The Health and Welfare Foundation of Southern Chester County, which administers the Alma Newlin Education Fund, reminded students of the deadline for submitting applications for the one-time undergraduate health care scholarship. The deadline for submission is Tuesday, Feb. 28.

The purpose of the scholarship is to assist graduating high school seniors who are preparing for careers in the human health care field, adult students seeking higher education in human health care, or previous award winners who are enrolled in undergraduate studies and seeking postgraduate education in human health care. To be eligible, students must reside in the Avon Grove, Oxford, Kennett, Octorara, or Unionville-Chadds Ford school districts and carry a 3.0 unweighted GPA. Applications are available at www.hwfscc.org under the Funding link.

Family Valentine’s Day Dance Set

Our Lady of Consolation Church will present a Valentine’s Day family dance on Friday, Feb. 17. The first-time event will take place from 5 to 8 p.m. at the Schneider Parish Center, 2995 Cemetery Road, Parkesburg.

The event will feature dancing and games, and food will be available for purchase. There will also be a cookie decorating station, a selfie station and a game station.

A fee will be collected per person; children age 2 and under will be admitted for free. Those who register for tickets by Thursday, Feb. 16, at 8 p.m. will receive a discount. Tickets will also be sold at the door.

Proceeds will benefit the LifeTeen mission trip in June. LifeTeen is the church’s youth group, which is open to students in grades nine to 12.

Shrimp, Feta, And Dill Spaghetti

While spaghetti is most often associated with Italy, pasta has deep ties to other Mediterranean nations like Greece and several territories of the Middle East and Arabian Peninsula. It has been enjoyed around the world for centuries.

Tonight: Done!” (Time Home Entertainment) from the editors of Real Simple, may take its inspiration from Greek cooking.

Spaghetti with Shrimp, Feta and Dill (Serves4)

Ingredients:

12 ounces spaghetti

1/4 cup plus olive oil

Kosher salt and black pepper

2 tablespoons fresh lemon juice

1 teaspoon grated lemon zest

3 ounces feta, crumbled (3/4 cup)

2 tablespoons coarsely chopped fresh dill

Directions:

1 - Cook the pasta according to the package directions. Drain and return it to the pot.

2 - Meanwhile, heat 1 tablespoon of the oil in a large skillet over medium-high heat. Season the shrimp with 1/2 teaspoon salt and 1/4 teaspoon pepper and cook, tossing occasionally, until opaque throughout, 3 to 4 minutes. Stir in the lemon juice and zest.

1 pound peeled and deveined large shrimp

3 - Add the shrimp mixture to the pasta, along with the feta, dill, the remaining 1/4 cup of oil and 1/4 teaspoon each salt and pepper. Toss to combine.
