from the chief It’s proving a little difficult to contain my excitement that everyone else in the Cebu Pacific family shares — next month, the company hits a giant milestone as we turn 20 years old. Getting this far is no small feat, and it hasn’t always been a smooth ride, but we are extremely proud to have achieved what we set out to do two decades ago: to help make air travel a right every Juan has access to, rather than a privilege enjoyed only by a few. We’ve done some preparations in time for the big celebration, including brand-new aircraft sporting our new livery and a change of outfit for our cabin crew. The refreshed look, both on the aircraft and as worn by our dedicated team of flight attendants, reflects the company’s current mindset at this point in our journey — fun, forward-looking and true to our original mission. But the more sweeping improvements are happening behind the scenes, in the way we are defining our role in the international stage, and in systems we are putting in place in order to properly fulfill that role. With an expanding fleet and network — flights to our first American destination, Guam, begin in March — and everincreasing flight frequency, we are now a global Filipino airline, one that makes the wider world more accessible to more Filipinos, and one that gives travelers into the Philippines greater mobility within the archipelago. On what is effectively the eve of our 20th birthday, I am proud to say the future looks bright for Cebu Pacific, and for the public it passionately serves. My heartfelt thanks goes to all Cebu Pacific passengers — we couldn’t have achieved what we have without your valuable support. Here’s to many more birthdays ahead.

I fell in love with Kyoto long before I even set foot in it, and that’s by no stretch of the imagination unique to me — at the very least, anyone who’s seen Memoirs of a Geisha, or read Pico Iyer’s The Lady and the Monk: Four Seasons in Kyoto, a 352-page meditative deep-dive into the city and Japanese culture, would have been completely enamored by the lush mountain landscapes, the sculpted gardens and storied streets, all that history in the air. The people and the numerous careful ceremonies they carry out in the course of a day, the dogged attention to detail and unrelenting sense of decorum, the effortless style. This is the essence of the photos and stories we see and read everywhere about the “Thousand-Year City”. Kyoto, helpful guidebooks and websites often assure us, is what we’re thinking of when we close our eyes and dream of the real Japan. For our February lovefest destination, we couldn’t think of a more fitting cover than Japan’s former capital — if you’re due for a holiday in Osaka, make sure to spend half of your time in Kyoto, just a 30-minute train ride away (you can also head straight to Kyoto from Kansai International Airport). I’ve been back to the city two more times since I’d first encountered it, all within the space of just over a year. I ended every trip sated yet with the sense of having missed something: a secret side alley I should’ve explored, some curious little teahouse I should’ve checked out, a temple I should’ve visited, hills I should’ve hiked. It’s a city that changes with every season, and in doing so multiplies all its charms. Still on the subject of deeply rewarding detours, this month we also head north of Hanoi all the way to Sapa in the mountains of northern Vietnam (page 66). This majestic landscape of terraced hills is both a hiker’s paradise (bring sturdy shoes with a lot of traction) and a photographer’s dream, and it’s well worth the overnight train ride from the capital to get to it. On February 8, the Vietnamese will celebrate Tet Nguyen Dan, which marks the start of the lunar new year. The country is extra-colorful as fruit trees and blossoms become a fixture outside houses. Locals buy clothes, start jobs, worship ancestors, give and receive money, pay debts, visit temples, do good deeds and avoid bad thoughts at this time to get a fresh start. On the eve of Tet, people make noise and watch fireworks as everyone in Vietnam becomes a year older — the

coming of a New Year is how they age, rather than through individual birthdays. Make sure to check out Nguyen Hue Flower Street in Ho Chi Minh City, which attracts as many as one million visitors annually. Aside from feasting on Vietnamese staples, be sure to try banh chung — a boiled, sweet, sticky rice cake with beans and wrapped in leaves — as it is only available during Tet. vietnamtourism.com

In a country known for the madcap and offbeat, one of the most eccentric events of all is Hadaka Matsuri. It’s a festival where nearlynaked men wearing only their fundoshi (loincloth) fall all over each other in the quest to grab sacred sticks, willow strips or other amulets said to make the bearer incredibly lucky for a year. Though held during the cold season, the festival also sees water splashed on the over-excited participants. As soon as midnight strikes, all the lights are turned off and priests throw the items from a window. As many as 9,000 men join the mad scramble for the lucky objects. There is a “junior” version, too, prior to the main activity, where kids compete for rice cakes and other prizes. Hadaka Matsuri festivals are held across the year in various areas of Japan, but the most famous is at the Saidaiji Temple in Okayama where it all started 500 years ago. The festivities will be held at the Saidaiji Temple on February 20. Okayama is one to three hours from Osaka by train or bus. jnto.go.jp

According to the document, visitors must not touch carvings, sit on fragile structures, recline or lean on the temple and its structures, move archaeological relics or scribble graffiti. Climbing on loose

stones, wearing skimpy clothing, smoking and making loud noises are also prohibited. What’s more, in this age of posting risqué photos on social media, the code makes another thing clear: “Any act of looting, breaking or damaging Angkor, or exposure of the genitals and nudity in public areas, is a crime punishable under the law.”

BEST PLACES TO WORK FOR EXPATS Singapore, Sydney and Dubai made it to the top 10 best places to work for expats, according to InterNations, the world’s leading social network and information site for people who live and work abroad. In a survey of more than 14,000 expats from around the world, New York came out as number one, closely followed by London, Barcelona, Sydney and San Francisco. Sok An, the Deputy Prime Minister and president of Apsara, the government body that manages the 40,000ha park, said the Code of Conduct is essential for ensuring that tourists behave properly so as to protect it from negative impact. The new code will also defend the national identity, culture, religion and temples of Angkor.

