Having a fast and easy breakfast at the ready on Christmas morning allows families to jump right into the festivities rather than spending too much time in the kitchen. This recipe for “Spiced Yogurt Muffins,” courtesy of the National Dairy Council, Dannon and McCormick, can be made in advance and then enjoyed while peeking into Christmas stockings or watching holiday parades on television. This big-batch recipe is ideal for feeding a houseful of overnight holiday guests. Or it can be prepared in advance and doled out as needed throughout the week. The muffins also can be made as a treat for holiday office luncheons. Cut the recipe in half for smaller yields.
Spiced Yogurt Muffins (Yield: 50 servings)
6½ cups Dannon plain fat-free Greek yogurt 4 cups water, room temperature 1 box (5 lbs) Gold Medal® Muffin Mix, Whole Grain Variety 3 tablespoons McCormick pumpkin pie spice 2 tablespoons McCormick Chipotle cinnamon ■

Combine yogurt and water in mixing bowl. Whisk until blended. Set aside. Add spices to dry muffin mix in a large bowl. Add yogurt and water mixture to the muffin mixture. Mix until just blended. Don’t overmix.

½ pound ground beef brisket ¼ pound ground beef ribeye steak boneless ¼ pound ground beef (80 percent lean) 1 cup seasoned stuffing mix 1 egg, beaten 3 tablespoons water 1 teaspoon minced garlic ¼ teaspoon salt 1 ⁄8 teaspoon pepper
Cranberry Barbecue Sauce:
2 teaspoons vegetable oil ½ cup chopped white onion 1 tablespoon minced garlic 2½ cups fresh cranberries ½ cup orange juice ½ cup water 1 ⁄3 cup ketchup ¼ cup light brown sugar 2 tablespoons cider vinegar 2 tablespoons molasses ½ teaspoon ground red pepper Salt

Presents may get much of the glory during the holiday season, but there is much to be said about the foods found throughout this time of year as well. During the holiday season, people frequently find that dinner invites, cocktail parties, office happy hour gatherings, and other opportunities for socialization are easy to come by. At the heart of these events are foods and beverages. Whether one is hosting a holiday soiree or plans to bring something to a potluck party, it’s helpful to have a list of fail-proof recipes at the ready. Tasting menus, bitesized treats and finger foods are always a hit at holiday functions — and this recipe for “Mini Merry Meatballs,” courtesy of the Cattlemen’s Beef Board and National Cattlemen’s Beef Association, is sure to please. Paired with a cranberry barbecue sauce, these savory appetizers are bursting with flavor and holiday appeal.
Preheat oven to 400 F. Combine brisket, ribeye, ground beef, stuffing mix, egg, water, garlic, salt, and pepper in a large bowl, mixing lightly but thoroughly. Shape into 24 1½-inch meatballs. Place on a rack in a broiler pan that has been sprayed with cooking spray. Bake for 13 to 15 minutes until the internal temperature reads 160 F. Meanwhile, prepare the Cranberry Barbecue Sauce. Heat oil in a medium saucepan over medium heat. Add onions and garlic; cook and stir 2 to 3 minutes, or until tender, but not brown. Add remaining ingredients, stirring to combine. Bring to a boil; reduce heat and simmer for 20 minutes, or until cranberries burst and the mixture has been reduced to a thick consistency, stirring occasionally. Remove from heat; cool slightly. Transfer mixture to blender container. Cover, allowing steam to escape. Process until smooth. Season with salt, as desired. Serve meatballs with barbecue sauce.

earing up for a crowd at your holiday festivities can provide moments of excitement, stress, fun and plenty of other emotions as the big dinner draws near. This year, avoid any nagging feelings of doubt with this step-by-step guide to prepare for large gatherings. ■ Plan in advance. Even if you’re typically the lastminute type, the hectic holiday season is no time to wait until a few days ahead of the celebration to throw meals and more together. Instead, be sure to put together a guest list and send invites at least a few weeks out. Take inventory of supplies like silverware, plates, serving dishes and any accessories you’d like to feature at the table. Make an outline of the food each guest is bringing, or, if you’ll supply all the food, ensure there will be plenty for everyone. ■ Make a list. Planning only takes you so far if you don’t write everything down. Once the menu is determined, list out what you’ll need to make the magic happen. Don’t forget to jot down easily overlooked items that can be picked up the day of, such as ice. ■ Remember to thaw. One surefire way to make the big day a big disaster is to forget to thaw your main course. If you’re planning to roast a turkey - perhaps the most common centerpiece - remember it takes around a day to thaw for every two pounds of meat. So, for example, it could take close to a week for a 14-pound turkey to fully thaw prior to cooking. ■ Prep the day before. There are many tasks (big and small) that can be taken care of the day before guests arrive, making the holiday less stressful for hosts. From whipping up simple appetizers like dips to giving the house a thorough cleaning, there’s plenty of pressure that can be taken off your shoulders 24 hours in advance. Whole Basted Turkey with Roasted Grape Gastrique
Roasted Grapes: 4 cups assorted grapes (picked, washed and dried) 1 tablespoon olive oil ¾ teaspoon salt ¼ teaspoon pepper 1 cinnamon stick
nonstick cooking spray
Gastrique: 2 tablespoons water ½ cup sugar ½ cup apple cider vinegar 1 tablespoon cornstarch mixed with 4 tablespoons water
1 Omaha Steaks Whole Basted Turkey (10 pounds)
To make Roasted Grapes: Heat oven to 350 F. In bowl, combine grapes, olive oil, salt, pepper and cinnamon stick. Lightly spray baking sheet with nonstick cooking spray. Pour grape mixture onto baking sheet. Bake 15 minutes. Remove from oven and pour into bowl. To make Gastrique: In small saucepan, combine water and sugar. Bring to boil over medium-high heat, 5-7 minutes, until sugar starts to brown. Remove from heat and slowly add vinegar. Return to heat and stir until combined. Add cornstarch and water mixture; bring to boil. Remove from heat. Pour Gastrique mixture over Roasted Grapes and reserve. To prepare turkey: Thaw completely in refrigerator 3-4 days or, keeping turkey in vacuum-sealed packaging, place in sink full of cold water 5-7 hours, changing water approximately every 30 minutes. Heat oven to 350 F. Remove turkey from vacuum-sealed bag. Place turkey in bag provided; secure bag with twist tie. Place bag in deep roasting pan. Using fork, puncture 6-8 holes in top of bag. For extra browning or crispness, slit top of bag for final 20-30 minutes of roasting. Roast turkey 2 hours, 45 minutes-3 hours. Turkey is done when internal temperature measured with kitchen thermometer reaches 165 F. Pour Roasted Grape Gastrique over turkey and serve.

