¼ oz. agave syrup (nectar) 2 dashes bitters 1 fresh sage leaf
Preparation Combine whiskey, grapefruit juice, lime juice, agave, and bitters in a cocktail shaker. Fill shaker with ice and shake until outside is frosty, about 30 seconds; strain into a glass. Rub sage leaf between your palms until fragrant; float on top of cocktail.