SIMPLER LUGGAGE SCANNING AT HCMC AIRPORT Visitors will spend less time entering and leaving Ho Chi Minh City’s Tan Son Nhat international hub thanks to a simplified luggage scanning system. It used to be that travelers entering or leaving Vietnam had to have their carry-on bags checked at the customs area, and then walk to another area where airport security guards conducted a baggage scan. The new system has combined both procedures, with airport security guards and customs officers simultaneously doing luggage scanning as well as handling any violations with the law. The procedure debuted on November 16 last year, and so far has received positive feedback from passengers, according to Le Tuan Binh, deputy head of the airport’s customs department. 22 SMILE • FEBRUARY 2016

BOCA table now HAVE A TASTE OF THE HOTTEST PLATES IN SINGAPORE Whether you’re planning a romantic date or out to spoil yourself on Valentine’s Day, setting is key. In the famously vibrant Singapore dining scene, eight-month-old BOCA stands out as unique for its offerings: Portuguese food and drink. Tucked into a pretty shophouse in Chinatown’s resurgent Bukit Pasoh Road, it offers plenty of atmosphere, a mouthwatering menu of finely plated authentic fare and bespoke cocktails, plus a good dose of ebullient Iberian charm. Boca is Portuguese for “mouth” and the restaurant is a passion project of three friends, all long-time Singapore residents, who wanted

to give the Little Red Dot a taste of their native Portugal, if not quench their own longing for the comfort food they each grew up with. Thus the menu was drawn based on “a lot of emotional choices rather than rational ones”, says one of the partners, architect José Silva. “But we knew what we wanted: some cod fish dishes, some steaks and some small Portuguese bites like clams and cod fritters.” Signature dishes, developed with the help of 27-year-old chef Francisco Vaz from Cascais and 26-year-old Hélio Goncalves from Lisbon, combine the best of Portugal’s home-style dishes from various regions with international 33 SMILE • FEBRUARY 2016

flair — a sumptuous and savory Portuguese porridge with prawns and aged bread, polvo à lagareiro (octopus with olive oil, paprika and garlic), bochecha de porco (melt-inyour-mouth pork cheek with honey and ginger) and, of course, bacalhau à bráz (codfish). in their culinary tradition cannot be overemphasized. “We have hundreds of other recipes for cod,” adds Vaz. “One for every day of the year.” Tradition plays an important role in the Portuguese culinary world — many of the more popular dishes are hundreds of years old, and each one is named after the person credited with first coming up with the recipe — as does the idea of home and family. Vaz, for example, first cultivated his kitchen skills under the tutelage of his grandmother. Dishes are often straightforward and simple, relying mainly on the freshness of the ingredients. It doesn’t get any tastier than catch from the cold, deep Atlantic, and that’s exactly what you’ll get at BOCA. The experience of Portugal extends well beyond the plate, and the whole restaurant is done up in muted shades of blue — from cerulean to indigo — to reference the country’s famous

sky as well as its coast. Hundreds of handmade black ceramic swallows or andorinha, a folk symbol associated with love and fidelity, were flown in from Lisbon to decorate BOCA’s walls. Swallows are migratory birds that fly long distances, but always return to the same nest. They’re monogamous and have lifetime mating partners. Could be a cool talking point — especially if the date is going well.

SIMON N. OSTHEIMER HEADS OUT ON TO THE STREETS OF BANGKOK TO GET A TASTE OF THE CITY’S FOOD-TRUCK SCENE It’s Friday night in Bangkok. I’m a stone’s throw from Punnawithi BTS station, standing in the middle of a field and surrounded by food trucks at the M.A.P. Weekend Fest. I’m at a complete loss as to what to choose: there’s the Double Cheese Wagyu Burger at Burgler Burger, right next to the Danish-style hot dogs at Food Stop. Then, just a few feet away, there’s Monkey Brownies, tempting me with an array of home-made brownies. On the other side of the huge grass lawn is Answer Cheeze, where people are lining up to order chunky grilled cheese toasties. There’s also a queue at Ugly Dog,

whose icon is a rather crazed-looking canine. The hot dogs here seem more traditional in terms of filling, but come served in exoticlooking buns like the black “Charcoal” and a home-made organic rice berry. Just when I thought that there can’t be any more, I happen across the burgers and

smelling sandwiches, but then I spy one last food truck over in the corner, and its large, hand-drawn sign that reads “Two Angels Tacos”. I ended up ordering a plate of Roi Choi tacos, the owner’s

tribute to KoreanAmerican chef Roy Choi, the man who founded the modern food-truck movement in 2008. There are close to 1,000 food trucks in Bangkok right now. While they often congregate at markets like the one I’m at, they usually pull up and park on different spots every day, often on busy nightlife streets like Thong Lor. Sometimes they partner with bars, as with the symbiotic relationship between Craft beer bar on Sukhumvit Soi 23 and burger van Daniel Thaiger. Food trucks also attend the big music festivals that take place in and around Bangkok, but mostly it’s a case of trial and error — traveling around to scout locations, testing them out and seeing which ones work. The next night I disembarked the BTS Skytrain at Sala Daeng station to hunt down Bangkok’s

most idiosyncratic food truck. Behind an upscale Thai restaurant, occupying a quiet courtyard, I find what I’m looking for. Illuminated by strings of lights, and furnished with red-check tableclothcovered tables, a small team of wait-staff hover around welldressed patrons, while at the center of it all is a large truck bearing the words: Pizza Massilia. The entire side wall of the truck is open, revealing two huge chalkboards bearing the menu. In the middle is the “kitchen”, which features a full-sized wood-fired oven and pizza-making station. It’s an impressive, almost romantic setup. I later discover the understandable reason is that they’re in the frantic last stages of opening up a proper bricks-andmortar restaurant. I guess food trucks, like us all, have to settle down some time.

