The coyotes in the river valley are either very bold or very hungry. A condo neighbour of ours is a newly minted dentist, Dr. Brett York who practices at the Stony Plain Dental Centre. He was walking his dog on the utility road that runs through Victoria golf course when a coyote came out of the bush sort of at him, but more toward his dog, Keisha. Luckily, the dog was on a leash and he was able to scoop it up into his arms. Keisha, a Bichon-cocker cross and not the fiercest dog in the block, would have been juicy morsel for the very large coyote. Brett carried the dog at a fast clip across the golf course to the base of the stairs on 113th Street. All along the valley path, the coyote stalked him. I saw Brett just as he got to the condo and he was wringing wet with sweat, clearly shaken. We strongly urge everyone to be very careful when walking your animals in the valley, particularly after dark. Did I mention it’s home to cougars and wild boars as well?

The Fringe can be fun even in the off season. We joined about 200 patrons for the annual black-tie at the Westbury Theatre in the TransAlta Arts Barns. Our delightful tablemates were Sue and hubby Stuart Cowen, a CA, and Tricia and Michael Stevenson of Porscon Construction. Fellow VOX POPper Mark Scholz was the MC and he’s very good. Aerialist Annie Dugan was fantastic and she performed out of his reach. Moot and Max, a dog, were almost upstaged by someone who might have been named Terry from the audience. Lori McConnell reminded me of a singer during the war. Dr. Ollie was a firsttime auction item, fetching $500 for a dinner for six at our place. Be warned: We have enough equipment to do 18 Moroccan services.

I was busy being sick in North Africa but I would have been better off at the ball—the Grande Masque Ball, that is. It’s our favourite event, so I checked with Pat Warmington, VP Advancement at Concordia University College, and she was thrilled that the gala raised a record $107,600. Honorary cochairs were Drs. t’s hard to believe another year has almost

passed by. I always find December to be a great month of reflection and I try to spend a few minutes to slow down a bit and be thankful for all the good things that have happened to me and my family in this wonderful city of ours over the past 12 months. The biggest news, for me personally, is that the company I worked for, Standard Radio sold to Astral Media for over a billion dollars. My connection to the company is through Allan Slaight, who worked at CFRN and CHED in the early 1950s. Sons Gary and Greg Slaight were both born here in Edmonton, and I proudly spent about 20 years working with Standard both here and in Toronto. The Slaights shared a great deal of their good fortune with the staff—virtually every employee who had been on board for more than a year got a nice bonus cheque this past month. As well, we should be hearing very soon about a major foundation that they are setting up. I can assure you that Allan, Gary and I shared one belief and that is to “give back” to the community that supports you. Our work at The Bear, E Z Rock and Team 1260 is something we all are very proud of, and I wish my former employers nothing but the best in future endeavors. The new owners have kept me on in my VP/GM

iggest and best New Year’s Eve ever…

It’s sketchy but I remember playing drums with The Big Breakfast Band at a New Year’s Eve bash as we tiptoed into 2000. One of our singers, Stephen Antle, had been instructed to fire a confetti cannon to herald the new millennium. As the seconds ticked down, Steve grabbed the cannon, while belting out “I’m gonna wait till the midnight hour…”—the band was cookin’, the dance floor packed… some of the confetti poured onto the stage in a clump. As the clock struck 12, we took a collective breath, only to realize that the horses**t we had suffered throughout the year—the world coming to an end and Y2K crashing our computers—was, indeed, a load of crap. Stephen hit the trigger… a few pieces of confetti fluttered out over the dancers, and the cannon made a sound that I can only attempt to spell: something like ‘fffffeerrrtt’. It was a moment I thought summed up how much we built that NYE to be a bit of a let down. That particular NYE kinda took the steam out of subsequent Eves. At least until now. Events Edmonton, a not-for-profit organization that produces A Taste of Edmonton and the Canada Day Fireworks, has put together what will arguably be the best New Year’s Downtown ever. It will be bolder and better: live music, skating, horse and wagon rides, a bonfire, food, and what GM Giuseppe Albi

11,000 projects all over the world, and has 160 employees in offices in Edmonton, Calgary and Atlantic City. I thought John showed a lot of class when he took the time to remember fellow engineer Al Williams who recently died in a airplane crash.

