If you’re wondering why I made no reference to how our lives have changed in my last letter, I should explain that because we work a long way ahead, COVID-19 was a far-off problem in China back then. And now, we’re hunkered down at home waiting for the storm to pass. The team and I send best wishes to you and yours. We’re still beavering away to bring you ideas, but you might have to scrapbook some for later as it’s possible we’ve featured things you can’t get hold of right now. We’re doing our best to keep up! ABOUT ME I’m Lydia Elder, 30, a marketing manager. I live with my husband Peter, 29, an account manager, and our sons, Teddy, five, and Arlo, three. OUR HOME A four-bedroom, detached new build in Ebbsfleet, Kent. We moved here in July 2018. WHEN WE MOVED IN The kitchen and bathrooms were lovely, but the whole house felt stark. AND NOW I’ve overlaid the whites and greys with vibrant greens, blues and dusky pinks to warm things up. We’ve also added interest with modern panelling, artwork, wallpaper and leafy prints. STYLE TIP Use the same handful of colours and print styles all through your home to create calm and a sense of continuity.

nce our second son, Arlo, had arrived, Peter and I knew we’d simply outgrown our two-bedroom flat,’ says Lydia. ‘We were keen to put down roots somewhere, so we wouldn’t need to move again in a few years, and we were hoping to find a brand-new house with a garden. Our flat was a new build, too, which we’d bought off-plan, so we weren’t worried about choosing a property we’d never actually seen. Also, a house that didn’t need repairs or alterations, and where everything would be pristine, was very appealing to us.

New build dreams There is plenty of new housing going up in this area, but you have to reserve your property before it’s actually built. We only had floorplans and dimensions to go on, so I really did my research before we committed ourselves. I found online images and video tours of the different house designs, and Instagram pictures of the internal finishes on offer. After comparing lots of options, Peter and I chose a detached house, which we felt was the best value in our price range. It had four good-sized bedrooms, a utility room, study, garden and a garage.

We were very lucky, as once we’d sold our flat, we were able to stay with Peter’s parents for three months while the new house was being finished. It was exciting watching the progress, but we didn’t know our exact moving-in date until about a fortnight before, so that made planning difficult. We could hardly buy anything new for the house in advance of moving in, as there was nowhere for us to store it. On the upside, we were allowed to visit the property to measure up, so I was able to order shutters,

Going with green All the walls were plain white to start with. I loved the light, fresh, modern feel. I’d visualised an all grey and white interior anyway and everything we’d already picked – such as the flooring, bathroom tiles, kitchen units and worktops – was grey or neutral. Once we were settling in though, I found myself thinking about putting in more colour. Our bedroom was the first room we completed and I wanted it to be a luxurious, grown-up sanctuary. I’d picked out the grey upholstered bed and side

tables in advance. When I spotted some emerald-green velvet cushions, I realised I loved them and didn’t just want a grey and white interior after all. Shades of green are my go-to colours now, and they look amazing paired with greys. The final touch was a bold, palm-leaf wallpaper. I considered the grey version but I’m so glad I went for the greeny-blue one – it just brings the room to life.

Adding impact I was really pleased with how the bedroom turned out. It made me think about using the walls to add interest and personality, which would make up for not having any architectural

Choose the size and depth of stripwood depending on how far you want the design to stand out from the surface. Plan your pattern out on paper first, then use a stripwood length to sketch it directly onto the wall in pencil. Keep your design simple so it doesn’t look too busy. To make cutting the edges straightforward, stick to 90-degree or 45-degree angles wherever two pieces of wood meet. Then, from the finished design sketch, you can work out how much wood you will need. Cut each batten and attach to the wall with a strong, multi-use adhesive (No More Nails would work). Hold each strip of wood in place for up to 10 minutes to ensure it sticks. Then, fill any gaps and joins along the battens with a general purpose, paintable sealant. Once dry, your design is ready to paint.

We put wallpaper in the guest room and hall, too, and for the price of a few tester pots, I painted a fab mountain mural in Arlo’s bedroom. The living room was a challenge, though, because although it’s a decent size, it’s a tricky shape, with several windows. It felt very white, and a bit disjointed, so I painted the corner in a dramatic, dark blue and created a gallery wall. It’s made a massive impact, pulling the whole room together.

