he Atrium building in Faro – once home to a popular cinema and shopping centre– is to reopen as a four-star hotel with 83 rooms. Says national tabloid Correio da Manhã, the building has been taken over by Humbria Investimentos SGPS, a company with “experience in the property and hotel businesses, especially in Albufeira”. The plan is to turn it into a luxurious five-storey hotel, with 83 rooms, space for three retail outlets and an outdoor pool. Regional news website Sulinformação adds that the building “was bought for around €2.3 million, the asking price of previous owner Millennium BCP bank”. Speaking to Sulinformação, mayor Rogério Bacalhau said his council has approved the project and that he believes “construction could begin very soon”. Located in the heart of town on Rua Santo António, the building has been virtually abandoned since the mall that operated inside it closed in 2009. It reopened briefly during the last two Christmas seasons as a “creative centre” with workshops, exhibitions, pop-up shops and themed markets. Before being turned into the Faro Atrium shopping centre in 2005, the building housed the wellknown Cine-Teatro Santo António.

est-selling Belgian newspaper rates Algarvian wine ‘best in the world’ Belgium’s most popular newspaper Het Laatste Nieuws has rated an Algarvian wine as the best from 100 wines from around the world. The Al-Ria red 2015 wine, by Casa Santos Lima, was given the highest score from the 100 international wines by the news-paper, which has around one million daily readers. The rating was carried out for a supplement and compared wines selected by the seven biggest supermarket chains in Belgium for their respective promotional wine fairs. On top of rating the Algarve wine the best in the world, the newspaper also made special mention of its price, for retailing at around €3.99 a bottle.

ouse prices in the eurozone were reported to be up by nearly 3 percent in the second quarter of 2016 when compared to the same period last year, according to Eurostat. The highest annual increases in eurozone house prices were recorded Austria (9 percent). Outside the euro area, the United Kingdom (8.8 percent), Sweden (8.7 percent), Hungary and Latvia (both 10.3 percent) all saw significant price rises. In Portugal, the upsurge in house prices was a dramatic 6.3 percent on average, against the eurozone average of 2.9 percent. For every quarter from July 2015 to June 2016, prices in Portugal have been on the rise. Property in neighbouring Spain was also on the rise. An annual increase of 3.8 percent was recorded for the three months to June this year. This followed a regular pattern of increases for all quarters of the last year. Both Germany and Ireland had a 5.3 percent annual increase, while French property values increased by just 0.8 percent. The greatest falls in prices were experienced in Cyprus (-8.9 percent) and Italy (-1.4 percent).

DIRECT FLIGHTS BETWEEN PORTUGAL AND CHINA BEGIN JUNE 2017

A

direct air link between Portugal and China will be launched next June. The news came following the signing of a protocol between Chinese group HNA, which will run the route, and Turismo de Portugal. The route will boast three to four weekly flights and is expected to help boost the number of Chinese tourists in Portugal. According to data cited by Lusa news agency, the number of Chinese tourists who visited Portugal from January to July 2016 grew by 21.6% compared to 2015, rising from 87,000 to almost 106,000. “This direct air link is strategic to the development of the tourism sector in Portugal,” said tourism boss Luís Araújo, who stressed how important it is to have Portugal directly linked to “one of the main tourist markets in the world”. Lusa says that HNA – a shareholder of the Azul airline which is controlled by one of the owners of Portuguese airline TAP, David Neeleman – obtained authorisation to launch the route at the beginning of June this year. Negotiations moved forward following a partnership between Turismo de Portugal, airport manager ANA and the Lisbon Tourism Association.

After the shock of a 2-0 defeat in Switzerland in September, Cristiano Ronaldo and his compatriots made it twelve goals in two games as they thrashed the Faroe Islands 6-0 after a similar victory against Andorra. Ronaldo scored four against Andorra, in the process recording his 42nd career hattrick, as he returned with a vengeance after the injury he picked up as Portugal won the UEFA European Championship in July.

ST MARTIN’S FAIR IN PORTIMAO

ortimão will be celebrating St Martin’s Day from the first until the 18th November. The São Martinho fair at the Parque de Feiras e Exposições has taken place every year since 1662 and is considered the most ancient and popular event in the city. Visitors to the 350th St Martin’s Fair will have

the chance to browse through a total of 84 stalls, selling everything from food, clothes, shoes, household items and toys at bargain prices, purchase the traditional coal-roasted chestnuts as well as enjoy all the fun of the fair thrill rides.

