david & goliath A recent book by Malcolm Gladwell is titled “David & Goliath” and you won’t be surprised to learn that it’s about our Biblical Heroes.

Everyone, of course, knows the story. Goliath is a monster of a man, at least six foot nine (205cm), with a bronze helmet, fully armoured and carrying a javelin, spear and sword. On top of that, as if even needed, he is preceded by an attendant carrying a large shield. Clearly, he is well prepared for what lies ahead. David, by contrast, is a modest young shepherd, with no armour and carrying only a sling, five smooth stones and his shepherd’s staff. He has no training as a soldier and it seems he enters the battle purely on impulse. It certainly seems a uneven match.

'To sleep – perchance to dream…’ Shakespeare’s Hamlet sums up the lament of countless people in the present day who suffer from insomnia.

In my practice I often see patients who are sleep-deprived and suffering consequences such as stress and low immunity. Usually there are other factors at work like mental health issues and poor nutrition, and the insomnia is one of a number of symptoms. The typical pattern is someone who lies in bed and can’t fall asleep for several hours. However, another common pattern of insomnia is someone who goes to bed at ten or eleven o’clock, then enjoys a good night’s sleep until three, four or five in the morning. If you are waking at five, it might not be worth trying to get back to sleep. But if it’s at three, I tell people to try getting up for 15 minutes, then going back to bed and practicing some mindfulness, focusing on the present and not getting caught up in your thoughts.

There is a whole pharmacopoeia devoted to helping you sleep. I strongly caution patients against use of tranquilisers and barbiturates. Instead, I usually recommend natural solutions, taking a holistic approach with improvements in diet, fitness regime, etc.

If your Melatonin is low, your doctor may prescribe Melatonin. And various supplements like Magnesium can also help you get a good night’s sleep. You can get different combinations which also contain calming herbs.

Inositol has been called ‘Nature’s sleeping pill.’ It is a little-known member of the Vitamin B family that calms the racing mind. People can take it before going to bed and some people also take it during the day.

The blue light from screens decreases our production of Melatonin, the hormone that governs the sleep-wake cycle by controlling your circadian rhythms. To counter the reduction in your Melatonin levels, you can use the Night Shift setting on your phone – it gives the screen an orangey-yellow glow – but it’s best to stop or at least minimise your use of devices after dinner.

CONSIDERING HOMEOPATHY?

The origins of homeopathy can be traced to as far back as 400 BC when Hippocrates suggested the concept of “like cures like” and prescribed a small dose of mandrake root to treat mania, knowing it produces mania in much larger doses. To determine a treatment plan for a person, a homeopath will consider all of the person’s symptoms (physical, mental or emotional) and identify the remedy that is capable of producing in a healthy person, symptoms most ‘like’ the symptoms the person is suffering from. Homeopathic medicines can be in the form of liquid, granules, powder or tablets. Your practitioner might also advise general lifestyle and dietary changes as part of a treatment plan. The most common cause of adult acquired hearing loss is Presbycusis, or ‘age-related’ hearing loss. Presbycusis is the most common type of inner ear hearing loss, caused by the natural aging of the auditory system. It occurs gradually and affects the hearing in both ears. The hearing loss initially affects the ability to hear higher pitched (higher frequency) sounds, and this makes it difficult to hear group conversations or conversation in noisy environments. Approximately 30 to 35 percent of adults between the ages of 65 and 70 have some degree of hearing loss, and for the majority the cause is Presbycusis. The percentage rises to 40 to 50 percent of individuals over the age of 75. Here are some indications of Presbycusis: • Others appear to be mumbling or slurring their speech. • Conversations are difficult to understand, especially in background noise. • Certain sounds seem overly loud or annoying.