Clever zoning

Our most recent project was the wall panelling in the kitchen-diner. The room

was a big selling point for me, as I loved the idea of a multifunctional, familyfriendly hub. Rather than having a dining area though, Peter suggested putting our table in the kitchen and turning the other half of the room into a play-zone. As the boys are still small, it works really well, but I was keen to add a feature wall so the space felt finished and could eventually become a proper dining area. I’d seen the geometric panelling idea on social media. It’s made from stripwood and we put it together over a few days. I painted it a blush colour to make a link with the kitchen cabinets, which are a warm pinkish-taupe. Peter and I have

We watched online videos and just learnt as we went along. With young children, it’s hard to find the time for DIY, so we’d often start at about 10 o’clock at night and finish around one in the morning. It’s saved us a lot of money though, which has helped, as there’s so much outlay when you move into a new build. We kept costs down by not upgrading interior finishes, such as the kitchen worktops and splashbacks, but we still had to budget for extra furniture, lampshades and curtains.

Shopping around My taste is definitely modern, but I’ve become more adventurous as the house has developed. I’ll mix up Scandi style with industrial-looking bits, geometrics or tropical prints, and I love including metallics and mirrors for warmth and a little glamour. You

Choose your colour scheme and pick out some tester pots. Work out the highest point of the mural. Using a long straight edge, draw the first mountain shape in pencil. Once you are happy, draw the mountain peaks either side of it. Use decorator’s tape to mark out the edges, plus any details that you don’t want to paint. Paint within the tape, using a contrasting colour to the outer wall paint. Apply a second coat. Once dry, remove the tape and use a fine brush for touch-ups.

I bought our laminate flooring from a local firm who offered exactly the same product as the house-builder, but at a better price. I keep my eyes open for interesting pieces that look like they’ve cost more than they actually have. I saw beautiful, plush velvet chairs, like the one in my bedroom, going for £300-plus, but I got mine for half that by shopping around. Renovating a Grade II-listed cottage took time, effort and hasn’t been without its problems, but for Amanda and her family all the hard work has paid off

rom the moment we stepped inside we knew we had to have this house,’ says Amanda. ‘We fell in love with its character, history and charm. I first spotted the cottage for sale online, in 2015. ‘It had been on the market for a while, and we booked a viewing, even though our own house wasn’t up for sale yet. It was the only house we’ve ever walked into and been sold on straight away. The cottage is a landmark in the village and is said to be the oldest one here – it was owned by a couple in their 90s who had lived in it for thirty years. We knew we really wanted it, even though there was lots to do to it, so we put our house on the market as soon as we could and, fortunately, sold it fairly quickly. We then had a specialist survey done on the cottage that ran to 57 pages, but it didn’t put us off and we went ahead with the purchase. We love renovating – it’s a hobby for us – we’ve done up five properties and all our previous houses were old.

Because it’s a listed property, and made of wattle and daub with lath and plaster walls, any renovation work had to be run past the Listed Building department and planning permission gained. Originally the cottage only consisted of an upper living room, a utility room and a forge, which was in the middle of the property. The dining room and the end of the front room were converted from a cowshed in the 1800s, while the kitchen and study were both part of

If the floor has too many coats of paint on already, you may want to strip them back first. If so, use a chemical paint stripper, a heat gun and scraper or hire a floor sander. Once smooth, vacuum and wash the boards with soapy water. When completely dry, coat with floor paint using a wide, goodquality brush or roller. Cover the full length of no more than two boards at a time, starting with the board furthest from the door. Once dry, lightly sand and vacuum, then apply a second coat if needed. Allow to dry for at least 48 hours to avoid scuffs or dents.

