With the very high demands placed on chefs for vegetables, organic vegetables do pose a problem as they do not last as well and in effect the moment you put them in a cold store you give them a ‘big shock’, so when they are taken out for use the quality is not up to the standards required but the taste is. Frozen fruit. Organic soft fruit has a very short

shelf life and season so the use of frozen organic soft fruit is an ideal compromise for deserts, smoothies and mixing with yoghurt and dried cereals for a very healthy breakfast. During the season more varieties are available. Passage Vert. Passage Vert is a totally organic butcher and shop, they supply only French reared animals and all the butchering is done on site in Aix-en-Provence. Fish. Organic fish and Wild fish - An EU directive has decreed that nothing captured or harvested from the wild can be labeled as ‘organic’. Currently in Europe, only farmed fish, namely Salmon, Trout, Sea bass and Snapper (Daurade), can be given the organic label. In conventional fish farming chemicals and feed are pumped into the water in order to get

the largest fish in the least amount of time. Fortunately many fish farms are recognising the financial, as well as ethical, benefits of going organic. Certification bodies are currently working on this area, with issues to contend with such as: * Pollution levels in the sea. * Over-fishing and depleted fish stocks. * Environmentally aware fishing techniques. * Pesticides treatments in conventional fish farms.

We have a full selection of Oriental and Indian products. Unfortunately most are not available with Organic certification, a lot of MSG is used. We do though have a few items which are organic like miso, seaweed and several others. True Indian cuisine is a far cry from what we may be used to when dining out. It boasts healthy preparation techniques and ingredients including phytochemicals like allium compounds, carotenoids, coumarins and flavonoids. The Asian organic food industry is

rapidly increasing, the Asian food industry boasts over 4 million hectares of certified organic farmland.

In organic snacks all the ingredients are simply prepared to preserve their goodness and accentuate their natural flavor. They also use less salt as the flavor is already in the natural ingredients used. Organic chocolate for both cooking and as a popular treat is created using cocoa beans that have had no heavy pesticide spraying and many products claim to be a fair trade product due to the economics behind the farming. We offer a selection of different types of snacks available, but, as

Gluten is a protein found in several cereals including wheat, rye and barley. Foods containing these cereals or their derivatives, such as flour, starch, bread, pasta, biscuits and cakes, all contain gluten. Gluten may also be present in less obvious foods, such as sweets, puddings, preserved meats, stock cubes, etc. Gluten-free wheat starch is produced by washing gluten out of wheat flour. It can then be used in a gluten-free diet. Foods made from naturally gluten-free ingredients include rice flour, Soya flour etc (these are by their nature free from wheat as well).

Organic olive oil. Olive oil is one of the most commonly used ingredients in all forms of meal preparation - and so if you want to truly eat organically you'll want to be cooking with organic olive oil. Most organic olive oils also proclaim themselves as ‘cold-pressed’, meaning they are picked and crushed by large stone rollers - without the use of any mechanical machinery or unnatural processes. Organic herbs and spices. Herbs have relatively large surface areas, all the better to absorb with! Most conventional herbs and spices are irradiated and farmed with the use of pesticides that are present in quantities that you don't want to think about. Fortunately, organic herbs and spices

Organic wine. Organic wines are made from grapes grown in organic vineyards, and are processed using methods that keep chemical intervention to a minimum. This means that, strictly speaking, organic wine is not necessarily totally organic. Sulphites are needed to protect growing grapes from fungal attack, to preserve and stabilise wine in the bottle, and are used in both conventional and organic wine production. The difference lies in the fact that organic producers keep the use of sulphites to a minimum, with levels approaching a third of those used

in conventional wine production. The lower levels of sulphur are suspected of being the reason why organic wine has a reputation for being hangover-free. Organic spirits. The production process for organic spirits does not differ widely from conventional production. The main difference lies in the use of organic raw materials.

Beer. As in all other areas of organic food and drink consumption, the demand for organic beer, lager and cider is booming. Organic beers and lagers are starting to appear on supermarket shelves, so it is no longer necessary to hunt out a specialist supplier, although specialists are likely to have a wider and more varied range of organic products for you to choose from. Cider. Organic cider is made in largely the same way as conventional cider. The difference is that organic cider must be made from apples grown in

organic orchards, and any additives must be approved by the Soil Association or must themselves be organically produced.