Transforming the landscape of Southern Iberia, the waterwheel was the single most important item of technology to be introduced in the 8th century, shortly after Arab forces invaded from Morocco.

A

Legacy of an agricultural era

t the time, the waterwheel was unknown in Iberia but it became the best device for accessing underground water supplies. In Portugal known as ‘nora’ - in English ‘noria,’ from the Arab word ‘na’urah’ – it is the subject of Roma Markov’s latest painting. The artist is based in Faro and the original painting is currently exhibited at Galeria Côrte-Real in Paderne. Throughout the Algarve countryside many ‘noras’ can still be seen, but most are no longer in working order. They once drew water from a well passing it through a series of dug out channels to irrigate the fields. A donkey or a mule walking in circles was used to turn the large wheel; it dipped down into a well filling pottery or metal containers attached around its rim. At the surface, gravity tipped the water into a trough or aqueduct and the empty containers returned to the bottom of the well in a continuous process. Both Portugal and Spain benefitted from the ‘nora’ so that for centuries the Iberian fields were far better developed than those in the rest of Europe. Groves of almonds, apricots, carob, pomegranate and citrus trees flourished. Numerous crops and vegetables could now be grown on what had previously been arid land. The 12th century Moroccan scholar, Al Idrisi described the Algarve as a land of beautiful cities, surrounded by irrigated gardens and orchards. The origin of the waterwheel is something of a puzzle, although there is evidence that a similar invention existed in Egypt around 700 BC. It collected water from a river, the flow filled the containers by immersion and as the wheel

rotated the upper containers were emptied out into a trough. At around the same time - developed independently in China - the ‘bucket-wagon’ was an almost identical device. Five hundred years later the ‘nora’ – able to draw water from a well rather than a river – was in common use across Iberia. Arab engineers made significant improvements to the design, developing the flywheel and crankshaft to deliver power more smoothly. Once a well was sunk and a 'nora' installed, agriculture could be made to thrive. Other irrigation methods have superseded the waterwheel so that the land around each ‘nora’ has returned to its natural state; parched in summer but at other times of year surrounded by wild plants and grasses. One such scene inspired Roma Markov’s painting. “An iconic image of the Algarve’s agricultural past,” he says. In parts of Morocco such as Tagmoute the ‘nora’ continues to be used. Nowadays wells are hygienically lined and the water treated with chemicals but the method of bringing it to the surface exactly replicates the system that was once used here. Carolyn Kain.

am not sure how your perfect day would end, but let us set the scene... Imagine yourself standing on the cliffs on the outskirts of Vilamoura at sunset, overlooking the sea with the last rays of the day shimmering along the sleek, powerful yet sleeping body of a brand new Customised Harley Davidson Motorcycle at your side. For Harley Davidson owners this would indeed be H.O.G Heaven. For us this was the climax to our time spent with the Harley Davidson Algarve American Motorcycles LDA team at Quarteira. We met the Quarteira Team headed by Director, Paulo Pinto, Sales Manager, Nuno La, Head Mechanic Nelson Colaco, Service Manager Goncalo Lail and last but not least, Katya Rocha in charge of PAM Sales to find out more about the Harley Davidson in the Algarve. Both Nelson and Paulo started their relationship with bikes – off road. The Algarve has some of the best terrain and opportunities for this type of biking experience in Portugal. These early years of riding and maintaining their bikes under these conditions have given them the working knowledge to

really get to know the dynamics, functionality and demands placed upon bikes in this area of performance. Nelson has been a mechanic for over 20 years and originally worked with the father of Ruben Faria, the famous Algarvian rider who participates in most of the world’s well known and longest off road events. Nelson purchased his first Harley Davidson in 1999 and as they say ‘the rest is history’. Paulo has worked within the field of Motor Vehicles together with road bikes for many years and started the project in Quarteira 4 years ago. Goncalo, like Nelson and Paulo, also fell in love with Harleys after he bought his first one which he still has along with his Harley Davidson Buell. They all explained that for them to work on and with their passion is their ideal job. They actually get paid for doing what they love to do! The Team at Quarteira had taken up their 1st challenge recently set by Harley Davidson to customize the ‘Sportster XL 883 N Gambler’. They had been given a budget of 5000 Euros and a time frame of 2 months to complete the customisation of the "off road" inspired Bike shown in the picture above.