Once we moved in, some unexpected problems did emerge. At first we had hardly any water pressure – it took half an hour to quarter-fill the bath – and all five of us had to share the water! Then Niall looked in the water tank in the loft and found dead rodents in it, so we had to use bottled water to clean our teeth until a new water tank was put in. Also, the house wasn’t properly insulated, so the first winter was very cold. I wore leggings and socks in bed and Niall had to wear a hat! The elderly couple who’d lived here had cared for the property sympathetically, but only used a few rooms, so over time the others required restoration. We’re

Transform an old panel of wood into a piece of wall art by adding a favourite slogan or short quote. Start by finding your wood first. You could use an old cupboard door, the backing from an old picture frame or a discarded piece of panelling. Give your wood a couple of coats of thinned-down white emulsion paint. The finish doesn’t have to be too perfect, you want the wood to have a slightly worn, weathered feel. Once dry, use a pencil and ruler to work out the placement of your wording, marking it lightly with the pencil. Use black hobby paint and a fine brush to paint on your wording. If you’re fairly confident with a brush, paint it free-hand, or alternatively try printing out your lettering first from the computer and tracing it on with pencil.

Other work undertaken has involved replacing part of the roof, updating the wiring and putting in two new fuse boxes, not to mention

installing a new kitchen and converting a bedroom into a bathroom.

Channelling Scandi style I’ve decorated in a modern country style in keeping with the age of the property. The house sells itself with its beams, so we wanted to keep it neutral with greys and beiges – we don’t need colours and patterned wallpaper. I like Scandi style, so we’ve painted floorboards and exposed fireplaces. I’ve also introduced modern light fittings. The dining room

D

uncan and I had been trying to find a bigger Victorian property with elegant period features we could renovate,' says Katy. ‘We were looking in West Bridgford, a lovely part of Nottingham with great schools, a pretty high street, and brilliant connections into the city and the surrounding countryside. Annabel, our first child, had just turned one, and I was expecting again, so it was the right time for us to make the move. This house ticked all the boxes and seemed like the perfect project. A Victorian semi-detached, it had been converted into seven student flats years before and needed a heap of work to turn it back into a family home, but it was within our budget, so we put in a cheeky offer that was accepted.’

Sizing things up The house was in a terrible state. There was no garden, as flats had been built onto the back of the house, the original Minton tiled floor in the hallway was covered in a thick dark carpet and all the original fireplaces and architraves had been removed or covered up over the years. The whole place needed gutting, and I felt quite overwhelmed. It was impossible to live there during the work, so we stayed with family for six months while the kitchen, dining and living rooms were reinstated, the bathrooms replaced and the upstairs reconfigured. With so many decisions to make and not much time to make them we decided to go neutral with the décor, with every intention to revisit each room and add personality and colour. But time passed, Alice was born and then our son Patrick, three years later, and we just never had time for anything else. That was until Annabel suddenly became ill in March 2016 with an auto-immune disease

As Annabel’s illness had such an impact on our other children, we decided to surprise them all with new bedrooms, but just had no idea where to start.’

Putting plans into action By chance I got talking to our neighbour Helen Wallace, an interior designer (@madeupdesign) and told her about our plans for the children and she offered to help. She was able to work well within our limited budget and was great value. She spent time with each child to understand what they each liked and designed their room around their ideas. Annabel’s room, which was previously a plain, cramped guest room, was completely stripped out and turned into a more sophisticated space. Alice also wanted her room to be a little more grown up, but still light and pretty, and a double bed was a must! And Patrick wanted bolder colours in his room and was keen to incorporate

Pick the right paint finish. Gloss might add the glam factor, but it shows up every imperfection – matt or eggshell is kinder. Work with the right accent shades. For impact, go for split complementary colours such as zingy orange and yellow or bright fuchsia; for warmer accents, deep reds and ochre offer a toned-down look, and for freshness, use pastel shades like blush pink and lighter blue shades. Sand the surface, removing any flaky paint or varnish. Fill any holes with wood filler and sand smooth once dry. Apply a wood primer to seal it and help the new paint adhere. Once dry, apply your paint. For flat surfaces a use a small foam roller, switching to a paintbrush for mouldings or panels. Be aware of thick drips settling on the frame edges and smooth these as you go. Once dry, lightly sand the surface again, brush clean and apply a second coat of paint.

