Movetheovenracktothemiddleoftheovenandpreheatto425 F Whilethatispreheating,heat2quartsofwaterinyourlargest potoverhighheatuntilboiling.Onceboiling,add2tablespoonof koshersalt,1/2teaspoonofbakingsodatoyourpotatoesand givethemagoodstir.Whileuncovered,returntoaboil.Onceit’s arollingboil,reducetoasimmerforabout10minutes.(Potatoes arereadywhenyoucanpiercethemwithaforkwithlittle resistance)

Oncepotatoesarecooked,carefullydrainandallowthemtosit inyourpanforabout30secondsformoisturetoevaporate. Toyourpan,addyourbutter/oil,seasoningstotaste,salt,pepper andstartmixingwithaspoon.Keepstirringandmixingyour potatoesuntilyouseethatthicklayerofmashedpotatopaste hasbuiltuponthechunks

Transferpotatoestoalargebakingsheetthathasbeenlightly greased.Separateandevenlyspreadthemout.Putintheoven androastfor20minutes.