makes the perfect holiday treat

he holiday season is synonymous with many things, including family gatherings, shopping, elaborate lighting displays, and Santa Claus. For foodies, this time of year is the perfect opportunity to indulge one’s love of baked goods. Between office parties and gatherings with family and friends, it’s hard to avoid baked treats come the holiday season. Perhaps no baked good is more closely linked to the holidays than gingerbread, an indulgence many people enjoy only around Christmastime. Holiday hosts or those who want to bring a dessert to their next holiday gathering can whip up this recipe for “Sticky Chocolate Gingerbread” from Maxine Clark’s “Chocolate: Deliciously Indulgent Recipes for Chocolate Lovers” (Ryland, Peters & Small).
Sticky Chocolate Gingerbread Makes an 8-inch cake
21⁄3 cups dark molasses 6 ounces dark chocolate (60 to 70 percent cocoa solids), grated 1¾ cups all-purpose flour 2 teaspoons ground ginger 5 ounces whole pieces preserved stem ginger, drained and roughly chopped 1 stick (8 tablespoons) unsalted butter, softened
½ cup plus 2 tablespoons dark brown sugar, sifted (to remove lumps) 2 medium eggs, beaten ½ teaspoon baking soda 2 tablespoons milk, warmed A pinch of salt Extra-large crystallized ginger pieces, to scatter (optional) A deep 8-inch square cake pan or 8 x 6 x 3-inch oval cake pan
Preheat the oven to 325 F. Grease and line the base and sides of the cake pan with nonstick parchment paper. Put the molasses in a pan and heat gently until hot, but do not allow it to boil. Remove the pan from the heat and add the chocolate. Stir until melted. Sift the flour, ground ginger and salt together in a bowl. Add the stem ginger and toss it around in the flour until every piece is coated. Using an electric mixer, cream the butter and sugar in a large bowl. Beat in the eggs, then the molasses and chocolate mixture and finally the flour mixture. Dissolve the baking soda in the milk and gradually beat this into the batter. Pour into the prepared cake pan, scatter with the crystallized ginger, if using, and bake for 45 minutes. Reduce the oven temperature to 300 F and bake for another 30 minutes. (If using the oval pan, cook for about 45 minutes at the higher temperature, then about one hour at the lower temperature, as it will be deeper.) A metal skewer inserted into the center should come out clean. Let cool for five minutes in the pan, then turn out onto a wire rack and let cool completely. When cold, store in an airtight container for at least a couple of days to mature and become sticky. Chocolate-Strawberry Pie
a quick and delicious holiday dessert The holiday season is synonymous with many things, including delicious foods. While Thanksgiving turkeys or Christmas geese will be found on many a table this holiday season, baked goods and desserts are what many people look forward to this time of year. Holiday hosts with a lot on their plates might not have the time to prepare homemade baked goods for their guests. Thankfully, the following recipe for “Chocolate-Strawberry Pie� from Addie Gundry’s “No-Bake Desserts� (St. Martin’s Press) can be prepared in just 15 minutes, all without turning on the oven.
Yields 1 pie 1 pint fresh strawberries, washed, trimmed and halved 1 store-bought (or homemade) chocolate cookie pie crust 23 â „ cup sugar Âź cup cornstarch 2 tablespoons unsweetened cocoa powder Âź teaspoon minced crystallized ginger 1 â „8 teaspoon ground nutmeg Pinch of kosher or sea salt 6 large egg yolks 2½ cups half-and-half 6 ounces bittersweet or semisweet chocolate, chopped 1â „2 tablespoon rum extract 1 teaspoon vanilla extract Additional strawberries for garnish (optional) 1. Place the strawberry halves in a single layer in the bottom of the pie crust. 2. In a medium saucepan, whisk together the sugar, cornstarch, cocoa powder, ginger, nutmeg, and salt over medium heat. 3. Whisk in the egg yolks to create a thick paste. Gradually whisk in the half-and-half until the mixture thickens, about 5 minutes. Bring to a boil and cook for 1 minute. Remove from the heat. 4. Add the chocolate and whisk until combined. Add the rum and vanilla extracts. Cool the mixture for 4 minutes. 5. Pour the ďŹ lling over the strawberries and up to the top of the crust. Chill the pie for 2 hours or until set. 6. Garnish with additional strawberries, if desired.
