A food hackathon is supposed to inspire to new sights, hights and limitless dreams.

The Food Hackathon – A world class competition to build networks and crosspollinate ideas By 2050, the Earth’s population is expected to reach 10 billion people. Will we be able to feed them all? What do you get when you combine the latest food trends with the latest technological innovations? How could food and packaging help tackle the food industry’s challenges? The Food Hackathon brings together food, health, technical and design innovators in a world-class competition. Its ambition is to generate new business ideas and contribute to the building of a sustainable food ecosystem for the future. Over a 48-hour period, the participants work in teams, focusing on a variety of challenges. Prizes are awarded to the winning ideas in three categories: “the most innovative idea”, “the idea

with the biggest impact” and “the idea with the most potential”. The Food Hackathon was held for the first time in 2014. The theme for 2016’s event was Food (r)Evolution. The 50 or so participants represented twelve nations including Canada and Kazakhstan, and came from very diverse professional backgrounds ranging from industrial designers and software developers to gastronomes. The Food Hackathon encouraged daring innovations and new kinds of collaborations. Throughout the weekend, the teams worked on innovations to improve our global and local food systems. Not surprisingly, many new friendships were formed.

Krinova Incubator & Science Park, which arranges The Food Hackathon, is a venue where people, companies, ideas and creativity meet. It’s also a platform for development/ innovation and a catalyst for companies that want to grow. As such, it provides a great opportunity for the co-creators of The Food Hackathon. After the event, Krinova offer the participants a chance to develop their ideas in the Innovation Arena, which provides the support needed to move ahead with rapid development at low risk.

In fact, the whole purpose of Krinova’s innovation arena, incubator and science park is to be the catalyst for innovation and stimulate entrepreneurs by providing input, access to research, contacts, networks and tools all with a spirit of diversity and open innovation. Krinova is one of Sweden´s 70 incubators and science parks where cooperation in-between companies, organisations, universities and society is the basis for innovation and development.

How it works 8 9

A hackathon is usually a gathering of great hackers who wants to develop, change and improve an existing system, in a limited period of time. A food hackathon follows the same basic principles but focuses on food and structures within the food industries. It´s main aim is to bring together brilliant minds from around the globe. Food innovators, entrepreneurs, food industry leaders, engineers, students and gastronomists alike are all welcome to collaborate and come up with ideas to tackle our food system’s current and future challenges. The Food Hackathon by Krinova begins with a Friday night mingle over some delicious vegetarian dishes, letting people get a chance to meet one and other, and to get a feel for what the weekend will be about. Shortly afterwards there´ll be several inspirational speeches. At The Food Hackathon 2016 Titti Qvarnström, chef at Bloom in the Park and the first female head chef in Sweden to gain a Michelin Star, explained how going back to her roots had enabled her to blossom as a chef.

Next up was Hervé This, a French chemist, who sent a video describing his view of the future. His ambition is to eradicate world hunger through the culinary innovation that he calls Note-by-note-cooking. In case the participants have trouble to come up with a challenge of their own, a series of pitches (i.e. potential challenges for the competitors) will be proposed from competitors and partners. In 2016 The Absolut Company, IKEA Food Services AB, Oatly, Dynahmat, Svenska Bin, Your Local, CowFounding and Eat:em presented challenges. Thereafter the teams will form and the work begins. From that point onwards the participants think, eat, drink and sleep with full focus on developing their team´s idea. The atmosphere was positively electric, as all these brilliant minds worked together at The Food Hackathon 2016. Their efforts resulted in the following nine entries:


The endlessly inspiring Monsieur HervĂŠ contributed with a video lecture on his view of the future of the food industry. What he calls Note-by-note cooking is a style of cooking based on molecular gastronomy whereby dishes are made using pure compounds.


Team Your Local presented an idea for an app to get people more engaged in

reducing waste. Team Absolute Alone’s idea consisted of a bottle that could be converted into

two glasses when empty.

