PANCAKE BREAKFAST

Lutheran Church of the Good Shepherd, 107 S. 17th Ave., Coatesville, will hold a pancake breakfast in the church fellowship hall from 8 to 10 a.m. on Saturday, Feb. 15. The community is invited. Local Resident Continues To Support African Orphanage By Francine Fulton

Even though the Rev. Dr. Peter Ayukachale lives and works in Chester County, he remains committed to an orphanage that he founded more than 40 years ago. The Kembong Sanctuary for Orphans is a nongovernmental, nonprofit organization founded in 1976 to help abandoned orphans in Cameroon, Africa. The orphanage provides support to meet the children’s basic needs, such as shelter, food, clothing, medical care and schooling. Locally, the sanctuary is supported by Media Presbyterian Church; the mission committee at Central Presbyterian Church (CPC) in Downingtown, where

Winterblast 2020 is based on the theme of See Youth Center pg 7

Students from The Factory Youth Center will return to Camp Orchard Hill in Dallas, Pa., from March 6 through 8 for Winterblast 2020, a special weekend of activities designed for youth centers. The Factory is seeking scholarships to help take 70 students to the event.

Currently, 10 people and their horses are part of the mounted team. “We can cover ground faster (than on foot), and, with the horses, we have a height advantage,” explained team captain Scott Arndt of Reading. Horses are a valuable part of the search process because they can take people to areas inaccessible to motorized vehicles. They move through the woods quietly, allowing riders to hear responses to their calls of a subject’s name. The animals also have keen senses of smell and hearing, and while those senses are used for self-preservation, riders who are in tune with their horses will recognize signals in body language that something is not right in their surroundings, possibly indicating the presence of another person. Most of the searches are conducted at night, so the excellent night vision of horses allows their riders to concentrate on looking for their subjects. Dogs that are currently available for adoption include Oliver, a 2-month-old mountain cur/terrier mix. Oliver’s biography notes that he gets along with other dogs and is friendly with people of all ages, including children, making him a great family pet or companion dog. Mr. Cuddles, a shepherd mix, is also available. To Love a Canine Rescue (TLC), founded in Chester County in 2013, is a nonprofit, allbreed, no-kill rescue, with a mission of rescuing and finding permanent homes for abandoned, stray and surrendered dogs. Rather than being housed in shelters, the dogs live in the homes of volunteer foster families. Currently, the rescue is need of local residents willing to foster a dog until the pet finds a forever family. Veterinary care, food and supplies such as crates, bowls and toys are provided by TLC. Rather than have the dogs housed in a shelter, living in the homes of volunteers allows the dogs to get special attention. It also enables foster families to volunteer information to the adoptive families about the dog’s special needs and their strengths and weaknesses. This allows the rescue to place dogs in homes that match their personality and temperament. Dogs in foster homes also receive socialization skills. Volunteers bring the dogs to local high schools, where they can

interact with students and staff members. Tracy Long, executive director of TLC, said the school visits are beneficial for the students as well as the dogs. “The students get a stress release, and the dogs and puppies get socialized and attention, which is always good,” she said. Those who are unable to foster a dog can volunteer in other capacities with the organization, such as helping with transports and taxiing dogs to veterinary appointments. Volunteers are also needed at meet-and-greet events that take place regularly at local pet stores. Two upcoming events have been scheduled. A meet-and-greet will be held on Sunday, Feb. 16, from 11 a.m. to 2 p.m. at Pet Supplies Plus, 700 Nutt Road, Phoenixville. In addition, a meet-and-greet will be held on Sunday, Feb. 23, from 11 a.m. to 2 p.m. at Pet Supplies Plus, 959 Paoli Pike, West Chester. searches and reading maps and a compass. Training is also provided on managing searches and behaving properly at crime scenes. Typically, though, the group is called out to find people who have wandered away from safety, including those with dementia, Alzheimer’s disease, or autism; elderly individuals; and those who are despondent. When individuals are found alive, the team responds with first aid or CPR as needed. Janet Citron of Reading joined the team in 2010. As a professional equestrian - she gives lessons, trains horses, and runs a boarding stable - and the daughter of a firefighter, she views the horse team as a natural fit. “I wanted to do something to give back to the community,” she said. Citron has enjoyed the work. MIDSAR holds monthly meetings at the Durlach/Mt. Airy Fire Station, 880 Durlach Road, Stevens, and hosts training events throughout its coverage area. “There are different levels of training to go through,” Citron said. “You never know what kind of situation you’ll come across.” Many of the horse team members are licensed amateur radio operators. Ham radios allow team members to communicate with each other and with other rescue personnel in areas where cellular service is unavailable. Citron got her license specifically for her work with MIDSAR, as did Arndt. The horse team welcomes new members. Applicants must have clear background checks and their own mounts and trans-