Simple but effective After the success of the bedrooms we decided to get Helen’s help with the rest of the house. The downstairs in particular needed attention. We’d been thinking about extending the kitchen at the time so didn’t want to spend money on a new one, but it needed to work better for us as a family. Helen made some really simple but effective changes. She added a peninsular unit, which instantly changed the room, giving us extra worktop space and a sociable spot to hang out. Existing tiles were replaced with inexpensive metro tiles right up to the ceiling, creating a new focal point, and in the dining area, Ikea Besta units were made into a seating bench with colourful bespoke cushions,

giving us handy storage and a muchneeded seating space. To keep costs down we picked up a vintage G-Plan table from eBay, which I wasn’t keen on at first, but once it was paired with some Scandinavian-style chairs, the space started to evolve and I realised it all worked perfectly. With an added comfy sofa, it’s now such a sociable, family space, plus all the extra seating means we can fit a small crowd in comfortably.

An opulent vibe The playroom was redesigned to fit a TV and piano in, plus a wall of hidden storage with a desk added in the corner. The new layout also meant we were able to have a large corner sofa that pulls out into a sofa bed for guests. It’s now a comfortable but stylish and functional space. Lastly, we redecorated the living room, which was pale and uninteresting and not a

space we naturally gravitated to. We wanted it to feel warm and inviting, a place we could totally relax and unwind in at the end of the day. We ended up painting the whole room in a dark, rich blue, including all the woodwork, to give it a cosy, cocoon-like feel. Helen convinced us to keep the Chinese style cabinet, and sourced other pieces of new and second-hand furniture, which tie-in the room beautifully, and a few carefully selected cushions, throws and art prints make the room feel quite opulent. We love spending time in there now.

Quirky style

Each room is completely different in style – they're all quirky and individual but connected through blue tones, which is so clever. The children’s rooms are a triumph. They absolutely love them, and Annabel has slept in her own room ever since. In the future we’d like to update the family bathroom and redecorate our master bedroom, but all in good time. We couldn’t be happier with the transformation, now all we have to do is sit back and enjoy our beautiful home.’

fter we moved here 13 years ago, the whole house had to be updated and we knocked through a muddle of small rooms to make a bigger kitchen,’ says Donna. ‘As time went on, we found that although the kitchen was long, it wasn’t wide enough, and it felt like we were on top of each other all of the time. I just wanted a relaxing room where we could all hang out. Initially, our planning application to extend the rear was refused because of light issues with neighbours. A different architect suggested we extend three metres to the side. At first I wasn’t convinced but making the room square has made a huge difference – we didn’t need to go out at the back at all. The biggest headache was moving the drains. The plumbing was on the outside wall where we were extending, and we wanted the sink and dishwasher on the opposite wall. The quickest route would have been beneath the kitchen floor, but it could have been a nightmare to sort out if there’d been a leak. Instead, we ran them around the outside of the house.

The room needed to visually flow with the rest of our house, which is decorated in greys, dusky pinks and florals. The wood cladding was really important, too – I just love this look. I’m a huge fan of Pinterest and while I was looking for ideas, I kept being drawn back to the style of the shaker cupboards I’d had before. This time I wanted them in white for a French-Scandi look. A friend of mine had bought a shaker kitchen from DIY Kitchens and her fitter said the cupboards were good quality. They were a fraction of the price compared to anywhere else and they

‘I opened-up the chimney breast to fit in a range cooker – a white one was quite tricky to find’

sent me a number of white kitchen doors so I could choose the exact shade. I wanted to make the kitchen look and feel like a room. Key was opening up the old fireplace so I could install a white range cooker. I planned a big, sociable island facing into the living area with a comfortable sofa and a long dining table next to the doors. I drew up the floorplan myself and my builder, Dave Bartlett from DB Builders, checked the measurements and then I sent my layout to DIY Kitchens. The cupboards arrived painted and already made and the builders fitted them into the room.

Finishing touches

The all-white kitchen needed softening, and in a house of boys, a bit of a feminine touch! I’m not one for fashion fads so I simply decorated the vintage shelves with candles and glassware, and hung up paintings of flowers found in flea markets and charity shops. The painted white wood cladding has made the room feel really homely – we all love being in here together. This project has been a real luxury to do, and the room feels like it has always been part of our home.’