To create the concept of a custom made or to customise a bike takes team work. Together Paulo, Goncalo and Nelson blend their skills, expertise and knowledge to produce the finished bike. Although this was a competition, for them it was also the opportunity to create something unique that had their devotion and skill stamped all over it. One of the main decisions that the team made for this particular project was the fact that all the modifications they made, could if needed, be removed and the bike returned to its original factory specification. This decision highlighted the fact that the team kept the focus on a ‘vintage off road bike’ enabling them to produce a bike ‘fit for purpose’ and fully functional, not just to be a ‘Showroom Exhibit’. In past years bikes have been entered into competitions and customisation exhibitions where functionality has been compromised for visual impact, therefore rendering the bike only destined

for the showroom or short performance exhibitions. Inspiration was taken for visual impact from the title of the bike ‘Gambler’, which is reflected in the roulette wheel design. Nelson and Goncalo also pointed out that for them, this team were gambling with their chances in a competition! The choice of visual changes for this particular bike did not want to detract from the functionality of its purpose therefore great care was taken to provide practical applications to all its modifications. To highlight just a few, the seat is flatter than the original to enable the rider to slide forward or backwards as the terrain demands his position to change. The foot pegs give extra grip. The padding around the handlebars at the front gives a cushion in case of impact. The yellow paint and lettering of the logo are to reflect the colours of the vintage era and past associations with the American market of the time. Here are the final specification of the ‘Sportster XL 883 N Gambler’: Motor: 883cc, Fuel System: Electronic Sequential Port Fuel Injection, Exhaust System: Nickel plated two into one RSD Slant, Engine Torque: 71Nm @3,750 rpm. Just in case you have your heart set on this one. It has been sold to a private Portuguese collector. However, the Team at Quarteira can customise your bike for you, just call in ask for want you want! It seems clear to me after our visit, whether you have been a follower for years or you just dream of riding off into the sunset astride these wonderful machines, once you purchase your first it will not be your last...! Over 100 years ago Walter Davidson stated that he wanted to provide a bike that will take you anywhere. Today, as then it delivers the goods and has become a legend for generations to come. What to look out for when choosing your architect!

uilding in Portugal is a very bureaucratic procedure and depending on the Municipalities you are dealing with, different steps need to be followed. Choosing an architect is a crucial part of any building project as the architect is the one person that knows your project best and can find the right team of experts to complete your project. Making sure you have the right architect to design your home is essential. As building regulations continue to be complex and fragmented, architects need to understand the local authority planning rules and regulations and know the latest building regulations required, but they also need to have an excellent knowledge of state of the art practises and know competent contractors and traders that are able to execute your project according to his/her design. If you are considering buying a plot that is in REN or RAN (please read the previous article in the October issue explaining this topic), not in a urban area, it is best if you contract you architect BEFORE you purchase the plot in order to make sure that your dream house can be build on that specific plot.

STEPS TO GET THE BEST RESULTS: Choose the right architect The Order of the Architects (OA) in Lisbon or Porto holds the Register of architects. Architects must be registered with OA in Portugal. Source two to three architects to contact, they should offer a free initial consultation to discuss your project. Your Architect needs to have full knowledge of planning permission and building regulations (or standards) in your local authority. It is important to let him know what your budget is, minimum and maximum for the build. Agree a budget before you start working with your architect and check what services the architect will supply. Ensure you sign a contract with the architect, agreeing payment terms in return for the services they offer. If changes to design are required to secure approval, additional payments may occur. Discuss the rates for these changes with your architect. Some architects are great at design but don’t have the experience of managing tradespeople; check previous projects and secure references and feedback from clients and trades.

While the design project is for approval at the Municipality, your architect will prepare the tender documents and send them out to contractors. He should contact at least 3 building companies to bid on your project. After evaluating the quotes, your architect will advise you on the right contractor for your building project. Are the bidding contractors legitimate and able to see your project through? Your architect should make sure that the tender response includes: Evidence of their public and employers liability insurance; Details of their health & safety policy and record; Professional reference from previous contracts; Customer reference from a previous contract; Details of their previous work and an indication of their suitability for your type of project; How long they have been established; And finally, employees or sub contractors used. Once the approval of your project design from Municipality and other relevant entities are obtained and the contractor is chosen, the next step is to obtain the building permit and pay the fees for the building process at the Municipality. Within one year from the date of notification of final approval of the building design, the contractor must request the building permit to be issued and pay the relevant taxes. The municipality issues the building permit within 30 days of the date of the request. There are statutory requirements on how to request the building permit certificate and also on the content of the certificate. Your architect will help you with this. The contractor posts an announcement at the construction site within 10 days after a building permit is obtained. This announcement must follow a standardised format and content established by law and remain visible until the end of the construction works.