Rey of light DAISY RIDLEY, THE SCAVENGER-TURNEDHEROINE OF THE FORCE AWAKENS, IS POISED TO REIGN OVER THE STAR WARS GALAXY From the thousands who auditioned for the latest addition to the Star Wars movie saga, über-director JJ Abrams chose to take a chance on the virtually unknown actress Daisy Ridley to play Rey, the orphan-scavenger who can do anything — fly and hotwire a spaceship, wield a light saber and go all Jedi mind-master on armed guards. With her leading role, the 23-yearold British actress, along with fellow breakout star John Boyega (playing stormtrooper-with-a-conscience Finn), joined the exclusive gallery of stars and their iconic characters in the Star Wars universe — Harrison Ford (Han Solo), Carrie Fisher (Princess Leia/General Organa) and Mark Hamill (Luke Skywalker). After a hectic period of promoting The Force Awakens around the world, Daisy is now back at work as Rey as she shoots Star Wars: Episode VIII, set to hit theaters in May 2017. We caught up with the new star for a quick chat on the role of a lifetime. So how did you land this coveted role? Luckily for me, JJ was trying to search as far and wide as possible to cast the role because otherwise, I definitely would not have gotten it. I was just one of the lucky people who managed to get an audition, and he saw something

in me. I thought I had ruined the first few auditions but I guess he saw some potential. I was allowed to come back and read again. I finally got the role two years ago. Were you overwhelmed at all by the prospect of playing such a major role? Weirdly enough, I heard about the role because two of my friends, who are in the business — one’s a stylist, the other is a make-up artist — talked about it months before I auditioned. I got this really weird sense. I emailed my agent straightaway and wrote, “I need to audition.” Six months passed, and 42 SMILE • FEBRUARY 2016

then I heard that they were auditioning unknowns. Even though I felt like my auditions weren’t going well, there was definitely a sense within me that felt like something was going to come from it all — whether it was that role or something of this scale. So have you always wanted to be an actress? I went to a performing arts school when I was nine. I was distracting other kids in school. My mother thought that if I was busy, then I wouldn’t be! I’m going to say this is my first feature film, because the first one that I signed up for was for university

students. It wasn’t quite what I thought it would be. What was the most special moment for you in the filming of this movie? Probably wrapping it up. Because everything, from when I started auditioning two years ago to this moment, has been like a rollercoaster experience. Not an hour has passed where I haven’t thought about this film and this character. Just the amount of work from thousands of people, especially the crew — we’re just the face of all of this work that’s gone on behind the scenes. So when we were finishing, I was just so emotional. You build such amazing relationships. I’d never been able to build a relationship like that on a set, because I’d never been on a set for that long. And to be cared for, for people to appreciate you — for that to all come together, and to know it was finishing — was overwhelming emotionally. Because firstly, I didn’t want to finish and secondly, to me, it was more than just filming a movie.

And what was the most challenging? My own insecurities about myself. Because to be believed in by many other people is a wonderful thing, but to be unsure as to why they’re believing in you is a totally different thing. That’s a hurdle to cross. Did you get on well with Harrison Ford? He’s so warm and friendly. JJ introduced him as “Mr Ford” or something. He was like, “No, no, no, my name’s Harrison.” And to watch him work — oh my gosh, incredible. For someone to know so truly what he’s doing, what’s going to work, and

to see him and JJ working together. It was a huge collaboration among us all. But those two in particular, to see them work together was absolutely wonderful. It was awe inspiring, but not intimidating. He raised you to high heaven in my interview with him. That’s very nice of him. It’s weird, because Harrison and I were talking a few nights ago about watching the film. He said that for people in the creative world, it’s the process that’s the most important thing, not the result. That will stick with me because at this point, it almost doesn’t really matter what I think about myself because the film is wonderful. Setting my performance aside, how Rey is written and how she was worked in to the world of Star Wars is wonderful. She will hopefully be an inspiration to girls and boys, and tell a story that people can really relate to.

Treks with the tykes MARC AND DANICA PINGRIS HAVE PLENTY OF EXPERIENCE IN THE ART OF MAKING FAMILY HOLIDAYS FUN. HERE THE BASKETBALL PRO AND ACTRESS DIVULGE THEIR TOP TRIP TIPS If you need tips on traveling with the family, ask Marc and Danica Pingris. The celebrity couple has learned a thing or two when it comes to vacationing with their kids, 7-yearold Mic and 4-year-old Caela. “We have to choose a kid-friendly place,” they tell us. But this does not limit them in any way. “We are the kind of travelers who really want to explore. We want to be outdoors, not just in hotels.” So a typical itinerary includes sightseeing, periods of rest in between, date nights, shopping and choosing spots that both the adults and children will love. One factor they do have to consider, however, is their schedules.

Marc, 34, is a professional basketball player for the PBA’s Star Hotshots, while Danica, 32, is a TV host, actress and chef. “Being married to an athlete, you can’t always plan your trip ahead of time because it will all depend on what will happen in the games — they might make it to the championship or they might get eliminated,” she relates. Still, the family manages to plan a vacation and have a great time in the process. “Traveling for us is the best way to make memories,” says Danica. “Nothing beats that feeling of excitement when you’re trying to discover a new place with your spouse and kids. It’s also a time to get 44 SMILE • FEBRUARY 2016

away from the busy city, relax, unwind and bond with each other.” Marc and Danica have since gained valuable experiences — and fulfilled a few life goals — from their trips. “In 2007, we visited France and Marc saw his dad for the first time. It was such a heartwarming scene that we will never forget,” she confesses. That same year saw them heading to Italy, where Danica had a memorable episode. “I lost Marc at the train station in Milan,” she reminisces. “My stuff was with him — even my phone! I was crying already. Good thing I found him at the souvenir shop buying another mug for his collection,” she recounts, laughing.

Make the journey easier For long-haul trips, we get red-eye flights so the kids can just sleep. For road trips, we always bring snacks and activity cards so that they won’t get bored.

Then there was their “working” holiday in Spain, when Marc played at the 2014 FIBA Basketball World Cup. “I was with the kids, mom and in-laws. We were also able to go around Madrid and Seville.” After going overseas, what’s left on their list? According to Marc and Danica, the children are requesting “Japan and any beach destination” — so we might see them strolling the city streets or frolicking in the sand soon. In the meantime, the two reveal the travel habits that make their family outings go more smoothly. Engage the kids We try to keep the kids interested.

Since our son is older, we try to get him involved. We ask him to help us look for the gate in the airport, and also explain to him the history of the places and monuments that we visit. Set aside some couple-only time If there’s a responsible adult who can watch our kids while they’re asleep, Marc and I usually go out at night. We go to a nearby coffee shop or just walk around the area near our hotel.

