SPRING STYLE. Those two words hold so much optimism, something many of us wish we had more of at the moment. The good news is we can cultivate optimism at home, and redecorating is a great place to start. Of course, spring style isn’t just about shopping for sandals (my bank account might say otherwise). This season’s biggest style trend isn’t a product, it’s a practice – looking at our environments with fresh eyes and making changes that inspire positivity. On that note, I’d like to introduce a few of the inspiring people in this month’s magazine. The owner of the Sydney home on p84 realised how much she enjoyed collecting art while decorating her interiors, and has begun investing in original pieces. The owner and designer behind the city home on p50 was so happy to have found a place with a garden, she made it the focal point of her renovation. And the positivity continues in the Melbourne house feature on p60. When the owner gave stylist Simone Haag the brief to create an ‘industrial beach chic’ look, Simone embraced this outrageously new style and the result is So. Much. Fun. You’ll find helpful ways to refresh your home in this issue, too. Want to make a lasting change? WELLNESS MAY BE AN EYE-WATERINGLY neoteric word, but back in the Middle Ages, health-conscious folk were just as eager to dabble in fragranced elixirs and herbal extracts. Our ancestors aren’t known for their 10-step skin routines, but the history of Santa Maria Novella reveals we’ve often turned to lotions, potions and perfumes in times of need. Today, Santa Maria Novella is a global beauty brand and luxury pharmacy, but it was originally established in 1221 as a monastery when Dominican friars arrived in Florence and were granted use of a small church called Santa Maria Inter Vineas, along with a few small houses and plot of land. The friars cultivated the land and grew medicinal plants, which they made into ointments and remedies for their infirmary. News of these pharmaceutical activities spread in the 14th and 15th centuries. In fact, Santa Maria Novella’s Via della Scala location in Florence is said to be a gift from a wealthy nobleman whose illness was cured by the friars’ medicines. The chapel he donated is now the pharmacy’s magnificently restored sales hall – a must-visit destination for tourists. When the pharmacy was officially founded and a secular director was appointed in 1542, the brand became mostly independent of the monastery and its doors opened to the public. In 1612, it was recognised with the name Officina Profumo-Farmaceutica by the Grand Duke of Tuscany, which reflects the brand’s scientific commitment to creating health treatments, perfumes and cosmetics, while ‘officina’ represents its artisanal qualities. As laws governing church and state fluctuated during the 19th century, the ownership of Officina Profumo-Farmaceutica Santa Maria Novella changed hands. Nevertheless, the store became a cultural icon of Florence and its products found international fame. Original formulas, like the Acqua Antisterica herbal water, are now sold alongside home fragrances, beauty products, liqueurs, pet care and ceramics. Santa Maria Novella trainer Michael Marzano says the brand’s “pharmaceutical clout” is passed from generation to generation and this 800 years of expertise, combined with a reverence for heritage, have made the brand “the global phenomenon it is today”. Officina Profumo-Farmaceutica di Santa Maria Novella was born in 1221 when a group of friars set up a monastery outside Florence, Italy, and cultivated the land to grow medicinal plants for herbal remedies. Many of these plants still grow in the garden of Santa Maria Novella.

Catherine de Medici, who became Queen of France in 1547, commissions the Santa Maria Novella friars to create a signature scent for her. Called Acqua della Regina, or ‘Queen’s Water’, the popular citrus-based scent is one of the first alcohol-based perfumes.

In 1989, director Eugenio Alphandery turns the pharmacy in Via della Scala into a major tourist destination while retaining the brand’s heritage. Products, such as this scented terracotta pomegranate, are made using both modern technologies and ancient herbal care methods.

Sense of style Designer Ulla Johnson’s New York showroom invites emotional connection through the use of timeless, tactile materials and expert craftsmanship. Walls are finished in white plaster mixed with mother of pearl for a touch of lustre, and the bright sunlight is tempered with handwoven blinds by Ulla’s long-time collaborator Alexis Brown Interior Design. The focal point of the lounge area is a rippled blush mohair velvet sofa accompanied by wood coffee tables, all designed by Rafael de Cárdenas. The vintage Ingo Maurer bamboo pendant is from Ulla’s personal collection, as is the Kazunori Hamana ceramic pot. Design philosophy Ulla (pictured opposite) says working with specialist artisans is central to both her fashion label and interiors. This new showroom balances the allure of retail with the intimacy of residential design

IN RECENT YEARS there’s been a perceptible shift in the way retail spaces are designed. The gap between commercial and residential interiors is narrowing as creative directors align the physical environments they create with the brands they have built. Ulla Johnson, a fashion designer whose eponymous label is underscored by its effortlessly feminine womenswear, is one such creative director. Ulla’s two New York stores are a distilled representation of her aesthetic, and when it came to designing her new showroom, she approached fellow New Yorker Rafael de Cárdenas, designer and founder of Rafael de Cárdenas Ltd, to channel her signature refined style throughout the spacious Lafayette Street loft. Rafael, who is known for his modern take on sensuality, says Ulla wanted to summon “the familiarity and comfort” of a domestic setting. A colour palette of blush, bone and sand sets a serene tone and gives the interior levity, while satin-finished brass rails and an antique silver-gilded display niche provide the required decadence – after all, this is a salon for hosting guests and private appointments. Using materials with integrity was of the utmost importance to Ulla, who called for “natural, hand-touched materials and finishes that possess unique character”. Rafael realised her vision by layering marble, wood, travertine, gold leaf and brass against a scheme of white oak herringbone floors and walls finished in plaster mixed with mother of pearl. “There is a quiet exuberance throughout, for example, in the juxtaposition of three different and distinctively rich types of marble,” Rafael says. “Yet no detail obtrudes so much as to interrupt the warmth of the overall space.” While the reception and lounge areas all speak the same visual language, each zone is delineated by shelves and impeccably appointed furnishings, including Rafael’s custom designs and pieces from Ulla’s personal collection. For Ulla, this is a “true home” for her fashion designs, “a space that feels intimate and inviting, with places for the eye to pause and areas that feel residential”. A

