Berlin Alexanderplatz (1929) A year in the troubled life of the ex-convict Franz Biberkopf as he tries and fails to go straight, the story is woven together through a panoramic montage of life in 1920s Berlin.

Born in Stettin Germany (now in Poland) to a Jewish family, Doblin moved to Berlin at the age of 10 where he lived for the next 45 years before the rise of the Nazi party drove him into exile, first in France then the United States. He returned to Europe at the end of the war. Alexanderplatz is located in the Mitte district of East Berlin. Today it is unrecognizable from the 1920s. Extensively damaged in the battle for Berlin in 1945, it was substantially remodelled by the German Democratic Republic in the 1960s. In 1980 the director Rainer Werner Fassbinder based a groundbreaking, fifteenhour television series on the novel.

Alfred Döblin (1878–1957) is today chiefly remembered for Berlin Alexanderplatz (1929), his sprawling, modernist novel of life in the German capital in the peak years of the Weimar Republic. It was the author’s most commercially and critically successful work. The novel sold around 50,000 copies before it was banned by the Nazis after they seized power in 1933. Döblin was not only a prolific novelist and essayist, but was also a psychiatrist who had practised in Berlin since 1911. In Berlin Alexanderplatz he was able to combine literary experimentation with an intimate knowledge of a milieu drawn from his professional experience. Berlin Alexanderplatz is one of the key examples of the modernist city novel. It is often compared to (but was not necessarily directly inspired by) Joyce’s Ulysses (1922) and Dos Passos’s Manhattan Transfer (1925). As with those works, the novel cannot be summed up by its ostensible ‘plot’. Yet it unquestionably does tell a compelling story of thwarted ambitions and human frailties. The hopelessly flawed protagonist is the ex-convict Franz Biberkopf, the setting the area around Alexanderplatz in working-class East Berlin, the year 1928. Franz fails miserably in his attempts to go straight, bouncing from job to job, and relationship to relationship. He loses his arm in a burglary that goes wrong, and his girlfriend, the prostitute ‘Mieze’, is murdered by his nemesis, the sociopathic Reinhold. Plagued by guilt and self-hatred, Franz suffers a total breakdown before, at the conclusion, it seems he has found a path to the light through the ‘dark avenue’ of his life. Like many other Berlin novels, the novel faithfully reproduces the Berlin dialect spoken by the locals in reported speech and thought. Yet in this novel the location represents more than mere local colour. Alexanderplatz is the beating heart of the narrative, both setting and symbol. The district’s geography is evoked in extraordinary detail by the omniscient, often playful narrator. At almost every point, the reader knows both where and when things are happening. The characters’ negotiation of the network of interconnecting streets and interchanges – Alexanderplatz, Rosenthaler Strasse, Elsasserstrasse, Münzstrasse – can be followed with little difficulty on a

it would translate as a ragoût — and insisted on grouping it with soups, which obviously take much longer to prepare: Is it possible that they never knew, when they were children, the cosy pleasures of Sunday night supper in wintertime, when crackers and the biggest tureen of steaming, buttery, creamy oyster stew stood on the table, and was plenty?

Combine the clam juice, butter, Worcestershire sauce, and celery salt in a saucepan over high heat. When the butter melts, add the oysters and their liquor and cook, stirring, until the edges of the oysters begin to ruffle. Remove the oysters with a slotted spoon and keep warm. Stir in the half-and-half (milk and single cream) and cook, stirring often, until it is just coming to a boil. Return the oysters to the pan and turn off the heat. Pour the stew into a warmed soup plate. Garnish with a shake of paprika and serve immediately, with oyster crackers.

Another great oyster institution, founded just after the height of this bonanza, was the Grand Central Oyster Bar and Restaurant in Manhattan. Built in 1913, not under the waves but appropriately perhaps under Grand Central Terminal, it still uses more than 283,000 oysters per year in its famous pan roasts and stews — 600 of which are made to order each day. Another 1.7 million oysters are served raw during the year; more than half are Blue Points.