Record fun moments We try to get everything on cam, print our photos and make albums. Our kids love looking at old pics. If they forget the places or what happened during a trip, they can always go back to the pictures that we’ve kept for them. Safety is a priority Be alert and aware of your surroundings, and try not to bring any flashy stuff, especially when you’re with your kids.

What is your preferred accommodation — chain hotel, boutique or Airbnb? I prefer staying in hotels because it is more convenient for me. I usually travel with one companion only, so hotels are better. If I am traveling with four or more people, we stay at an Airbnb because it is more economical. She 's goreng places CELEBRITY CHEF AND ASIAN FOOD CHANNEL HOST RINRIN MARINKA TALKS ABOUT INDONESIAN CUISINE AND SHARES HER FOODIE EXPERIENCES If you’re curious about Indonesia and its fantastic fare, chef Rinrin Marinka provides the perfect introduction to her country’s cuisine on the Asian Food Channel with her shows Back to the Streets: Jakarta and Wonderful Indonesia Flavours. In the latter show, Rinrin travels with Australian chefs Tobie Puttock and Darren Robertson to destinations including Batam, Bandung, Makassar and Tomohon to show you just how much good food you’re missing. And it’s been a wonder and revelation for the cookbook author, former cooking instructor and host of MasterChef Indonesia, as well as local programs like Cooking Paradise and Sendok Garpu — literally “Spoon and Fork”). On Wonderful Indonesia Flavours she discovers the dishes, culture, ingredients and places that make each area unique. But the experience is not without its challenges — the chefs have to try and cook what they’ve seen and tasted, and put their own spin on it. We asked Rinrin what has learned on her journey towards becoming a top TV chef. You first studied visual communication at university before deciding on French cuisine in Australia. What made you switch courses? I majored in fashion design. I realized

Indonesian food. I’d say the variety will never cease to surprise me. What do you appreciate about Indonesian cuisine in particular? Indonesian food is genuine and diverse. Moreover, every food has its own story and history. that food is also art, so I took the opportunity to play around with the different components of food and applied artistry when creating dishes. How have all of your cooking experiences helped change the way you see food, and Indonesian food in particular? Food has always been one of my many pleasures. I hope it is [the same] for everyone. But leading a balanced life is key, so I love creating healthy but delicious foods for daily life, for example, and others in terms of 51 SMILE • FEBRUARY 2016

What would you say are the common misconceptions or assumptions about Indonesian dishes? That cooking Indonesian food is superhard. The truth is, most Indonesian food uses tons of ingredients, and needs a lot of time and patience to cook; it’s a definite labor of love, but it’s totally worth it. Which are your go-to meals for introducing Indonesian food to first-timers, or even to those who

Can you share with us your personal favorite destination in Indonesia? Bali, for its culture, variety of food, nature and beautiful spots to spend the day. What have been some of your most surprising discoveries while doing your two shows? The richness of the old cultures, beautiful scenery and exotic food, such as the sea worm curry. In Wonderful Indonesia Flavours, you and your co-hosts attempt to re-create the dishes you’ve come across. Which were the toughest ones, and which are the recipes you’re inspired to use to this day?

I would say the first one I tried, sinole [a dish made of tapioca flour, jackfruit, sugar and coconut], was the toughest one. But I would use wedang ronde [dough stuffed with peanuts, sugar and salt, and served with ginger syrup] again and again, because it’s delicious and fun to make. How about in Back to the Streets: Jakarta? And what are your tips for visitors, or even locals, who want to explore the best of what Jakarta street food has to offer? Be very selective when eating street food in Jakarta. Choose the street food based on the reviews and

In what ways have these two shows taken you out of your comfort zone? Both pushed me to the edge of being experimental with Indonesian food, and definitely [taught me] perseverance and endurance through the fun adventures and travels. It’s been five years since your cookbook, Fantastic Cooking, came out. What do you think we’ll see in your next one? I would like to make a hardcover or coffee-table book of modern Indonesian food at home.

Lost Seoul? LEARN TO EXPLORE THE MULTI-LAYERED KOREAN CAPITAL WITH THESE TIPS FROM KC RAMIREZ The best way to explore Seoul is to appreciate its scale. It’s home to over half of South Korea’s population — even its ancient name, Hanseong, means “big” — and its Metro system has 18 lines. Take taxis and buses While the Metro will assuredly have a station for a palace, market or mall, it’s not always convenient. Among the world’s longest urban systems, Metro trains could require interchanges even if your destination’s nearby. O

ne of the more popular activities for young female tourists in Kyoto is an afternoon playing dress-up as maiko, or geisha-in-training. You can see them walking around the city’s most photogenic quarters in the hesitant steps necessitated by fitted kimonos and geta, or thong sandals traditionally made from wood. Groups of girls, bashful and in character, don full maiko regalia — dangling hair

ornaments, colorful paper parasols and little embroidered silk purses — that is rented from shops that specialize in immersive throwback experiences. The girls parade down the crowded sidewalks of central Kyoto and pose for photos against the towering pagodas of Buddhist temples, or the bright orange torii gates of Shinto shrines. Once in a while you might spot a groom-to-be, or perhaps a dutiful new husband on his honeymoon, sporting a black and 56 SMILE • FEBRUARY 2016

grey kimono and — should he have the hair length for it — a samurai top-knot. Instead of a sword, he might wield a selfie stick. Indeed, entire districts of Japan’s photogenic former capital exude the romance of its courtly past, and are as scenic and well preserved as movie sets. The city may bear all the trappings of modern Japan — from efficient train networks and arcades for the pinballlike game pachinko to complicated