Portuguese building control systems have mainly been driven by the changing demands of present-day practice, in particular, the absence of sufficient municipal technicians and the need to expedite building control procedures. The solution has been to move away from public building control and to make private parties responsible for compliance with building regulations. In order to start your construction in Portugal, you must have a “Building Diary” (Livro de Obra) where all participants and responsible technicians of the construction team are listed. They need to sign the building diary and fill in the completed tasks according to the building progress. Your construction can start once you have the following Production Team: Construction company with a legal building certificate “Alvara” Construction Project manager (Director da obra) is employed by the contractor. He makes sure that the building quality standards of the contractor are met Quantity Surveyor (Fiscal da Obra)

REBUILDING

After 8 months of neglect in 2014, Costa Esuri golf course has been rebuilt

B

uilt in 2006 by the builders of Costa Esuri village, this stunning golf course was run by a large Spanish Golf management company who at their peak managed 30 courses across Spain. After running into financial difficulties, they were forced to close the course in March of 2014, stripping the course and clubhouse of literally everything. During this time, this beautiful course went to ruin and became what can only be described as a jungle. Javier Chaguaceda, originally from Huelva lived in Costa Esuri and owned the building company H20. He had an obvious interest in the course, it being essential to the success of the village, the value of property and of course his business.

and once again offers challenging, world class golf, in a truly stunning location.

Jaime Riestra from Madrid has spent 18 years living and working in Huelva, working in the education sector at an English teaching academy. He had retired to Costa Esuri and was enjoying life playing golf as he had done all his life. Javier decided that the course should be revived, and asked Jaime if he would help him do so. After a long and difficult process, they managed to secure a 10 year lease, with the intention to eventually own the course. After months of hard work, and the expense of buying the irrigation system, buggies, machinery, complete refurbishment of the clubhouse, in fact everything you now see at the course, they re-opened on October 10th 2014. They are very well supported by the large British community, and currently

has over 150 members who enjoy the many events held at the fabulous clubhouse. Jaime now takes care of everything on the golf side of the business, and Javier the financial and administration. Together they have a 5 year plan to make the course one of the best in the area. Jaime says he "knows the potential of the course". The front 9 holes are the closest you'll get to a links course, with wide open fairways, and often windy. It has all the raw materials to make a top class golf course". The dynamic duo have since been approached to manage other courses, but have politely declined. Neither have been in the golf business before; this project is purely out of passion for their home. Recently the course rebuilt an old ruin that sat just off of the 6th green with an interesting story. BOTONES POST: AN ANCIENT GUARDIA CIVIL BORDER SURVEILLANCE POST.

ver the past couple of centuries the rebuilt structure seen above served as a watchpost and house to the officers who watched for the illegal trafficking of people and goods between Spain and Portugal. Because of its isolated location, the Guards serving on the post had no contact with the local population and during their stay here it was common to suppliment their diet with whatever they could hunt and fish from their surroundings.

their own countries. However once in a while certain events can create a ripple that makes everyone sit up and take notice. The major defining factor for the Algarve property market this year was unquestionably Brexit. Uncertainty in the outcome of the result meant that the British were generally much quieter in the first 6 months of the year than the previous year. Once Brexit was confirmed we did actually start to see greater numbers of British looking to buy again. However, as sterling continued to weaken against the Euro, understandably the quantity of British looking to buy reduced a little. Those that are looking to invest are less interested in the political repercussions of Brexit but are more interested in the currency situation. It is important to say at this point that many of our British vendors are in a very strong position as the weakening of sterling has worked hugely in their favour. As a result since June we have brokered a number of deals with British vendors happy to accept a lower Euro price for their property. As in previous years, our other buyers predominately from France, Germany, Switzerland, Holland, Belgium, and Scandinavia have been making property purchases all throughout the year. Although the quantity of sales going through to completion is slightly down compared to the same period last year and even taking into account those British vendors accepting lower Euro

ortugal made its greatest contribution to globalization during the 15th and 16th centuries. As a result of their intensive maritime exploration during the that period, Portuguese sailors were at the vanguard of European and world exploration, discovering and mapping the coasts of Africa, Canada, Asia and Brazil, in what became known as the Age of Discovery. Methodical expeditions started in 1419 along West Africa's coast under the sponsorship of prince Henry the Navigator, with Bartolomeu Dias reaching the Cape of Good Hope and entering the Indian Ocean in 1488. Ten years later, in 1498, Vasco da Gama led the first fleet around Africa to

India, arriving in Calcutta and starting a maritime route from Portugal to India. Portuguese explorations then proceeded to southeast Asia, where they reached Japan in 1542, forty-four years after their first arrival in India. The key to this dish is the mixture of fruits and vegetables you choose to add to it, for example in the picture on the bottom left you can see I added some Pinapple and Cinamon, a mango chutney and edible flowers to add small twists to each bite.

