I couldn't help but find myself studying freelance photography whilst on maternity leave while expecting my first baby in 2014. Starting out entirely as a hobby I would photograph the babies at my mothers group in Sydney. We moved back to the coast in 2015 where I continued photographing families, pregnancies and babies. It wasn't until 2017 when I started taking on weddings the business grew significantly. Today I'm photographing 30+ weddings a year, so it's turned into quite the career and gives me flexibility as firstly I am a mother to 3 gorgeous children and wife to a loving supportive husband. I've been solo shooting weddings for five years now, I love my job but mostly I love the feedback I receive randomly from guests on a wedding day and following delivery of a wedding gallery, the support keeps me on this path. My biggest advice to couples wanting to get married is - you don't have to do "tradition" or what everyone else is doing. Something I love and much more recently are the authentic days aligned to what you believe is important for your own marriage. If the thought of a big day makes you anxious, in my experience some of the loveliest moments are spent whilst photographing an intimate elopement, just you two being yourselves without all the hype and cost of the big day.

BAKED SALTED MAPLE DONUTS

Tinged with the flavors of cinnamon and nutmeg and everything cozy. Sweet but light. Absolute perfection.

INGREDIENTS FOR THE DONUTS: 1 cup flour 1 teaspoon baking powder ¼ teaspoon baking soda 1 teaspoon ground cinnamon ½ teaspoon ground nutmeg ½ teaspoon fine salt 1 large egg ¼ cup light brown sugar 2 tablespoons maple syrup ¼ cup whole milk ¼ cup plain Greek yogurt 2 tablespoons unsalted butter 2 teaspoons vanilla extract

FOR THE SALTED MAPLE GLAZE: ½ cup maple syrup 3 tablespoons unsalted butter 1 cup powdered sugar ½–1 teaspoon flaky sea salt FOR THE DONUTS: Preheat the oven to 180C Butter or spray your donut pan with nonstick cooking spray. Whisk the flour, baking powder, baking soda, cinnamon, nutmeg, and salt together in a medium bowl. Set aside. Whisk the egg, brown sugar, maple syrup, milk, yogurt, melted butter, and vanilla together until smooth and well combined. Pour the wet ingredients into the flour mixture and stir gently until just combined, trying not to overmix the batter. Spoon the batter into a large resealable plastic bag and snip one corner of the bag. Carefully pipe the batter out of the bag into your donut pan, filling each donut well ¾ of the way full. Bake for 8-10 minutes, or until the batter is set and the edges are lightly browned. Cool for a couple minutes in the pan and then carefully transfer the donuts to a wire rack to finish cooling.

FOR THE SALTED MAPLE GLAZE: Place the maple syrup in a small pot over medium heat. Bring to a simmer and cook until it is reduced by roughly half. Whisk in the butter until it is completely smooth and melted. Remove the pot from the heat and whisk in the powdered sugar, a little at a time, mixing until a smooth glaze forms. Whisk in ½ teaspoon of the sea salt. If the glaze gets too thick as it cools, whisk in 1-2 teaspoons of water until it becomes a drizzling consistency.