We attended the annual fundraiser for Employabilities and I noticed the crowd was smaller. Fund Development Officer Irene Beaton explained that, in the past, they gave away tickets to staff and friends of large financial supporters—in effect they position. Early indications are they, too, have the same community values that Standard does. As an example, our Astral Media Radio GP Edmonton staff just raised $750,000 for the Stollery Children’s Hospital during our annual Radiothon, broadcast from the hospital. Another really good thing happened this past year for me when Publisher Sharon MacLean invited me to be a columnist for Edmontonians Magazine. Every month I get to express some opinions; showcase some great people; and to help keep you up to date on what is happening with media in our city. You may be reading this on paper or online at www.edmontonians.com… or on two popular radio chat sites: www.pugetsoundradio.com and www.radiowest.ca. Congratulations to Global Television’s Lynda Steele who was recognized this past month at the Canadian Association of Broadcasters convention in Ottawa for her public service in Edmonton. Lynda is a tireless worker in the community, involved in worthy causes. Her latest is book-signings of Laptop Diaries, a compilation of her columns from the Journal: 100 percent of the proceeds go to five women’s shelters in the area. And kudos to Richard at McCallum Printing for producing the book at no charge—now that’s community service! By the way, my brother Gerry from CJAY 92 in Calgary won his second CAB Gold Ribbon Award for public service. And, fellow columnist Bruce Hogle proudly and humbly accepted his induction into the Broadcasters Hall of Fame. Nice going, guys. 630 CHED’s Gord Whitehead has gone under the knife and had his shoulder replaced. I’m not sure when he’ll be back behind the mic and I wish Gord a speedy recovery. Congrats to Rob Pepper and The Bounce crew for their Bras Across the North Saskatchewan event. This

The added benefit was that attendees in wheelchairs or on crutches could move around comfortably. We’ve been regulars at Jeans and Beans, and now that Dr. Ollie is on the board we’re sure to be there. Rob and I are loosely related and I spent a great deal of time in my youth with his folks in Innisfail. Another media guy who deserves way more credit than he receives is the Edmonton Sun’s Graham Hicks whose Christmas auction has grown to be a huge event every year. It now raises close to a quarter of a million dollars for several great charities. It takes a ton of hard work and great co-operation from the media, clients, listeners, viewers, readers and bidders to pull this off. It simply wouldn’t get done without Graham’s dedication. As well, it’s been a huge pleasure working with Diane Young at the Stollery Children’s Hospital over the past several years. She is moving on to other pursuits and I know she will succeed at anything she takes on. The Stollery will miss her leadership and dedication and we should all be thankful for the amazing job Diane did to raise corporate funding for this most amazing hospital in our city. Best wishes Diane. Finally, I heard a great commercial on a radio station in Phoenix last month that I wanted to share with you. It was clips of conversations with a variety of people – moms, dads, kids, grandkids, all talking about how stupid it is to drive after drinking. hile Internet access has been commonplace amongst Edmontonians for quite some time, social networking websites like MySpace and Facebook are exploding on the international scene. This month’s Poll Station asked Edmontonians about their Internet access and usage habits, as well as their subscription to social-networking websites.

To begin, participants were asked about their access to the Internet. A total of 97 percent of those surveyed stated that they had access to the Internet. The majority of these individuals stated that they had access at home (96 percent) and at work (87 percent). Additionally, nine percent of participants access the Internet at the library, eight percent go on-line at school, four percent take advantage of Internet cafés, and three percent gain access at the home of a friend or relative. Respondents were then asked about the top two things they utilize the Internet for. Nearly two-thirds (63 percent) indicated they primarily conduct research, while 59 percent use it to check their email. Other responses included playing on-line games (12 percent), checking the news (10 percent), on-line banking and paying bills (nine percent), work-related tasks (nine percent), and purchasing items online (eight percent).