2 salt cod loins (salt cod pre-soaked or you can buy frozen cod and defrost it inside the package in cold water for a few hours) 200g of basmati or jasmine rice Thai curry paste (see the preparation on the package as all are different) Your choice of fruit (Mango, Banana, etc..) Cream or Coconut milk

Hint: 'You can mix in some mango, banana or apple in the blender with the curry sauce, also some coconut milk to make it a cream soup'.

Boil the bacalhau in water with a pinch of rosemary for about 15 to 20 minutes and when you see some white foam the fish is ready.. Follow the guide on the packaging of the curry sauce and mix it with some cream and fruits in a blender (mango, apple, etc) Add Indian papadom if you like and enjoy!.

Tax changes for 2017: how the new state budget may affect you Keep up to date with our Finance expert, chartered accountant Ricardo Chaves from All Finance Matters There are new taxes that will be created in the new year, such as the IMI tax will now be on taxpayers who have real estate assets above 600,000 euros, a new fat tax which will focus on soft drinks. At the same time, And a tax that will make the use of tobacco or alcohol more expensive.

he presentation of the new state budget, not yet approved and subject to changes, brings some good and bad news. We will try to show some of the major proposed changes for 2017. IRS brackets will be updated and surcharge eliminated The levels of annual income tax base used by tax authorities to calculate the IRS that families pay will change. The rates to be applied remain the same, the number of steps as well (five), but the values in each category have been updated to reflect the rising prices of goods and services. The new brackets mean less rentention on source and more money to the employee. The IRS surcharge seems to come to an end in 2017, but this will be phased, depending on the income of taxpayers. The higher the income of a taxpayer, the later he will stop paying the surcharge. New tax on real estate assets above €600,000. As previously announced in the media, the proposed state budget for 2017 includes a new tax - entitled "additional" to the tax on real estate", also known as IMI. This new tax will focus on taxpayers who have a portfolio of real estate assets, higher than €600,000. In the case of joint ownership, the level on which the new tax will be taxed is €1, 2 million (€600,000 x 2). Thus, the value that exceeds the threshold set a rate of 0.3 percent is applied. Practical example: If a taxpayer who has five properties with a book value set of €800.000. The value clears up as follows: (€800,000 - €600,000) x 0.3 percent = €600. But beware: Not all owners will be required to pay this new tax. The proposed law states that urban buildings classified as industrial, as well as those licensed for tourism are excluded. This new tax will be payable in September and will revert to the Social Security. Owners of local lodging will pay more tax on their short term lets. The owners of local accommodation properties registered for short-term lets (AL) will have to face a tax increase in 2017. So far the nonresidents owners were paying 3.75 percent of tax on their gross rentals and will pay from now on 8.75 percent. This tax increase will only be noticed in their IRS bill for 2017, which is payable in August 2018. Car Tax (IUC) will increase by 0.8 percent. Who has car also feel your wallet getting lighter by the rise in vehicle excise duty. The tables have been updated, which results in an average 0.8 percent increase that vehicle owners will have to bear next year with this tax. Tax on new vehicles (ISV) will increased by 3