THE DUTCH STILL LIFE For 1,500 years or more, painters had dedicated themselves to religious iconography. Then, all of a sudden, in one small northern European country, they changed direction and devoted themselves to things secular. What was the trigger? The first half of the 1600s was still a period of religious passions and a formative era in Christianity. Amidst all this, one society began to accept that there were other things besides God that might be worth painting. But who was brave enough to commission the first nonreligious painting? Perhaps it was simply that

the Dutch, as the first to profit from empire, had suddenly become rich and secular. As women were closer to the food, some, like Clara Peeters, began to challenge the male trades. Her tones survive, still rich, elegant, and

domestically formal. Her meticulous visual descriptions continue to impress. In Still Life of Fish and Cat you can see the textures plainly: slippery fish scales, thickly glazed clay, the cat’s fur, the contrast between the rough shell of the open oyster and the gleaming pewter dish on which it rests. There are other hints to animation here too: the small fish on which the cat has firmly planted its front paws, the cat’s ears pointed back, alert to any potential interloper.

Between them, the three sisters sustained Native American farming societies back into pre-history. Grown together, they could support village life. Corn provided a natural trellis for beans to climb. Beans fixed nitrogen into their roots. Shallow-rooted squash created a living mulch, shading emerging weeds and keeping the moisture in the soil. Nutritionally they also complemented each other: the corn for carbohydrates, the dried beans for protein, and squash for vitamins and oil for cooking. In southwest tribal lore there is sometimes a fourth sister – the chilli for spice. We will deal with her later (see page 123). These were not the long rows of today’s expanded plantation agriculture, but a chessboard of patchwork across a field with one to four totemic corn stakes at each square. The beans were planted to grow vinelike up the corn and provide the nitrogen. They are heliotropic: the leaves tilt to face the sun through the day. In the dark they fold in on themselves and sleep. The squash were planted between the squares, where they could get shelter from the sun from the overhanging leaves of corn. Their rough spidery shoots and leathery leaves made it difficult for deer and racoons to walk through or predatory birds to settle. We know that early people in South America were sophisticated farmers not just from the stone carvings and sculptures of corn they left behind – figurines of gods or priests are depicted holding corns of cob with look-what-I-got expressions – but also from the terracing they carved out in the high Andes for their crops. The Aztec empire was agrarian, and as sophisticated as early Rome. Much of it was inherited or developed from the Toltecs before them. Illustrations show they reclaimed the marshland with a unique approach to floating gardens (see right), weaving the bark from trees into large mats and staking them out on the wet ground. On to these they laid soil and fertilizer and grew their essential crops of amaranth, beans and corn. These rectangular grow-beds were lashed together, creating plantation-style islands known as chinampas. They fenced off their work with trees at each corner to keep the floating garden stable. Botanically speaking, the common bean can trace its lineage back to a cave in Guitarrero, Peru, dated to the second millennium BC. Most of what we call green beans today originated in the Andes. The New World

There are more than 40,000 varieties recorded, a great array of podded nutrients that have necessarily infiltrated the diets of many cultures around the globe. The squash – our word squash comes from the Narragansett word askutasquash, meaning a green thing eaten raw – was first documented by Roger Williams, theologian, founder of Rhode Island and student of indigenous American languages, in 1643. Archaeology shows they were being grown in perhaps 8,000 BC or earlier. The familiar gourd shapes are a feature of the striking early Moche culture, which flourished north of Lima at the same time as the Romans in Europe.

PHAISTOS DISC A clay disc found a century ago may contain the first example of movable-type printing, yet what the inscriptions actually mean has been intensely debated. On 3 July 1908, Italian archaeologist Luigi Pernier, from Florence, was on a dig in the basements of buildings close to the Minoan palace of Phaistos in southern Crete. During the excavations, Pernier unearthed a small, clay disc measuring around 15 centimetres (6 inches) in diameter, marked on both sides with spirals of unknown characters. The setting in which the disc was found led Pernier to believe that it dated from the Middle Minoan period, around 1850 to 1600 BCE, although others argue that it could be from a few centuries later. Of particular interest is the manner in which the symbols have been placed on the disc: using premade stamps of the symbols rather than by carving. The stamps would have been impressed on the soft clay and the disc then hardened by firing. The method – not seen elsewhere in this era – leads some to suggest that it is the first example of movable-type printing.