A FLORAL A FFA I R Designer Nicole Lawrence and florist Hattie Molloy introduce us to their first vase collection

IT WAS ONLY NATURAL that furniture and lighting designer Nicole Lawrence would collaborate with floral artist Hattie Molloy, although in many ways the two Melbourne-based creatives’ work is vastly different. Nicole, who launched her eponymous studio just 12 months ago, has carved out a space for herself in a sea of exciting up-and-coming Australian designers. Hattie, who started her practice in 2017, has consistently delighted audiences with her surreal and whimsical floral installations. Both Nicole and Hattie love to explore organic shapes and unexpected colourways, and together they’ve dreamed up a collection of powder-coated aluminium vases in two voluptuous styles. The pair met last year on the set of Nicole’s first in-house collection shoot. “I was inspired by Nicole’s practice, her bold use of colour and her style,” says Hattie. That first encounter blossomed into a friendship and eventual creative partnership. “Hattie and I have worked together on a couple of shoots and kept in touch. Last year, Hattie asked if I was interested in collaborating with her on a range of vases,” Nicole explains. “Of course I said yes.” Their vision was simple. As Hattie says, “We wanted to create a bold, fun and accessible vase collection for at-home floral arrangements.” Hattie’s signature boisterous blooms fall in striking formations against the vases’ sculpted edges, which are synonymous with Nicole’s style. The vases represent the coming together of two halves, with their individual strengths perfectly complementing one another’s. “Hattie is known for her wild and gravity-defying arrangements, but we wanted to create something that anyone could use to create their own arrangements regardless of their floristry experience,” says Nicole. “We wanted to bring a little of Hattie and my style into people’s homes.” Both bring a unique, discerning eye to the collection. “For me it was about colour and form, I loved the idea of taking inspiration from traditional Greek vases,” says Hattie. “For the colour, I took inspiration from lived environments, warm interiors and my favourite design books.” As for Nicole, it’s the physical act of creating that shapes her practice. “First, I focused on the manufacturing processes required to make such a vase, as this is what would ultimately inform our design, then I started playing around with shapes and found myself referencing historical vase shapes, as it felt natural to study these for a product created with a florist,” she explains. The vases are at once classic and contemporary, voluptuous yet simple. In fact, they are just as striking with or without flowers. “We designed these to be easy to use so you can either throw a bunch of flowers in or play around with more creative arrangements. There are no set requirements,” says Hattie. R FROM TOP Homegrown talent “We wanted to reference classic vase and vessel shapes throughout history. Vases are an inherent part of Hattie’s practice as a florist and there’s a rich history there,” says Nicole (right) pictured with Hattie. Neutral habitat Interior designer and owner Anne Claus, pictured, has created a family home that feels both spacious and comforting. To achieve this, not one surface has been left plain white and the same flooring and wall finish have been used throughout the entire house. “I wanted to create the feeling of a cocoon. I even tried to match the colour of my wooden floor to the walls, and this creates visual continuity and flow,” Anne explains. A 5m-long island that visually connects the kitchen to the open-plan living area is made from marble Anne found in Italy while sourcing materials for another project. “I saw it and fell in love,” she says. ANNE CLAUS IS THE SORT OF DESIGNER that isn’t persuaded by the comings and goings of trends. She’s also the sort of designer that would willingly take on an enormous renovation in order to realise her vision, which is what it took to build her dream family home. When Anne found this property near Amsterdam’s city centre, just minutes from her interior design studio, she seized the opportunity to work on a project without compromise. Although the foundation was in terrible shape, Anne was able to purchase the entire four-level building, obtain a permit to build a basement and turn the top two floors into flats to rent out. What’s more, Anne says, “it has a nice garden, which I really longed for after living in a top-floor apartment for 10 years”. COMING OF AGE Although Anne admires the classic detailing of Dutch homes built around 1900, she felt it didn’t quite suit this project. “I switched styles a few times before we started. It’s more difficult to make decisions for myself than for my clients!” Anne admits. Because the building isn’t very wide, she selected elements that would evoke visual spaciousness, starting with a harmonious palette of base materials and finishes. On the ground floor, a marble island connects the kitchen to the living area where the garden is framed by a glass facade. All walls and doors are covered in chalk plaster by the Belgian specialist Atelier 51 and the kitchen and bathroom cabinets are finished in stucco in a matching shade, which Atelier 51 created with Anne. The effect, she says, is “quite modern” and complements the softly curved staircase. Some new elements also appear to have been there forever, including the Hungarian point oak parquet flooring treated in a soft grey so that it looks like it belongs to the original house. UNISON INTERIOR This visual continuity is also seen upstairs in the master bedroom, which features a walk-in robe and bathroom with an open shower and marble-clad bathtub. Anne’s design ensures the spaces on this level seamlessly connect, like a luxurious hotel retreat. The basement has been turned into kids’ bedrooms and a study with 3m-high ceilings. Here, too, Anne has worked the garden into the design – the glass facade continues to this floor thanks to a lower outdoor area. The project may have taken more time and work than expected, but as Anne says, “it’s very satisfying when it turns out the way you had in mind all this time”. R Breathing room In the living area is a coffee table designed by Anne and made by Behout. The Sem sofa is from L’Authentique, the seat is by artist Jan Janssen, the stools are from Baxter and Serax, and the vases near the fireplace are by Gloria Landenberger of 2222Studio. The rug is from one of Anne’s suppliers in Morocco. A