Tongue-and-groove panels can transform the look of a wall and are easy to create. For full-height tongue and groove, aim for five battens at even points across the wall, starting with one at floor level and one at ceiling height. Make sure the battens are level, then mark the positions on the wall. Mark drill points, then drill the holes, plug and screw in place. Starting on the left, fix the first plank in place by nailing a panel pin through the batten. Use a spirit level to check the plank is vertical before fixing to the other battens. Continue fixing the planks across the width. Finish with capping at the top and skirting at the bottom.

How do I collect and install a second-hand range cooker?

While a freestanding range oven is easy to remove, a solid cast-iron range will need to be dismantled, transported and refitted by an expert. G

etting together with my partner Mark four years ago meant that we had to decide whose house we were going to live in with our blended family of six,’ says Sheelagh. ‘We decided in the end to sell my home and put the money into extending Mark’s house and making it somewhere we both wanted to live. In 2018, we undertook a major rear and loft extension, as well as a complete renovation, adding another bedroom plus an en suite, so that each of our four girls had their own bedroom. However, that left the main bathroom looking dated, dull and definitely in need of some attention. We needed a style that would grow with the girls – three of whom are teenagers – and that would suit the house’s age, but had a contemporary, industrial edge.

Once the room was cleared, we were left with a good-sized rectangular space with the door in the middle and plenty of room for a walk-in shower. We’d chosen blackframed glass doors for the back of the house and loved them, and we realised there was nothing to stop us going for a similar shower enclosure. It’s very minimal, so although it’s black, it’s not oppressive. With the door ordered, we chose metro tiles for the walls and continued with the black and white theme by painting the walls plain white. We felt large-scale white floor tiles would have been too plain, not to mention a nightmare to clean, so we picked a black and white chequered style. We had the metro tiles grouted in dark grey, to break up the mass of white tiles. I’d always wanted a roll-top bath, and we could see that a bath would fit across the width of the room, out of the way. But it had to be a traditional shape to fit in

with the age of the house. Having found a bath we liked, we then realised that the company had exactly what we wanted for the other main elements, too. Everything was high quality and era appropriate, but with modern plumbing, so we didn’t need to look any further.

Black on white

We wanted to bring a bit more black into the room to balance the white. There was plenty on the floor with the tiles, but the walls looked a bit pale. We found a matt black towel rail, which really stands out against the white tiles, and spotted a black linen hamper in a garden centre. The black metal mirror with a shelf above the basin breaks up that wall nicely. With black and white, it’s easy to add touches of any colour, but mustard yellow is my favourite. You only need a tiny burst of it to draw the eye, so I’ve gone for a towels in complementary yellow hues. The only other colour is green from the plants, so it’s easy to change towels and accessories when you want a change.

Final touches

Mark has quite a quirky touch with décor, so as a finishing touch, he bought a Highland cattle picture to hang on the plain white wall above the bath. It was just the touch of fun that we were looking for to complete the scheme, as it looks like it’s peeking at whoever’s in the bath. Now, everyone rushes to get in there first. It’s light and bright, no space is wasted and everything works perfectly for us.’

How do I get a grid look?

At entry level, the black lines are screen printed onto glass. It’s pretty convincing but specks of black can flake off. Limit the amount of upkeep your garden will need by cutting back on the grassy areas in favour of paving and planting solutions that need less maintenance than a lawn.

LET GO OF THE LAWN The less grass you have to take care of, the lighter your workload will be. Break up large expanses of lawn by adding a sweep of paving slabs or decking planks running across the garden, introducing sections of slate or cobbles to break up lines and creating areas that don’t require a lot of looking after. Choose smooth stones for clean lines, or shingle and pebbles for a rustic look. SHAPE PATHWAYS Extend pathways to reduce the amount of lawn area, and add shingle or gravel so rainwater can drain away freely. Carve out areas alongside your pathways to create natural break-out places, where you can add planting features, seating or dining sets, or play areas. Keep the area of lawn you’re left with in a simple shape so it’ll be easier to mow. BRING ON THE BEDS Reduce lawn size by making your beds and borders big and bold – well-filled beds are much easier to care for than grass. Building a bug hotel is a fun and easy way of encouraging wildlife into your garden