Understanding the cipher The disc contains 242 symbols in total, of which 45 are unique. The symbols are pictograms representing a range of subjects, including women, children, weapons, birds and plants. They are remarkably distinct and detailed. The symbols are divided into groups, separated by vertical lines, assumed by some to be word breaks. There are also carved diagonal strokes that may indicate the end of a paragraph. Most scholars believe that each side of the disc was stamped from the outside edge toward the centre, since some of the central characters appear somewhat cramped. Several claim to have deciphered the Phaistos Disc, but the brevity of the script, and the fact that there are no other texts that use the same symbols,

means that there is unlikely ever to be consensus on its true meaning. Several scholars, both professional and amateur, have suggested that the disc is an astronomical calendar. In 1980, Andis Kaulins made a statistical analysis of the symbols and compared their frequency and distribution to texts in ancient Greek as well as Latvian and Lithuanian. Using a grid of syllabic values, he then argued that the text is actually a mathematical proof of two geometric postulates that are later attributed to Euclid. Scholars have put forward a wide range of possible linguistic origins for the symbols on the disc, including Old Estonian, Tatarish-Turkish and even Indian. Others believe that the language is more localized in origin, probably from Greece and, most likely of all, from Crete itself. However, others still dispute the Cretan origin, suggesting that the clay does not resemble others found on the island and that the symbols show a lack of similarity with known Cretan hieroglyphs. Pre-Columbian scholar Dr Michael Coe has suggested that a thermoluminescence dating test be carried out to determine its exact age. Until then, theories about the disc’s meaning will continue to proliferate.

CODEBREAKERS OF HISTORY ALAN TURING AND THE ENIGMA MACHINE The pioneering English computer scientist, cryptanalyst and mathematician Alan Turing developed a number of inspired techniques for breaking German ciphers in World War II. By the mid-1930s, the German armed forces were using Scherbius’s machine regularly to encrypt their communications, unaware that it had been broken by Marian Rejewski at the Polish cryptography agency (see pages 128–129.) Yet, as the decade continued, the German military modified the machine to make it even more complex. They added a plugboard through which specific pairs of letters could be interchanged by inserting cables between the plugs (known as steckers). According to historians Frank Carter and John Alan Turing in 1951, a computer scientist and Gallehawk, the modifications mathematician whose codebreaking work at Bletchley Park is credited with shortening the meant there were 158 million World War II by years. million million possible different ways of setting up the machine. Events overtook Marian Rejewski and his colleagues. With the impending invasion of Poland, they shared their work with British intelligence. Britain’s codebreaking activities were spearheaded by the Government Code and Cypher School at a country house called Bletchley Park, staffed by mathematicians from the universities of Oxford and Cambridge, who were joined later by colleagues from the allied countries, including the United States.

Among those working at Bletchley Park was a young man who had been recruited from King’s College, Cambridge, Alan Turing. In his time at Cambridge, Turing had shown himself to be a hugely gifted mathematician, proving the so-called central limit theorem in his dissertation. He also produced a landmark paper on computable numbers, which included a description of theoretical devices which have become known as Turing machines. Turing machines subsequently provided the theoretical basis for the invention of computers. Using the work of the Poles to gain a headstart, Bletchley Park codebreakers Alan Turing and Gordon Welchman invented an electrical device known as a bombe to work through the initial rotor positions in turn. The name was derived from the Polish bomba, but was in fact a totally different device. Essential to the Bletchley Park approach was the ability to find a crib. Messages frequently began with the word ‘secret,’ while naval messages often included the weather and their position. One operator was particularly fond of using ist – the German word for ‘is’ – as his message setting. Breaking Enigma was as much about highlighting human frailties as technical ones. The design of the bombe allowed its operators to check the 26 possible stecker partners of a given input letter simultaneously for each of the nearly 18,000 possible rotor settings. As it ran through these settings, if it came across a series of settings that corresponded with the crib, it stopped. Manual techniques, such as frequency analysis (see pages 30–35), were then used to test the rotor settings. After the success of the bombe, Turing moved on to lead Bletchley Park’s Hut 8, which dealt with Germany’s naval Enigma code. There he invented a statistical technique known as Banburismus, similar to Friedman’s Index of Coincidence (see pages 85–87), which enabled Bletchley Park to break the naval code until 1943. By the end of the war, the Bletchley Park team had broken more than two and a half million Enigma messages and had made highly significant contributions to the Allied victory.