It gives the house a really good flow and it calms me down when I arrive,” Anne reflects. The 5m-long island (opposite) is one of her favourite features. “It’s the centerpiece of the house, especially when we have friends over.”

Modern mix When furnishing her new home in Melbourne, entrepreneur Cheryl Mainland dreamt up a design concept that was uniquely hers. “I’ve grown up and lived in numerous cities, but I also love nature,” she says. “The clash between East and West, colour, texture and pattern reminds me of these things.” In her upstairs living space, a custom fireplace seat by Harbro Furniture has been upholstered in Misia fabric from The Textile Company, a Ren Weaver pendant from Pop & Scott hangs above and a glass coffee table on wheels lends an industrial New York edge. Entrepreneur and avid yogi Cheryl Mainland, with her three children, Charlotte, 7, Aurora, 6, and Cobalt, 2. @cherylmainland A IT’S SAFE TO SAY, there is nothing cookie cutter about Cheryl Mainland’s Armadale home. From the twin staircases and eclectic artworks to the bold furnishings and maximalist colour scheme, it’s a wonderfully apt representation of this complex and creative entrepreneur and yoga lover. “I love chaos. I love contrast,” says Cheryl, who has lived all over the world, including in Hong Kong, Boston, Singapore, London, New York and Bali. “I wanted my next home in Australia to be highly stylised but extremely functional.” TREE CHANGE One of 35 properties that Cheryl viewed during a fleeting 10-day visit to Melbourne from her then home in Chicago, this was the one she couldn’t walk away from. “There’s a centuryold gum tree on the property and many of the windows are floor-toceiling accordion windows; it felt to me like a New York-style glass warehouse or treehouse,” Cheryl tells. “The vibe was exactly what I wanted, but there was some renovating needed to incorporate my art collection and wares, and to accommodate my young children.” TAILOR MADE Cheryl engaged interior designer Katie Georgiadis from Eat.Bathe.Live to remodel the key spaces and introduce a more cohesive materials palette. “I wanted a lighter, brighter, beachier, more consistent look, so all the dark wood became American oak and the same tiles were used across many of the wet areas,” Cheryl explains. Katie also designed a new ensuite and walk-in robe for Cheryl and her impressive 100-plus-pair shoe collection and converted the library into an office/TV room/gathering space. UNIQUE VISION With the framework complete, stylist Simone Haag came on board to oversee the furnishings, working to the somewhat specific brief of “industrial beach chic”. “Simone laughed and said that wasn’t really a thing – but we’d make it one,” Cheryl recalls. With no colour off limits or pattern combination too outrageous, Simone’s team pulled together a medley of muted and bright hues, curvy silhouettes and natural fibres to evoke the waves and shores of some of Cheryl’s favourite beaches. Within this ad hoc mix, her collection of street art, fashion props and travel mementos feel right at home. “Simone immediately had a vision to make each room and space useful, and custom-made or purchased furniture to work with my existing pieces,” says Cheryl. One of her favourite spots is the Shanghai lounge and gallery area, which fills the vast entry zone and embraces cool storage and cosy seating. “This is where I hang out with my kids. They read, we chat or play Monopoly.” She adds, “I’ve lived in so many places, in so many countries, and this is now home. It’s eclectic, cool, colourful and very me.” R Little touches A Rotonda table lamp by Adrian Cruz and sculptures by Kirsten Perry, Luke Ryan O’Connor and Bettina Willner are prized additions in Cheryl’s bedroom. “The What Was artwork is by a good friend of mine, Love Ludie, and is an homage to the early ’90s,” Cheryl tells. Dual appeal Prior to Cheryl purchasing it, the house had been converted from two homes into one, hence the two staircases going up to respective second floors. It’s a configuration that has allowed her global art collection, including two Juno Shen Chinese character neons and a Kit Kemp dressmaker’s dummy to be displayed to greater effect. Colour punch Psychedelic Pierre Frey ‘Arty’ wallpaper from Milgate covers the walls, door and ceiling of the powder room (opposite, above). “This wallpaper is everything!” Cheryl enthuses. “It’s definitely not for everyone but it brings me so much joy.” Pink tile grout, a custom mirror by Eat.Bathe.Live and flamingo pink wallhung basin by Slabshapers enhance the look. Suite relief Cheryl’s bedroom is a place of sanctuary, filled with muted, contrasting beachy hues. “The Danielle Brustman cabinet looks so good and provides the perfect amount of storage,” she tells. Happy place “I’m at a stage in my life where I want my bedroom to feel like a sanctuary; there are no longer babies sleeping in my room,” Cheryl says. “I didn’t want a TV in the room or a lot of ‘stuff’. AT THE NEXUS OF INNOVATION, NATURE AND SUSTAINABILITY sits the home of award-winning architect Valentina Moretti. Set on her family’s vineyards in Franciacorta, Italy, her home was designed to push boundaries, deftly resolve construction challenges and exist in harmony with its surroundings. And as the creative director of the impressive More architecture firm, it comes as no surprise that Valentina designed and completed her dream home in just five months. CHILDHOOD DREAMS “The idea was born from a desire to put down roots and create a personal space on the hill where my family lives,” Valentina says. “I chose a particular point on the hill where I used to play as a child, building small houses with what I found in the woods.” And so, inevitably, Valentina used robust natural materials such as timber, steel and concrete to construct a contemporary home for her family of five, positioned between nearby woodlands and the existing garden. “I had very clear ideas from the start and in just two weeks I had finalised the project,” Valentina says. NATURAL INSTINCT The almost Brutalist concrete walls support an overhanging roof that forms a large porch, an area that acts as an extension of the living area in summer. The kitchen enjoys views of nature, and while the oversized windows let in plenty of sunlight, the surrounding vegetation provides ample privacy to the bedrooms and internal areas. GOING GREEN At the core of this home was a desire to be sustainable. “I chose to use only untreated materials that will undergo changes in their appearance over time,” Valentina says. Visually, interest and warmth have been created within the minimal material palette through the use of natural porphyry timber flooring, heat-treated oak and solid untreated wood paneling. The interiors showcase a seamless blend of high-low furnishings, pairing bespoke pieces with retail finds. “The style is eclectic, like my personality,” Valentina explains. “Many furnishings have been custom-designed together with the More team, while others were collected during my life. I love to bring into my home a special piece of every interior project that I take care of, as a reminder of the project and that piece of life shared with the client.” R

