The embrace of community

It has been six months since Radwa Matar of Millersville officially opened the doors to Koshary Station, 4 S. Prince St., Millersville. The restaurant, which serves traditional dishes from Matar’s native country of Egypt, is the culmination of her many years of experience in the food industry and her desire to share a piece of her culture with the local community.

Matar moved to West Lancaster in 2006 after her husband, Mohamed Ibrahim took a job as a machine operator for Kellogg’s. Matar began working in the cafeteria

f or Hempfield School District, as well as local commercial kitchens and catering services, where she gained valuable insight on different aspects of the culinary world. Although she enjoyed her work, Matar developed and held onto a vision to open a restaurant of her own someday and share a piece of Egypt with her new community. Last year, she left her position in a school cafeteria to realize her dream.

The road to opening Koshary Station wasn’t an easy one. Not only did Matar need to apply what she had learned from years in the industry, but she also had to See Koshary Station pg 3

become familiar with the logistics of operating her own business. During her time working in a school cafeteria, Matar learned how to organize a stock room and a walk-in cooler, keep track of expiration dates and shipment times and ensure the entire kitchen remained clean. Matar also served over 300 children a day, which she credited with teaching her how to regularly interact with patrons. Since opening Koshary Station, Matar has been met with a wave of support from the community. Matar and Ibrahim moved to Millersville three years ago, and Matar said she continues to be amazed by the warmth of both her neighbors and her customers. “It’s blown our minds to see people supporting us,” Matar added. “Everyone is willing to try something new and learn more about Egyptian food. Some customers come in every week and introduce us to a new friend each time.”

Not only is Koshary Station a product of Matar’s own experience and work, but it is also a testament to the overwhelming support she has received from her friends. In June, Matar needed to make an emergency trip to Egypt to visit a family member who had fallen ill. Although it would result in losing money and customers, Matar had planned to close Koshary Station for two weeks while she was away. Without hesitation, Matar’s friends Riham, Yasser and Zaenab stepped up to operate the restaurant in her stead, dedicating all of their time to ensure things ran smoothly. As a new business owner, Matar has learned to navigate challenges such as accounting f or periods of time where business slows down; for example, many of her regulars are college students who do not remain in Millersville during the summer. Matar is planning to expand her menu and introduce a new special every week. She has also

patrons are able to donate a meal for a set price, which Matar then collects and gives to CWS for distribution. “For people who move here from Africa or the Middle East, (a traditional meal) is like a piece of home for them,” Matar said.

Awards presented to Scout leaders

The Susquehanna District, a part of the Boy Scouts of America’s Pennsylvania Dutch Council, held its annual awards dinner on June 14 at Ascension Lutheran Church in Willow Street. The annual dinner recognizes leaders who have exemplified the Scouting ideals and program in their Scout units or leadership within the district.

The District Award of Merit is the top volunteer award the district can present. Chet Bowen from Troop 84 and Fred Frey from Troop 146 received this award at the dinner.

Bowen was the committee chair for Pack 93 for six years and has been an Assistant Scoutmaster for Troop 84 for five years and a member of Crew 162 for two years. He is also a unit commissioner. He is currently the Pennsylvania Dutch Council spring sales chair and the district committee membership chair. He was a Wood Badge staff member in 2022. He has served in many other volunteer positions within the Pennsylvania Dutch Council, as well. Bowen has been involved with Scouting almost his entire life, and he has achieved the rank of Eagle Scout, is a Vigil member in the Order of the Arrow, and received the James E. West award.

Frey is an Assistant Scoutmaster of Troop 146, the

committee chair of Pack 146 and an assistant roundtable commissioner for the district, a role in which he is instrumental in creating recruitment materials and incentives. He also serves on staff for the College of Commissioner Science and often volunteers for district events like the Klondike Derby. Frey has earned the bachelor’s and master’s degrees from the College of Commissioners Science, Arrowhead Honor as a commissioner, and Scouter’s Key, and he is an Ordeal member of the Order of the Arrow.

Other volunteer leaders were presented with awards. Spark Plug Awards went to Corey Wilson, Troop 76; Andrea Dougherty, Pack 82; Mary Kay Vasold, Troop 82; Melissa Kelshaw, Pack 37; and Jim Rayfield, Troop 48.

New bishop to visit local churches

Bishop Timothy Senior has been celebrating Masses with parishioners throughout the diocese this summer as he begins his ministry as 12th bishop of Harrisburg. Senior was named to this position by Pope Francis on April 25, and he was installed on June 21 at Saint Patrick Cathedral in

Harrisburg.

During his pastoral visits, he will meet with all the priests of the diocese prior to the public Mass. The Masses will begin at 7 p.m. All parishioners are welcome to attend.

Senior will visit the North Lancaster Deanery on Thursday, Aug. 24, at Holy Trinity

Church campout

11 a.m. During lunch, a blessing of backpacks service will be held. The service is a yearly tradition that includes a prayer with children who will begin a new school year in the fall. Previously, the blessing of backpacks took place during the church’s regular Sunday worship service at the end of summer. The ritual was moved to coincide with the campout event, which Church of the Apostles will host for the first time this year.

“ We wanted to familiarize more people with our park and the resources that are

frompg 1

there,” said Kathryn Kuhn, pastor of Church of the Apostles. “It’s a nice, quiet space to be in nature.”

Rader Park is a 20-acre park that is owned and maintained by Church of the Apostles. Throughout the year, the church hosts educational events at the park in partnership with the Lancaster County Department of Parks and Recreation. The park contains a pond, access to Brubaker Run, a walking trail and a butterfly garden.

For more information or to register for the campout, visit https://apostlesucc.org/ weekend-at-the-park.

As the events committee has continued to offer new attractions at the park over the years, it has seen a steady increase in the number of attendees and more interest from the community. The committee has also expanded many of its existing events as they continue to grow; the Blues Festival now includes a beer garden and longer time slots for its performers. East Petersburg Days began as a oneday event, but it has gradually expanded to include several days of celebration. “We’ve worked really hard to create a fun event for the community to come out and enjoy,” said Kristin Troop, chair of the events committee.

Church, 409 Cherry St., Columbia, and he will visit the South Lancaster Deanery on Tuesday, Aug. 29, at Saint Leo the Great Church, 2427 Marietta Ave., Lancaster. The Aug. 29 Mass will also be livestreamed; visit www.hbg diocese.org for the link.

Prior to being named the bishop of Harrisburg, Senior was an auxiliary bishop of Philadelphia, serving as the regional bishop of Montgomery County and Philadel-

phia-South, as well as chancellor of Saint Charles Borromeo Seminary. While with the archdiocese, Senior served as rector of Saint Charles Borromeo Seminary, moderator of the Curia of the Archdiocese, vicar for clergy and deputy secretary and secretary for the Secretariat for Catholic Human Services in the archdiocese.