• You have difficulty hearing higher pitched sounds, such as the children or birds chirping. • Men’s voices are easier to understand than women’s voices. Scientists don't know how to prevent agerelated hearing loss. However, you can protect yourself from making a hearing loss worse by avoiding over-exposure to damaging loud sounds. It's important to be aware of potential sources of damaging noises, such as loud music, firearms, jack-hammers, loud motors and electric tools. Avoiding loud noises, reducing the amount of time you're exposed to loud noise, and protecting your ears with ear plugs or ear muffs are easy things you can do to protect your hearing and limit the amount of hearing you might lose as you get older. If you ever receive a diagnosis of Presbycusis, congratulations!! you’ve lived long enough to develop age-related hearing loss and you’re in very good company. If you suspect you have an age-related hearing loss, then call Edgecliff Hearing to be assessed.

apple pie INGREDIENTS

• 1.5kg granny smith apples • 1/2 teaspoon ground cinnamon • 1/4 cup caster sugar • 2 teaspoons finely grated lemon rind • 1 tablespoon lemon juice • 1 egg, lightly beaten • 1 tablespoon demerara sugar • Double cream or vanilla ice-cream,to serve

PASTRY

• 1 3/4 cups plain flour • 1/3 cup self-raising flour • 1/4 cup caster sugar • 2 tablespoons custard powder • 150g butter, chilled, chopped • 1 egg yolk • 2 teaspoons vanilla extract • 2 tablespoons iced water

METHOD

STEP 1

Make pastry process flours, sugar, custard powder and butter until mixture resembles breadcrumbs. Add egg yolk, vanilla and water. Process until dough comes together, adding extra water if necessary. Shape dough into a disc. Cover with plastic wrap. Refrigerate for 30 minutes.

STEP 2

Meanwhile, peel, quarter and core apples. Cut into thin wedges. Place in a large saucepan. Stir in cinnamon, caster sugar, lemon rind and lemon juice. Cook, covered, over medium heat, for 10 minutes or until apple is just tender, stirring halfway. Set aside for 10 minutes.

STEP 3

Preheat oven to 180°C/160°C fan-forced. Grease a 4cm-deep, 20cm (base) round pie

dish. Roll two-thirds pastry between 2 sheets baking paper until large enough to line base and side of prepared dish (about 32cm). Press pastry into dish. Using a slotted spoon, transfer apple to dish. Discard liquid.

STEP 4

Roll remaining pastry between 2 sheets baking paper until large enough to cover filling. Place over filling. Trim edge. Press edges to seal. Prick top of pie to let steam escape during cooking. Brush with egg. Sprinkle with demerara sugar.

STEP 5

Bake for 40 to 50 minutes or until pastry is golden (cover with foil if over-browning during cooking). Stand for 5 minutes. Serve with cream or ice-cream.

A funeral is one of the most significant events in our lives. We are saying farewell to someone with whom we have laughed, cried, worked, and holidayed, shared meals with and enjoyed life together. Our loved ones were with us at births and weddings, christenings and 21st birthdays, Bar Mitzvah’s, house warmings and for so many of the wonderful joys of life. They have also shared and supported us when times have been tough, when we’ve struggled financially, been dealing with illness and disease, or grieving the loss of a job, a relationship or another person who has passed away. Perhaps one reason we don’t talk with our loved ones about their funeral is because we don’t want to think about that time when they will be gone. Or maybe we don’t want to upset the person by raising the matter. You might be worried that your loved one will think you are wishing them away.

King Henry VIII of England dissolved the monasteries, sending their monks out into the general public. Whisky production moved out of a monastic setting and into personal homes and farms as newly independent monks needed to find a way to earn money for themselves.

Whisky has been distilled in Scotland for hundreds of years. There is some evidence to show that the art of distilling could have been brought to the country by Christian missionary monks, but it has never been proved that Highland farmers did not themselves discover how to distil spirits from their surplus barley.

Another report states that when King James IV was in Inverness during September 1506, his Treasurer’s Accounts had entries for the 15th and 17th of the month respectively: ‘For aqua vite to the King. . .’ and ‘For ane flacat of aqua vite to the King. . .’. Flacat derives from the Latin word “Flasco” meaning bottle. So mixing Gaelic & Latin, with a possible tinge of French, we have one bottle (flask) of whisky for the King.