Double duty Landscaping was carefully considered throughout the build, with foliage and hedges selected to create natural privacy screening for both the alfresco living area and around the full-length windows. While the overhanging roof shelters the porch, it’s also fitted with planter boxes that contain different types of foliage and creeping plants to ensure the structure blends back into its vineyard locale. Dine & discover Greenery continues into the sun-bathed kitchen (opposite), where a steel island topped with a marble bench conceals integrated appliances; the rangehood is suspended overhead. A

WHEN IT LAWYER CATHERINE WILSON and her partner David, a doctor, bought a Federation-era home in Sydney’s Eastern Suburbs, they decided Catherine would take charge of the interior design. “I’d done most of the interiors in our previous twobedroom place in Woollahra,” Catherine explains. But reality soon set in: Catherine was working long hours, David was in the midst of neurosurgical training and the couple had two young children to look after. “I also wanted some help to push my style a bit,” Catherine says. So, they asked stylist Claudia Stephenson to step in. “For me, it was a dream,” Claudia says. “Catherine has worked very hard in her career, and now she wants to live in a home surrounded by things that make her happy every day.” BLANK CANVAS The house had been renovated in a minimalist style just before the couple bought it. “It was nondescript,” says Claudia. “For balance, I knew we needed to bring in pieces with lots of personality.” To warm up the interior’s existing white and grey palette, Claudia began sourcing items in dusty pink, a favourite shade of Catherine’s. She also made a concerted effort to incorporate contrasting textures, from silk velvet rugs to boucle wool upholstery. In her quest for pink, Claudia located a painting by Vicki Lee that Catherine immediately decided to buy. “That painting was just the start,” Catherine says. “I’d never purchased an original artwork before, and I became a little bit obsessed.” As Claudia explains, “Purchasing artworks became a way that she could imprint her personality on the home without committing to things like flooring or joinery.” Catherine soon acquired works by Monique Lovering, Maria Kostareva and Matt Butterworth. “It’s been an exciting journey,” she reflects. CHILD’S PLAY Catherine was keen to involve her primary school-aged children in the design process by allowing them to choose key pieces for their bedrooms. “Although, we obviously led them in a certain direction,” she says. “We didn’t offer them a Mickey Mouse bed choice.” As a result, the kids seem to have developed an appreciation for fine objects. “They love laying on the white sofa, but they know it’s ‘shoes off’ and no food,” Catherine says. “They treat their home with respect.” R

Creative credentials Cristina Celestino’s Milan studio features an eclectic mix of furnishings that she’s designed for various clients, along with prototypes and collectables. A turquoise-topped low table was part of The Happy Room that she created for Fendi. Red Rennie dining chairs by Takahama for Gavina surround the vintage dining table. Hands-on experience Cristina stands at the ‘conversation zone’ (opposite) where her team can meet and bounce ideas off one another. “For creatives, smart working can’t be a long-term solution,” she says. “We need to see and touch the materials in a welcoming, intimate environment.” Farrow & Ball ‘Indian Yellow’ paint was used to highlight the wall niches. Curtain call The expansive open-plan area upstairs is divided into different working zones using curtain partitions. Cristina opted for a layered effect for a more contemporary vibe, combining pink-ivory sheer curtains with a monochromatic canvas in a terracotta shade that stops 1.4m from the ground. Working to this palette, she added beige mohair velvet armchairs by Tecno and a large Capitoline rug in warm shades of brown and beige that she designed for Fendi. A satin-steel and cement-lacquered Caori table by Vico Magistretti for Gavina inspired the green custom storage cabinets, which help keep the space clutter-free.