percent To buy a car will also be more expensive next year, this is due to the new values of the vehicle tax (ISV) which are included in the final price of the cars. A new tax on sugary drinks From next year soft drinks with added sugar or other sweeteners will become more expensive. This is because the government has decided to create a new fat-tax. The rates to be applied vary depending on the sugar levels of the drinks in question. It’s estimated that soda prices may endear between eight and 16 cents. Tobacco will become more expensive Similar to what had happened in 2016, next year the tax on tobacco will be aggravated. Cigars, cigarillos and electronic cigarettes feel a tax increase. A pack of cigarettes with a value less than 4.70 euros may become more expensive between five and 10 cents. Tax on alcoholic beverages is compounded Drinking some alcoholic drinks such as beer or spirits, will be more expensive in 2017. Similar to what had happened in 2016, the tax increases in these products. The tax increase is 3 percent. But not all alcoholic beverages feel this measure, as the wine is not included. We drink to that, cheers! People with disabilities are going to pay less IRS The proposed State Budget for 2017 reduces the tax for people with disabilities. For IRS purposes, shall only be considered 85 percent of the gross income received by disabled taxpayers who are entered in the category A and B (dependent and independent workers); and 90 percent if included in the category H (pensioners). Investing in startups gives benefit in IRS This is a new Program, which aims to encourage the allocation of savings and capitalization of startups by private investors. In total, taxpayers may deduct 25 percent of the investments made in each year until the limit of 40 percent of its IRS bill. IRS submission Last but not least, another novelty is related to the IRS deadlines. The IRS shall be submitted at the same time, irrespective of the category of earning. The dates for the IRS 2016 submission will be from April the 1st to the end of May. have often been asked about the olive tree and how do you harvest the fruit, can you just pick it and eat the fruit and how do you get olive oil. With these questions in mind and with the olive harvest approaching I thought it a good idea to try to answer these questions and explain a little more about this ancient tree. The olive tree is an evergreen tree or shrub native to the Mediterranean, Asia and Africa. It is short and squat, and rarely exceeds 8–15 metres (26–49 ft) in height. The silvery green leaves are oblong in shape, measuring 4–10 centimetres (1.6–3.9 in) long and 1–3 centimetres (0.39–1.2 in) wide. The trunk is typically gnarled and twisted. The small white flowers, with ten-cleft calyx and corolla, two stamens and bifid stigma, are borne generally on the last year's wood, in racemes springing from the axils of the leaves. The fruit is a small drupe 1–2.5 centimetres (0.39–0.98 in) long, thinner-fleshed and smaller in wild plants than in orchard cultivars. Olives are harvested in the green to purple stage. Canned black olives may contain chemicals (usually ferrous sulfate) that turn them black artificially. Olive trees are very hardy, drought-, disease- and fire-resistant, and can live for a very long time. Its root system is very robust and capable of regenerating the tree even if the above-ground structure is destroyed. The older an olive tree is the broader and more gnarled its trunk appears. Many olive trees in the groves around the Mediterranean are said to be several centuries old, and in some cases

this has been verified scientifically. One such olive tree in Algarve, Portugal, is 2000 years old, according to radiocarbon dating, and others like an olive tree in west Athens, named "Plato's Olive Tree", was rumored to be a remnant of the grove within which Plato's Academy was situated, which would date it to approximately 2,400 years ago. The tree was a cavernous trunk from which a few branches were still sprouting in 1975, when a traffic accident caused a bus to fall on and uproot it. Since then the trunk is preserved and displayed in the nearby Agricultural University of Athens. And supposedly even older tree, called the "Peisistratos Tree", is located by the banks of the Cephisus River, in the municipality of Agioi Anargyroi, and is said to be a remnant of an olive grove planted by Athenian tyrant Peisistratos in the 6th century BC. Olives are harvested in the autumn and winter. More specifically in the Northern hemisphere, green olives are picked at the end of September to about the middle of November. Blond olives are picked from the middle of October to the end of November and black olives are collected from the middle of November to the end of January or early February. In southern Europe, harvesting is done for several weeks in winter, but the time varies in each country, and with the season and the cultivar. Most olives today are harvested by shaking the boughs or the whole tree. Using olives found lying on the ground can result in poor quality oil. Another method involves standing on a ladder

and "milking" the olives into a sack tied around the harvester's waist. A third method uses a device called an oli-net that wraps around the tree trunk and opens to form an umbrella-like catcher from which workers collect the fruit. Another method uses an electric tool, called the oliviera, which has large tongs that spin around quickly, removing fruit from the tree. This method is used for olives used for oil. Table olive varieties are more difficult to harvest, as workers must take care not to damage the fruit; baskets that hang around the worker's neck are used. In some places in Italy and Greece, olives are harvested by hand because the terrain is too mountainous for machines. As a result, the fruit is not bruised, which leads to a superior finished product. The method also involves sawing off branches, which is healthy for future production. The amount of oil contained in the fruit differs greatly by cultivar; the pericarp is usually 60–70% oil. Typical yields are 1.5–2.2 kg (3.3–4.9 lb) of oil per tree per year. Olives are a naturally bitter fruit that is typically subjected to fermentation or cured with lye or brine to make it more palatable. Green olives and black olives are typically washed thoroughly in water to remove oleuropein, a bitter carbohydrate. Sometimes they are also soaked in a solution of food grade sodium hydroxide to accelerate the process. Green olives are allowed to ferment before being packed in a brine solution. American black ("California") olives are not fermented, which is why