toilet systems with self-warming seats, built-in bidets with at least three spray settings and audio privacy features. But it’s the holdovers from as far back as the mid-700s that draw crowds of visitors from around the world to this city of 1.5 million residents — the epoch that marked the beginning of the Heian period, regarded as the golden age of Japanese culture, which among other things gave rise to the enduring concept of washoku, or cooking and eating according to the season. Here is the old Japan of imperial courtier and diarist Sei Shonagon, whose observations of court life and the changing of the seasons are recorded in the classic The Pillow Book, completed in the year 1002. Of winter, she wrote: “It is beautiful indeed when snow has fallen during the night, but splendid too when the ground is white with frost…” Also, rather insightfully: “A man who has nothing in particular to recommend him discusses all sorts of subjects at random as if he knew everything.” This is the old Japan of feudal lords, warriors, court ladies, courtesans and monks; of quiet temples, bustling markets and sweeping gardens that “borrow” from faraway landscapes; the old Japan of formal and complex tea ceremonies by day, and furtive alleys, shadow screens and bright paper lanterns dancing in the wind by night. The Kyoto city center might be small, but with its long, complex history and remarkably rich culture, it can get a bit overwhelming. Here, we break down a first-time trip to three essential

experiences. We’re sure you’ll be returning for more.

Mornings at the temple Japan’s ancient religion is Shinto and Kyoto has more than 400 Shinto shrines, each conspicuously marked by traditional torii gates, most of which are in the hard-to-miss shade of tangerine. At its core the religion focuses on the way of the Kami, a spiritual force that exists in nature and governs all things. When Buddhism arrived by way of China in the 7th century, the majority of Japan’s ruling class and intellectuals embraced it, especially the contemplative subset known as Zen. Zen Buddhist temples began to emerge, and today there are a staggering 1,600 around Kyoto alone. If you only have time for a couple of temple visits, make sure to include Kiyomizudera on your list. It’s a short bus ride from the center of town, followed by a hike up a slope lined with stores selling beautifully packaged sweets, elegant souvenirs such as richly textured wrapping paper, and softserve matcha green-tea ice cream in a cone. There’s so much going on along this route that the 20-minute hike feels like a cinematic experience in itself. Kiyomizu in Japanese means “clear or pure water”, and its namesake Buddhist temple dedicated to the goddess of mercy was founded in the late 8th century, although the present structures were built in the 1600s. It’s a UNESCO World Heritage Site, one of 19 in Japan, and is noted for the balcony of its main building, which offers breathtaking views — in the spring, entire mountains blush with the pink of cherry blossoms for about a week before settling into lively shades of green for the summer, and turning a fiery red come fall. If you hear faint shrieking in the distance, follow that sound and it will

lead you to the “love stones” — two large stones set 18m apart, where young schoolgirls often test what romantic fortunes await them. The idea is to make a wish while touching one stone and, with eyes closed, then to make your way to the other stone without incident, whereupon your wish will come true. You’re allowed to have a friend tell you how to proceed, and every successful run inspires a lot of exciting shrieking and hugging between wishmaker and coach. Both stones have become smooth from years of touching and fervent wishes. Fushimi Inari, on the other hand, is a five-minute train ride from Kyoto station and involves a lengthier hike through more than 1,000 of the orange torii. Don’t worry — it’s a gentle ascent, nothing too steep, but you’ll need about two hours to get to the top of Mount Inari, a sacred site traditionally worshipped by merchants seeking more favorable fortunes. Temples and shrines are perhaps the top attractions in Kyoto, so there will be crowds; it’s best to plan your visit early in the morning so as to avoid the peak swell.

Afternoons around the city A city that’s compact in its sensibilities and has many little turns that spring wonderful surprises, Kyoto is most efficiently explored on foot. Start out at the 400-year-old Nishiki Market, a narrow street lined with 100-plus stalls selling everything from fresh fruit, seafood, and skewered and grilled sticky rice snacks to colorful candy, specialty sake and tea of

varying grades, as well as other dry or pickled delights. Random factoid: among Nishiki’s more famous yet unlikely guests was the late David Bowie, and displayed on a wall at one of the intersections there’s a snapshot taken during the rock star’s visit. Keep your eyes peeled for Kidoairaku Pottery Shop, run by a young husband-and-wife team of artisans, which sells beautifully handcrafted wares with quirky,

modern designs. If you bring home one souvenir from the market, make it a special little keepsake from this store. Nishiki Market stretches across several blocks, and in typical Japanese fashion is fastidiously kept. Tempting as it might be to hold up, say, an oversized turnip, don’t touch the fresh merchandise or you’ll upset the local vendors. One end of the market spills into Teramachidori, a shopping arcade that bustles with boutiques, pachinko parlors and restaurants. If you’re curious and patient, you’ll find a number

of surprises: a coffee shop deep within a clothing store, an opening in the wall that leads to an entire restaurant specializing in tempura. If you’d like to get around more quickly and see more things, do as the locals do: get around on two wheels. Ask your hotel front desk to rent a bicycle for you (the price will depend on the kind of bike and the duration of the rental), after which it will be delivered right to your hotel. Evenings at Ponto-cho and Gion When night falls, two of the most atmospheric quarters on either side of the Kamo River are Gion, east of the river, and Ponto-cho, a tight alley on the west side. Both areas are best known for the traditional architecture that recall machiya, or traditional wooden house, and are populated by restaurants, traditional teahouses, and geisha houses. While Gion is more closely associated with maiko and geisha (as well as being the setting for the Hollywood movie Memoirs of a Geisha), Ponto-cho is better known for its restaurants, which run the whole gamut of culinary preferences. Here you’ll find anything from high-end establishments that serve some of the best seafood in the country (with romantic balconies that look out into the Kamo River), and restaurants offering specialty beef from nearby

Kobe, to little ramen bars that serve large bowls of satisfying pork stew at affordable prices. A marker at one end of the strip suggests that the name Ponto-cho may have come from the English word “point” or the Portuguese ponto, which means the same thing. It could have been either one — the street dates back to the 1600s, when Japan was trading heavily with Europe

• You can take a shuttle bus or train (70 minutes) to Kyoto station straight from Osaka’s Kansai International Airport. • Book a hotel somewhere central, and as close to the Kamo River and entertainment hub Sanjo Dori as you can, so you’re within walking range of restaurants, nightspots, shopping areas and many attractions. and especially with the Portuguese, who are often credited as having introduced a battered, deep-fried dish that the Japanese then made their own: tempura. In both districts, where large, dangling paper lanterns light the way by night, narrow shopfronts make an establishment look deceptively small. This is thanks to a tax system that collects revenue based on the width of a property along the main road — a system inspired perhaps by the Dutch, who also sailed this way around the 1600s. It doesn’t help that some restaurants are rendered even more secretive by layers of narrow pathways, traditional screens and curtains. But don’t be fooled — as with the rest of the city, there are interesting surprises everywhere, and the curious traveler is amply rewarded.