IN RECENT TIMES, the lines between home life and work life have well and truly blurred. WFH is the new normal, and for many, the traditional nine-to-five working day has taken a more fluid form, spreading into evenings and weekends. Milan-based designer Cristina Celestino was living this reality long before Covid crashed the party, and when on the hunt for a new office for her brand Attico Design, she had the concept of a ‘studio-home’ in mind. “I was looking for a large space that could become a second home, where the time spent working would be pleasant for everyone, myself included,” she says. Cristina’s needs may differ to ours – designing an office that feels like home, as opposed to creating a work environment within a home – but many of the decorating ideas used in her studio are applicable to a home office context. Here are the key takeaways… GIVE YOURSELF OPTIONS The best ideas don’t always come while sitting at a desk, so consider creating a few work zones at home – inside, outside, seated, standing – to mix things up. Cristina’s studio has a convivial meeting area centred around a dining table, a conversation zone with cosy armchairs as well as her personal office. “There are so many spaces where I can think and read, moving my laptop from an armchair to sitting on the rug,” she says. BUILD TEMPORARY ‘WALLS’ If you live in a studio or work from an open-plan living space, a simple curtain or screen divider will be a godsend during times when privacy or focus is needed. Cristina has divided her large warehouse using curtain partitions. “They feel domestic while providing flexibility and functionality to support our work needs,” she tells. STORAGE ESSENTIALS Because clutter is not conducive to productivity, storage is key. For Cristina, a series of functional cabinets keep fabrics and samples out of sight, while a clear display case showcases her designs and delineates a sort of corridor past the intimate conversation space. For a home office, bookcases, hanging shelves and desk trays can all help keep work supplies in order. A @reallivingmag

a flexible working zone Cristina decorated this meeting area much like a domestic dining room – a communal table and chairs, ambient lighting, display-style storage and her own floral creations. If your dining table has become your desk, aim for the same mix of functional and decorative, utilising trays and racks as movable organisers so you can easily regain the table for meals.

Take a seat The downstairs palette favours richer hues, including burgundy (a Corolla armchair for Billiani, designed by Cristina), ochre (seen in the chenille fabric for Maison Matisse that screens a storage unit) and green (the Envolèe rug by Cristina for CC Tapis). Cabinet meeting An Italian cabinet from the 1930s holds decorative items including a Bon Ton lamp for Il Fanale by Cristina. A Ravello chair sits to one side, and an Ariosto ottoman on the other, both by Attico Design; the painting of Venice is by Remo Brindisi. While it’s true that heavy curtains are good for retaining heat, products such as honeycomb cellular blinds and outdoor awnings are better for controlling both hot and cold temperatures. “The most efficient way to keep your home cool in summer is via the use of an exterior awning, which dramatically reduces the ability for solar energy to be converted to radiant heat in your home by blocking the sun from the outside of your window space,” says Amelia. “Straight drop awnings fit on the exterior of your home and are a sleek option for blocking the hot Aussie sun if your windows are west or east facing.”

Translucent Roman blinds offer privacy without blocking natural light, along with other options. “With the ability to reduce light and noise levels as well as their air of elegance and luxury, blockout curtains are a good choice for bedrooms where privacy is key,” Amelia adds. “Alternatively, you can enjoy the best of both worlds with a double roller blind. Low maintenance Blinds are one of the easiest window coverings to care for, however, plantation shutters aren’t far behind them. “Plantation shutters are an excellent choice for those who suffer from dust allergies, as the blades can be easily wiped clean and come in a variety of options, from timber to faux wood and even aluminium for outdoor spaces,” says Amelia. “Timber Venetian blinds are another popular choice. With a high moisture tolerance and two control options – a cord or wand – their sleek blades can be easily maintained within the home.”

Splash zone Blinds made from PVC-blend fabrics are a damp-resistant option for kitchens and bathrooms, but faux wood shutters are also a strong contender with their superior moisture tolerance. “These types of shutters also have aluminium square tubes concealed inside each louvre, strengthening the overall structure to increase longevity,” says Amelia.

techy advancements Washers and dryers may dominate the laundry category, but new products with different functionalities are being introduced to the consumer market. “Clothing care systems are great additions to the laundry, as they save you time, money and wear and tear on dry cleaning for clothes or materials that require extra care,” says Colin. “Drying cabinets are a flexible and energyefficient solution for drying delicate garments, which are not suited to a tumble dryer. They remove odours and dust from both inside and outside clothes, use steam technology to eliminate bacteria, viruses, house mites, odours and harmful substances, and dry clothes using low temperatures.”

eco innovations It’s important that ease of living doesn’t have a negative impact on the environment, and adding eco-friendly functionalities within appliances remains the priority. “Look for washing machines equipped with innovative energy-efficient features, such as inbuilt sensors to help monitor each load and make precise adjustments to boost efficiency, and eco-wash programs designed to minimise water and energy usage when cleaning lightly soiled loads,” says Colin. future proof Colin predicts future products will revolve around convenience, fabric care and environmental impact. “We’ll see an increase in the personalisation of washing, where active intelligence and auto-sensing technology will be able to detect unique fabric types and soiling, and make recommendations for programs that produce perfect results every time,” says Colin. “We will also see shorter cycle times and different types of cycles that will protect fibres, which is good for the environment and will protect garments. Filters will also prevent microplastics being pumped into wastewater, which is of great benefit to reducing our impact on the environment.” R