Team Dynahmat put forward the idea of an app with an online sensor to monitor

the cold chain. Team Foodment came up with a pop up event to inspire people to eat more

healthy, plant-based food. Team Bee Family wanted to inspire people to rent a beehive and keeper to help

build up a bee community. Team Bygdens Saluhall focused on hacking food distribution to empower small-

scale food producers. Team Eat:em had the idea of introducing insects as a part of the actual meal. Team Healthify presented an idea for an app to show people how what they eat

affects the body and the environment. Team Anknyta put forward a concept to encourage children to eat and explore

new and healthier food through play.


Thanks to our partners Gastronomiprogrammet Kristianstad University and Creative Tools, a 3D food printer was presented by Andris Underdal of CRC Nordic during the Food Hackathon 2016. Lots of people took the opportunity to experiment with the printer, and team Anknyta actually used the machine to print a prototype of their entry; a “play tray” to encourage children to eat and explore new and more healthy food.

By Sunday afternoon, after 48 hours exhausting but rewarding work, all the teams present their entries and then it´s time for the jury to convene and choose the winners. In our opinion, the very fact of working together on these exciting concepts in such unusual and inspiring constellations make all participants winners. However, as promised, three teams have to be selected to share the prize money, along with glory and honour. (See details of the winners on the following pages.)

Many of the ideas presented during the 2016 hackathon are now being further developed. There are also some challenges left waiting for to be snapped up by an eager developer. The challenge Mycorrhiza, to enable gift-based resource sharing in your local community, is still looking for a home. And Cowfounding is hoping to find a way of selling individual cuts of beef so that pricing follows the free-market mechanism (i.e. the greater demand for a particular cut, the higher the price, and the lower the demand the lower the price… until all the meat is sold). Since The Food Hackathon has become an international event with competitors from all over the world the Swedish name and pun “Hack för Maten” won´t be used in association with future Food Hackathons, since it´s not internationally viable. So instead we´ll just, in short, call the event The Food Hackathon by Krinova!

Eat:em

Applying a step-by-step approach, the team came up with a strategy to introduce the idea of including insects in certain products, then gradually making them a part of the actual meal, so people would slowly come to accept replacing meat with insects. This would help combat the extreme water waste and CO2 emissions that result from raising livestock as our main protein source.

What is innovation? How do you judge an innovation? And how likely is it that this particular innovation will actually work in practice? Eat:em managed to convince the external jury that their concept would do just that. It was both innova-

tive and had great potential to be realised. Eating insects used to be for those who had no choice, but today and especially tomorrow we think, just like Eat:em, that larvae and insects will play a bigger part in our diet.

The concept is to combine the Dynahmat sensor with a userfriendly app customised to the specific needs of the target consumer. Responsibility for e.g. inventory monitoring to prevent waste is handed to the household. In the long term, we could use the same technology to monitor the package end to end. CONCEPT

BIGGEST IMPACT: Dynahmat 2.0

Just like no one thought the telephone would work in reality in the year 1880, few thought that a tiny sensor connected to an app would be able to control the cold chain just a year ago. But team Dynahmat proved that it is possible! Thanks to their innovative efforts, they proved that technology can be used to monitor the package and the cold chain from the producer all the way to the consumer.

Lots of teams fought for this title, but Team Anknyta took home the victory after convincing the jury of their concept’s enormous potential. This team analysed the current market situation and adapted their proposal to a specific demand. Ikea Food Services AB wanted help finding a playful way to reach its younger audience i.e kids. The winning concept “Anknyta” offered a way of encouraging children to eat and explore new and more healthy food. This is their winning concept: “To bring together parents, children, and healthy foods at mealtimes in a fun, playful, and stress-free way that promotes new food exploration, child engagement, and imaginative thinking. Anknyta is a connectable mealtime “play tray” creatively designed to bring colour, texture, and hands-on storytelling to a child’s plate. Examples include textured surfaces that encourage younger eaters to reach into their bowls and feel around, and the pegged tray, which can be used to build anything from a broccoli forest to a carrot-walled fortress. Its simple, uncluttered design ensures versatility, while freely inspiring users to imagine how they might turn their Brussels sprouts or beets into anything from aliens on the moon to a sailboat on a gravy river. Each tray piece is 10x10cm and connectable on all sides.”