The earliest historical reference to whisky comes much later, Mr J Marshall Robb, in his book ‘Scotch Whisky’, says: ‘The oldest reference to whisky occurs in the Scottish Exchequer Rolls for 1494, where there is an entry of ‘eight bolls of malt to Friar John Cor wherewith to make aquavitae’.

The earliest reference to a distillery in the Acts of the Scottish Parliament appears to be in 1690, when mention is made of the famous Ferintosh distillery owned by Duncan Forbes of Culloden.

Here again we have whisky being called “water of life” (aquavitae), only this time in Latin. A “boll”, by the way, was an old Scottish measure of not more than six bushels. (One bushel is equivalent to 25.4 kilograms)

There is also a reference to distilling in a private house in the parish of Gamrie in Banffshire in 1614. This occurs in the Register of the Privy Council, where a man accused of the crime of breaking into a private house.

James IV of Scotland (r. 1488–1513) reportedly had a great liking for Scotch whisky, and in 1506 the town of Dundee purchased a large amount of whisky from the Guild of Barber Surgeons, which held the monopoly on production at the time. Between 1536 and 1541,

Here are a few of the common ones and how they came about. So let’s get the ball rolling – no mystery here, because no ball game can start until exactly that happens. But what about if your snookered, well snooker players may know what it means, but many who use the phrase may not. If you’re snookered it means your snooker opponent has left you unable to take a direct shot without striking a ball out of the required order. It can cost you the game unless you can play the ball off the cushion. And in billiards, the phrase spot on comes from the time the table is set up to start the game. The red ball must be placed exactly on the spot on the table, or it can give an unfair advantage to the opening player. It must be exactly on the spot, or spot on. If not the person who has set up the table can be regarded as having dropped the baton, i.e. not done exactly what is required to succeed as when a runner in a relay fluffs the handover of the baton to another runner.

INTERVIEW WITH ADAM COURTENAY

Eastern Suburbs Life catches up with Adam Courtenay to discuss his latest book, The Ship That Never Was. ESL Good morning Adam, “The Ship That Never Was” is an intriguing title. Can you tell us a little bit about it. AC Certainly, it’s the well documented story of James Porter a Cockney convict born in London 1805 and transported to Van Diemen’s Land (Tasmania) in 1823 for stealing beaver furs. It is well remembered as a folk story in Tasmania and celebrated in Australia’s longest running play “The Ship That Never Was” which performs every night at Strahan, Macquarie Harbour, where the escape began. I first heard about it back in the 90’s when an actor friend performed in it. ESL So it’s been on your mind for a while. What was it that drew you to it? AC I think it’s the indomitable spirit of James Porter. He was flogged over 300 times (frequently 50 lashes a time) and still his spirit was not diminished. He could not stand tyrants and constantly fought against them. Yet, when in the charge, of more benevolent masters he was cooperative and constructive. He even wrote a two part autobiography when later sent to Norfolk Island. ESL AC

So he was “smart” as well as spirited? Yes, and he had a mischievous streak as well. Asked his trade when he arrived at Van Diemen’s Land he replied “beer-machine maker” - his interviewer dutifully wrote it down, unaware of the wit.

ESL It’s a long time between the 1990’s and now. I understand you have written other books in between times. Are they in a similar vein? AC In a way they are. All three contain characters who have no moral compass (or at least ones that are grossly distorted). The Ship That Never Was addresses the character of Lieutenant-governor George Arthur who wielded more power than any politician in Australia’s history. He contrived to make Van Diemen’s Land independent of New South Wales and then set up its own Supreme Court. Effectively he made all the laws and surrounded himself with a network of spies, magistrates and police to enforce them.

ESL I’ve done a bit of research and it seems the book is doing very well. Do you have plans for another book in the future? AC Well, I am pleased with the result, especially as it’s a story about my home country of Australia. At this time it seems it is number two on the Dymocks Best Seller History list and number six on Amazon Kindle. As for another title, I have a few in mind, but will let you find out what in due course. It will, however, be similar in that it will be entertaining fact and not fiction. I’m happier with that format, than creating stories.

