Ingredients

Ingredients

1 pound ground beef 1/4 cup each, chopped onion, green pepper 1 cup canned diced tomatoes 1 can tomato paste 1 tsp each, dried oregano, salt 1/2 tsp garlic powder 1/4 tsp each, sugar, pepper 6 ounces spaghetti, cooked and drained 1 Tbsp melted butter 2 egg whites, beaten 1/4 cup grated Parmesan cheese 1 cup ricotta cheese 1/2 cup shredded mozzarella cheese

Directions Cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in the tomatoes, tomato paste, oregano, salt, garlic powder, sugar and pepper; set aside. Combine the spaghetti, butter, egg whites and parmesan cheese. Press onto the bottom and up the sides of a 9-in. deep-dish pie plate coated with cooking spray. Top with the ricotta and the beef mixture. Bake, uncovered, at 350 degrees for 20 minutes. Sprinkle with mozzarella cheese and bake until cheese is melted and filling is heated through, about five minutes.

Directions Boil macaroni to desired firmness. Drain and allow to cool, then mix

with tomatoes, green onions, mayonnaise, vinegar, salt and pepper. Chill for at least

two hours, then add the bacon just before serving.

Ramen snack mix

2 packages ramen, broken into pieces 1 cup almonds 1 cup peanuts 1 cup cornflakes 4 Tbsp. vegetable oil 4 tsp. curry powder 1/2 tsp. cayenne pepper 1 tsp. salt 1/2 cup freeze-dried wasabi peas

Preheat oven to 400 degrees. Toss ramen, cashews, peanuts and cornflakes with oil until coated. Spread mixture in an even layer on a baking sheet. Combine curry powder, cayenne and salt and sprinkle over mixture.

Almonds add extra crunch Bake for 10 minutes, stirring twice in between, until golden brown. Stir in wasabi peas and let cool.

M

arch celebrates one of my favorite things – noodles! And since it is National Noodle Month, our Meals in Minutes page is dedicated to this celebration. I do love pasta for many reasons – it’s an easy meal, my family loves it and it can be used in many different ways in order to keep your weekly meal plan exciting. I usually make some sort of pasta dish once a week, whether the classic spaghetti and meatballs Jennifer Wing or something more “veggie-friendly,” like chicken Editor broccoli alfredo. But I’m always looking for something new to add to my “linguini lineup.” And, last year, I sampled something that I will certainly try in the upcoming months. In 2017 I attended a gathering of family and friends and sampled an unusual salad, full of freshness, crunch and – here’s the kicker – noodles, of the ramen variety. Brought to the party by a good friend of my parents, she was more than happy to share her recipe, which can be found below. So, if you are looking for something different to serve as a side to burgers or as a “dish to pass” for your own family gatherings, this might just fit the bill!

I am a yoga failure. Oh, I can downward dog and plank, and I can even do that stand on one foot thing for a limited amount of time. That stuff isn’t the problem. What I was unable to do was breathe and clear my mind. I thought a six-week yoga class would help me destress and to an extent I suppose it helped. I am literally more flexible, but beyond that -- meh. A weekly yoga session went something like this in Karen Bergamo-Moore my head: A mother’s Instructor: And a deep breath in and let it out. And perspective follow your breath. Breathe in as you stretch up and out as you bring it back in. The voice in my head (VIMH): Wait, I already breathed out as I stretched up. Can I hold my breath and catch up? Does everyone know I don’t know how to breathe? Great, I can’t even breathe correctly. Instructor: Clear your mind. Concentrate on your breathing. VIMH: Great. Back to my breathing. When did breathing become so complicated? Instructor: Let go of the thoughts of the day and be in the moment. VIMH: Did I mail my car payment? I put it in my purse, but did I mail it? I wonder if it’s too late to sign up for online billing? Instructor: And move slowly into the cat pose... VIMH: Is the cat’s vet appointment this week or next? I hope he doesn’t pee in the carrier this time. No wonder the cat is so relaxed. This pose isn’t too bad. Am I supposed to be breathing? I don’t think I was. Instructor: And move into downward dog ... VIMH: Can’t we go back to the cat pose? I’m not a dog person. Instructor: and rest into the child pose. VIMH: Does my child have enough money on his lunch account for tomorrow or is there PB and J in his future? Do we have peanut butter? Do we have bread? I better give him lunch money. Instructor: And now lay on your backs and breathe in ... And out ... VIMH: For an elementary school gym floor, it’s strangely comfortable. I hope they cleaned the floor recently. Probably best not to think about what’s on the floor. I should clean the kitchen floors this weekend. Is my floor at home isn’t this comfortable? Hey, I think I got this breathing thing down if I’m not trying to stand on one foot. Breathe in ... Breathe out .. Zzz

This game is part golf, part bocce, part bowling, where you hurl (underhanded) a small 28 oz. cannonball along a two mile “country road” and scoring is similar to golf - the least amount of throws needed to complete the course wins. Teams of four will compete against other teams to see who can cross the finish line in the fewest number of throws. Registration opens Feb. 1; cost is $100 per four-person team.

The competition is comprised of a junior level for fourth- through eighth-graders and a senior level for students in grades nine through 12. Teams consist of one or two students. Any students that are interested in participating in the CNYSEF are not required to have previous science fair experience with CNYSEF or any other science fairs. Nearly $200,000 was given out in scholarships and prizes in 2017, and the same is expected for 2018.Admission for the program is free. Projects are open for public viewing following judging.