T

he H’mong lady paused to look at the view. Before us, the rolling landscape stretched out to the horizon, countless terraces carved onto its slopes. At this time of the year the rice crops awaited harvest, their ripe bounty covering the mountainside in hues of green and gold. Fashioned by hand over centuries, these layered fields were proverbial stairways to the sky. Like me, this native woman was savoring the stunning opus created by both nature and man. Unlike me, however, she had seen this view — and many others like it — every day for the last 32 years.

“I’ve lived here my whole life. These mountains give us everything we need,” she said of her vast neighborhood home. “Tourists ask if I’ve ever been to the big city, but I’m not interested in seeing it. I’m happy where I am.” From where we were standing — a hilltop overlooking the sprawling Muong Hoa Valley, up in the highlands of northern Vietnam — it was easy to understand why she felt that way. This woman belonged to the H’mong, an ethnic group that had settled here many generations ago. I had come all the way from the big city of Hanoi, roughly 250km to the south, to walk these slopes and meet the rugged tribespeople who called them home. 66

Time for Sapa This area is at the very tip of Vietnam, just below the border with China — a frontier that once harbored bandits and supplied the opium trade with its product. During Vietnam’s colonial years, the region was pacified by the French. Roads and a railway were built, and at one particular spot in Lao Cai province — the tiny H’mong village of Sapa — the European overlords established their summer capital in 1913. Sapa’s cool weather and idyllic location earned it the title “The Tonkinese Alps”. It was a highland retreat for homesick Europeans wishing to get away from the sweltering lowland environment. This reputation lives to this day, and a century later Sapa remains one of the biggest attractions in the North. Arriving here earlier in the morning after an overnight train ride, I noticed the large number of sightseers on these streets. Most local tourists were content to soak in the crisp air and picturesque views. They strolled around its flower parks, or shopped for handicrafts and

souvenirs at the main square. Other visitors like myself, however, preferred to see the surrounding countryside up close. Sapa hosts dozens of tour operators that offer a wide selection of trekking itineraries. These range from easy half-day jaunts to much tougher multiple-day expeditions that reach all the way to the top of the nearby Mount Fansipan (the country’s highest peak). With only two days to spare, I pre-booked my arrangements from Hanoi with Vega Travel, one of the country’s most reputable agencies. My guide for this adventure, an 68 SMILE • FEBRUARY 2016

outdoorsman named Louis, brought me to a nearby hotel for breakfast and a quick shower. After that, it was off to the trails. From the center of town, an hour of walking was all it took before the concrete disappeared beneath our feet. As we made our way off the main road and started following a downhill path, my companion outlined the plan for the coming day. “We’ll be trekking a distance of 13km, on a route that will take us through four native villages,” Louis revealed. “Keep that camera around your neck,” he added. “You will see plenty of scenes to photograph!”

Ethnic encounters Just as we hit a bend on the trail, Louis pointed to one such view — the first of many that I would encounter on this trek. Down below, the village of Y Linh Ho beckoned with its picture-perfect cluster of thatch-roofed houses surrounded by verdant terraces. We sauntered into this H’mong community to check out the everyday lives of its residents. On the rice fields, farmers harvested their crops and threshed golden rice stalks on wooden boxes. Ducks and water buffalo stared at us from muddy bathing pools, while

little kids smiled by the roadside. Peeking inside traditional homes of packed earth and wood, I saw grandmothers cooking meals over charcoal, right beneath ceilings laden 70 SMILE • FEBRUARY 2016

with bunches of freshly gathered corn. We couldn’t have been more than a few kilometers from downtown Sapa, yet this whole village seemed untouched by civilization. These National Geographic-grade scenes were common in the other settlements as well. At Lao Cai village I chatted with H’mong women who taught me how to count in their language. Sure, they tried to sell me some souvenir handicrafts, but their friendly disposition was enough to convince me to buy a handful of trinkets. At Ta Van, a village of Zay people, I watched a girl expertly weave

colorful threads into traditional ethnic patterns. By late afternoon Louis and I had reached our final stop — the village of Giang Ta Chay. Here we kicked back at a local homestay, drinking beer and resting our tired feet while the sun set behind the paddies. Over dinner, our H’mong hosts — a farmer named Pau, his wife and four children — shared with us how tourism had changed the lives of the

people in their community. “I was a young boy when I saw a white man for the first time. I was so terrified that I ran away,” recounted Pau. “Now the children here are so used to seeing foreigners every day. The tourists bring in money that we use to send our kids to school. In the old days, everyone grew up to become farmers. Now my two sons hope to become policemen and my daughters want to be teachers.” 71 SMILE • FEBRUARY 2016

The northern highlands may once have been impassable, but thankfully it’s now easier to explore the Tonkinese Alps. From Hanoi there are two ways to get to Sapa. There’s the eight-hour sleeper train which stops at the town of Lao Cai, and requires an additional two-hour trip on a shuttle to Sapa — sure, it’s slow, but this classic journey is an experience in itself. The more direct (albeit rather boring) route is via express bus on the new northbound highway, which takes six hours. Most hotels in Sapa offer trekking packages, the quality of which varies depending on the tour operator. Two agencies — Sapa O’Chau (sapaochau.org) and Sapa Sisters (sapasisters. com) — are run by local H’mong villagers, and guarantee an authentic, community-based trekking experience. A more convenient alternative is to have a Hanoi tour operator arrange everything for you. Vega Travel (vegatravel.com) has its own stable of expert guides and local homestays in Sapa. They can also book your train or bus tickets for you.