portation. Membership is restricted to adults, and members currently range in age from 30 to 72. “Retirees help a lot (because they don’t have work commitments),” said team member Jack Burns of Schuylkill County. “You never know when a call’s coming in.” Search horses must be able to work slowly in a controlled fashion, which means they should be able to walk a grid line, often in tall grass fields. They must get along with other horses and work well at night while their riders wield flashlights. The animals should also be able to navigate heavily wooded areas, stand in brush or woods while clues are checked, cross bridges and handle traffic, and be willing to stand patiently while their riders are clearing trails. Other qualities of a good search horse are trust in its rider, ability to follow directions, willingness to separate from a group to work in pairs, and capability to handle rough terrain. Horses should also not be inclined to spook easily. Team leaders will do a ride with interested individuals to get a sense of who they are and how their horses interact with other horses and dogs, which are also used on searches. Hephzibah Baptist Church is celebrating its 300th anniversary this year with a variety of special events, including musical concerts and church tours. Activities will also be featured during the church’s traditional May Meeting event, set for the weekend of Saturday and Sunday, May 16 and 17. Administrative pastor Jeff Haag explained that the May Meeting has been celebrated at the church for more than 100 years. In days past, it was reported that thousands of people attended the event via horse and carriage. “This is a momentous year,” said Haag. “Most years we mark the anniversary on the third weekend in May during our May Meeting. This year, we decided to spread (the celebration) over a whole year.” As part of the yearlong observance, the old church building, built in 1900, will be open on the first Saturday of each month, beginning on March 7, from 9 a.m. to noon. Tours will run through November. The original stone building is located next to the current church, which was built in 1987. Visitors will have an opportu-

nity to view the church’s colorful stained-glass windows, original curved wooden pews and pipe organ. “I will be there, and people can ask questions about the history,” said Haag, noting that the tours are free and open to the public. The old church is no longer in use, but Haag would like to see that change. “A lot of people have come through the years and said it is a beautiful old chapel,” he stated. “Even though (the building is not heated), we had a wedding there in November, because the groom’s parents got married there.” Additionally, a series of concerts have been planned. A handbell choir from Cairn University will perform on Sunday, March 29; the Lincoln University Gospel Choir will perform on Sunday, April 26; and singer Kevin Pierce will perform on Sunday, June 21. The handbell choir will perform at 6:30 p.m. The other concerts will begin at 7 p.m. The events are open to the public; a freewill offering will be received. now, will preach on that Sunday morning,” Haag noted. “He was the pastor here from 1966 to 1974.” The May Meeting generally revolves around the theme “God and Country.” “On May Meeting weekend, we always have a graveside service,” Haag pointed out. “We select someone who is a member of the church who died while serving in the military and we have a little service in the cemetery. We make note of the fact that we practice our faith because of our freedom.” According to Haag, Hephzibah Baptist Church was founded in 1720 and the first meetinghouse was dedicated in 1793. “Down Strasburg Road about 3 miles from here after you cross over the Brandywine, you are in Newlin Township in a place called Laurel. That is where the original church was. They were there from 1720 to 1792,” Haag explained. “The meetinghouse is not there, but there is a cemetery there, which we still own.” At that time, he added, Hephzibah was chosen as the new name of the church. The name, which means “My Delight is in Thee,” comes from the Book of Isaiah. Upcoming anniversary plans also include a history tour, which would include stops at other churches that had their roots at Hephzibah, including Brandywine Baptist Church in Chadds