Beetroot and chocolate is a brilliant combination and very beneficial for training, too. Beetroot contains nitrates, which the body converts to nitric oxide, in turn boosting blood flow and improving oxygenation of the body, allowing you to exercise harder for longer. Dark chocolate is rich in a substance called epicatechin, a nutrient-rich flavanol that also increases nitric oxide production. Chocolate provides magnesium, too, which helps with energy production and reducing muscle cramps and soreness.

Place the beetroot, fruit and coconut cream in a blender and purée until smooth. Transfer to a small pan with the chocolate and heat gently, stirring all the time until the chocolate has melted. Pour the mixture into a bowl and chill in the fridge for 3–4 hours or freeze for 1 hour to harden. Once firm, roll teaspoonfuls of the mixture into small balls with your hands. Roll in berry powder, crushed freeze-dried berries or cacao powder to coat. Freeze or place the bites in the fridge to harden. They will keep in the fridge for 1 week or in the freezer for 3 months.

Preheat the oven to 180˚C/Gas Mark 4. Beat the eggs and sugar together until smooth. In a separate bowl, sift the flour, cocoa and baking powder. Add the flour mixture to the egg mixture and stir in the oil or melted butter and the coconut milk or cream.

Grease a 25-cm spring-form cake tin with butter and pour in the mixture. Bake the cake for 20–25 minutes on the centre rack. Allow to cool completely.

home-made pasta When I began making home-made gluten-free pasta, I was not sure if I’d be able to do it. I was worried that gluten-free pasta dough might not be elastic enough or if it would clump together. To my surprise, it was actually quite easy to make. seRVes 2:

115g gluten-free flour, plus extra for kneading and coating

1 large egg 1 tablespoon oil

Put the flour into a large bowl. Make a small well in the centre and pour the egg and oil into the middle. Fold the flour into the liquid, mixing in a little at a time, while stirring in the middle. Don’t give up, even if the flour does not become fine and smooth; if you have lumps, they can be kneaded out. Transfer the dough to a lightly floured surface and knead it for a few minutes into a smooth but quite compact dough. Transfer the dough to a plastic bag and leave it for 20 minutes. Set up the pasta machine. Take a section of the dough, press it flat, put it into the machine and crank away. Begin on the most ‘open’ setting and then move to the next setting and run the dough through. Continue until the dough is as thin as you like. I stop at setting No. 6. Then run the dough through the cutting part of the machine to make tagliatelle. Use plenty of gluten-free flour to coat the dough as it goes through the machine. The cooking time for fresh pasta is about 2–4 minutes, depending on how thick the pasta is and your preference for consistency. tIps

If you do not have a pasta machine, roll out the dough with a rolling pin and cut it with a knife. Leftover uncooked pasta can be dried for 1 hour on the work surface and stored in a sealed container in the fridge. It will keep for 2 to 3 days.

What Is the Alkaline Cure?

As every farmer knows, you cannot get high yields from a field with acidic (or sour) soil. Just as in nature, so for the human body. At The Original F.X. Mayr Health Center we know that in order for the body to be healthy, it needs to have an acid-alkaline balance. How do we know this? One of the most important methods that is used at the clinic for evaluating health is testing the body’s pH to determine whether a patient’s body is acid or alkaline, using the same pH scale that is employed by doctors around the world. It is the single test that gives us an indication of the general health of the body and its systems because the pH of body’s fluids, especially of blood, affects every cell in the body. Keep the body’s pH in balance and it will stay healthy. The beauty of using pH to evaluate health is that it’s as simple as reading numbers. The pH range is numbered from 1 to 14. The higher the pH number, the more alkaline the substance; 7 is considered neutral. Numbers below that are in the acid range; the lower the number, the higher the acidity. Although 7 is the neutral reading, for optimal health you should be slightly alkaline – ideally around 7.4. This is to counter the increase in acidity that comes with ageing and diet. Be Your Own Doctor By purchasing pH-testing litmus strips, you can monitor your body’s pH during the cure. Test yourself on a daily basis at home every morning shortly after you wake up and before eating anything. Don’t worry if your initial readings are 6 or below, in the acid range. After two weeks of the cure you will notice a marked improvement. If your reading is already close to 7, that’s great. You should still test yourself every day to track changes. What Is the Alkaline Cure?

