A Fresh Addition to the Valley
Eagle, Idaho, just got a little more delicious with the arrival of Paddles Up Poke, the latest location of the popular restaurant owned by Dan and Laura Landucci. Known for its healthy, trendy, and locally-sourced fare, Paddles Up Poke is a perfect fit for the vibrant community of Eagle. I had the pleasure of sitting down with Dan and Laura to discuss their new venture and the journey that brought them here.

Why Paddles Up Poke Chose Eagle
Dan explains, “Eagle was actually supposed to be our second location. We wanted to be here because it’s a great market for this type of food. There are a lot of healthy and trendy eaters in the area, which aligns perfectly with our focus. The river feel of this location and Eagle in general just fits well with Paddles Up.”

One standout feature of the new Eagle location is its patio. “We have an awesome patio with a waterfall, which is a perfect fit for the vibe we’re trying to create,” Laura shares. This serene setting is sure to make dining at Paddles Up Poke in Eagle, a delightful experience.

The Journey
Paddles Up Poke started in downtown Boise in 2017, and they recently celebrated their seventh anniversary. With five locations now in Boise, Nampa, Meridian, and Eagle, the Landuccis are looking to expand even further. “Our focus is now on franchising outside the Treasure Valley, possibly getting another store back in Sun Valley and other spots in Idaho, as well as the Pacific Northwest and hopefully nationwide,” Dan reveals.

Franchising And New Concepts
Dan and Laura are excited about the future. “We’ve hired a great franchise attorney and are in the final stages of getting all the legal work done. Our goal is to start selling franchises by the end of summer,” Dan explains. “We want to make sure that the first franchisee has the same experience as the 100th, so we’re taking our time to get it right. We’re also considering new concepts here in the Treasure Valley.”
Collaborations And Community Engagement
Paddles Up Poke is known for its partnerships with local businesses. “We partner a lot with The Stil Ice Cream, Proud Source Water and Sugar Whipped,” says Laura. “We value these relationships and are always looking to grow and collaborate with more local businesses.”
Menu Highlights
While poke bowls are the star of the show, Paddles Up offers a variety of options for every type of eater. “We have cooked options like barbecued pork, chicken, shrimp, and crab, as well as vegetarian options,” Dan notes. “A majority of our menu is gluten-free. Just let us know what you like, and we’ll create something special for you.”
Balancing Family And Business In Eagle
Balancing family life and running a business is no easy feat, but the Landuccis make it work. “We have three children and live in Eagle,” Laura shares. “I keep Dan grounded and handle the big picture stuff, like our business plan and long-term goals. Dan is involved in the day-to-day operations and works closely with our employees.”