A tribe-filled quest Indeed, outsiders had been visiting these parts for over a century now, so it seemed only natural for the mountainfolk to start adopting modern ways. Thankfully they won’t abandon their traditions anytime soon — this I realized the following day when Louis and I ventured into the Can Cau tribal market. From Giang Ta Chay, it took a two-hour drive to the village of Bac Ha, just a stone’s throw away from the Vietnam–China border. Here I witnessed the cultural landscape that

thrived on these slopes. Amid stalls selling traditional dyed fabric, beaded bags, metalware and produce were the region’s highland people in full native dress. Flower H’mongs, their tunics bearing pink and yellow designs, mingled with Red Dao, Zay and Tay villagers, who sported brightly colored headdresses. They say that the attire of the highland people is meant to distinguish them from each other. But here, in this bustling 3ha market, they all came together in an arresting blaze of hues. I strolled through the rest of the 72 SMILE • FEBRUARY 2016

market, past weathered Phu La men puffing thuoc lao water pipes and young Giay women selling sticky rice cakes. Many of these people had walked here for miles to buy and sell supplies, to socialize or simply to have a good time. Further down the main pathway, a livestock market reverberated with the voices of haggling buyers, squealing pigs and groaning water buffalo. This was my favorite kind of sensory overload — the sights, sounds and smells of a culture that remain strong to this day. Sapa may be renowned for its stunning rice terraces — and rightly so, since they are a bona fide wonder — but to me, its real charm lay in the exotic character of its people.

rescribed by an albularyo, or the local medicine man, gathered in fields or from trees, crushed by hand or boiled in clay pots before being applied as a poultice or served as a tonic: this is the stuff of traditional herbal medicine. While some may dismiss these traditions as mere old wives’ tales for their simplicity and lack of sophistication, the former secretary of the Philippine Department of Health and co-author of The Best 100 Philippine Medicinal Plants, Dr. Jaime Galvez Tan, points out that behind all the myth and

magic is solid, effective medicine. He explains that much research and study goes into the testing of herbal cures to determine their efficacy, and to discover their phytochemical content and biologic activity. Dr. Galvez Tan, who is also a former faculty member of the University of the Philippines College of Medicine, works closely with his daughter Riva Galvez Tan, of natural-product company The Natural Shelf, and together they push to bring these effective, natural and inexpensive cures to the whole country. Now it’s possible to source natural,

herbal options. Health food shops carry herbal cures in syrup, powdered, and capsule form; alternatively, customers can take a day trip to an organic farm such as Flor’s Garden in Antipolo, or Herbana Farms in Tagaytay. It’s easy to take home a few pots of herbs; and some of the more popular leaves, fruit and roots may even be sourced in your neighborhood wet market or grocery store. Here we highlight some of the plants that you can turn to in order to cure some common, and not so common, ailments.

NATURE’S MEDICINE CABINET

Takip-Kuhol Scientific name: Centella asiatica

A standout among medicinal plants in the Philippines, takip-kuhol is our local memory enhancer. The World Health Organization even recognizes its protective powers for the brain and nervous system. And while it’s capable of curing other ailments, this low-growing grass found along rice paddy banks doesn’t just improve the memories of adults and children over four years. It has also proven to be effective against dementia and Alzheimer’s disease. Used to: Prevent memory loss and dementia. Take seven fresh leaves, thrice a day. Promote healing of wounds and scars. Pound leaves and mix with coconut oil. Apply on affected area. Prevent fatty liver disease. Eat one cup of fresh leaves daily. (Avoid using for more than six consecutive weeks. Take a break for two weeks before resuming. Not recommended for women who are pregnant or breastfeeding. Should not be taken by those on sedatives and anxiolytics.)

Luyang Dilaw Scientific name: Curcuma longa

Luyang dilaw, or turmeric, has been named the best spice in Philippine herbal medicine — which should not come as a surprise considering its anti-cancer properties. It has been acknowledged as a gastrointestinal protective herb by the World Health Organization, as well as a very good anti-inflammatory agent. Luyang dilaw is a good source of phosphorus and iron, helps melt gall bladder stones, treats a fatty liver, and lowers bad cholesterol and triglycerides. Used to: Prevent wound infections. Crush fresh rhizomes and apply on affected area as an antiseptic. Relieve gas pain in adults. In a pot, combine a thumb-sized piece of rhizome and one glass of water. Bring to a boil and simmer until the liquid reduces in half. Drink the decoction. Relieve pain. Extract the juice from luyang dilaw and use as a topical analgesic for sprains, swollen and achy joints, and chest pain. 75 SMILE • FEBRUARY 2016

Many are familiar with the banaba tree, but mostly because of its lovely lavender-hued blooms. But beyond its aesthetic value, banaba is a popular medicinal plant because all its parts (including its leaves, fruits, bark, seeds, and flowers) have medicinal properties. It is most commonly used to lower blood-sugar levels in diabetics.

Kamote, or the sweet potato, is a staple in the Philippine diet in both its leaf and root forms. It is commonly served up in vegetable dishes — and as the ubiquitous kamote-Q, where chunks are skewered on to a barbeque stick and deep-fried with sugar until it caramelizes. Traditionally, it has been served to those with digestive issues.

Used to: Help lower blood-sugar levels. Take three hands full of freshly chopped leaves, or one handful of dried leaves. Combine with two glasses of water in a pot and bring to a boil over a low flame. For a stronger decoction, boil the mixture down until there is only one glass of liquid left (leave the pot uncovered at all times). Strain, and allow liquid to cool. Serve with honey, brown sugar or fruit juice.

Used to: Relieve digestive problems. Eat one to two cups of kamote tops as a supplement to ease constipation. To treat diarrhea, boil the root, and eat it on its own (no butter, no sugar).