Most of the weekend’s activities will be open to spectators free of charge. “Our mission is to promote (Celtic culture) to the next generation, and one of the ways we do that is by having free admission,” said festival chair and Paloma School of Irish Dance owner Esther Pujol. “We have one of the largest Irish music competitions on the East Coast,” Pujol added. “The bagpipe competition will be on the fourth floor of the Marriott, with three competition areas. It has really exploded.” Pujol noted that 25 pipers from eight states had registered by mid-January, and more were expected. The separate music competition, which will take place at Tellus360, 24 E. King St., Lancaster, from 8 a.m. to 2 p.m. on Saturday, Feb. 15, has already drawn nearly 40 entrants.

Last year, the Irish dance competition was held only on Saturday and had 870 entrants, with more on a waitlist. To accommodate extra dancers, the contest will run from 4 to 8 p.m. on Feb. 14, with 350 competitors. The competition will resume at 8 a.m. on Feb. 15 and run until about 5 p.m. Saturday’s registration has been limited to 800 dancers. “I have students (at Paloma) who will do the Irish dance competition (and) the Irish music competition and perform with the Keystone Fiddlers,” Pujol remarked. “It’s a busy weekend.” The Keystone Fiddlers group was founded by sisters Christy Martin and Melissa Hagy and is composed of their music students. The group plays mostly Irish and Scottish music, and its members will perform as part of an educational lineup on the Heritage Stage at the Marriott. Martin has coordinated the offerings on the Heritage Stage: an Irish Gaelic language workshop, performances by the Harrisburg Scottish Country Dance Society and the Rehoboth Welsh Choir, an Ode to Burns presented by Donald Henderson, a lecture on the mass grave of 57 Irish immigrants at Duffy’s Cut outside Philadelphia, and a demonstration of Irish set dancing. The Temple University Irish dance team will display its members’ talents on Feb. 14 at 6 p.m. on the Marriott main stage. Pujol

said she has seen the group perform an Irish dance to the music of “Grease,” so she is looking forward to seeing what the team has this year. A ceilidh - a traditional Irish dance party - will be held after the performance at 7 p.m. Simple group dances will be taught and then called to music played by The Celtic Martins. Additional music groups appearing at the festival will be Cormorant’s Fancy, Charlie Zahm and Tad Marks, and Fire in the Glen. More than 20 vendors are slated to sell Celtic-related jewelry, hats, toys, shirts, foods, and dance supplies. There will also be a silent auction on Feb. 15, with proceeds helping to offset the cost of producing the festival. Pujol noted that the festival’s nearly $100,000 budget is supported by sponsors, and there are ongoing ways to help with fundraising. One specific need is for traveling trophies that are awarded to champions of the feis (competition). While admission to the festival is free, tickets will be required for admission to watch Hold Fast and Barleyjuice perform on the Marriott main stage at 6 and 7:30 p.m. respectively and to attend the Seasons concert at Tellus360 at 8 p.m. All three concerts will take place on Feb. 15. Additionally, the Glengarry Bhoys will perform at the Ware Center at 2 p.m. on Feb. 16, and admission will be charged. Statewide AWZSE Program Begins The Pennsylvania Department of Transportation (PennDOT) and the Pennsylvania Turnpike Commission (PTC) recently announced that the required 60day pre-enforcement period for the statewide Automated Work Zone Speed Enforcement (AWZSE) program has begun and will last until Wednesday, March 4. Pennsylvania’s AWZSE program uses vehicle-mounted systems to detect and record motorists exceeding posted work zone speed limits using electronic speed timing devices. The AWZSE program was established by the Pennsylvania General Assembly in Act 86 of 2018. During the preenforcement period, automated speed enforcement units will be deployed in active work zones, but violations will not be issued. Work zones are selected to maximize the effectiveness of the systems and will

The goal is to encourage motorists to slow down in work zones, change their behavior, and ultimately improve safety for both motorists and workers. AWZSE systems are only operational in active work zones where workers are present. Once enforcement begins on March 4, registered owners will receive a warning letter for a first offense, a violation notice and $75 fine for a second offense, and a violation notice and $150 fine for third and subsequent offenses. PHA Provides Publication The Pennsylvania Homecare Association (PHA) has developed “The Care We Share: A Family Guide to In-Home Pediatric Care.” This 36-page resource is available free of charge to Pennsylvania families and includes information as they bring home a child with complex medical needs with equipment such as ventilators, tracheal collars and feeding tubes. Articles range from coordinating shift nursing to preparing one’s home for durable medical equipment. The resource also features parents who utilize home-based care for their children.