they taste milder than green olives. Freshly picked olive fruit is not palatable because it contains phenolic compounds and oleuropein, a glycoside which makes the fruit too bitter, although not unhealthy. (One exception is the Thassos olive, which can be eaten fresh.) There are many ways of processing olives for eating. Traditional methods use the natural microflora on the fruit and procedures which select those flora’s that ferment the fruit. This fermentation leads to three important outcomes: the leaching out and breakdown of oleuropein and phenolic compounds; the creation of lactic acid, which is a natural preservative; and a complex of flavoursome fermentation products. The result is a product which will store with or without refrigeration. Fresh olives are often sold at markets. Olives can be used green, ripe green (a yellower shade of green, or green with hints of colour), through to full purple black ripeness. Olives should be selected for general good condition and for firmness if green. For fermentation, the olives are soaked in water to wash them, and then drained. One method uses a ratio of 7 liters (7 kg/15 lb) of room temperature water, plus 800 g (28 oz) of sea salt and 1 cup (300 g/11 oz) of white wine or cider vinegar. Each olive is slit deeply with a small knife; large fruit (e.g., 60 fruit per kg) should be slit

in multiple places. The solution is added to a container of olives, and they are weighted down with an inert object, such as a plate, so they are fully immersed and lightly sealed in their container. The gases of fermentation should be able to escape. It is possible to use a plastic bag partially filled with water, and lay this over the top as a venting lid, which also provides a good seal. The exclusion of oxygen is helpful, but not as critical as when fermenting grapes to produce wine. After some weeks, the salinity drops from 10 percent to around 5 to 6 percent, once the water in the olives moves into solution and the salt moves into the olives. The olives are edible within 2 weeks to a month, but can be left to cure for up to three months. They can be tasted at any time because the bitter compounds are not poisonous, and oleuropein is a useful antioxidant in the human diet. Curing can be done by several methods: lye-curing, salt-curing, brine-curing and fresh water-curing. Salt-curing (also known as dry-curing) involves packing the olives in plain salt for at least a month, which produces a salty and wrinkled olive. Brine-curing involves placing the olives in a salt water solution for a few days or more. Freshwater curing involves soaking the olives in a succession of baths, of which the water is changed daily. Green olives are

usually firmer than black olives. Olives can also be flavoured by soaking them in various marinades, or removing the pit and stuffing them. Popular flavourings are herbs, spices, olive oil, feta, capsicum (pimento), chili, lemon zest, lemon juice, garlic cloves, wine, vinegar, juniper berries and anchovies. Sometimes, the olives are lightly cracked with a hammer or a stone to trigger fermentation. This method of curing adds a slightly bitter taste. I hope this article gives you a more informative aspect to the olive tree and a few ideas of how to make use of the fruits should be lucky enough to have these trees in your garden. A Special day for a special lady

W

hen Sr. Luis from Monica’s Restaurant asked us to mention his Grandmother’s 102nd Birthday in our magazine, little did we realise that this was indeed a wonderful tale of a much loved, strong and independent lady, whose life had seen and endured so much. Yet when asked her to guide us through her long and happy life, our hearts melted at her gentle and tender philosophy. Here is the story of Maria Eugenia Lopes, known to her family as Avo Bibi: Maria was born 29th September, 1914 on Ilha de Santo Antao, Cabo Verde. Maria lived and worked all her life in the small town of Biquerao, Pinhao de Baixo. She married at an early age to Paulo Pedro Mendes, who was the love of her life and they began to plan and build a life together. Maria worked the family farm where they kept goats, chickens, rabbits and pigs. Like most land workers of her day, working without shoes made cultivating the land a hard task. The crops of corn, beans, potato, garlic and onions were cultivated by hand, half of which were sold to buy sugar, rice and soap. To supplement their income Maria would buy ‘pulgueira’ (a type of wax) used to prepare a medicine rub that could be sold to heal aches and pains. Everything had its uses, Maria would make a paste from local Aloe Vera to wash clothes and Paulo would use the threads of the plant to make rope for use on the farm. Maria and Paulo’s life was not an easy one; they had five children. Difficult living conditions took its toll and tragically three of their children sadly passed away before they reached the age of 4 years old. Paulo spent many years away from his family working in Roca, Sao Tome, harvesting cacao and coffee beans. Later his search for work took him to the diamond mines of Angola, which brought with it notoriously hard working conditions for its immigrant workers. During this these long difficult years without her beloved Paulo, Maria raised the children and ran the family farm alone. It was not until her beloved Paulo passed away a few years ago that Maria had the