Pili Scientific name: Canarium ovatum

Pili has long been associated with Bicol, where the nut is harvested in abundance. In fact, pili nuts in a variety of flavors (from roasted garlic to pili nut brittle) make for popular pasalubong items for those who visit the region. But what many do not know is that the pili nut also has natural healing properties, and is even considered the best medicinal nut in the Philippines. The pili nut contains elemi oil, which aids the healing of wounds. The oil, which is easily absorbed by the skin, also has anti-wrinkle and anti-aging properties. Used to: Relieve painful joints, swelling and skin ulcers. Obtain pili resin from tree trunk. Heat until it softens, spread on cloth and apply on affected area. Ease constipation. Eat half a cup of pili seeds. Follow with several glasses of water. Treat boils. Heat resin until it melts. Apply warm resin on boils once a day.

Ampalaya Scientific name: Momordica charantia

The fruit, young leaves and flowers of ampalaya — or bitter melon in English — are good sources of calcium, iron, phosphorus, Vitamin A and folic acid. The vegetable, plentiful in the Cagayan Valley, is a regular food of the indigenous Ibanags and Itawis. As it is commonly used in recipes across the country, there’s a good chance you’ve already tried it in salads, cooked dishes like pinakbet, and pickled in the form of atchara. But research has also shown that ampalaya’s benefits extend beyond its culinary uses. Used to: Lower blood-sugar levels. Thoroughly wash ampalaya leaves and chop into small pieces. Combine about six spoonfuls of the chopped leaves with two glasses of water and boil for 15 minutes over low fire. (Do not cover the pot while boiling.) Cool, and strain into a clean container. Drink three times a day before meals. Treat wounds. Squeeze juice from fresh ampalaya leaves and apply on wound directly. Treat scabies. Warm a leaf over low fire, apply oil on the leaf and lay upon affected area.

Akapulko Scientific name: Cassia alata

The akapulko bush grows wild in many parts of the country, particularly down south in Zamboanga. Often called by its other names like palochina or the ringworm bush, the akapulko leaf effectively treats fungal infections of the skin. In fact, in grassroots community-based health programs, volunteer health workers and local women create an ointment by combining oil extracted from the akapulko leaves with petroleum jelly or candle wax. Used to: Treat fungal infections of the skin. Chop leaves into fine strips and place in a saucer with equal amounts of coconut oil. Boil for three minutes. Cool, then store in amber bottles. Apply directly on affected skin.

Malunggay Scientific name: Moringa oleifera

The humble malunggay tree’s leaves are often used in nourishing soups such as tinola. But lately, it has become a rather popular ingredient in everything from fresh pesto sauce to crunchy snack foods. The reason for malunggay’s newfound star status? Its leaves are rich in calcium, iron, potassium, and Vitamins A and C, and it can treat a host of ailments such as constipation, rheumatism, scabies and bleeding wounds. Malunggay has also proven effective in increasing lactation, making it a hit among breastfeeding moms in the form of easy-to-pop pills. Used to: Ease constipation. Eat one to two cups of cooked leaves for dinner. Treat rheumatism. Toast malunggay seeds, pound into powder and apply on the affected area. Treat scabies. Look for the fisherfolk couple along the stretch of Rizal Boulevard and enjoy fresh sea urchin, locally called tuyom (PHP50). Go on a side trip to neighboring Siquijor Island, an hour-and-a-half ferry ride from Dumaguete Port.

For the budget-conscious traveler, go to Taps (+63 82 305 8031) and see their selection of silogs (rice meals with egg, PHP80-100). Or they can go to “Bangs”, as we call Bankerohan Market, where you can grab your favorite Filipino dishes for about PHP50-60. There’s also Bulcachong in General Luna Street, where teenagers and yuppies go to eat carabao meat, tenderized to perfection, after a night of partying. To get around town, there’s the reliable jeepney but I suggest taking a taxi.

For dining with a view of the coast, try Bahay Bakasyunan sa Camiguin (bahaybakasyunan.com). Make sure to dine al fresco when you try their signature bulalo (beef shank soup, PHP250). Number one on your todo list should be island hopping. Don’t miss the famous White Beach. It’s best to go very early to White Beach — around 5am — to appreciate the sunrise and the sandbar. Take note that high tide is usually at 10am.

CEB has been granted entitlements to fly to Kaohsiung from Caticlan and Cebu

GO TO MORE PLACES WITH CEB With the recent granting of additional entitlements by the Civil Aeronautics Board (CAB), Cebu Pacific now has the green light to run an additional seven flights weekly from Manila to the UAE; direct flights to Taipei from Caticlan, Clark, Davao, Puerto Princesa and Tagbilaran; and direct flights to

Kaohshiung from Caticlan and Cebu. At present, CEB has daily flights between Manila and Dubai, 10 timesweekly flights between Manila and Taipei, and thrice-weekly flights between Cebu and Taipei. With these entitlements, the airline has also become an official Philippine carrier to Russia (which means passengers can look

forward to thrice-weekly flights from Manila to Moscow and Vladivostok soon), as well as an official carrier under the ASEAN Multilateral Agreement on Air Services (MAAS). Upon the Philippines’ ratification of the relevant protocols of the MAAS, CEB could launch unlimited flights between capital cities in ASEAN.

Guam flights to start next month Starting on March 15, 2016, Cebu Pacific will be flying from Manila to Guam – its first US destination in its ever-expanding network. CEB is the first and only low-cost carrier to provide this direct flight to the island. The service — which runs every Tuesday, Thursday, Saturday and Sunday — opens up 1,440 more weekly seats to passengers who want to travel to the island. Previously, there were less than 6,000. It’s good news for Filipinos and Guam’s Filipino community. To mark the event, CEB is offering a PHP2,500 all-in seat

promo for Manila–Guam trips from March 15 to November 13, 2016, until seats last. But even then, CEB has currently set the regular fare to at least PHP7,197, which is up to 40% lower than other carriers’. “Having Guam in our network sets us off on another expansion path across the Pacific,” says CEB President and CEO Lance Gokongwei. “Fares this low can only mean more tourists to both countries, more Filipinos visiting home and more opportunities for everyone.” With Guam as its new stop, CEB now extends its reach to more than 90 routes in more than 60 destinations.