PHA is focused on making quality care available at home, and this resource is one of the many initiatives the association does annually to help provide community awareness for home-based care. The camp’s website explains that the idea behind the theme of the weekend is to let students know that Scripture is not just ancient text, it is God’s story. The weekend will focus on Jesus as the final resolution to that story and how humans as God’s children are part of that story through their relationship with Him. Schuylkill County pastor Josh Ott will return to speak to the students. Ott is a communicator and ministry coach with a passion for delivering a message that is authentic and engaging and that communicates truth, hope, and life. He has spoken for nearly 20 years to a range of audiences. In addition to learning from the speaker, students will have the opportunity to take part in a variety of activities, including inflatables, basketball, volleyball, gaga ball, and other group games. Snow tubing and sledding are also popular at the facility, which has the ability to make snow if the weather has not been cooperative. In addition to the many activities at the camp, there is a café that offers a casual setting. “They have a café that the students love called The Apple Tree,” said Hoover. “They can grab snacks or hang out and play board and card games. Because the facility is no longer supported by his plantations, Peter is now seeking financial support from the community, as well as prayers. “The most important thing is prayer,” Peter said. “I never believed that I would be able to keep those children for even one year. I think that prayers that Christians have given have sustained the orphans.” Peter and his wife came to live in the United States when their son moved to Chester County, but Peter returns to Africa yearly to check on the orphanage and the students and to meet with the mistress of the school. “Every year I go home,” he said. “Last year I went in August because the schools in Cameroon close in July. The idea to form an orphanage began when Peter and his wife, Magdalene Ayukachale, were working as missionaries in Africa. While walking along the plains in Cameroon, they came across a woman in labor about to deliver a baby girl. The woman died, so Peter and his wife made the decision to take care of the child. This act of kindness led to the formation of the Kembong Sanctuary for Orphans. “The orphanage was sustained by the proceeds from my plantations, (including) my orange orchards and plantations of mangoes and palm oil,” Peter explained. On two occasions through the years, the orphanage had to be moved due to civil unrest in the area. Today, Kembong Sanctuary for Orphans is located in the Bonaberi district of the city of Douala, a town in the more peaceful French-speaking part of Cameroon. The sanctuary cur-

The focused all-agency effort and anti-stigma campaign “Reach Out PA: Your Mental Health Matters” is aimed at expanding resources and the state’s comprehensive support of mental health and related health care priorities in Pennsylvania. The campaign includes several initiatives and reviews the state government will undertake for commonwealth agencies to bolster the effort. Further, agencies are planning to announce additional initiatives. Pennsylvania is stepping up efforts to ensure every Pennsylvanian can access mental health care and more agencies can respond to the challenges facing Pennsylvanians struggling with their mental health. The act of reaching out for help - or to help - can make a huge difference for someone struggling. According to a 2017 study from the University of Southern California, approximately 1 million adult Pennsylvanians struggled with serious psychological distress at least once in 2015. Of those adults, more than 27% had an unmet need for mental health care. That population includes 42% who did not receive mental health care because they could not afford it. The Pennsylvania Insurance Department (PID) will pursue Mental Health Parity regulations to ensure Pennsylvanians’ health insurance coverage provides access to affordable mental health care. PID also will release educational tools to help patients better understand their mental health benefits and