Encourages Weight Loss You will lose weight – or, more importantly, achieve your natural body weight or body mass index (BMI). Strictly speaking, the alkaline cure is not a slimming diet. It often helps weight loss because many of us are overweight, but the aim is a healthier you, a better functioning you, a more capable you. Your clearer digestive system and efficient metabolism will lead to weight loss as you eliminate the toxic load you have been carrying. Your renewed energy levels will also motivate you to exercise more so you will become fitter. Reduces Bloating and Constipation You will be able to move your bowels regularly and in comfort because you are working with your body, not against it. One very positive sign of good health is passing clear urine and soft faeces. Constipation is bad for you as it stresses your system. An alkaline diet is better than any laxative. If you eat well, you will have a bowel movement every morning. If you drink enough, your stools will be softer. If you chew properly, then the stomach’s workload is eased. Improves Mood and Brain Function Your mood will improve and you will start to feel more positive and less stressed. In 1987, Rudolph Wiley (PhD), conducted a study in which he postulated that acid imbalance is often a major, and sometimes sole cause of disorders routinely classified as psychological, stress-related, psychosomatic or psychogenic. His study found that an alkaline diet reduced and eliminated the symptom severity in more than 85 per cent of participants. A broader choice of properly digested food should reduce peaks and troughs in the availability of amino acids and vitamins. Without vitamins such as B6 (from fresh herbs, nuts, legumes, fish), you are likely to experience mood swings and sleeping troubles. The cure also encourages a favourable work-life balance, taking gentle exercise, and the avoidance of alcohol, caffeine and processed food. In addition to alleviating physical and mental stress, the alkaline cure can help support brain function because it encourages you to eat a diverse range of vitamin- and mineral-rich foods.

MEASURING PH You can measure your body’s pH by using litmus strips to test your saliva or your urine. The above pH chart illustrates the colour range between very acidic and very alkaline results. It will take longer for the alkalising effect of the cure to reach your urine, so you can generally expect a higher alkaline reading from your saliva. However, testing your urine will give you a more accurate reading as it is a better indicator of how well your kidneys are eliminating acid. Always follow the manufacturer's instructions, and do not put the paper in direct contact with your body.

Saliva

The pH of your saliva is affected by what you have eaten or drunk recently. It is best to wait about two hours after a meal before you test, and then activate and swallow saliva several times to ‘rinse’ the mouth. Spit some saliva onto a spoon and dip the litmus paper in the liquid, then compare the resulting colour with a pH colour chart.

Urine

The pH of your urine is affected by how much water you have consumed and the amount of acid-forming foods you have eaten. For this reason, it is best to test urine first thing in the morning. Pass a small amount of urine into a cup and dip the litmus paper briefly into the liquid. Compare the result with a pH colour chart.

Focusing on a flower

Trataka is a candle-gazing meditation which uses the physical focus of a flame to help calm the mind. This type of ‘one-pointed’ or single-focus meditation can be particularly helpful at times of stress.

Whether you select a perfect rose from the flower shop or work with a weed such as a daisy or dandelion plucked from the backyard, picking a flower can be the first step toward meditation. The focus of a single bloom not only entices your mind with sensual delight to remain in the present, it links you with the life of the natural world.

• Sit comfortably upright on the floor, hands resting on your knees or thighs. Place a candle or nightlight on a low table, level with your eyes. • Watch your breath moving in and out for a moment, then focus your gaze on the tip of the flame, at the point at which its form and colour disappear.

Keep your gaze on the flame steady and uninterrupted for up to 60 seconds, trying not to blink. Then close your eyes and visualise the flame in your mind’s eye. Feel as if it is cleansing your mind, burning off thoughts and turning them into vapour.

• When the image fades, open your eyes and repeat the gaze. When thoughts intrude, just let them burn away and return to the flame. Practise for 3 minutes, using the image of the flame to cleanse your mind. Feel yourself becoming purer and more able to radiate your own light.