Add a roof for shelter from the rain

E

ncourage bugs and wildlife into your garden by building a bug hotel. It’s the perfect project for getting the kids involved in, too, and watching the creepy-crawlies scurry into the holes and cracks is sure to capture their imaginations. YOU WILL NEED Bricks Pallets Broken pots Soil Tiles Dead wood Stones Tubes

DECIDE ON A SPOT The best location for the hotel depends on the type of insects you want to attract. Some prefer cooler, damper conditions, while others, such as bees, prefer the sun. BUILD YOUR HOTEL Lay bricks on the ground to create a sturdy base, but make sure you leave gaps between them so the insects can crawl up. Then, start creating some height by adding pallets and more bricks. FILL IN THE GAPS Use smaller materials, such as dead wood, tubes, stones and tiles, to create spaces for insects to hide. A mix of different materials will mean that you will enjoy a wide variety of visitors. ADD A ROOF This is integral to ensuring the hotel stays stable and doesn’t tip over, while also keeping it dry to help the sheltering bugs. You could use old roofing tiles or pack it tightly with rubble and soil. Plants that can cope with dry conditions could also be planted for another dimension. WAIT FOR YOUR GUESTS Insects won’t come to the hotel straight away. It’ll take a while for it to be discovered and for them to make it their home, but don’t be disheartened. Bug hotels will have more residents during warmer months, and at nighttime, so you may not see all the visitors during the day.

Preheat the oven to 180C/Gas 4. Slice the feta in half horizontally and put each half onto a foil-lined baking tray, sprinkle over the dried herbs, chilli and 1tbsp olive oil. Roast for 10-12 mins until softened and lightly golden. Meanwhile, toss the sliced onion with the lemon juice and 1tsp salt, set aside for 10 mins to lightly pickle and soften.

To make the dressing, whisk together the remaining olive oil, honey and sherry vinegar, then season to taste with freshly ground black pepper. Divide the tomatoes, cucumber and olives between 2 plates. Top with the onions, hot feta and fresh herbs. Drizzle over the dressing and serve with warm flatbreads, if you like.

Preheat the oven to 200C/Gas 6. Spread one-third of the salt over the base of a medium roasting tin and scatter over half the herbs. Nestle in the potatoes, top with most of the remaining herbs (reserve a few to garnish) and spread the rest of the salt on top to cover every potato. Bake for about 1 hr, until a skewer slides into the centre of the largest potato easily. Remove the potatoes from the salt, brushing off as much as possible, then crush them slightly and put in a serving dish. Finish with as much butter as you dare and garnish with extra herbs.

200g frozen broad beans 2 sprigs ½ small garlic clove, finely fresh mint 1tsp tahini 1tbsp lemon crushed 1tbsp sesame seeds Flatbread juice

Place the beans in a pan with 200ml lightly salted, boiling water and 1 whole mint sprig. Simmer for 4-5 mins until tender, then drain, reserving the mint and cooking water. Set both aside to cool. Tip the cooled beans into the small bowl of a food processor with the garlic, tahini and lemon juice. Strain 100ml cooking liquid into the food processor, discarding the mint. Blend until almost smooth, adding more cooking liquid if necessary. Season to taste, then scrape into a bowl and sprinkle over the sesame seeds. Serve with toasted flatbreads or vegetable crudités.

Handful of chopped soft herbs, such as chives, dill and flat-leaf parsley 1 garlic clove, peeled and crushed 75g salted butter, at room temperature 2 x small (1.2kg) chicken 3 garlic bulbs, halved 5 banana shallots, peeled and cut in half 5 thyme sprigs

Preheat the oven to 200C/Gas 6. Combine the herbs and half the crushed garlic with the butter and season lightly. Carefully loosen the chicken skin over the breasts and legs. Reserve 1tbsp of the herb butter and divide the rest between the chickens, spreading it evenly under the skin. Put half a garlic bulb in the cavity of each chicken and tie the legs loosely with cooking string. Put the shallots, thyme sprigs and remaining garlic bulb halves in a medium roasting tin and snugly tuck in the chickens. Blitz together the peas, a squeeze of lemon juice, the garlic, mint, oil and seasoning. Chill until ready to serve. Arrange the bread slices on a baking tray and drizzle with oil. Grill until lightly toasted on both sides. Arrange on a serving platter and top each one with a spoonful of pea purĂŠe. Top each crostini with prawns and garnish with pea shoots.