Be sure to take note of star ratings for energy and water consumption – the higher the better – and capacity. “Household size, frequency of use and the dimensions of the intended space for the washing machine should be considered,” explains Colin. “Washing machine and dryer capacities are measured by the weight of your laundry when it’s dry.” Another feature worth prioritising is variety in the pre-programmed wash cycles to ensure your garments are cared for correctly. “Look for washing machines that enable you to customise your cycle options, such as allergy, sports and wool, to ensure you get the best results for the chosen garments. WE LOVE STYLING UP A STORM IN LIVING ROOMS, which offer a multitude of spaces just calling out for a touch of greenery. From empty corners in need of a large statement plant to teacup-size plants for coffee tables and trailing plants for shelving, opportunities present themselves at every turn. STYLING WITH HOUSE PLANTS Layer the plant life and don’t be afraid to make the most of any space you can. There’s usually room for at least one small plant, or a quiet corner or two that is perfect for luscious big plants. Look for other opportunities as well – we’re talking coffee or side tables, a fireplace hearth or mantel, or even a media or drinks cabinet. If there’s a horizontal surface, get a plant on it! Plants can also be used to create green dividing walls, delineating zones within open-plan living spaces. They also create focal points and green views, both complementary biophilic design elements. Don’t forget about taking your plant game vertical by utilising shelving and wall or hanging planters. Vertical surfaces are all fair game when it comes to styling with plants, and they will help to get the most out of your space. While functionality may reign supreme in the kitchen or bathroom, in a living room you can have a little extra fun. PLANTS FOR THE LIVING ROOM Fiddle leaf fig It’s hard to go past this fig when you’re after a large tree-shaped statement plant. Heartleaf philodendron A low-maintenance philodendron with leaves shaped like hearts, there’s a lot to love when it comes to this luscious trailing plant. Perfectly at home perched on top of shelving or on the edge of the entertainment console, these deep-green beauties grow long and luscious. SEA SAND SUN SNACK

OCTOPUS, FERMENTED CHILLI SAUCE Serves 6 to share Prep + cooking time 70 mins, plus marinating and fermenting time “The simplicity in the olive oil and crushed garlic means the octopus really takes on a lip-smacking acidity with richness and saltiness to it,” says Jordan Toft, executive chef at Una Más. Start this recipe three days ahead to ferment the sauce and marinate the octopus. 1kg octopus hand (see note) 5 garlic cloves, bruised ½ bunch of thyme, bruised, plus extra to serve 420ml olive oil

FERMENTED CHILLI SAUCE 250g long red chillies, deseeded, coarsely chopped 150ml apple cider vinegar 30ml olive oil or other grassy-tasting oil ½ tsp fine salt

FERMENTED CHILLI SAUCE Combine chillies and vinegar in a saucepan over medium heat. Bring to the boil, then set aside to cool. Transfer to an airtight container and refrigerate for 3-5 days (see note). Strain, reserving liquid, and process chilli in a high-speed blender with oil and 1½ tsp sea salt flakes, or to taste, until very smooth. Add 1 tbsp of the reserved liquid to thin the sauce slightly. Season to taste with sugar. 2 OCTOPUS Cut octopus into individual arms and trim any excess skin. Combine octopus, garlic, thyme and 400ml oil in a large bowl, cover and refrigerate to marinate (overnight or up to 2 days). 3 Preheat oven to 150°C. Enclose the octopus, garlic and thyme tightly in a double sheet of foil, then bake on a tray until tender (1½ hours, see note). Allow to cool. 4 Heat a chargrill pan or barbecue to high. Drizzle octopus with remaining oil, season and grill, turning occasionally, until well charred (8-10 minutes). Slice and serve with fermented chilli sauce, lemon wedges and extra thyme. 1

NOTE Octopus hands are cleaned, tenderised and packaged as raw tentacles from Fremantle, WA. They are available from quality seafood suppliers. At Una Más, the chilli sauce can take six months to ferment. This is a simplified, but equally delicious, version. Octopus can be refrigerated in its cooking liquid at the end of step 3 up to a day ahead. A

WAGYU, SLAW, GREEN CHILLI AND SALSA VERDE Serves 4 to share Prep time 35 mins Cooking time 2 mins, plus chilling time “This is a nice combination of hot and cold,” says Jordan. “We take really good wagyu and slice it very thinly, almost like a minute steak.” 1kg sugarloaf cabbage, quartered 400g wagyu rump, thinly sliced into 4 pieces 1 tbsp olive oil 2 small green chillies, finely sliced

SALSA VERDE ½ cup firmly packed flat-leaf parsley, coarsely chopped ½ cup firmly packed tarragon, coarsely chopped ¼ cup firmly packed chervil, coarsely chopped 40g baby capers, rinsed, drained, finely chopped 20g anchovy fillets, finely chopped Finely grated zest and juice of 1 lemon 100ml olive oil