All survey participants were asked to rate their level of concern with privacy issues associated with sharing personal information on Facebook or similar websites such as MySpace. Most respondents (79 percent) stated that they were concerned, 65 percent being very concerned. Those who reported being concerned stated reasons including: unknown people accessing their private information (34 percent), identity theft (20 percent), fear of hackers (19 percent), fear of scams or of fraudulent activities (six percent), fear for the safety of their children (six percent) and having their information sold for marketing purposes (six percent).

Next respondents were asked about their use of the social networking website Facebook. Just over one quarter of respondents stated that they have a Facebook profile (26 percent) and an additional 17 percent said that other member(s) of their household subscribe. More than half (57 percent) of respondents did not have a Facebook profile, most commonly because they were not interested or felt they did not need one (67 percent). Fourteen percent did not know what Facebook is or how to use it, or while 12 percent said they would not have time to use it. Facebook users were asked how often they access their profiles. Over half (55 percent) check two to three times per week, while 10 percent access it once per day, and another 10 percent check it more than once per day. The remaining 25 percent reported accessing their profiles once per week or less. When asked to name the biggest benefit of having a Facebook profile, the majority of respondents (70 percent) said it was keeping in touch with friends and family. Ten percent said the biggest benefit was staying connected with people from work or for other business purposes, and five percent said sharing pictures was of greatest value to them.

TOP THREE TIPS FOR A HEALTHY HOLIDAY SEASON As we head into the busy holiday season, I asked Mark to provide three suggestions on how to stay healthy without sacrificing all the tastiness and temptation of the season. 1. Never go to a party or event on an empty stomach. This is important for two reasons. First, the hungrier you are, the less selective you will be with your food choices, so chances increase that you’ll make poorer choices. Second, by not eating as much during the day, you are slowing down your metabolism and greatly increasing the chances the additional calories you consume during a function will become body fat. Before going out, snack on protein, like chicken or cottage cheese or some healthy fats such as natural almonds. 2. Get the healthy food out of the way first. We know you are going to eat the stuff that may not be good for you, but there also will be lean

meats, fruits, assorted vegetables and salads. A great trick to teach your body is to eat less of the bad stuff. Go for the fibrous fruits, veggies and protein first. This ensures your body is getting properly fueled while making you more full so you still get to eat the bad stuff, but you are forced to control the amount of it you eat. 3. Wash your hands often. The holidays are crazy enough and getting sick is the last thing anyone needs. Transmission of illnesses is greatly increased the more time you spend in heavily populated areas such as shopping centres. If you are sick, don’t go out in public and spread your illness to others. The best way to prevent the spread of germs is to keep your hands free of bacteria and viruses. Be sure to wash your hands before and after preparing food and using the bathroom. And, wear gloves when you’re pushing a shopping cart—that handle is a hot bed of germs. √

urkey at Christmas is as big an icon as mom and apple pie. According to my daughter it’s not something one should mess with. It’s just not Christmas without an oven-roasted fresh farm turkey with stuffing and cranberries. Okay, I surrender. I thought it would be nice for a change to have a nice big juicy piece of prime rib, with a red wine demi, garlic infused potatoes, and sautéed root vegetables. This got me to thinking. So what do people do who are tired of turkey or ham at Christmas? If anyone should be tired of turkey, it’s Chef Michael Brown, executive chef at The Westin. He cooks hundreds of the festive buzzards from the last week in November right up to and including Christmas Day. Want to take a cook’s holiday to spend less time in the kitchen and more with your family? Not a problem: Just call The Westin at 436-2626 and they’ll supply your Christmas dinner, complete with all the trimmings. All you have to do is pick it up. As an alternative to turkey, Chef Michael suggests Bison tenderloin, cut into 6- or 8-ounce steaks, with a wild mushroom herb crust. Also on this menu: spaghetti squash, zucchini, and tomatoes in extra virgin olive oil with red skinned scallop potatoes. I also checked with Chef Dennis Cummings, the executive chef and GM of Billingsgate Lighthouse Café and Billingsgate Seafood Market. He’s cooked stuffed salmon for Christmas. “Every couple of years I do a fish dish. After awhile you get sick of turkey, turkey, turkey. Fish as an alternative dish is healthy for you and great tasting.” He points to the huge number of people of European decent who flock into Billingsgate each Christmas to buy fresh fish. It’s growing in popularity now with Edmontonians. My illustrious editor, Barb Deters agrees—though she admits her family would insist on her brined turkey (featured last year) for Christmas Day. Nonetheless, she strongly recommends Salmon Wellington for the more adventurous… or for New Year’s Eve. Both Chef Dennis and Barb kindly shared their recipes.