chance to leave Cabo Verde to come to live in Portugal to be close to her two daugthers’, Maria de Fatima Mendes and Maria da Penha Mendes, who had both moved to Portugal in the 1970’s. Leaving Cabo verde was not easy as Maria was the eldest in the village and much loved. She had now seven grandchildren and six great grandchildren waiting for her in Portugal. Now Maria divides her life between her two daughter’s homes in Lisbon and Almancil. Her daily routine begins with listening to the early church mass on the radio followed by making beds, folding clothes, joining in with family everyday chores. No day is complete without her love of cake and a cup of tea! To be surrounded by her family gives her the greatest of happiness. When asked for her advice on living a long and happy life, Maria tells us that 'to give blessing to others is a gift that Jesus Christ passed to us all to help us protect our children and loved ones. Eat a little bit many times a day. Work well, work is good for you, be the best you can, don’t spend everything you have, always save a little for a day when you can’t work. Enjoy life and those around you. Help others. If you see a person in difficulties you must help them back on their feet, don’t take advantage of others difficulties. Helping fills your heart with love and strength. Don’t be jealous of what others have, work for your dreams'!! Sr. Luis expressed how for her grandchildren, what joy it is to see her after growing up without being able to know their grandparents. To have her here with them, seeing her smling, giving them hugs, telling them how much she misses them and loves them. All that their grandmother represents to them is beyond imagination..... And so to celebrate Maria’s 102nd Birthday Monica made one of her fabulous cakes, the invitation for family and friends were sent, the table was set, the candles were lit and a very special birthday party began...... We send Maria all our best wishes and congratulations on this most special of birthdays !!

aking a double bogey or triple bogey is a score nobody wants to see on their scorecard. In the amateur game this can be a common occurrence due to poor decision making, but overall poor course management. Developing course management is essential to lowering scores. Assessing the shot from the tee and into the green can determine the overall score on that specific hole. For the average golfer hitting their approach shot, the red zone would be the first thought due to where the pin is positioned. This is the incorrect shot as this is where the danger is with the bunker and the run off which would short side yourself for the next shot. This can lead to not getting up

and down which can lead to double and triple bogeys. Hitting the ball into the green zone is the correct shot giving yourself a chance to get up and down. If you issed the green left it would leave yourself green to work with for a chance to get up and down. Hitting the left side of the green will leave yourself a good chance of making a putt or limiting the amount of shots to finish the hole. I believe this is an essential part of the game which most golfers don’t focus on. Developing the correct thought patterns to make the correct decision for the shot is going to save shots resulting in lower scores leading to a lower handicap. hen Christian Benteke scored for Belgium after just 8.1 seconds against Gibraltar at the Algarve Stadium he rewrote the record books. Previously the record for the fastest World Cup goal stood at 8.3 seconds and was set by Sammarinese footballer Davide Gualtieri in the San Marino game against England in Bologna in 1993. Crystal Palace striker Benteke went on to score a hat-trick with Axel Witsel (Zenit St. Peterburg), Dries Martens (Napoli) and skipper Eden Hazard (Chelsea) completing the rout against the plucky part-timers from The Rock.

he Browns Sports & Leisure Club recently staged the second annual Walking Football Algarve Cup tournament, for players over fifty years of age, at their superb facilities in the heart of Vilamoura. Teams from Scotland - Ayr United and Heart of Midlothian; England - Exeter City and Chesterton Crusaders (Staffordshire) were joined by four teams from the Algarve - Soccer Olhanense Strollers ‘A’ & ‘B’, TOFFS (Tavira Old Floundering Footballers) and hosts Browns to complete an eight team line-up. After some tightly contested games it was defending champions Soccer Olhanense Strollers ‘A’ who walked off with the trophy when they beat Exeter City 3-0 in the final. Walking Football, anyone who runs is penalised, is a great way to improve your health and have fun at the same time. The fifth venue to open in the Algarve gets underway on Tuesday 15th November in São Bras de Alportel. Sessions - normally 3euros - at São Bras, Olhão and Tavira are FREE during November so why not pop along and give it a go.
