TRADITIONAL BULGARIAN CUISINE IS EXCEPTIONALLY DIVERSE DUE TO ITS INFLUENCE FROM THE MIDDLE EASTERN, TURKISH, AND BALKAN CUISINES. MOST OF THE RECEPIES ARE EASY TO FOLLOW AND DON’T REQUIRE MANY PRODUCTS TO PREPARE. THEY ARE BASED ON VEGETABLES, MEAT AND SPICES COMMON FOR THE TERRITORY OF BULGARIA. BECAUSE OF THE LARGE VARIETY OF PRODUCTS SOME RECEPIES VARY FROM REGION TO REGION OR CHANGE SOME OF THEIR INGREDIENTS ACCORDING TO THE SEASONS AND FASTS. SOME DISHES ARE PREPARED SOLELY FOR CERTAIN HOLIDAYS OR SPECIAL FAMILY EVENTS.

BANITSA Ingredients: 500gr flour 300gr white cheese 200gr butter 50gr yeast 3 eggs water, salt

Mix the flour, salt, water and yeast to make dough. Let it rise for one hour. Mix the eggs and cheese to make the filling. Roll out sheets, spread butter in every, and layer them one by one adding small amounts of the filling between them. The sheets are rolled up and placed in a buttered pan. Coat the banitsa with beaten egg. Bake it in a preheated oven.

TARATOR

Ingredients: 1 cucumber 2 or 3 cups of yoghurt oil, salt 2 or 3 cups of water (optional) walnuts, garlic, dill (optional)

Chop the cucumber (or grate it) and put it into a bowl. Beat the yoghurt until it gets liquid and add it to the cucumbers, add oil and salt. You may add as much water as you like. If you want you can add crushed garlic, dill or walnuts to your taste. Serve cold.

MUSAKA Ingredients: 500gr minced meat 1 kg potatoes 1 onion 1-2 tomatoes (optional) paprika black pepper, salt, spices you like For the topping: 2 eggs, 200gr yoghurt, a pinch baking soda, 1 Tbsp flour

Chop the onion and fry it in 3-4 tbsp oil. Add the minced meat and season it. Add the chopped tomatoes and cook it till done. Peel the potatoes and chop them. Add them to a pan together with the minced meat and mix well. Pour some warm water and bake for 30 minutes on 200 C. Beat the eggs with the flour, the yoghurt and the baking soda (you may add parsley if you want). Pour it over the musaka and bake for another 10-15 minutes. While eating you may add yoghurt.

SHOPSKA SALAD Ingredients: 1 cucumber 1 tomato 1 (grilled) peppers white cheese salt, olive oil, vinegar onion, parsley, olives

Chop the cucumber, tomato and the pepper. Add them to a bowl, season with salt, olive oil, vinegar to your taste. You may also add onion, olives and parsley if you want. Grate some cheese on top. Serve cold.

SHEPHERD’S SALAD Ingredients: 2 tomatoes 1 cucumber 1-2 grilled peppers 100gr marinated mushrooms 100gr white cheese 150gr chopped ham 100gr cheese 2 hard boiled eggs parsley, oil, onion, vinegar, olives,

Chop the tomatoes, cucumber, grilled peppers, eggs and mushrooms. Mix well with the rest of the ingredients. You can chop the two kinds of cheese and mix them as well or grate them and sprinkle on the top.

MEKITSY

Ingredients: 500 gr. flour 1 egg 20 gr. yeast 1 cup of yoghurt 1 tsp sugar ½ tsp salt jam

Add a little warm water and the sugar to the yeast and 2-3 spoons of flour. Leave it to rise. Prepare dough from the flour, eggs, yoghurt, sugar and yeast. Leave it in a warm place (but not hot) to rise for 30 minutes. Then with hands form small balls and flatten them to form the mekitsy. Fry for several minutes in oil. If you want you can add jam after they are prepared.

BEAN SOUP Ingredients: 200 g beans, 1 carrot, 1 tomato, 1 red pepper, 1 onion, 1 Tblsp of mint, 1 Tblsp of savory, ½ bunch of parsley, 4-5 Tblsps of sunflower oil, paprika and salt to taste

Soak the beans in cold water and leave it to grow in size. Remove the water after a few hours. Fine chop the onion. Chop the carrots and the tomatoes as well. Put the beans to boil with the onion. Add the carrots. Add a dried or fresh pepper. Spice with salt, savory and mint. Add some sunflower oil and dust with fine chopped parsley. Stir and leave the pot to boil for at least an hour, until the beans become soft.

KIFLI (BUNS) WITH JAM Ingredients: 1kg flour 1 cup of yoghurt 500ml water 50gr yeast 1 egg 1 Tbls salt 1 Tbls sugar 250gr butter

In a cup put the yeast, add some warm water and 1-2 spoons of flour. Let it rise. When the yeast is done mix everything together (except the butter) to make dough and knead it well. Leave it to rise; it should be soft when done. Melt the butter and knead it again till the dough has fully absorbed it. Roll it out and cut into triangles. Put some jam, chocolate, or cheese at the wide end of the triangle and roll it like a croissant. If you want you can spread yoke and sprinkle sugar or sesame on top. Bake at 200째C till golden brown.