One 8-10 lb. Fresh whole Atlantic Salmon 3 Cups of rice cooked 2/3rds of the way to doneness 1/3 Cup ground pistachio nuts 1 Cup cooked baby shrimp 1/2 Cup diced artichoke hearts 1/4 Cup onion diced very fine The rind of one lemon 1 Tbs. fresh minced garlic 1 Tbs. tarragon 1/2 Cup sour cream salt and pepper ~ Wash the inside of your salmon. Cut down the center inside of the fish to remove the center bone. (Retail Manager Trudy at Billingsgate Fish Market will do it for you, if you ask nicely.) ~ Mix all of the other ingredients in a large bowl. ~ Stuff the cavity of the fish. ~ Rub the outside of the fish with olive oil. ~ Wrap in tin foil and bake at 350ºF for one-and-a-half hours.

SALMON WELLINGTON This dish can be prepared in two stages over two days and refrigerated until baking time. The advantage is that, having pre-baked the salmon, you avoid the unpleasantness of soggy pastry on the bottom— essentially you are merely re-heating the salmon while the puff pastry is baking. 2 Salmon fillets (3 lb/1.5kg total) 1/4 Cup butter, softened Coarse or sea salt Freshly ground pepper 1/4 Cup fresh dill, chopped (optional) 1 pkg puff pastry, thawed 1 egg, beaten with 2 Tbs water

FILLING 4 hard cooked eggs, sliced 1 lb spinach, cooked, drained and chopped 1Tbs lemon juice

~ Pre-heat oven to 450º F. On a two-foot length of heavy duty foil, place one salmon fillet, skin side down. Spread with butter, sprinkle liberally with salt pepper and dill. Top with second fillet, skin side up, with tail ends in opposite directions. Wrap salmon tightly in foil, squeeze to form cylindrical shape, folding foil over to hold shape. Double fold all seams and seal ends. ~ Place salmon on baking sheet and bake for 25 minutes. Let cool and refrigerate, still wrapped, until thoroughly chilled… overnight, if desired. ~ To prepare Wellington, pre-heat oven to 425º F. ~ On a lightly floured surface, roll out puff pastry about 3 inches longer and four times wider than salmon package. Cut out decorative appliqués—leaves, berries, fish—from excess pastry and set aside. Arrange filling. Overlap egg slices in three rows down centre of pastry, leaving 1-1⁄2 inches of pastry bare at each end. Spread spinach over top of egg slices; sprinkle with lemon juice. Season with salt and pepper. ~ Unwrap salmon fillets. Do not separate. If you prefer salmon without skin, carefully remove from top fillet. Place in centre of pastry, skinned side down. Carefully remove skin from top fillet. ~ Fold one side of pastry over salmon. Brush some of the egg wash over remaining three edges of pastry. Fold the other side over the salmon. Pinch to seal seam. Fold ends of pastry over and pinch firmly to seal. ~ Place on baking sheet, seam side down. Garnish top with pastry cut-outs. Brush pastry with remaining egg wash. Cut several short slashes on top to vent steam. ~ Bake approximately 25 minutes or until pastry is golden brown. Remove to a heated platter and garnish with sprigs of fresh dill, grilled lemon and/or lime halves. Serve with your favourite sauce. SEWING INSTRUCTIONS Cut two 1” x 10 ½” pieces of fabric for leggings. Sew boots together at front seam up to mark. Open bottom of boot and place sole