access services. The Department of Human Services (DHS) will take steps to incentivize the integration of physical and behavioral health services to remove barriers to coordinating care and treatment. DHS will create financial incentives to encourage managed care organizations that provide Medical Assistance benefits to create, maintain, and continuously improve collaboration between the entities and providers that coordinate and deliver physical health benefits and mental health benefits. The Department of Health will conduct a review of the current network adequacy process to ensure that consumers enrolled in the Medicaid program and commercial insurance products are able to access mental health care providers when services are necessary and without prohibitive costs. The departments of Labor and Industry and State will study solutions that address the inadequacy of the mental health workforce across Pennsylvania, including evaluating mental health practitioners across the commonwealth by level of care they provide, the competitiveness of salaries and benefits, and barriers of entry to the workforce. Pennsylvanians may not access the mental health care they need or do not reach out for help, because they fear having a label or stigma attached to them by their family, friends, and community. By raising awareness of the normalcy and importance of

mental health care, the hope is that others will be less fearful of the stigma. Pennsylvania’s nationally recognized response to the opioid and substance use disorder crisis included public engagement and open conversations to combat stigma. Pennsylvania will deploy the practices used by the Department of Drug and Alcohol Programs to lead a similar effort around mental health and mental illness. Reach Out PA will include roundtable discussions to hear directly from those battling the stigma of mental illness, collaboration with community-based organizations to help increase public attention on mental illness and mental health care, and outreach to elevate success stories and best practices. The first roundtable was held on Jan. 3 at Muhlenberg College in Allentown. The Department of Education will create pathways to increase the number of highly qualified social workers trained to work in schools. School social workers provide holistic services and supports in the school setting, such as crisis management, mental health treatment, and engaging the school, family, and community in enhancing existing student support structures that ensure the success of all students. Pathways will include new certification, among other options, to enhance who can provide social work services in Pennsylvania’s schools. Delinquency will evaluate how to ensure every school district can provide a full-time counselor, social worker, and nurse, along with increasing more counseling and mental health services at postsecondary institutions. The Office of Advocacy and Reform will coordinate and expand upon ongoing efforts in the commonwealth to address adverse childhood experiences and implement more traumainformed approaches in education, health care, the criminal justice system, and other government institutions. Pennsylvania will expand training of constituent affairs personnel on suicide prevention and mental health intervention. With this training, workers have already been able to recognize people who need help with their mental health, to intervene, and to connect them with services or support. Winter brings snow, ice and freezing rain, so readers are encouraged to heed the following winter safety tips. First, icy patches can be difficult to see. The slips and falls caused by ice can be serious. If one comes across an area believed to be icy, he or she should tap the edge of the area with a foot. People should wear shoes with gripping soles to provide traction. Also, they should keep hands out of their pockets when walking in order to keep balance on a slippery surface. They should avoid carrying heavy items like shopping bags, which can change one’s center of balance, making it easier to slip and fall. Also, shoveling snow can pose a health risk for many people. Snow shoveling is a strenuous activity. It can increase blood pressure and heart rate. Individuals with a history of heart disease, high blood pressure or strokes should not shovel snow. If people must shovel snow, they should shovel as early as possible, as snow is heavier after it has been on the ground for a few days, often melting and refreezing, creating a solid chunk of snow rather than powdery, just-fallen snow. In addition, individuals should stay hydrated. Dehydration is common during the winter months. Winter activities are just as strenuous as summer activities, and people also tend to wear layers of warm clothing during the winter, meaning that the body works harder by sweating to cool down. Not staying hydrated can lead to exhaustion, muscle fatigue, cramps, loss of coordination or even stroke. Dehydration also makes one an easy target for colds and flu.