Finely slice cabbage using a mandolin, then place in a bowl with 2 tsp salt flakes and toss to combine. Refrigerate until slightly wilted (about 1 hour). Drain well and return to refrigerator. 2 SALSA VERDE Stir the ingredients in a bowl to combine and season to taste. 3 AÏOLI Process egg yolks, vinegar, mustard and garlic with a pinch of salt and 1 tbsp tepid water in a food processor to combine. With the motor running, gradually add combined oils in a thin, steady stream. Process until thick and season to taste. 4 Lightly pound each piece of wagyu between sheets of plastic wrap with a rolling pin until 5mm thick. Heat a chargrill pan or barbecue to high. Drizzle beef with oil and season, then grill until charred and tender (30 seconds to 1 minute each side). Set aside to rest for 2 minutes. 5 Fold chillies and ½ cup aïoli into cabbage to combine and serve, topped with beef and salsa verde spooned over. 1

“Patatas bravas is a classic Catalan dish,” says Jordan. “It’s simply good fried potatoes, but it has to be nailed. We add a rich aïoli that’s enriched with good-quality olive oil, as well as slightly spiced tomato.”

“There aren’t too many hidden layers here. There’s a good amount of acid, light spice and the pepitas add a nice nutty crunch.”

1kg small sebago potatoes, scrubbed 2 garlic bulbs 250ml (1 cup) vegetable oil 400g can diced tomatoes 2 tsp smoked paprika

1 tsp chilli powder 2 tbsp extra-virgin olive oil, plus extra to drizzle Vegetable oil for deep-frying ¼ cup flat-leaf parsley leaves Aïoli, to serve (see wagyu recipe)

Boil potatoes in a large saucepan of boiling salted water until tender (20-25 minutes). Drain and set aside to cool. 2 Remove excess papery skin from garlic bulbs and place whole in a saucepan with vegetable oil. Bring to a simmer over medium heat then reduce heat to low and cook until tender (15 minutes). Cool (30 minutes), then strain. Reserve the oil for another use. 3 Cook tomato and spices in a saucepan over medium heat until thickened slightly (4-5 minutes). Stir in olive oil and season to taste. 4 Add 10cm of vegetable oil to a deep frying pan and heat to 180°C. Lightly crush potatoes with the palm of your hand to flatten slightly and deep-fry, in batches, until golden and crisp (6-7 minutes). 5 Transfer to a large bowl with confit garlic cloves, season with salt to taste and toss to combine. 5 Layer potato, garlic and tomato sauce in a serving bowl, then top with aïoli (see recipe opposite) and parsley. Drizzle with extra olive oil, season to taste and serve. 1

1.5kg (medium) whole cauliflower 100ml extra-virgin olive oil 200g sheep’s milk yoghurt

100g Turkish peppers (see note) 50g pepitas, toasted 2 tsp piment d’Espelette (see note)

Preheat oven to 200°C. Place cauliflower on a baking tray, drizzle with 2 tbsp oil and season. Bake until just tender (45-50 minutes). Cool then cut into large florets. 2 Whisk yoghurt in a bowl with 1 tbsp oil, and salt and pepper to taste. Refrigerate until required. 3 Heat a chargrill pan or barbecue to high. Drizzle cauliflower and peppers with the remaining oil and season. Grill until well charred and tender (5-6 minutes). Spoon the yoghurt sauce onto serving plates, top with cauliflower and peppers, then sprinkle with pepitas and piment d’Espelette to serve. 1

Piment d’Espelette, a popular spice in the Basque region of France and Spain, is available from spice shops or online from Herbie’s Spices (Herbies.com.au). “There’s something to be said about cold tomatoes on warm toast,” says Jordan. “We use the best tomatoes, so with the olive oil and crunchy sea salt flakes, it tastes just like summer.”

7g dried yeast 1 tsp white sugar 125ml (½ cup) extra-virgin olive oil 500g bread flour 3 tsp salt flakes Fine semolina, to dust

1 vine-ripened tomato, coarsely chopped 400g mixed heirloom tomatoes, coarsely chopped, plus extra to serve ¼ cup oregano leaves

Combine yeast and sugar with 375ml (1½ cups) lukewarm water in a small bowl. Cover and stand until frothy (10 minutes), then stir in 1 tbsp oil. Combine flour, salt and yeast mixture in the bowl of a stand mixer fitted with a dough hook and mix on a low speed until a soft dough forms, then mix on medium speed until smooth and elastic (8 minutes), or knead by hand on a lightly floured surface. Transfer dough to a large oiled bowl, cover and stand in a warm place until doubled in size (30 minutes). Fold dough over on itself 3 times and rest again (30 minutes). Repeat folding and resting 3 more times, cover and set aside until doubled in size (30 minutes). 2 Turn out dough onto a work surface dusted with semolina and cut into 6 pieces. Dust with more semolina, stretch dough slightly and place on a tray. 3 Combine all tomatoes with 2 tbsp oil and season to taste. 4 Preheat oven to 240°C. Heat 2 tsp oil in an 18cm ovenproof frying pan over medium heat. Add one piece of dough (see note), pressing down slightly into a round about 1cm thick and top with one sixth of the tomato mixture. Cook until base is light golden (2 minutes), then bake until puffed and golden (10-12 minutes). Transfer to a separate tray and season to taste. Repeat with remaining oil, dough and tomato mixture. Serve Catalan bread topped with extra tomatoes, oregano and remaining oil. 1