Organic sodas and fizzy drinks consist of water flavoured and sweetened with natural organic ingredients. Only natural organic preservatives and sweeteners are allowed. These include two naturally occurring preservatives: ascorbic acid (vitamin C) and tartaric acid (sodium tartrate, which occurs in grapes) and sweeteners such as honey, apple juice and agave syrup, as well as ordinary sugar. The list of available drinks grows as the summer begins, so please ask us for the list of new drinks which are available.

Today’s energy drinks usually contain caffeine, B vitamins and herbal ingredients; most contain sugar but there are some sugar-free alternatives on the market. You will also find ingredients such as ginseng, guarana, taurine, maltodextrine, creatine and ginkgo bilboa as well as others. The average energy beverage contains about the same amount of caffeine as a single cup of coffee, Red Bull contains as much caffeine as two cans of coke or Pepsi.

Roughly 70% of an adult’s body is made up of water

A healthy person can drink up to 3 gallons of water per day. Drinking too much water too quickly can lead to water intoxication. Water intoxication occurs when water dilutes the sodium level in the bloodstream and causes an imbalance of water in the brain. We are more than a little used to having a whole chemical arsenal of weapons at our disposal to remove the grime we see and what we think is there. Some studies have formed a link between the rise of ultra-clean environments and the incidence of asthma and allergies. Anti-bacterial agents are killing the very things we need to be healthy, plus the chemical are then washed away into the earth which has to find a way of coping. More than this, we are filling our environments with chemical residues that we then breathe in or

absorb through our skin in quantities that would cause a public outcry if they escaped from a chemical factory. Today though, a wide range of products is available that contain dramatically fewer noxious ingredients. Whilst most of these cannot be described as 'organic' in the true sense of the word, they are much closer to the ideal than standard products. You can tell the difference immediately between 'mountain fresh additve 324b' and a citrus essential oil.


We have a small range of cooking aids for the chef. This is an area which is growing slowly because our requirements are hard to achieve without using chemicals that is why there is still no biodegradable cling film on the market. We can offer though recycled products that are guaranteed 100% unbleached or they use 100% recycled materials in the manufacturing. “natural and organic are not the same concept�

Our bodies have to break down, detoxify and excrete any substance we put into them. This is of particular concern for young babies and children whose organs of elimination are not fully developed. Be aware also that ‘natural’ and ‘organic’ are not the same concept. ‘Natural’ can apply to ingredients derived from petrol as much as from plants. ‘Natural’ also does not guarantee the absence of environmentally damaging herbicides, pesticides or solvents in growing or processing of cosmetic plant ingredients. The words ‘organic’ and ‘natural’

are used liberally. At present there is no EU certification label that covers this area and there are many different labels making their own regulations and certifying products to their OWN organic standards. There can also be a large difference between a beauty product that is ‘certified organic’ and one that is ‘described as organic’.

Florame. Florame specialise in aromatic raw materials, manufactured using a combination of traditional methods and the latest technology. Candles can create a lovely ambiance but what do they contain? Simply speaking as the candle burns, it releases dirty soot containing submicron-sized particles light enough to remain suspended in the air for considerable time, and small enough easily to be absorbed into the body once inhaled so, what’s in candles? Cadmium. Inhaled cadmium is carcinogenic. Overload can cause yellow teeth, dry skin, chronic bronchitis and fatigue. Toxic to liver, kidneys, bones and testes, as well as disruptive to the immune, hormone and cardiovascular systems.

Recycling is the easiest way for us to do our bit to help save this planet. By buying recycled products we are helping this industry to continue to flourish, improve its methods and ultimately make a difference. Paper is the easiest material to recycle. Local authorities are commited to collecting our recyclable material, i.e newspapers. The paper is then sorted and delivered to a paper mill, water is added and this is then turned into a pulp. This is then screened, cleaned and de-inked through several processes. It is then ready to be re-made into new paper products

such as newsprint, cardboard, packaging, tissue and office items. We offer Cyclus offset paper in off white which is made by a mill designed specifically to manufacture high-recycled content paper with a chlorine free process, for the person who wants pure white paper we have the Evolve White which is made from recycling the offshoots of normal white paper, both are excellent quality and used extensively in the printing business. We hope to offer shortly not only paper and envelopes etc but a range of energy saving gadgets.