Fuel level was measured by a “dipstick” under the driver’s seat that went straight into the fuel tank and literally measured the depth of the fuel and would not pass laws these days. Boomerang Bags HELPING Community Initiative Indigenous kids get ready for school

Boomerang Bags works to reduce the use of plastic bags by engaging local communities in the making of Boomerang Bags. Community made, using recycled materials, Boomerang Bags provide a free, fun, sustainable alternative to plastic bags. Boomerang Bags is a National initiative, which was started in Burleigh Heads by Tania Pots and Jordyn de Boer in 2013. The project aims to reduce plastic bag use and start conversations about sustainability by making reusable shopping bags from recycled materials, donated by the local community. The bags are made by local communities for local communities. There are over 745 Boomerang Bags communities globally and that number is growing! By getting involved, you are participating in a global movement, celebrating a grassroots initiative focusing on community building and sustainability.

Step 1: Connect

Boomerang Bags communities are areas in which groups of volunteers get together to make bags. You can be one person or a village. Join a nearby Boomerang Bags community, or get some friends together and start a group of your own!

Step 2: Collect materials

Rummage through the linen closets of family, friends and friends of friends, or clean out your local op-shop for second-hand materials suitable for making bags!

Step 3: Make bags!

Get together with above mentioned group and make Boomerang Bags! You can use our templates, or come up with your own designs.

Step 4: Put them to use!

The bags can be given away to friends, family, colleagues, the bag-less stranger in front of you at the supermarket. They can be used to wrap presents in or stashed in your car and handbag so that you’re never caught without a reusable bag when you need one. However you choose to distribute your bags, the most important thing is to ensure that they’re distributed with a message…about waste, about sustainability, about community…make the connection and empower and inspire people to be part of the solutions!

The aim of the group is to reduce plastic bag use to keep our beautiful coastline and surrounds clean, and to divert fabric from landfill (and there is a lot of it that we are diverting in this area) beautiful curtains, bed linen, tea towels, soft furnishings, street banners. We want to start conversations in our local area about how we can reduce our ecological footprint and live more sustainably, and we want to create a sense of community by encouraging anyone who’s interested to join our group, whether they’ve used a sewing machine before or not, there’s a job for everyone.

The Napranum PaL Group (NPG) is an under the radar “not for profit” entity which owns and manages the Parents and Learning (PaL) program. PaL was developed in 2001, in response to Indigenous parent requests to ‘help their kids get ready for school’. After investigating possible early childhood programs, the women of Napranum felt the best fit for Indigenous families and for their community would be achieved by developing their own program. PaL is a home-based parent engagement program. It aims to support parents and indeed entire families to participate in their young children’s early learning, by providing resources and training delivered to them. PaL provides practical and structured support to parents in their own home environment, and to support their children’s further success in higher education – which is consistently proven to work with pre-school children on this programme going on to succeed in school life and university. PaL is also a flexible program constantly adjusting to the needs of the communities in which it operates. Essential to the success of PaL programs are local Indigenous people, as they have the knowledge and understanding

of community life, and the challenges families face bringing up children in an ever-changing world. Their involvement is crucial to successfully encouraging parents to actively engage in their children’s early learning. Community ownership is a key element to the success of the program. The future of the PaL program and the sustainability of NPG as a not for profit organisation relies greatly on the generosity of supporters and partners. Waverley Council is struggling to cope with the massive amount of rubbish illegally dumped in the municipality. A report to the council’s Operations and Community Services Committee said the amount of Illegally dumped waste had grown to a staggering 517 TONNES A YEAR.

“As a result of the numerous incidents, there is an impact to the amenity of the public spaces that our community enjoys,” stated the report by Sustainable Waverley executive manager Sam McGuinness and three other officers.

The report singled out businesses as being among the worst offenders, so much so that the council staged what it described as a “business blitz” to tackle commercial dumping, with business owners being made aware of their obligations to have waste and recycling management plans.