inside, stitch together. Fold down top for cuff and add bells. Sew mitts together, stuff. With right sides together, sew front and back of coat together at side seams and shoulders; leaving a small opening for neck. Sew a casing at the bottom of the sleeves and at hem. Pull floss through; leave ends long for tightening. Fold hat in half, right sides together, sew and hem bottom. Stuff sparingly.

ASSEMBLY 1. Drill two 3/8” holes in base for legs, approximately one inch apart. Paint. 2. Drill two corresponding holes in bottom of body for legs. 3. Drill one hole at top of body and in head for neck. 4. Cut two 12” long pieces of dowel for legs and one 3” section for neck. 5. Place neck in head and glue on nose. Paint head with flesh-toned paint and detail eyes. Add colour to cheeks with blush using stencil brush. 6. Spray glue leggings and adhere to legs. Attach legs to body. 7. Cut small slit in the bottom of each boot sole and slip over legs. Insert in base. Stuff and add bells to boots. Place body on legs. 8. Dress Santa with coat, stuff. Place mitts in arms and secure with drawstrings. Add glue if necessary to hold in place. Pull draw string tight at bottom of coat and knot. 9. Place head on neck, glue on hat and add bell with wire. 10. Glue beard and hair to face. 11. Wire hands together and attach ornaments with hot glue. Steffany Hanlen Steffany spent 16 years as an NHL skating coach under contract for the Edmonton Oilers and St. Louis Blues. She was the first female skating coach authorized in the NHL dressing rooms. Over the years, she has worked with players on every team in the NHL. At the 2006 Winter Olympics in Torino, Steffany became the first ever Performance Coach accredited by the COC, coaching ice dance champions MarieFrance Dubreuil and Patrice Lauzon. His desire to teach the art and techniques of how to speak properly led him to become the official Canadian representative of London, England’s Trinity Guild Hall, the International Certification Board for Voice and Speech. Closing dinners— the next chapter Closing dinners happen shortly after a divestiture has been finalized. By then the dust has settled, the funds have been distributed and the memory of the stress and trauma of the sale process is beginning to subside. All too often everyone is too busy to get together and celebrate the event. The professionals have moved on to their next deal and the sellers are either about to retire or are adjusting to becoming employees after years of being the boss. Time passes and then the moment is lost and it seems somewhat inappropriate to get together three months later. We recently closed a deal that had its share of ups and downs, took a long time to close, and fell off the table on more than one occasion. Both sides to the transaction acknowledged if it was not for the efforts of the intermediaries and the lawyers involved, the deal would never have closed. I contacted the vendor’s legal counsel and we agreed to co-host a closing dinner and invite the vendor’s wives. The vendors were clearly surprised by our gesture but obviously pleased that we would take the time and effort to organize such an event. What transpired was a most memorable evening. In business we need to take the time to mark events and recognize what has transpired. A divestiture is a significant event in most vendors’ lives. It is often the realization of a lifetime of effort, risk and worry. All that graft and grind is transformed into cash. There is also the passing of the mantle as someone else now operates your company and has renewed vigour and great plans for the future. What impressed me most was seeing how happy the wives were as they embarked on the next chapter of their lives. Financially, they should all be secure and they could now do all the things they had put off for many years because their entrepreneurial husbands could not get away from the company. They all had a list of exotic locations they were going to visit and things they were going to do. The vendors were content to let them plan and were quite happy to go with the flow. It was a most satisfying event and an appropriate closure to the transaction. Sometimes we lose sight of why we work and what our long term goals are and it’s times like these, when everything finally comes together, that we are reminded of our purpose and those goals.
