The recent nation-wide trend of “farm to table” dining, with its emphasis on locally sourced produce, meats and seafood, is hardly a new phenomenon on Maryland’s Eastern Shore. With hundreds of miles of shoreline and large expanses of fertile land, the local food movement has been part of the region’s cultural and culinary heritage since its settlement.

Prior to the construction of the first span of the Chesapeake Bay Bridge in 1952, if Eastern Shore residents wanted to eat it, they had little choice but to grow it, raise it or catch it themselves. From the earliest days farm stands and back yard gardens have been a ubiquitous feature of the area. Yet even here, the expanding emphasis across the country on eating hyper-locally sourced foods has had an important impact. There has been intensified effort to capitalize on the area’s bounty to the benefit of both producers and consumers. Evidence of this development can be seen widely. Farm stands are being augmented with a growing number of well-attended vibrant community farmers’ markets in places like Easton, St. Michaels and Chestertown. These bring together a large assortment of produce, locally made aged cheeses, handcrafted pasta, honey and artisanal bread baked with local wheat. Many local chefs are regulars at these markets, sourcing their menus with local seasonal produce and seafood. In addition, many restaurateurs are establishing relationships directly with the region’s produce and aquatic growers,

producers and watermen for specialty items. The top billing now given to the producers of local food resources on menus across the area is testimony to their growing importance. A map of the region with a sampling of some of the local producers and their outlets indicate how widespread this movement has become. It ranges from Easton’s Cottingham Farm, whose organic tomatoes and other produce and livestock are features at both local restaurants and markets, to the Bartlett Pear where acquainting diners with the local provenance of menu items and their journey from seed to table is central to the restaurant’s philosophy and its commitment to quality and community. Given its popularity, the local food movement shows no signs of abating nationally

and certainly not in this region where it is so ingrained in the culture. Seven out of the top ten dining trends identified by the National Restaurant Association in their 2014 Culinary Forecast centered on the idea of local and sustainable sourcing. Here it is a growing and fluid phenomenon. For both visitors and residents it offers exciting culinary experiences that are unique to the Eastern Shore.

Easton Economic Development Corporation was launched in 2013 to drive economic vitality, smart redevelopment, and business creation in the historic Town of Easton, Maryland to foster a healthy quality of life for all generations.