Randwick gets charged up about electric cars

Randwick Council is looking to the future as it works on the establishment of electric vehicle charging stations across the municipality. A report by the Council’s Sustainability Manager, Peter Maganov, recommends setting up charging stations at four council locations across Randwick: • Brook Street, adjacent to and outside the Coogee Senior Citizens Centre • Silver Street carpark, Randwick • Randwick Community Centre, Randwick • Des Renford Leisure Centre car-park, Maroubra

Meanwhile, dumpers of household rubbish are being targeted in a program called Get Rid of It Right, an information campaign aimed at both long-term and short-term residents. “The project addresses lack of awareness of Council’s waste services for collection of bulky waste items and problem wastes,” the report said. “It will also engage key stakeholders, including real estate agents, strata, property managers and various community groups to tackle dumping through education and management.” However, the report indicated the dumping problem could not be simply solved by education and enforcement. “To ensure all illegal waste dumps are collected within two business days from being reported, an additional three Public Space Staff are required for a 12-month period. The financial impact of implementing these recommendations is estimated to cost an additional $137,791.68 per annum from Council’s budget.”

The report stated: “These public electric vehicle charging sites will be a first for local Councils in NSW (and apparently only second for local government in Australia, to those installed in the City of Adelaide). “ It is expected that each charging station will cost approximately $30,000. The aim will be to cater to the widest range of electric vehicle models. “This is all the more important with around 8 electric vehicle models announced to launch onto the Australian market over the next few months,” Mr Maganov said. Mr Maganov did not indicate whether there would be a charge for the service.

Coogee Bay Rd streetscape upgrade A major upgrade of Coogee Bay Road will commence in September, with power poles being “felled” as electricity is laid underground.

Randwick Mayor Lindsay Shurey said the $5m project will rejuvenate the Coogee town centre supporting local businesses by making the area more attractive and inviting as well as making Coogee Bay Road a place for people with more space to gather and socialise. As part of the upgrade, overhead powerlines and poles will be removed and put underground. Tough penalties for inciting violence now in force

Anyone who incites or threatens violence against people based on their race, religion, sexual orientation, gender identity, intersex or HIV/AIDS status in NSW will now face up to three years in prison, under new laws that have come into force. The legislation creates a new offence in the Crimes Act of publicity threatening or inciting violence against people on the grounds of race, religious affiliation, sexual orientation, gender identity, intersex or HIV/ AIDS status. These laws will send a strong and clear message to people who think it's acceptable to incite violence against people because they belong to a particular group. The new offence carries a maximum three year sentence and a fine of $11,000 or $55,000 in the case of a corporation. It replaces and improves existing offences in the Anti-Discrimination Act.

NSW digital drivers’ licence trial

I am delighted to announce that more than 140,000 NSW drivers across Sydney’s Eastern Beaches region will be eligible to participate in a new metro trial of the digital driver licence (DDL) by November. Participants who opt-in can use their DDL, accessible on a mobile phone, for proof of identity and proof of age to gain entry into pubs and clubs as well for roadside police checks in the trial area. However, as this is a trial, drivers who opt-in will still need to carry their physical driver licence with them. Drivers in the following postcodes will be able to participate – 2022, 2024, 2026, 2031 and 2034. To register for the trial drivers need to create a MyServiceNSW Account at www.service.nsw.gov.au. Further instructions will issued in November.

Bill passes targeting public housing wreckers & rorters

Tenants who damage public housing and those convicted of rental fraud will face new sanctions and eviction under a bill passed last week by the NSW Government. The Bill, which amends the Residential Tenancies Act 2010 and Housing Act 2001, would lead to a fairer, safer and more financially sustainable social housing system. The Bill also gives the Government the power to make tenants who have caused significant damage to their public housing property pay a rental bond. This will not apply to tenants who do the right thing. Tenants that wreck their properties, or receive a benefit that they do not deserve are disadvantaging those genuinely in need.