20g white sugar 2 garlic cloves, unpeeled, bruised 5 black peppercorns 25g dill, leaves picked, stalks reserved 2 small white salad onions, thinly sliced

SOUR ONIONS Combine vinegars, sugar, garlic and peppercorns with 150ml water in a saucepan over medium heat. Bring to the boil, add dill stalks and set aside to infuse (3 minutes). Place onion in a bowl, strain pickling liquid over, cover and refrigerate to chill. 2 Place sardines in a non-reactive container in a single layer, pour over onion mixture, cover and refrigerate to chill overnight. 3 Strain sardines and onions, reserving liquid, and coarsely chop half the dill. Combine chopped dill, onion, raisins and half the oil in a bowl and set aside to macerate (10 minutes). Spoon onto serving plates, then top with sardines, remaining dill, remaining oil and a little pickling liquid, season to taste and serve. R 1

MORNINGS AT AFRAME KANGAROO VALLEY go a little something like this: snuggled in your loft bedroom, you wake to nature’s alarm clock of kookaburras laughing in the distance. You allow yourself a few minutes to luxuriate in the cloud-like bed before kicking off the sheets and heading downstairs to put the kettle on. As you take in the view of the bush escarpment through the seven-metre-high windows, you ponder your options for the day. A short drive into town for a late breakfast? A swim in the creek or an afternoon walk along the quiet country roads? Or maybe you’ll just stay put. Read a book or do some yoga while you wait for the outdoor tub to heat up. It takes three to four hours to heat the water for a one-hour soak, and that’s the whole point. Aframe allows you to slow down and enjoy the process. We have Sophie Lord and Ben Gray to thank for this little piece of paradise, which opened for bookings in June. The couple purchased the 16-acre parcel of land on a whim three years ago, and spent 18 months clearing away the rampant weeds and crumbling cottages so they could build a dream space where they could disconnect from the daily grind. “For us, bigger was never going to be better,” Sophie says of the Aframe. “No one needs a media room, a second bathroom or a walk-in pantry, so by building small, we were able to focus on quality over quantity and living a simpler life.” Ben, an architect, and Sophie, a creative director and magazine editor, were intent on repurposing existing materials and sourcing sustainable options for the build wherever possible. Fourteen re-milled telegraph poles form the “A”s that A Dream team Builder Campbell Smith from Greensmith & Co helped bring Sophie and Ben’s Aframe dreams to fruition. “We couldn’t be happier with the end result,” says Sophie. And the couple aren’t finished yet – future plans for the property include a paved outdoor area with kitchen and Argentinian parrilla barbecue and a restoration of the 100-year-old workers cottage. Flicker fest A Nectre fireplace (opposite top) warms the cabin in winter and is the only version of a “screen” you’ll find on the property. Old soul “The bathroom is one of my favourite rooms in the cabin, as almost everything is salvaged and restored,” Sophie says. The 130-year-old clawfoot tub (opposite below) came from Sydney Antique Baths.

How to get there The property is a two-hour drive from both Sydney and Canberra, just 10 minutes from Kangaroo Valley township. This semi-remote area is not easily accessed by public transport, so a car is a must. You’ll receive directions to the property upon booking. Good to know The cabin can be booked through Airbnb. It sleeps two adults comfortably, and is not suitable for children or pets. You may spy some other cute critters, though, with kangaroos, wombats and an echidna called Shuffles residents. Road trip Aframe Kangaroo Valley is accessed via a picturesque drive through quiet country roads, and is 10 minutes from the town centre. Worth the wait There’s no better place to soak up the stunning surrounds than from within the Stoked NZ woodfired hot tub (opposite, top). Just get the water heating a few hours before you want to use it. Clean sweep The Robert Gordon basin (opposite, below left), made from clay offcuts salvaged from the workroom floor, was the perfect choice for this sustainable home. Soft landing “Guests seem to love the bed most, no doubt thanks to the I Love Linen sheets and Hotel Cloud Collection mattress topper,” Sophie tells (opposite, below right).

make up the home’s striking frame, while 150-year-old Croation terracotta roof shingles have been reimagined as bathroom tiles. Recycled timber is used in the decking and interior mezzanine, while the walls, floors and ceilings are made up of over 10,000 lineal metres of regenerative spotted gum timber. “Sourcing quality materials, fixtures and finishes that will last for generations to come has been the highlight of this project for us,” Sophie tells. The interior fixtures and soft furnishings were Sophie’s domain, the majority of them natural and durable. “In the spirit of responsible consumerism, we’ve done our best to sparsely decorate our home with only the essentials sourced from some of our favourite Aussie-owned businesses,” she says. The leather Pop & Scott couch, handloomed Pampa rugs, Nectre fireplace and raw brass tapware by CB Ideal and are just some of the considered inclusions. No matter how you decide to spend your time at Aframe, Sophie has one essential recommendation. “You want to be done at least an hour before the sun goes down so you have time to prepare your cheeseboard, pour yourself a glass of wine and take up residence on the northern deck to watch the sun dip down over the escarpment,” she says. “If it’s a chilly night, you might take in this view from the hot tub or the outdoor firepit. Then you can either stay outside and marvel at the Milky Way, or head inside for dinner, a game of backgammon or a red wine by the fire before slipping into bed and doing it all again the next day.” Now that sounds like a plan that we can easily get on board with.