HAM HOCK, JERSEY ROYALS AND ASPARAGUS TAKES 20 MINS SERVES 4 400g Jersey Royal new potatoes, any larger ones cut in half 1tbsp olive oil 100g green beans, trimmed 150g asparagus 75g mixed radishes, finely sliced 90g lamb’s lettuce 200g cooked shredded ham hock 4tbsp natural yogurt ½tsp English mustard 2tbsp chopped tarragon

Tip the potatoes into a saucepan with 1tsp salt, cover with cold water and bring to the boil. Turn down the heat and simmer for 10-12 mins, until just cooked through. Drain, toss in the olive oil and set aside. Meanwhile, bring another saucepan of water to the boil with a little salt and cook the green beans for 1 min,

then add the asparagus for a further 2 mins, until both are just tender. Drain and run under cold water until cooled. Toss the radishes, lettuce, potatoes and cooled veg together. Transfer to a serving plate and top with the ham. To make the dressing, mix the yogurt, mustard and tarragon, then drizzle over the salad. Season well and serve.

VEGETABLE CREAM CHEESE TART SERVES 4 TAKES 1 HR 15 MINS, PLUS CHILLING 325g ready-rolled puff pastry 1 fennel bulb, thickly sliced 2 red peppers, deseeded and cut into chunks 2 red onions, thickly sliced 2 courgettes, quartered lengthways and cut into chunks 2tbsp olive oil 1 egg yolk, lightly beaten 150g packet garlic and herb cheese (we used Boursin) 2tsp chopped fresh oregano leaves, or 1tsp dried

Preheat the oven to 220C/Gas 7. Unroll the pastry and, with a sharp knife, score a border 1cm inside the edge of the pastry. Score the rim in a criss-cross pattern, then chill the pastry for 20 mins. Put the vegetables into a roasting tin, drizzle over the olive oil and roast for 20 mins. Meanwhile, brush the pastry rim with egg yolk and pierce the central pastry rectangle several times with a fork. Line with baking paper and baking beans. Bake for 15-20 mins until golden. Reduce the heat to 180C/Gas 4. Remove the paper and baking beans. Dot the cheese over the pastry. Arrange the veg on top, season and sprinkle with oregano. Bake for a further 15 mins, then serve.

FROZEN ETON MESS TAKES 15 MINS, PLUS FREEZING SERVES 4 75g frozen raspberries 225g 125g natural yogurt raspberries 500g softened natural frozen 5 meringue nests yogurt

In a food processor, pulse the frozen raspberries until crushed but still chunky. Remove and blend the fresh raspberries with the natural yogurt until smooth, then gently stir into the softened natural frozen yogurt. Break the meringues into small pieces. Stir most of the meringue into the yogurt mixture, using as few movements as possible. Divide between 4 glasses and freeze for 1 hr. Remove from the freezer 15 mins before serving and top with the crushed raspberries and remaining meringue pieces.

20 ripe but firm plums 450g 1½tbsp whole unrefined caster sugar 2 large handfuls black peppercorns 1 handful fresh fresh basil leaves edible flowers, to serve (optional) 2 handfuls ice cubes Chilled sparkling water, to top up

Halve, stone and roughly chop 10 of the plums and put them in a pan with the sugar, peppercorns and 500ml water. Bring to the boil, stirring frequently, then simmer for 10 mins. Remove from the heat and stir in a handful of basil leaves. Set aside to steep for 30 mins, then strain through a fine sieve. Cover and chill for up to 3 days until needed. To serve, halve, stone and finely slice the remaining 10 plums and layer in a large glass jug with the remaining basil leaves, ice cubes and borage flowers, if using. Add the syrup and top up with chilled sparkling water to taste.