will be more indoor workshops, but once we get to April, there will be more outdoor workshops, (including) learning to make metal castings.” The site hosts three major annual festivals: the Hay Creek Festival in September, the Hay Creek Apple Festival in October and Christmas at Joanna in December. It will also offer a growing number of public school programs. In May, students from the Twin Valley and Owen J. Roberts school districts will visit the site for interpretive programs. The site is also undergoing various restoration projects. “This year, since we have basically completed our wheelwright shop, we are working on furnishing that shop so it’s open for our interpretive festival in September,” Zerr said. Sure, you probably have heard of students reading to dogs, but did you know that cats enjoy similar attention? “Our adoptable cats appreciate being read to by our Rescue Readers as reading aloud has a positive impact on the cats in our cat colonies, while also helping the readers become more comfortable and confident reading aloud,” said Humane Pennsylvania events and social media coordinator Kylie Layman, who is in charge of the Rescue Readers program. The program is less than a year old and was developed to provide youths ages 4 to 13 with opportunities to interact with the cats in the shelter, expand their reading proficiency, and give back to their community. Seven-year-old Hunter Griffin and his parents, Oanh To and William Griffin of Manheim Township, spent time on Jan. 12 with several felines at the Humane League of Lancaster County, 2195 Lincoln Highway East, Lancaster. The family had a halfhour slot during which Hunter read aloud from the Pete the Cat book “Snow Daze” and the titles in the “Little Critter Bedtime Stories” box set. Food and Beverage The Importance Of Food Safety Certification Working in food service involves much more than asking “Would you like fries with that?” Food service workers may be employed in grocery stores, retirement communities, schools, office building cafeterias, restaurants, and anywhere else that qualifies as a retail food establishment as defined by law. One of the top priorities of all food service workers is to keep consumers safe. The United States Food and Drug Administration (FDA) has created a model food code, which is updated every four years, and states can create their own based on the model. According to Penn State Extension, the FDA Food Code provides updated sciencebased guidance and recommendations on how to handle food safely in order to reduce or prevent foodborne illnesses. Until recently, the FDA Food Code required that one person within a food service operation be a Certified Food Protection Manager. The new update, announced in February 2018, now requires that the person in charge of a facility be certified. The Pennsylvania Department of Agriculture (PDA), which oversees the state’s food code and the Food Employee Certification Act, adopted the update and declared the change in certified managers to go into effect in 2020. “We have research from the Center for Disease Control and Prevention that shows when we have a (certified) person on duty at all times, the risk of foodborne illness is reduced,” said Stacy Reed, senior extension educator with Penn State Extension. “Prevention of foodborne illness is a big deal. About 48 million people get sick (from a foodborne illness) each year, and that leads to over 128,000 being hospitalized. That means one out of every six people will get sick from a foodborne ill-

ness (annually). An estimated 3,000 people pass away from a foodborne illness every year.” Until the latest change, retail food facilities were required to have a Certified Food Protection Manager available during inspection, even if it was just someone who could go to the facility when called. With the new requirement that the person in charge - for example, a shift manager - be certified, more people will need to have their certifications. “We’re trying to be proactive and making people aware of these amendments so that we have plenty of people that are certified,” Reed said. Certification must be renewed every five years. PDA recognizes manager certification programs offered by five organizations. Penn State Extension offers local classes for the PDA-approved ServSafe program from the National Restaurant Association (NRA). The classes are typically held in groups of two, with one week separating them. A proctored exam is offered at the end of the second day, and a score of 75% or higher is required to receive a certificate. Exams may be taken four times in one year, but they must be spaced out according to the association’s guidelines. “Our food safety and quality professionals are highly educated in food safety,” Reed remarked. “We can provide real-life information and update you on all the changes and regulations. We have

advanced professional knowledge and experience; we are professional educators.” The ServSafe course is also available online and may be completed at an individual’s convenience. The exam must be taken in person, however. Accommodations for people with disabilities are available through the NRA. Sometimes accommodations might include having more time to complete an exam or having the exam read aloud by someone without a food safety background. “There are ways (we) will work with individuals to help them succeed,” Reed said. Exams are available in English as well as Spanish, Chinese, Korean, Japanese, French Canadian, and large-print English. Classes taught in Spanish are available in Kennett Square, although Reed noted that she has a bilingual program assistant who can teach the class in Spanish in Lancaster. Anyone who is interested in food safety is welcome to take a ServSafe course. “We have a lot of individuals who take the class who are just interested in food safety, (as well as) volunteers or people interested in the possibility of a career change,” Reed said. “I know a lot of employers do value certification, to the point that they will send large groups of employees to classes at one time.” Along with potentially helping someone obtain a job in food serv-
